Mini Cheeseburger Wellingtons
You may well remember the original cheeseburger wellington - that pastry bound bundle burgery cheesy wondrousness. Think of these as his little cousins, circling the great meat mothership. Basically, here at Twisted we love anything to do with cheeseburgers and the thought of having one stuffed with cheese and wrapped in pastry is essentially heaven on a plate.

Ingredients
  • 2lb beef mince
  • 1 onion, finely diced
  • 2 garlic cloves, very finely diced
  • 1 tbsp salt
  • 1 tbsp black pepper
  • 4 sticks red cheddar
  • 20 bacon rashers
  • 16 slices American-style cheese
  • 2 large sheets puff pastry
Instructions
  1. Preheat the oven to 200°C/400°F.
  2. Mix the beef mince together with the onion, garlic, salt and pepper.
  3. Form into little rectangles and press a stick of the cheese in to the centre, then top with another lid of the mince mix. Press together to seal. You should be able to make roughly four wellingtons.
  4. Lay the cooked bacon on a small rectangle of puff pastry (large enough to roll up one the little wellingtons and tuck any excess underneath). Top with roughly four slices of American cheese.
  5. Place a wellington on the smaller end of the rectangle and brush any uncovered areas of pastry with egg wash, then roll the whole thing up and tuck the edges underneath.
  6. Bake for 30 minutes or until the internal temperature registers as cooked.

Chicken Alfredo Dip With Garlic Dippers
One of our favourite pasta flavours served with crispy garlic bread is something you can count us in on! This warm dip takes minutes to put together and it’s a sure hit with these garlic bread dippers. Using soft white bread and rolling it out flat they bake up and get super crispy just like crackers!

Ingredients
  • 1 loaf soft white bread
  • ¾ cup melted garlic butter
  • 1¾ cup sour cream
  • 1 cup cream cheese, softened
  • 1½ cups shredded chicken
  • 8 rashers bacon, chopped and cooked
  • 1 tsp chopped parsley
  • ½ cup grated parmesan
  • 1 cup grated mozzarella, split
  • 1 tsp garlic powder
  • 1 tsp pepper
Instructions
  1. Preheat oven to 180ºC (350ºF).
  2. Roll slices of bread flat. Brush with garlic butter on both sides. Cut into four triangles, corner to corner.
  3. Place flat on a baking sheet and bake for 20 minutes flipping half way through until golden brown and crisp.
  4. In a large bowl, mix together sour cream, cream cheese, chicken, bacon, parmesan, ½ cup mozzarella, parsley, pepper and garlic powder. Transfer to a baking dish, sprinkle with remaining mozzarella cheese and cover with foil. Bake for 20 minutes then remove foil and grill for 5 minutes.
  5. Sprinkle with extra parsley, dip garlic bread and enjoy!

Mini Chicken Fajita Tacos
Fajitas are great for a party but these mini fajita’s tacos are perfect for appetisers too! Quick to prepare and so fun to make and eat. Top them with cheese and serve with a variety of dips!

Ingredients
  • 2 cups shredded cooked chicken
  • ½ cup cooked mixed peppers
  • ½ cup cooked onions
  • 3 tbsp fajita spice
  • 1 cup cream cheese
  • 1½ cup grated cheddar, split
  • 1 cup butter
  • 5-6 large tortillas
  • Chopped parsley
Instructions
  1. Preheat oven to 400F (200C).
  2. Cut 4-5 rounds out of each tortilla shell with a cookie cutter to get about 30 shells.
  3. In a bowl, mix together and 1½ tbsp fajita spice. Toss each tortilla round in butter mixture to coat.
  4. Flip a muffin tin upside down. Place the tortilla pieces in between muffin cups. Bake 5-6 minutes until just golden brown. Takeout and let cool.
  5. In a large bowl mix chicken, peppers, onion, remaining fajita spice, cream cheese, and ¾ cup grated cheddar. Fill each taco with a spoonful of mixture. Top with grated cheese. Arrange on a tray and bake for 5-6 minutes until cheese has melted.
  6. Enjoy!

Muffin Tin Cheeseburgers
Pressing the bun into a muffin tin creates the perfect vessel to stuff with all of our favourite burger flavours and toppings. We’ve added bacon and cheese to these but chose your favourite toppings and layer them up!

Ingredients
  • 500g beef mince
  • ½ onion diced
  • 8 slices of bacon, cut into small pieces
  • 1 tbsp oil
  • 1 tbsp Worcestershire sauce
  • 2 tbsp ketchup
  • 1 tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder
  • 12 top sesame burger buns
  • 12 squares cheddar
  • Ketchup
  • Mustard
  • Pickles
Instructions
  1. In a large pan, heat oil over medium heat. Add onions and bacon and cook until softened and bacon is just crispy. Add garlic add mince and cook, breaking apart with a spoon.
  2. Cook until liquid is reduce and beef is browned. Add Worcestershire sauce, ketchup, salt, pepper and garlic powder and mix until coated. Remove from heat.
  3. Press sesame buns into a greased muffin tin to create a little bowl.
  4. Add one heaping tablespoon into each muffin tin. Top with a piece of cheese. Bake in a 180ºF oven for 20 minutes until bread is golden brown and cheese is melted.
  5. Top each with choice of condiments, mustard, ketchup and pickles.

Ingredients
  • 1⅓ cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs
  • ½ cup Baileys
  • 3¼ cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup dark chocolate chips
  • ½ cup graham crackers, broken
  • Mini marshmallows
Instructions
  1. Preheat the oven to 350ºF. Line 2 large baking sheets with baking paper.
  2. Sift the flour, baking powder and salt together.
  3. In a mixing bowl whisk together the butter and sugars until pale in colour. Add the eggs and whisk until smooth. Add the Baileys and whisk to just combine. Add the flour mixture and mix on low until just combined. Fold in the marshmallows, graham cookie bits and chocolate chips until combined.
  4. Use a small scoop to portion out the cookies. Chill for 15 minutes.
  5. Bake for 13-15 minutes until just golden brown.
  6. Enjoy!

Beef Stroganoff Lasagna
Beef stroganoff - Russia's biggest icon. Spicier than Rasputin, better for you than vodka and slightly more delicious than Putin, this creamy, beefy stew has truly global influence. Different variations are out there with additions from sour cream to mushroom soup but ours is perfect between lasagna sheets - the cream won't split because of the bechamel but it still has those classic stroganoff flavours.

Ingredients
  • 1 tbsp oil
  • 2.2 lb thinly sliced steak
  • 1 large onion, thinly sliced
  • 2 cups sliced button mushrooms
  • 3 tbsp butter
  • 3 tbsp flour
  • 1 1\2 cups beef stock
  • 1 cup double cream
  • 1 tbsp salt
  • 1 tsp pepper
  • 1 tsp paprika
  • Lasagna sheets
  • Grated mozzarella
Instructions
  1. Preheat the oven to 180°C/360°F.
  2. Heat the oil in a large, deep sided frying pan until it smokes - you want it to be really hot so you can sear the beef. Add the beef, in batches if necessary, and brown, stirring quickly. Remove and place in a bowl.
  3. Add a little more oil along with the onions and sliced mushrooms and fry until soft, then add the garlic. Remove from the vegetables and place with the cooked steak.
  4. Heat the butter in the pan until foaming then stir in the flour and allow to cook for a minute or so. Pour in the beef stock gradually, briskly stirring all the time, to make a smooth sauce. Add the cream, salt, pepper, paprika and mustard and stir everything together to combine. Add the steak and vegetables back into the pan and allow to cook for a further 5 minutes or so.
  5. Add a layer of the stroganoff mixture to a greased lasagna dish and top with mozzarella and lasagna sheets. Repeat up to the top, finishing with a layer of pasta and cheese.
  6. Bake for around 40 minutes.
  7. Enjoy!

Creamy Ranch Chicken Pasta
CREAMY RANCH CHICKEN PASTA

Ingredients
  • 1 tsp oregano
  • ½ tsp garlic powder
  • ½ tsp cayenne
  • 1 tsp onion powder
  • 1 tsp white pepper
  • 1 tsp salt
  • 2 chicken breasts
  • 2 tbsp unsalted butter
  • 2 cups double cream
  • 2 tbsp parsley, finely chopped
  • 1 tsp oregano
  • cooked rigatoni, 3 cups
  • 2 cloves garlic, finely chopped
Instructions
  1. Mix together the spices and salt. Butterfly the chicken breasts and cover with the seasoning.
  2. Foam the butter over medium-low heat, then add the chicken breasts. Cook on each side until nicely golden and cooked through. Remove from the pan to rest, then slice into thin strips.
  3. Add the garlic to the pan and cook until fragrant (watch it doesn't colour). Pour in the cream. Bring to a simmer and reduce for 10 minutes, stirring occasionally. Add the parsley, oregano and chicken. Stir through.
  4. Add cooked pasta and a little reserved pasta water to loosen.
  5. Eat with a little more parsley.
  6. Enjoy!

Chicken Fajita Lasagna Roll Ups
Mexico, meet Italy. These Fajita Roll-Ups are the epitome of sophistication, a beautiful marriage of two noble cultures in one tasty dish. Think of Rome in a sombrero drinking tequila.

Ingredients
  • 2 chicken breasts, sliced
  • 3 peppers, cut into thin strips
  • 1 onion, cut into thin slices
  • 2 tbsp fajita seasoning
  • 1 tbsp vegetable oil
  • 1 tsp salt
  • 3 large lasagna sheets
  • 2 cups cream cheese, softened
  • 2 cups mixed cheddar and mozzarella
Instructions
  1. Preheat the oven to 180°C/360°F.
  2. Place the chicken, peppers and onions on a large roasting tray and sprinkle with the seasoning and oil. Bake for around 20 minutes until cooked through, then leave to cool and dice into small chunks.
  3. Slather each lasagna sheet with cream cheese and sprinkle with the fajita mix, then roll up into a tight tube and cut into three.
  4. Arrange these in a greased dish then top with more cream cheese and sprinkle lavishly with cheese.
  5. Bake for 30 minutes or until the cheese has bubbled up and the pasta has cooked through.

Ham and cheese are a sandwich classic. Stuffed between two pieces of bread into a little parcel dipped in French toast mix and fries make it an even better sandwich. Fill it with a number of different options but ham and cheese is one of our favourites!

Ingredients
  • 8 slices bread
  • 16 slices mozzarella
  • 8 pieces of ham
  • 3 eggs
  • 1 cup milk
  • ½ tsp salt
  • ¼ tsp peper
  • Butter
Instructions
  1. Cut the crust off one piece of bread, and lay one slice of mozzarella down, followed by ham and another piece of cheese.
  2. Top with another crustless piece of bread and using your fingers press round the edge to form the piece of bread together. Repeat.
  3. In a large bowl,dd your eggs, milk, cinnamon and vanilla to a bowl and whisk thoroughly.
  4. Dunk your stuffed breads into the mix and coat properly.
  5. Add your butter to a pan, when melted add your french breads and fry until nice and golden on both sides.
  6. Enjoy!

XL Bacon Double Cheeseburger Crunchwrap
Here at Twisted we find a particular satisfaction in a well executed crunchwrap - that artful arranging of the pantries most humble of ingredients, the tortilla. We've stuffed them with fajitas, breakfast bits and philly cheesesteak. And now this - two enormous, perfect burger patties, loads of filthy American cheese - the dream.

Ingredients
  • 2.2 lb /1 kg beef mince
  • 1 tbsp salt
  • ½ tbsp white pepper
  • ½ tbsp garlic powder
  • 12 tortillas
  • 14 slices American style cheese
  • Chopped gherkins
  • Cooked bacon
Instructions
  1. Preheat the oven to 180°C/360°F.
  2. Use your hands to mix together the beef mince, salt, white pepper and garlic powder.
  3. Divide the mix in half and press each half into a spring form pan on a square of greaseproof paper to make a circle.
  4. Carefully put each burger in a large hot oiled frying pan and fry on both sides for around 4 minutes - you can flip them with a plate to make it easier.
  5. Arrange 6 of the tortillas in a flower shape in a well oiled skillet and top with a layer of cheese, pickles and bacon. Add burger number 1 and then repeat, finishing with burger number 2. Place a tortilla on top and fold over the edges of the other tortillas to make a sealed bundle. If they look like they'll pop up place a circle of baking paper on top and put something heavy on top of that.
  6. Bake for around half an hour until the tortillas feel crunchy.
  7. Serve with ketchup. Good times!
