Baileys Ice Cream Sandwiches

Baileys Ice Cream Sandwiches
No one will be left blowing hot and cold after tasting these new sweet treats from Baileys. Featuring layers of gooey baked brownie, sandwiching booze infused vanilla ice cream, this is one dessert determined to ruin diets everywhere. Stand aside sorbet and move over meringues. Summer just found a new best friend.

Ingredients
Ice Cream:
  • 360ml heavy cream
  • 10ml vanilla essence
  • 120ml Baileys
  • 1 can sweetened condensed milk
Brownies:
  • 300g chopped dark chocolate
  • 300g melted butter
  • 150ml Baileys
  • 5 eggs
  • 400g sugar
  • 150ml Baileys
  • 130g self-raising flour
  • ½ cup/70g plain flour
  • ¾ cup/80g cocoa
Instructions
  1. In a large bowl, whisk together cream, vanilla and Baileys until soft peaks are formed. Fold in one can of condensed milk.
  2. Pour mixture into a lined 9x9 brownie tray, spread flat and freeze over night until set.
  3. To make the brownies, pour the melted butter over the chocolate and stir to combine, then pour in the Baileys and stir again. Set aside to cool slightly.
  4. Whisk the eggs until they foam up and then add the sugar and keep whisking for a minute or so. Pour in the cooled chocolate mixture and stir together then sift in all the dry ingredients and fold everything through.
  5. Pour the mixture into two lined 9x9 brownie trays and spread out.
  6. Bake for 15-20 min.
  7. When the brownie layers are completely cool remove from the tin. Top one with the ice cream layer. Place second brownie layer on top. Transfer to freezer for 4 hours.
  8. When completely frozen transfer to a cutting board and slice into 2x4-inch sandwiches
  9. Keep frozen until ready to serve
  10. Enjoy!

Giant Croque Monsieur Roll
Outlandish? Check. Cheesy? Check. While we at Twisted do know what you, our fans, love, we do strive to push the boat out with a few dishes every now and then. We are therefore proud (if mildly bemused) to bring you one of our strangest ideas yet, the Croque Monsieur Toast Roll.

Ingredients
  • 50g butter
  • 50g flour
  • 350ml milk
  • 1½ tbsp dijon mustard
  • 1 tsp salt
  • 1 tsp pepper
  • ¼ tsp nutmeg
  • 12 slices white bread
  • 12 slices emmental
  • 17 slices thin cut ham
  • 2 tbsp melted butter
Instructions
  1. Preheat the oven to 180°C/360°F
  2. In a large saucepan heat the butter until foaming, then add the flour and quickly stir to make a paste. Gradually pour in the milk, stirring to incorporate it, until you have a smooth sauce. Stir in the mustard, salt and pepper and set aside.
  3. Cut the crusts off the bread and lay it in a square on baking paper with each side overlapping. Use a rolling pin to roll the whole thing out, pressing the edges together to stick them. If you find this isn't working then use an equal mixture of flour and water and paint it along the joins to help stick.
  4. Spread the bechamel on the bread and then top with a layer of cheese and ham. Use the edge of the paper to roll the whole thing up.
  5. Place on a lined baking tray and brush with butter, then bake for 40 minutes until the outside is golden and toasty.

Ice Cube Summer Berry Cheesecakes

Ice Cube Summer Berry Cheesecakes
Pop chocolates out carefully and trim excess chocolate if needed.

Ingredients
  • 250g dark chocolate, finely chopped
  • 1 tbsp coconut oil
  • 225g strawberries
  • 2 tbsp sugar
  • 16 Laughing Cow Triangles Original
  • 1 can condensed milk
  • 2 tbsp lemon juice
  • 1 tsp vanilla
  • 115g crushed digestive biscuits
  • 55g unsalted butter, melted
Instructions
  1. In a microwavable jug, add 250g chocolate and coconut oil. Microwave on high for 2 minutes until completely melted. Pour into the ice cube tray and tilt tray in all directions, allowing chocolate to cover the sides. Flip trays upside down to let excess chocolate drip out. Then refrigerate for 5 minutes.
  2. Mix digestive biscuits and butter until combined. Set aside.
  3. Add strawberries and sugar to a pot. Cook over medium heat until reduced by half and thick. Pass through a sieve to remove any large bits and seeds. Cool.
  4. Whisk together Laughing Cow, strawberry puree, condensed milk, lemon juice and vanilla. Fill each ice cube mould ¾ way with cheesecake mix. Top with digestive biscuit mix. Chill in the fridge until completely set, then carefully pop out and serve!

Did you know that you can actually fry lasagna noodles? These Fried Lasagna dippers are a great option for an appetizer. They're are easy to make and even better to eat. Try and eat just one 😉

Ingredients
  • Par cooked Lasagna sheets
  • Sliced mozzarella
  • 1½ cups ragu
  • 1½ cups bechamel
  • ¼ cup grated parmesan
  • ¼ cup grated mozzarella
  • 2 tsp Italian seasoning
  • Oil for frying
Instructions
  1. Heat béchamel with cheese and seasoning until smooth. Keep warm.
  2. Lay lasagna sheets out. Top with one slice of mozzarella. Top with a head tablespoon of ragu. Roll into a cigar shape. Repeat with remaining ingredients.
  3. Shallow fry on all sides until golden brown.
  4. Dip into warm béchamel, enjoy!

We've all seen poke cakes and are always enamoured by the ease an deliciousness of them. This ice cream poke cake takes it to the next level and is a perfect summer treat!

Ingredients
  • ¾ cup + 2 tbsp flour
  • 1 cup sugar
  • 6 tbsp cocoa powder
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • ½ cup buttermilk
  • ¼ cup oil
  • 1 egg
  • 1 tsp vanilla
  • ½ cup fresh coffee
  • 2 cups heavy cream
  • 10ml vanilla essence
  • 1 can sweetened condensed milk
  • Caramel sauce
  • Chocolate shavings
  • 2 cups whipped cream
Instructions
  1. Preheat oven to 160ºC (325ºF). Line a 11x7 cake pan with butter and baking paper to come up the edges.
  2. In a large bowl, whisk flour, sugar, cocoa, baking soda, baking powder, and salt. Whisk in egg, milk, oil and vanilla until combined. Pour in coffee and stir gentle to incorporate until smooth. Pour into prepared tin and bake for 25- 30 minutes.
  3. While cake is baking, make ice cream topping. Whip the heavy cream and vanilla to stiff peaks. Fold in condensed milk. Set aside.
  4. When cake is done, let cool completely. Using the back of a wooden spoon, poke holes into the cake. Pour the ice cream filling over top and spread evenly.
  5. Freezer for 4 hours to set.
  6. Spread whipped cream over top and pipe extra into rosettes for garish. Drizzle with caramel and sprinkle chocolate shavings.
  7. Serve immediately. Enjoy!

Frank's Cheese Stuffed Burger Dogs
Hot diggity, there’s a new top dog on the menu. Enjoy everything that’s great about bacon, beef and barbecue with these cheese stuffed burger dogs. Slathered with Frank’s RedHot and served on a pickle-packed toasted roll, this is the only way to celebrate summer in style.

Ingredients
  • 2lb ground beef
  • 12 strips of bacon
  • 1 tbsp black pepper
  • ½ tbsp salt
  • 1 tbsp onion powder
  • 1 cup Frank’s Original Hot Sauce
  • ½ cup French’s Classic Yellow Mustard
  • Monterey Jack Cheese, cut into strips
  • Grilled onions, for serving (optional)
  • Ranch dressing, for serving
  • Pickles, for serving
Instructions
  1. In a large bowl, combine ground beef, pepper, salt and onion powder.
  2. Divide the ground beef into palm-sized pieces, then shape into small logs and shape around the strips of cheese. Make sure the cheese is sealed.|
  3. Lay out two adjacent pieces of bacon on a board. Roll each ‘dog’ in two strips. Combine the hot sauce with the mustard, honey and butter. Place the dogs on a hot grill (preheated to 400°F if using drum BBQ).
  4. Grill for 5 minutes, turning frequently. Liberally glaze the dogs with the sauce, turning frequently. Continue until the dogs are cooked through, crisp, sticky and delicious. Serve in buttered, grilled hotdog buns with pickles and creamy ranch dressing.

Mini Cheesy Chipotle Chicken Pies
These mini cheesy chipotle chicken pies are easy to make. They are filled with our favourite Mexican ingredients and a have bit of a kick too!

Ingredients
  • 1½ cups shredded chicken
  • 1 cup salsa
  • 1 tbsp chipotle paste
  • 1 cup grated mixed cheese
  • 2 sheets ready made pie dough
  • Egg wash
Instructions
  1. Pre-heat oven to 190ºF. Line a sheet pan with parchment paper.
  2. Mix together chicken, salsa, chipotle paste and cheese. Cut out 3-4” rounds from pie dough.
  3. Place a rounded spoonful in each round. Fold over and pinch edges to seal. Transfer to a tray and use a fork to crimp edges.
  4. Brush with egg wash. Bake for 30 minutes until golden brown.
  5. Enjoy!

Hot Dog Camembert Dip Ring
Hot Dog Camembert Dip Ring

Ingredients
  • 2 large sheets puff pastry
  • 18 hot dogs (depending on size and girth)
  • 3 egg yolks, beaten
  • 1 camembert
  • 1 clove garlic, cut into slithers
  • 1 sprig rosemary, cut into smaller sprigs
Instructions
  1. Cut the pastry into rectangles that wrap neatly round a whole hot dog with a little room to overlap. Brush the overlap with beaten egg yolk and then roll each hot dog up in pastry. Cut each into three sections.
  2. Place the camembert in the middle of a lined pizza tray and arrange the hot dogs in two rings around it, pointing outwards like spokes on a wheel.
  3. Cut slits in the camembert and poke in the rosemary and garlic.
  4. Brush the pastry wrapped hot dogs thoroughly with egg yolk and bake for 35 - 40 minutes until the pastry has puffed up and turned a deep golden brown.
  5. Cut the lid off the camembert and rip off the individual sausages and dip in the cheese.
  6. Eat (with friends).

Ingredients
  • 1kg beef mince
  • 100g bread crumbs
  • 1 egg
  • 1 tsp salt
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp black pepper
  • 18 slices american style cheese
  • 20 rashers bacon
Instructions
  1. Preheat the oven to 180°C/360°F.
  2. Mix the mince with the seasonings and press it in an even layer into a foil lined baking tray.
  3. Place the cheese in a double layer nearly the whole way up and then roll the whole thing up, using the foil. Leave to set in the fridge for around an hour.
  4. Lay the bacon on another foil lined tray and pop the unwrapped meat log at one end, then roll it up again to create a neat, tight bacon-wrapped meat torpedo.
  5. Bake for 20 minutes in the foil then unwrap for a final 30 mins.
  6. Sit back and observe your magnum opus. Serve with burger stuff - chips, ketchup, mustard and pickles

Ingredients
  • 3 eggs
  • 1 cup chopped ham
  • ½ cup chopped scallions
  • ¾ cup grated mozzarella
  • Salt and pepper
  • Rye Bread
Instructions
  1. Cut centre out of bread.
  2. On a greased non-stick skillet over medium-low heat add ham and scallion until warmed through. Place into a small area which will fit inside the bread.
  3. Add the bread to the pan and spread out the mixture in the hole to fill.
  4. Whisk one egg with salt and pepper. And pour in the hole over the ham and onions. Cover with a lid and let steam until just cooked. Top with cheese and then place cut out piece on top.
  5. Flip carefully and cook until done.
  6. Enjoy!
