- 3 eggs
- 1 cup chopped ham
- ½ cup chopped scallions
- ¾ cup grated mozzarella
- Salt and pepper
- Rye Bread
- Cut centre out of bread.
- On a greased non-stick skillet over medium-low heat add ham and scallion until warmed through. Place into a small area which will fit inside the bread.
- Add the bread to the pan and spread out the mixture in the hole to fill.
- Whisk one egg with salt and pepper. And pour in the hole over the ham and onions. Cover with a lid and let steam until just cooked. Top with cheese and then place cut out piece on top.
- Flip carefully and cook until done.
