Cheeseburger Kebab

Cheeseburger Kebab
This is, quite frankly, the most Twisted creation ever to come out of Twisted HQ. It's a glorious, melting tower of beef with a base of fries. Imagine bringing this to the table with loads of buns and ketchup and getting all your friends and family to slice bits of burger into a lovely bun. They would be very impressed, and you would be very proud. It's also incredibly easy.

Ingredients
  • 4lb/1800g beef mince
  • 2 tbsp salt
  • 1½ tbsp garlic powder
  • 2 tbsp ground black pepper
  • 1 large onion
  • Lots of sliced American cheese
  • Fries
  • Burger buns
  • Sauces
Instructions
  1. Using your hands (give them a good wash please) mix together the beef mince with the salt, pepper & garlic powder.
  2. Weigh the burgers into 150g/5oz patties and press them into a large cookie cutter (this helps keep them the same size).
  3. Make sure your stick is very sharp and stick it into the round side of half an onion. Rest this in the middle of a cookie cutter for added support and begin threading on the burgers and the sliced cheese alternately onto the stick. Make sure they are central or it'll fall over.
  4. Finish with the other half of an onion.
  5. Bake for an hour at 200°C/400°F (increase or decrease cook time according to preference).
  6. Slice & serve with buns and sauces.

Jalapeno Popper Burger Taquitos
Fusion cuisine at its finest. Satisfyingly crunchy, full of burger flavours and wonderful oozy cream cheese. And some other cheese. We love cheese!

Ingredients
  • 1 tbsp oil
  • 6 rashers bacon
  • 1 onion, finely diced
  • 3 cloves garlic, finely diced
  • 4 jalapenos, finely diced
  • 2 lb beef mince
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 8 oz cream cheese
  • 10 regular tortillas
  • Grated red cheddar
Instructions
  1. Heat the oil and fry the bacon until it's looking crispy, dark and golden. Add the onion and cook for around 3 minutes, until soft.
  2. Add the garlic and cook for a further 30 seconds or so then add the diced jalapenos and the beef mince, then stir in the spices and seasoning and the cream cheese. Allow the mixture to cool a little then spoon it onto the tortillas, sprinkle with cheese and roll up tightly.
  3. Fry in batches in hot oil until the taquitos are golden brown and crispy.
  4. Enjoy!

Mini Pizza Stars
Personal sized pizza stars are super fun and easy to make with ready made pizza dough. Fill them with your favourite pizza toppings for a twist!

Ingredients
  • 750g pizza dough, divided into 6
  • ½ cup pizza sauce
  • 1 cup grated mozzarella cheese
  • Pepperoni slices
  • Egg Wash
  • Dried Oregano
  • ⅔ cup mayonnaise
  • 3 tbsp milk
  • 2 tbsp lemon juice
  • 1 tbsp finely choppe parsley
  • 2 tsp chopped garlic
  • 1 tsp onion flakes
  • ½ tsp pepper
  • ½ tsp salt
Instructions
  1. Pre-heat oven to 200ºC. Roll out each dough ball into about 8” flat.
  2. Make 3 cuts with a pizza cutter in the centre of the dough- this will create a star shape that will give you 6 triangles of dough to fold outwards towards the edge.
  3. Lay down some pizza sauce, leaving a decent circle of dough in the middle untouched (where your slits are). Add mozzarella on top of this, followed by slices of pepperoni. Brush egg wash on the triangles. Grab one of the triangles from the centre and overlap it with the corresponding outside edge of the pizza. Continue until you have completed the pizza. Place on a parchment lined baking sheet.
  4. Brush the dough with more egg wash and sprinkle with oregano. Bake for 20 minutes until cheese bubbling and dough is golden brown.
  5. Enjoy!

Giant Cheesesteak Kebab

Look no further than this big boy - exquisitely cooked beef served with gravy drenched peppers and onions, rounded off in a baguette with smooth cheesy sauce.

Ingredients
  • 30 sizzler steaks
  • 2 tbsp salt
  • 1 tbsp pepper
  • 4 garlic cloves, crushed
  • 2 tbsp oil
  • 1 large onion, halved
  • 3 green peppers, cut into slices
  • 1 onion, cut into slices
  • 2 tbsp butter
  • 2 tbsp flour
  • 3 cups milk
  • 1 cup parmesan
  • 1 cup grated mozzarella
  • Salt & pepper to taste
Instructions
  1. Preheat the oven to 140°C/380°F.
  2. Season the steaks with salt, pepper, garlic and a splash of oil.
  3. Skewer half an onion with a large sharp dowling round and thread the steaks onto it, one at a time, making sure they go up in a spiral to help it balance.
  4. When you're nearly at the top spike another onion on the stick.
  5. Scatter the peppers and onions around the base and bake for around ¾ hours or until the meat is tender, basting occasionally.
  6. Make the cheese sauce by heating the butter till foaming, adding the flour and then slowly adding the milk. When the sauce is smooth stir in the cheeses and season.
  7. Remove the kebab from the oven and slice with a sharp knife, then serve in sliced baguettes with the cheese sauce.

Sheet Pan Cheeseburger Quesadilla

Sheet Pan Cheeseburger Quesadilla
The taste of cheeseburgers is surely one of the most sublime experiences on this earth. Up there with your first kiss, the first time you see snow, your first cheeseburger is one of those seminal life moments. All the more reason to serve this to your friends - you can all go one one lovely nostalgia trip together.

Ingredients
  • 1 tbsp vegetable oil
  • 1 onion, finely diced
  • 3 cloves garlic, finely diced
  • 2lb lean beef mince
  • 1 tbsp salt
  • 1 tbsp pepper
  • 1 cup ketchup
  • 12 tortillas
  • ½ cup melted butter
  • 1 tbsp sesame seeds
Instructions
  1. In a large frying pan heat the oil and gently fry the onion. Cook until soft, roughly 5 minutes, then add the garlic and stir again.
  2. Add the mince and break it up with a wooden spoon. Allow to brown on all sides and then add the salt, pepper and tomato ketchup.
  3. Allow to thicken then and take off the heat. Leave to cool for around half an hour.
  4. Cut eight of the tortillas in half and leave the other four whole.
  5. Line a baking sheet and brush it with melted butter, then lay the cut tortillas around the edges, cut side facing outwards against the edge. Place two of the whole tortillas in the middle and lay a layer of American cheese over them. Spread the beef mixture on top and top with more cheese then another layer of tortillas. Brush with more butter and sprinkle with sesame seeds.
  6. Bake for 15 - 20 minutes then uncover and grill for a final 5 minutes to crisp up.
  7. Serve

Cheesy Mashed Potato Dippers
Everybody loves mashed potatoes, and everybody loves a loaded baked potato so why not combine the two? These mashed potato cakes are filled with cheese, chives and crispy bacon, fried until golden. They’re the perfect amalgamation of the two!

Ingredients
  • 6 cups leftover mashed potato
  • 12 bacon slices, sliced and cooked
  • 3 tbsp finely chopped chives
  • 1 tsp salt
  • 1 tsp pepper
  • 3 cups grated cheddar cheese
  • 3 eggs
  • 2 cups flour
  • 2 cups seasoned breadcrumbs
  • Oil to fry
  • Sour Cream
Instructions
  1. In a large bowl mix together mashed potato bacon, chives, salt, pepper and cheese until smooth.
  2. Spread onto a large sheet lined with foil and press into an even layer. Let chill for 30 mins - 1 hour to set up.
  3. Cut 3-inch rounds with a cookie cutter and set aside. Roll up remaining mash mix and continue to cut into rounds until complete.
  4. Coat each potato cake in flour shaking off excess, then egg, then into seasoned breadcrumbs.
  5. Heat enough oil in deep sided pan for shallow frying to 170ºC.
  6. Add potato cakes to oil and cook until both sides are golden brown
  7. Serve with sour cream. Enjoy!

Cheesy Chips Steak Sliders
Why have steak and chips separately when you can combine them in a slider and top with cheese and let it all melt into a delicious beefy cheesy mess?

Ingredients
  • 6 thinly sliced sirloin steaks
  • Salt
  • Pepper
  • 2 tbsp oil
  • 3 cloves garluc
  • 1 bunch thyme
  • 12 slider buns, cut in half, both sides toaster
  • 1 cup garlic mayo
  • Caramelised onions
  • Cooked fries, 1 large pack
  • Grated Swiss cheese
Instructions
  1. Preheat the oven to 180°C/360°F/.
  2. Pat the steaks dry and season them on both sides.
  3. Heat the oil until smoking in a skillet and add as many of the steaks as you can fit. Throw in the garlic and thyme and butter then tip the pan to one side, flip the steak and baste the cooked side with butter, fry for a little longer and remove from the heat.
  4. Spread garlic mayo over the bottom buns then top with the steaks, onions, chips and cheese. Place the top buns on top and bake for around 5 minutes until the cheese is all melted and right nice.

Muffin Tin Cinnamon Roll Apple Pies

Ingredients
  • 4 pie crusts
  • 4 tsp cinnamon
  • 2 tbsp butter
  • 1 tsp cinnamon
  • ¾ cup sugar
  • 3 tbsp plain flour
  • 6 apples, peeled, cored and diced
  • 2 tbsp Demerara sugar
  • Egg wash
  • Vanilla Ice Cream
Instructions
  1. Roll out one pie crust. Brush with melted butter and sprinkle evenly with cinnamon. Roll tightly into a log. Cut into ¼” rounds. Repeat with second pie crust.
  2. Place 4 rounds in each cavity of a muffin tin. Press to adhere and attach to form a crust right to the edges. Brush with egg wash and set aside.
  3. Toss apples with sugar, cinnamon, and flour until coated. Place apples into prepared crust.
  4. Place remaining cinnamon swirl rounds in a circle in-between two pieces of parchment paper. Roll out to ¼” thick. Cut out 3-inch rounds and place on top of the apples. Press edges to seal crust. Brush the top evenly with egg wash, sprinkle with Demerara sugar and make a small slit in the centre with a sharp knife
  5. Bake for 30 minutes until apples are cooked through and crust is golden brown.
  6. Serve with vanilla ice cream. Enjoy!

Crispy Chicken Stoganoff Pasta
It's not often we feature a Russian dish on Twisted, but the (admittedly rather bastardised) stroganoff is an exception. Internationally adored this simple classic is everything we love - creamy, delicious comfort food. Served with buttery pappardelle this is an ideal midweek sumptuous dinner. Forwards, Russia!

Ingredients
  • 4 chicken thighs, deboned
  • 1 tbsp sea salt
  • 1 tsp black pepper
  • 1 tbsp thyme
  • 2 tbsp oil
  • 1 large white onion, sliced
  • 3 garlic cloves, finely diced
  • 5 - 6 large chestnut mushrooms, sliced
  • 1 tbsp paprika
  • 1 tsp salt
  • 1 cup chicken stock
  • 1 small glass wine
  • ½ cup sour cream
  • 1 tbsp dijon mustard
  • ½ cup chopped parsley.
  • Papperdelle
Instructions
  1. Preheat the oven to 200°C/400°F.
  2. Rub the salt, pepper, thyme and oil into the chicken thighs and fry them, skin side down in a wide heavy bottomed sautee pan. Turn them over after around 3 - 4 minutes.
  3. Remove to an oven tray and bake for around 30 minutes until crispy and cooked through.
  4. Meanwhile, fry the onion in a little butter until soft, roughly 5 minutes. Add the garlic and cook for another minute before adding the mushrooms and frying for another 5 - 10 minutes, until they've softened and released some moisture.
  5. Add the paprika and stir everything together then pour over the chicken stock and white wine and stir. Bring to a simmer and stir in the sour cream and parsley. Allow to thicken for a bit while you cook your pasta and cut the chicken against the grain into slices.
  6. Butter the pasta and pour over the sauce then top with the chicken.

Baileys Ice Cube Chocolate Truffles
BAILEYS ICE CUBE CHOCOLATE TRUFFLES recipe.

Ganache:
  • 800g dark chocolate, finely chopped
  • 200ml whipping cream
  • 200ml Baileys Chocolat Luxe
Coating:
  • 500g dark chocolate, finely chopped
  • 2 tbsp coconutoil
  • Melted white chocolate
  • Melted milk chocolate
  • Raspberries
  • Toasted Hazelnuts
Instructions
  1. Drizzle melted white chocolate across one ice cube tray being sure to get across all sides. Drizzle melted milk chocolate across a second tray similar to white chocolate. Set both aside to chill for 10 minutes.
  2. In a microwavable jug, add 500g chocolate and coconut oil. Microwave on high for 2 minutes until completely melted. Pour into each of the 3 ice cube trays and tilt tray in all directions, allowing chocolate to cover the sides. Flip trays upside down to let excess chocolate drip out. Then refrigerate for 5 minutes.
  3. In a large bowl, add 800g chocolate. Microwave 200ml cream and 200ml Baileys Chocolate Luxe together until steaming. Pour over chocolate and let sit for minute. Stir to combine until smooth.
  4. In the ice cube tray with white chocolate drizzle, fill ⅓ with ganache. Then add half a raspberry to each. Fill with ganache, smooth over and then top with coating and smooth over. Repeat a second tray with on milk chocolate drizzle, and fill the same way with a hazelnut.
  5. In the third plain tray, fill completely with ganache and seal with remaining coating. Chill all trays until set about 15-20 minutes.
  6. Pop chocolates out carefully and trim excess chocolate if needed. Place in a chocolate box to gift or enjoy as is!
