Ham And Cheese French Toast Roll-Ups
Communal breakfasts dishes are fun and make breakfast/brunch even easier to host. These ham and cheese roll ups can be prepped the day before and baked in the morning. They're delicious and the flavour combos are endless!

Ingredients
  • 1 loaf white bread
  • 2 cups grated cheddar cheese
  • 1 cup finely chopped ham
  • 2 tbsp chopped chives, plus extra for garnish
  • ½ tsp pepper
  • 3 eggs
  • ½ cup milk
  • ½ tsp salt
  • ½ tsp pepper
  • 1 -2 cups grated parmesan cheese
Instructions
  1. Mix together cheddar cheese, ham, chives and pepper.
  2. Cut crusts off bread and roll flat with a rolling pin. Spread about 2 tbsp of mix and flatten slightly on the bread. Roll into a tight log and then cut in half. Set aside.
  3. Mix together eggs, milk and remaining salt and pepper.
  4. Dip each roll into egg mix then roll in grated parmesan. Arrange in a spring form pan.
  5. Pour any remaining egg mix over top. Cover and let sit int he fridge for 30 minutes.
  6. Bake for 30-40 minutes at 180ºC (350ºF).
  7. Garnish with chives. Enjoy!

Tuscan Chicken Potato Lasagna
TUSCAN CHICKEN POTATO LASAGNA

Ingredients
  • 3 chicken breasts
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tbsp oil
  • 2 tbsp butter
  • 3 cloves garlic, crushed
  • 2 tbsp flour
  • 600ml chicken stock
  • 300ml double cream
  • 200g drained and chopped sundried tomatoes
  • 150g spinach, cooked and drained
  • 50g parmesan, grated
  • 1 tbsp Italian herb seasoning
  • 6 or so smallish potatoes, unpeeled
  • 18 sheets of mozzarella
Instructions
  1. Preheat the oven to 180°C360°F.
  2. Coat the chicken breasts with the paprika, salt, pepper and oil. Fry them in a hot pan until browned on both sides, then oven bake for a further 5 minutes until cooked through. Shred with two forks.
  3. Meanwhile, heat the butter until foaming and fry the garlic. Add the flour and stir, cooking for a further minute. Pour over the chicken stock gradually, beating it in with a wooden spoon each time to make a thick sauce.
  4. Pour in the double cream and stir everything together, then add the sundried tomatoes, cooked spinach, parmesan and Italian herbs. Add the cooked chicken and take off the heat.
  5. Using a mandolin or a sharp knife slice the potatoes as thinly as possible. Lay them in an even layer along the bottom of a greased lasagna dish. Top with a layer of mozzarella slices and spread a third of the cream chicken mix on top. Repeat three times, finishing with a layer of the cheese.
  6. Bake for around one and a half hours until cooked through.

Eton Mess Ice Cream Sandwiches

Eton Mess Ice Cream Sandwiches
The ice cream sandwich, or variants thereof, is found in countries as diverse as Iran and Uruguay and is even traditionally scoffed for breakfast in Sicily. At it's most basic its just ice cream between something that makes it easier to hold, like bread or a wafer, but in our rather baroque and terribly British version, we've used meringue.

Ingredients
  • 400g chopped strawberries
  • 50g water
  • 75g sugar
  • 1 tsp lemon juice
  • 500ml double cream
  • 1 x 397ml can sweetened condensed milk
  • 1 tbsp vanilla essence
  • 7 large egg whites
  • 320g white caster sugar
  • 1½ tsp white wine vinegar
  • 1½ tsp cornflour
Instructions
  1. Heat the strawberries, water and sugar in a saucepan. Simmer until the strawberries have broken up and the liquid has become thick and syrupy - this may take a while, but persevere as it's crucial to the setting of the ice cream that there's not too much water in the mixture. Turn the heat off and add the vanilla essence and lemon juice. Set aside to cool.
  2. Meanwhile, preheat the oven to 110°C fan/220°F. Whip the cream until it forms stiff peaks, then beat in the condensed milk. Pour into a 20cm lined square brownie tin then leave to set in the freezer, preferably overnight.
  3. Using clean, electric beaters, whisk until the eggs hold soft peaks. Add the sugar, 1 tbsp at a time, whisking well between each addition, until the meringue is thick and glossy, and will hold up in stiff peaks on the end of the beaters.
  4. Add the vinegar and cornflour and whisk again until combined. Using a large spoon, evenly divide onto both 20cm lined baking trays.
  5. Bake them for two hours then turn off the oven and leave to sit overnight - depending on your oven this should mean the meringues are crispy on the outside yet chewy inside and therefore a lot easier to cut.
  6. Remove the ice cream from the fridge and place one of the meringue sheets on top, bobbly side up. Very gently turn it over onto the board you want to serve it on so the ice cream is facing up. Peel away the greaseproof paper and place the other meringue sheet on top, flat side against the ice cream. Chill in the freezer until ready to serve, then cut into 9 squares.

Lasagna Stuffed Rigatoni Pie
Rigatoni pies are fun to make and eat. Filling them with ragu and ricotta make it even tastier than the average. Lasagna Rigatoni Swirl pie will be a fun addition to the dinner table!

Ingredients
  • 500g rigatoni noodles
  • ¾ cup parmesan cheese, split
  • 1500g ragu
  • 2 cups ricotta cheese
  • ¼ tsp salt
  • ½ tsp pepper
  • 1 tbsp finely chopped parsley
  • ¼ tsp nutmeg
  • 1 egg, whisked
  • Sliced mozzarella Cheese
  • Extra chopped parsley
Instructions
  1. Boil noodles for 5-6 minutes until al dente. Drain and toss in parmesan cheese.
  2. Pre-heat oven to 180ºC (350ºF). Line a spring form pan with parchment paper.
  3. Mix together ricotta, eggs, parmesan cheese, salt, pepper, parsley and nutmeg until smooth. Transfer to a piping bag.
  4. Fill half of the cooked noodles with ricotta mixture and the other half with ragu.
  5. Arrange noodles alternating ricotta and ragu filling to form a spiral in to the centre.
  6. Lay sliced mozzarella over top. Cover and bake for 15 minutes. Remove cover and broil for 5 minutes until golden on top.
  7. Remove from springform tin, sprinkle with parsley.
  8. Enjoy!

Mini Pizza Burger Dough Balls
Mini pizza burger dough balls are your new favourite duo treat. Perfectly paired with an ice cold pint and some chips on the side!

Ingredients
  • 800g beef mince, 5%
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp oregano
  • 660g pizza dough
  • ½ cup pizza sauce
  • ¾ cup grated mozzarella
  • 24 slices pepperoni
  • ½ cup garlic butte
Instructions
  1. Mix together mince, salt, pepper and oregano. Take about 2 tbsp of mix and form into a slider sized patty. Repeat with remaining meat.
  2. Heat a cast iron or a non stick pan over medium-high heat. Add oil and sear each patty on both sides for 1-2 minutes until browned. Remove and let cool.
  3. Take 50g balls of dough and flatten out. Place one patty topped with 1 tsp pizza sauce, 1 tbsp grated mozzarella and two slices of pepperoni. Top with another patty and wrap bread dough evenly to seal. Arrange each on a tray.
  4. Brush each with garlic butter and bake for 20-30minutes at 180ºC (350ºF) until golden brown. Cover with a piece of foil if browning too quickly.
  5. Let cool slightly and enjoy!

Cheesy Chicken Fajita Dip 'N' Chips
CHEESY CHICKEN FAJITA DIP 'N' CHIPS

Ingredients
  • 3 chicken breasts
  • 3 mixed peppers, diced
  • 1 onion, diced
  • 2 tbsp oil
  • 2 tbsp fajita seasoning
  • ½ tsp salt
  • 5 tortillas
  • 2 tbsp butter
  • 1 tsp salt
  • 400g cream cheese
  • 200g red cheddar
  • 1 tbsp cornflour
  • 1 tsp salt
  • 1 tsp pepper
  • 3 tbsp pickled jalapenos
Instructions
  1. Bake chicken and peppers with oil, 1 tsp salt and the seasoning for 25 minutes at 200°C/400°F.
  2. Dice the chicken and mix with the peppers into the softened cream cheese, red cheddar, cornflour, ½ salt and pepper. Top with extra cheddar and bake for 20 minutes. Sprinkle with jalapeno peppers.

Cheeseburger French Dip Sliders

Cheeseburger French Dip Sliders
Made with fresh grapes, sweet white wine, and sprinkles of gold leaf, it's the perfect cake for brunchtime gatherings.

Ingredients
Crust:
  • 2 ounces fruit granola
  • 2 tablespoons butter, melted
Cheesecake filling:
  • 1½ teaspoons gelatin
  • 1 tablespoon water
  • 3½ ounces cream cheese, room temperature
  • 2½ tablespoons granulated sugar
  • ½ cup yogurt
  • 1½ cups heavy cream
  • 1 tablespoon lemon juice
White wine jelly:
  • 1 cup white wine
  • 4 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • 2½ teaspoons gelatin, mixed with 2 tablespoons water
  • Gold leaf
To assemble:
  • 1 bunch Muscat grapes
  • Handful of blueberries
Instructions
Prepare the crust:
  1. Use a rolling pin to grind the granola until fine. Combine it with the melted butter, and press mixture into the bottom of a round springform pan. Place in refrigerator to chill.
Prepare the filling:
  1. Sprinkle the gelatin over the water and let it soak for 5 minutes. Place in microwave for 20 seconds at 500 watts then transfer to a food processor. Add remaining cheesecake ingredients and pulse until combined. Pour mixture on top of the granola crust and place back in fridge to solidify.
Prepare the jelly topping:
  1. In a small saucepan over medium heat, add white wine and sugar. Turn heat off once mixture starts to boil, then add lemon juice, gold leaf and gelatin. Stir until gelatin melts. Cool the saucepan in ice water until the gelatin mixture thickens.
Assemble:
  1. Remove cheesecake from fridge. Line outer rim with grapes and blueberries in a wreath shape. Pour the white wine jelly over the top of the fruit.
  2. Chill in refrigerator until set.

Philly Cheesesteak Triangles
Tortillas - cultural appropriation or the best thing since, well, squashed bread? This now ubiquitous staple of larders worldwide has proved its versatility time and time again, from the taco to the quesadilla. We've taken them and used them as a shell for deep fried cheesesteak goodness, crispy and hot on the outside, gooey and melty in the middle.

Ingredients
  • 3 tbsp vegetable oil
  • 2 steaks, frozen for around two hours, then sliced extremely thinly with a sharp knife.
  • 2 green peppers, diced
  • 1 onion, diced
  • 2 cloves garlic, diced
  • Salt
  • Pepper
  • Tortillas
  • ¼ flour
  • ¼ water
  • Mozzarella sheets, sliced into triangles
  • Groundnut oil, for frying
  • Ranch dressing
Instructions
  1. Heat the oil in a large heavy frying pan or wok until it's really hot then add the beef, stir frying quickly until cooked through. Remove and clean the pan, then add back to the heat, turning it down slightly.
  2. Add a little more oil and fry the onions and peppers together until soft. Add the garlic and cook for another minute or so before adding the steak back in, seasoning, stirring, and taking off the heat.
  3. Cut the tortillas down the middle - how many you use depends on how many you want to make; you'll probably have some mixture left which you can always freeze and use later.
  4. Using a spoon whisk together the flour and water to make a sticky paste. Paint this carefully along one half of the straight edge of each halved tortilla, place the sliced cheese in the middle, and fold over the corners to make a triangle, sticking the sides together to make a pouch.
  5. Fill this with the cheesesteak mix and brush a little more paste along the edge. Press the edges to stick together.
  6. Heat the oil to 170°C/340°F and fry in batches of three until golden brown.
  7. Serve with ranch dip.

BAILEYS TIRAMISU FLOATS

Ingredients
  • 510ml heavy cream
  • 125g mascarpone
  • 10ml vanilla essence
  • 320ml Baileys Iced Coffee
  • 1 can sweetened condensed milk
  • Chocolate Sauce
  • Lady fingers
Instructions
  1. In a large bowl, whisk together 360ml cream, mascarpone, vanilla and 120ml Baileys iced coffee until soft peaks are formed. Fold in one can of condensed milk. Pour into a loaf tin and freeze overnight to set.
  2. Whip together 80ml Baileys Iced coffee and remaining heavy cream to stiff peaks.
  3. Place two scoops of ice cream in the bottom of a glass. Top with Baileys iced coffee, whipped cream, 1 lady finger broken in half and drizzle with chocolate sauce.
  4. Enjoy!

Giant Big Mac Pizza Roll
This Giant Big Mac Pizza Roll tastes exactly like a cheeseburger and is a great sharer. We recommend serving it with burger sauce for the ultimate Big Mac experience!

Ingredients
  • 2 tsp oil
  • 800g beef mince
  • ½ tsp salt
  • 1 tsp pepper
  • ¼ cup ketchup
  • 12 sliced cheddar cheese
  • 500g pizza dough
  • 1 onion, finely diced
  • 5 large pickles, finely diced
  • Water
  • Sesame seeds
Instructions
  1. Pre-heat oven to 190ºC. Heat oil over medium high heat. Add mince, salt and pepper. Break apart and cook until browned and beef is cooked through. Stir through ketchup then set aside to cool.
  2. Roll out pizza dough to ¼” thickness. Arrange sliced cheese evenly leaves a 1” border around the edges. Top with meet mixture, scatter onions and pickles over top.
  3. Roll tightly and pinch any open edges to seal.
  4. Transfer to a baking sheet. Brush with water and sprinkle with sesame seeds.
  5. Bake for 30-40 minutes until golden brown.
  6. Let cool for 10 minutes before slicing.
  7. Enjoy!
