Bake chicken and peppers with oil, 1 tsp salt and the seasoning for 25 minutes at 200°C/400°F.
Dice the chicken and mix with the peppers into the softened cream cheese, red cheddar, cornflour, ½ salt and pepper. Top with extra cheddar and bake for 20 minutes. Sprinkle with jalapeno peppers.
