BBQ CHICKEN RANCH LOADED FRIES

Ingredients
  • 4 chicken breasts
  • 1½ cups BBQ sauce
  • Cooked fries
  • 2 cups cheddar, grated
  • 1 cup mayonnaise
  • ½ cup sour cream
  • ½ tsp paprika
  • ½ tsp onion powder
  • ¼ tsp garlic powder
  • ½ tsp salt
  • 1 cup crispy bacon pieces
  • ½ cup pickled jalapenos, diced
Instructions
  1. Pour the BBQ sauce over the chicken and bake for 1 hour at 160°C, flipping half way. Shred with two forks.
  2. Meanwhile, cook your frozen fries according to packet instructions and pop them in a large skillet or baking dish.
  3. Spoon the chicken on top of the fries and cover with the grated cheese. Chuck in the oven at 200°C for 10 minutes.
  4. Mix together the mayonnaise, sour cream, paprika, onion powder, garlic powder and salt. Transfer to a squeezey bottle.
  5. When the cheese is all melted and nice, top with ranch sauce, crispy bacon and jalapenos.
  6. Destroy!

Giant Spicy Pepperoni Pizza Roll
This Giant Spicy Pepperoni Pizza Roll is quite a game changer. Fill it with more of your favourite pizza toppings and be sure to share it!

Ingredients
  • 3 cloves garlic, finely chopped
  • ⅓ cup olive oil
  • 1 tsp oregano
  • ½ tsp pepper
  • 500g pizza dough
  • Sliced mozzarella
  • Sliced Pepperoni
  • Chopped Jalapeños
  • 2 tbsp chopped parsley
Instructions
  1. Pre-heat oven to 200ºC/400ºF.
  2. Mix together garlic, olive oil, oregano and pepper. Set aside.
  3. Roll out dough into a large rectangle about ¼-inch thick.
  4. Brush with garlic oil leaving abut 1” around the edges. Top with a layer of mozzarella followed by pepperoni, jalapeños and repeat, finishing with mozzarella.
  5. Fold over the bottom edge and the sides. Roll into a tight log and and pinch the edges to seal.
  6. Place on a parchment lined baking sheet. Add parsley to remaining garlic oil and brush generously over top.
  7. Cut 5 slits in the top not too deep using scissors.
  8. Bake for 30-40 minutes until golden brown and centre bread is cooked.
  9. Slice and enjoy!

Tiramisu French Toast
The word 'tiramisu' comes from the Venetian for "pick me up". Thanks Wikipedia. Essentially a sort of Italian trifle packed full of cream, dainty little biscuits, marsala and coffee. Allow us to gild the lily even further and take these flavours and stick them in French toast. Because we can.

Ingredients
  • 125g mascarpone
  • 300ml double cream
  • 25ml marsala
  • 3 eggs
  • 80ml milk
  • 1 shot espresso
  • 25ml marsala
  • 1 tsp vanilla essence
  • 4 slices bread
  • 2 tbsp vegetable oil
  • 2 tbsp butter
  • 3 cubes dark chocolate
Instructions
  1. Whisk the mascarpone and double cream to stiff peaks and set aside.
  2. Whisk the eggs, milk, espresso, marsala and vanilla essence. Dip each slice of bread in the mixture.
  3. Heat the oil and butter in the frying pan and, on a medium heat, fry the French toast on both sides until golden brown all over.
  4. Layer the toast with the whipped cream, chocolate sprinkles, more toast and cream and more chocolate.

Crispy Chicken Lemon Spaghetti
This crispy chicken lemon spaghetti is a delicious and creamy. With minimal ingredients and just a bit of time this meal is ready in just 30 minutes.

Ingredients
  • 2 tbsp oil
  • 4 chicken breasts, butterflied
  • ½ cup flour
  • 1½ cups grated parmesan cheese, split
  • 1 tsp pepper
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 2 cups heavy cream
  • Juice of 2 lemons
  • Zest of 1 lemon
  • Salt and pepper to taste
  • 500g spaghetti, cooked
  • 2 tbsp chopped parsley
Instructions
  1. Mix together flour, 1 cup parmesan, and 1 tsp pepper.
  2. Coat chicken in mixture and press to adhere.
  3. Heat oil in a non-stick pan over medium heat. Sear chicken breasts on each side until golden brown and cooked through. Set aside and keep warm.
  4. Reduce temperature of the pan to medium. Add butter and garlic. Cook until fragrant. Add lemon juice and let reduce slightly. Pour in cream and remaining parmesan cheese. Bring to a simmer.
  5. Add cooked spaghetti, parsley and season with salt and pepper to taste. Toss to coat
  6. Serve pasta and sliced chicken on top .Garnish with additional parsley (optional)
  7. Enjoy!

Mini Chicken Jalapeño Popper Tacos
Bite sized tacos filled with delicious chicken jalapeño popper dip. Covered in a crispy cheesy panko crumb and baked until golden. Serve up a tray for your next game day.

Ingredients
  • 8 large tortillas
  • 1 cup melted butter
  • ½ tsp garlic powder
  • ½ tsp pepper
  • 2 cups shredded cooked chicken
  • 1 cup cream cheese
  • 1 cup grated cheddar cheese, split
  • ½ cup grated Parmesan cheese
  • ½ cup chopped cooked crispy bacon
  • 3 jalapeños, deseeded and diced
  • ½ cup Panko bread crumbs
  • ½ tbsp butter, melted
Instructions
  1. Cut out 3” rounds from tortillas, about 5 per tortilla.
  2. Mix together 1 cup butter, garlic powder and pepper. Coat each tortilla round in the butter and place in a taco shape on the underside of a cupcake tin as seen in the video.
  3. Bake for 6-7 minutes at 180ºC until golden brown.
  4. Meanwhile, mix together chicken, cream cheese, ½ cup cheddar, parmesan, bacon, and jalapeños.
  5. Fill each taco with chicken mixture and arrange on a tray. Standing up.
  6. In a bowl mix together panko, remaining butter and cheese. Sprinkle over tacos and bake for 10 minutes until heated through and golden brown.

Bacon Cheeseburger Dip
This cheeseburger dip it's quick and easy to make with delicious sesame bun dippers. A sharing dish perfect for your next party!

Ingredients
  • Sesame burger buns
  • Egg wash
  • Sesame seeds
  • 400g beef mince, cooked
  • 2 tbsp ketchup
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 1 cup cream cheese
  • 1 cup grated cheddar cheese split
  • ¾ cup crispy bacon bits, split
  • Diced pickles
Instructions
  1. Slice buns in half and roll flat with a rolling pin. Brush each side with egg wash and sprinkle with sesame seeds. Cut each half into thirds to form triangles. Arrange on a tray and bake in at 180ºC for 10 minutes until golden brown
  2. In a large bowl, mix together beef, ½ cup bacon, ketchup, sour cream, mayonnaise, cream cheese and ½ of the cheddar cheese. Spread into a baking dish and sprinkle with remaining cheddar.
  3. Cover with foil and bake for 20 minutes, remove foil and grill for 5 minutes.
  4. Sprinkle with remaining bacon and diced pickles.
  5. Serve with sesame bread dippers, enjoy

It's all about the hybrids these days - Alien Vs Predator, Batman Vs Superman... Now meet the culinary version. Mac & Cheeseburger Lasagna. Gooey, stringy mac and cheese and delicious burger mince in one smooth package. You saw it here first.

Ingredients
  • 1 tbsp oil
  • 1 onion, diced
  • 750g /3/4 lb beef mince
  • 1 tbsp salt
  • 1 tsp white pepper
  • 1 tsp garlic powder
  • 125g / ½ cup ketchup
  • 50g / 2 tbsp butter
  • 50g / 2 tbsp flour
  • 750 ml / 3 cups milk
  • 300g / 2 cups grated mozzarella
  • 300g / 2 cups grated emmental
  • 4 tbsp parmesan
  • 500g macaroni, cooked
  • American cheese
  • 3 tbsp panko breadcrumbs
Instructions
  1. Preheat the oven to 180°C/360°F.
  2. Gently fry the onion in a little oil until soft, then whack the heat up and brown the beef mince. Add the seasonings and cook for a little bit to get rid of some of the moisture, then stir in the ketchup and set aside.
  3. Heat the butter until foaming and whisk in the flour. Allow it to cook through and begin to smell a bit biscuity then pour in the milk gradually, whisking vigorously to make a smooth paste into which you gradually incorporate into more milk.
  4. Take it off the heat and allow it to cool, then stir in the cheeses and the macaroni.
  5. Spread a thin layer of the macaroni cheese on the bottom of the lasagna dish then smooth it flat. Top with a layer of American cheese then a layer of the beef mixture and more cheese. Repeat up to the top of the dish, finishing with mac & cheese and a sprinkling of breadcrumbs.
  6. Bake for around 40 mins until the crumbs are golden and the whole dish is bubbling.

BBQ Chicken Stuffed Crust Deep Dish Pizza
A deep dish pizza slathered in cheese and stuffed with a naughty crust of chicken - this is going to be your new favourite dirty dinner. It's basically everything you've wanted a pizza to be; an unholy (but delicious) trinity of chewy bread, sloppy cheese and tasty toppings.

Ingredients
  • 3 shredded chicken breasts
  • 2 cups grated mozzarella
  • 1 cup BBQ sauce
  • 1 tbsp salt
  • pizza dough
  • 6 tbsp pizza sauce
  • 1 cup cooked bacon pieces
  • 2 cups mixed cheddar and mozzarella
  • garlic butter
Instructions
  1. Preheat the oven to 200°C/400°F
  2. Mix together the shredded chicken with the mozzarella, BBQ sauce and salt.
  3. Roll out the pizza dough and lay it over a large oven tray. Spoon the mixture around the sides and fold them over, pressing together to seal.
  4. Spread the middle with pizza sauce and sprinkle with chopped bacon and mixed cheese - we used red cheddar and mozzarella.
  5. Bake for 20 minutes until the crust is nice and crisp and cooked through.

Sloppy Joe Cheesesteak Pasta
Tastes like a philly cheese steak sandwich but with our favourite, pasta! Serve this up for a quick and easy dinner!

Ingredients
  • 2 tbsp oil
  • 1 white onion, diced
  • 2 Green peppers, diced
  • 750g beef mince
  • 2 tbsp Worcestershire sauce
  • 3 garlic cloves, minced
  • Salt to taste
  • Pepper to taste
  • 1 cup beef stock
  • 500g cooked penne
  • 1½ cups grated cheddar
  • 1 cup grated mozzarella
  • Chives
Instructions
  1. In a large sauté pan over medium-high heat, add oil, onions and peppers. Fry until just softened. Spread to the edges of the pan and add the beef mince into the centre.
  2. Cook mince, breaking apart into small bits until browned. Add garlic, Worcestershire sauce, salt and pepper to taste. Cook for 2 minutes until garlic is aromatic.
  3. Add stock and bring to a boil. Simmer for 5-8 minutes with lid on to reduce slightly. Add pasta, and stir through cheddar and mozzarella to melt.
  4. Sprinkle with chives.
  5. Enjoy!

Creamy Parmesan Mushroom Chicken
Chicken covered in a cream mushroom and spinach sauce it perfect for dinner any night of the week. Serve it with sliced garlic bread and a salad for a compete meal!

Ingredients
  • 2 tsp oil
  • 4 chicken breasts
  • salt to taste
  • pepper to taste
  • 2 tbsp butter
  • 2 cups chopped mushrooms
  • 2 cloves garlic minced
  • ½ cup white wine
  • 2 cups heavy cream
  • ½ tsp oregano
  • 1 cup grated parmesan
  • 2 cups chopped spinach
  • Sliced fresh mozzarella
Instructions
  1. Add oil to a non-stick pan over medium-high heat. Sear chicken breasts on both sides until golden. Remove and set aside.
  2. Add butter and mushrooms to the same pan and cook until golden and softened. Add garlic and white wine. Let reduce slightly. Pour in cream, oregano, parmesan, salt and pepper to taste and spinach. Bring to a simmer and cook for 10 minutes to thicken and cook spinach though.
  3. Add chicken back in, top with sliced mozzarella and grill for 5-8 minutes.
  4. Serve with garlic bread and salad.
  5. Enjoy!
