Cilantro-Lime Shrimp Foil Packs

Ingredients
  • 1 lb. medium shrimp, peeled and deveined
  • 3 ears corn, quartered
  • 1 zucchini, cut into half moons
  • 2 cloves garlic, minced
  • 2 tsp. ground cumin
  • 1 tsp. crushed red pepper flakes
  • 2 tbsp. freshly chopped cilantro
  • Extra-virgin olive oil, for drizzling
  • kosher salt
  • Freshly ground black pepper
  • 2 limes, sliced into rounds
  • 2 tbsp. butter
Instructions
  1. In a large bowl, combine shrimp, corn, zucchini, garlic, cumin, red pepper flakes, and cilantro. Drizzle with olive oil, season with salt and pepper, and toss until combined.
  2. Lay out four pieces of foil. Divide shrimp mixture between foil and top each with a pat of butter and lime slices. Seal packs.
  3. Heat grill to high. Add shrimp packs and grill until shrimp is pink, about 10 minutes.
  4. Serve.

Krispie Treat Ice Cream Bowls
Don't just lick your bowl clean, eat it!

Ingredients
  • ¼ c. butter
  • 10 oz. mini marshmallows
  • kosher salt
  • 5 c. Rice Krispies
  • Ice cream, for serving
Instructions
  1. In a large pot over medium heat, melt butter.
  2. Pour in mini marshmallows and stir until melted. Season with a pinch of salt if desired. Remove from heat and stir in cereal until it's fully coated in marshmallow.
  3. Line a bowl with plastic wrap, then press Rice Krispie treat mixture into the inside of the bowl to create a new bowl. Repeat until you have used up all of the Rice Krispie mixture, then freeze bowls, 1 hour.
  4. Pop Rice Krispie treat shells out of the bowls and serve with your favorite ice cream.

Chicken Enchilada Pie

Chicken Enchilada Pie

Ingredients
  • Cooking spray, for pan
  • 5 medium flour tortillas
  • 1 tbsp. extra-virgin olive oil
  • ½ medium onion, chopped
  • 2 garlic cloves, minced
  • 1 (19-oz.) can enchilada sauce
  • 3 c. shredded chicken
  • 1 (15-oz.) can corn, drained
  • 1 (15-oz.) can black beans, drained and rinsed
  • 3 c. shredded cheddar
  • 3 c. shredded monterey jack
  • Freshly chopped cilantro, for garnish
  • Sour cream, for garnish
Instructions
  1. Make crust: Preheat oven to 350°. Grease a 9” springform pan with cooking spray. Arrange 4 tortillas in bottom of pan, pressing tortillas up sides of pan. Bake until lightly golden, about 15 minutes.
  2. Make filling: In a large skillet over medium heat, heat olive oil. Add onion and cook until soft, about 5 minutes. Stir in garlic and cook until fragrant, another minute. Add enchilada sauce and chicken and bring mixture to a simmer. Remove from heat.
  3. Assemble pie: Spoon an even layer of chicken on top of baked tortilla crust then top with half each of corn, black beans, cheddar, and Monterey jack. Top with remaining chicken, corn, and black beans; then place remaining tortilla on top and sprinkle with remaining cheese.
  4. Bake 40 minutes, or until the tortillas are golden and toasty and the cheese has melted.
  5. Let cool in pan for at least 10 minutes, then garnish with pico de gallo, cilantro and sour cream.

Broccoli Cheesy Bread

Broccoli Cheesy Bread
Wringing the steamed broccoli out with paper towel or cheesecloth insures your cheesy bread is crisp, not soggy.

  • 3 c. riced broccoli
  • 1 large egg
  • 1½ c. shredded mozzarella
  • ¼ c. freshly grated Parmesan
  • 2 cloves garlic, minced
  • ½ tsp. dried oregano
  • Kosher salt
  • Freshly ground black pepper
  • Pinch crushed red pepper flakes (optional)
  • 2 tsp. freshly chopped parsley
  • Warmed marinara, for serving
Instructions
  1. Preheat oven to 425° and line a large baking sheet with parchment paper. Microwave riced broccoli for 1 minute to steam. Carefully ring out extra moisture from the broccoli using paper towel or cheese cloth.
  2. Transfer broccoli to a large bowl and add egg, 1 cup mozzarella, Parmesan, and garlic. Season with oregano, salt, and pepper. Transfer dough to baking sheet and shape into a thin, round crust.
  3. Bake until golden and dried out, 20 minutes. Top with with remaining ½ cup mozzarella and bake until cheese is melted and crust is crispy, 10 minutes more. Garnish with parsley and pepper flakes if using. Serve warm with marinara.

Hawaiian Cheesecake Salad
"Salad" seems like a bit of a stretch, but it's basically a fruit salad — even if it is tossed in a whipped cheesecake topping.

  • 1 (8-oz.) block cream cheese, softened
  • ½ c. powdered sugar
  • 1 tbsp. lemon juice
  • 1 (8-oz.) tub Cool Whip, defrosted
  • 1 (11-oz.) can mandarin oranges, drained
  • 2 c. chopped pineapple
  • 2 c. cubed mango
  • 2 c. quartered strawberries
  • 1 c. blueberries
  • 2 kiwis, sliced
  • 4 graham crackers, crushed, for garnish
Instructions
  1. In a large bowl using a hand mixer, beat together cream, cheese, powdered sugar, and lemon juice until light and fluffy. Fold in Cool Whip.
  2. Fold in mandarin oranges, pineapple, mango, strawberries, blueberries, and kiwi slices. Top each serving with crushed graham crackers.

Potato Skin Bites
These cheesy bites taste just like potato skins, but they're SO much easier.

Ingredients
  • 3 russet potatoes, scrubbed clean
  • 2 tbsp. olive oil
  • kosher salt
  • Freshly ground black pepper
  • Pinch cayenne pepper
  • 1 tsp. garlic powder
  • 6 slices bacon, cooked and crumbled
  • 1½ c. shredded Cheddar
  • 3 green onions, thinly sliced
  • Sour cream, for serving
Instructions
  1. Preheat oven to 400°. Slice potatoes into ½" coins.
  2. In a large bowl, toss the potato rounds in olive oil. Season with salt, pepper, cayenne and garlic powder, and toss until evenly coated. Place in a single layer on a large baking sheet. Bake for 30-40 minutes, until lightly browned and tender, flipping halfway through.
  3. Top each potato round with cheese and bacon. Broil until melty, about 2 minutes.
  4. Dollop sour cream onto each potato and garnish with green onions.

  • 1 c. all-purpose flour
  • 2 large eggs, beaten
  • 2 c. Italian bread crumbs
  • 4 tbsp. butter, melted
  • 4 cloves garlic, minced
  • ½ c. freshly grated Parmesan, plus more for garnish
  • 2 tbsp. fresh chopped parsley, plus more for garnish
  • 1 tsp. crushed red pepper flakes
  • kosher salt
  • Freshly ground black pepper
  • 3 boneless skinless chicken breasts
  • Caesar dressing, for dipping
Instructions
  1. Preheat oven to 425° and line a large baking sheet with parchment paper.
  2. Set up dredging station: Place flour and eggs into two separate shallow bowls. In a third shallow bowl, whisk together bread crumbs, melted butter, garlic, Parmesan, parsley and red pepper flakes. Season mixture with salt and pepper.
  3. Toss chicken in the flour until fully coated, then shake off excess flour and add to eggs. Toss chicken in eggs until fully coated, then shake off excess and add to bread crumb mixture. Toss chicken in bread crumb mixture until fully coated, then place on baking sheet.
  4. Bake until golden and crispy, about 20 minutes. Garnish with more Parmesan and parsley and serve warm with Caesar dressing for dipping.

Pasta Chips
Our two favorite foods in one crunchy snack!

Ingredients
  • 1 lb. bowtie pasta
  • Vegetable oil, for frying
  • 1 tsp. Italian seasoning
  • 1 tsp. garlic powder
  • ½ c. finely grated Parmesan
  • kosher salt
  • Freshly ground black pepper
  • marinara, for serving
Instructions
  1. In a large pot of salted boiling water, cook pasta until al dente, about 8 minutes. Drain pasta.
  2. In a large, deep skillet, pour about ½” vegetable oil and heat over medium. When the oil is shimmering, add about 1 cup al dente pasta in a single cook. Cook until golden brown and crispy, about 2 minutes per side. Drain on paper towels, then season immediately with some Italian seasoning, garlic powder, Parmesan, salt and pepper. Repeat, working in batches, with the rest of the pasta.

Red Velvet Cheesecake Bites
Covered in red velvet cake crumbs, these sweet cheese balls are the perfect small bite for any holiday party.

Ingredients
  • 16 oz. cream cheese, softened
  • ¼ c. sugar
  • ¼ c. heavy cream
  • ¼ tsp. vanilla
  • ½ baked red velvet cake, broken into crumbs
Instructions
  1. In a large bowl using a hand mixer, beat cream cheese and sugar until light and fluffy. Add heavy cream and vanilla and beat until stiff peaks form.
  2. Transfer mixture to the freezer to firm up, 2 hours.
  3. Using a small cookie scoop, scoop small balls of mixture and use your hands to form the mixture into ball.
  4. Roll mixture in red velvet cake crumbs, then transfer to a parchment-lined baking sheet. Once all cheesecake bites are rolled, transfer to the refrigerator to chill and harden, at least 1 hour.

Baked Bloomin' Onion
Who knew you could make this at home, let alone make it healthy?!

Ingredients
FOR THE ONION
  • 1 large yellow onion
  • 3 large eggs
  • ¼ c. water
  • 1 c. bread crumbs
  • 2 tsp. paprika
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. kosher salt
FOR THE DIPPING SAUCE
  • ⅔ c. mayonnaise
  • 2 tbsp. ketchup
  • 1 tsp. horseradish
  • ½ tsp. paprika
  • ½ tsp. garlic powder
  • ¼ tsp. dried oregano
  • kosher salt
Instructions
  1. Preheat oven to 400°.
  2. Cut stem off onion and place flat side down. Cut ½" from the root down, into 12 to 16 sections, making sure not to cut through root. Flip over and pull sections of onion out gently to separate petals.
  3. In a medium bowl, whisk eggs with water. Dip onion into egg wash, using a spoon to coat fully if needed.
  4. In another medium bowl, combine bread crumbs, paprika, garlic powder, onion powder and salt. Dredge onion with bread crumb mixture, again using a spoon to coat fully if needed.
  5. Bake onion until golden and tender, 18 to 20 minutes.
  6. Make the dipping sauce: In a medium bowl, whisk together mayo, ketchup, horseradish, paprika, garlic powder and oregano. Season with salt and serve.
