  • 1 package chocolate cake mix, plus ingredients listed on the box.
  • 12 ounces caramel sauce
  • ½ cup mini chocolate chips
  • ¾ cup pecan pieces
  • 1 tub(16 ounces) chocolate frosting
Instructions
  1. Prepare cake mix according to package directions, and bake in 9 x 13 pan. Let cool for 10 minutes.
  2. Using the handle of a wooden spoon, make small holes all over the surface of the cake. Pour 8 ounces of the caramel ice cream topping over the cake, spreading to cover. Let sit until cooled.
  3. Mix 4 oz of caramel with the chocolate icing.
  4. Spread the frosting over the cooled cake.
  5. Sprinkle with pecans and chocolate chips.
  6. Drizzle with the remaining caramel sauce, and sprinkle with the mini chocolate chips and pecans.

Instant Pot Miracle Mom Breakfast Burritos
Breakfast for the whole week that can be heated up in only seconds!

  • 6 eggs
  • ¼ cup milk
  • ¼ cup sour cream
  • ½ cup shredded cheddar cheese
  • 1 tsp onion salt
  • ⅛ tsp pepper
  • 2½ cups frozen hash browns
  • 1 cup diced ham
  • 1 cup fresh spinach, chopped (optional)
  • 12 6” flour tortillas (“fajita size”), warmed
Instructions
  1. In a medium bowl, whisk the Egg Mixture ingredients until thoroughly incorporated. Set aside.
  2. Coat the inside of a 1.5 qt casserole (these fit perfectly: https://amzn.to/2DtfXM4) with non-stick spray.
  3. Layer hash browns then ham in an even layer in the casserole dish. Pour egg mixture over the top. Cover with foil.
  4. Pour one cup of water in the Instant Pot and insert the steam rack. Carefully lower the casserole on to the steam rack, then secure the lid, making sure the vent is closed.
  5. Using the display panel select the MANUAL function*. Use the +/- keys and program the Instant Pot for 25 minutes.
  6. When the time is up, quick-release the remaining pressure. Open the pot and rinse the inside of the lid in cold water to help it reseal.
  7. Add the chopped fresh spinach, stir, then replace the foil. Secure the lid, making sure the vent is closed.
  8. Using the display panel select the MANUAL function*. Use the +/- keys and program the Instant Pot for 10 minutes.
  9. When the time is up, quick-release the remaining pressure.
  10. Divide the egg mixture among the tortillas, roll and serve immediately, or store for up to 4 days in the refrigerator in a tightly sealed container. Reheat for 30 seconds in the microwave for a quick on-the-go breakfast.

  • 1 can (8 oz) Pillsbury™ refrigerated crescent dough sheet
  • 8 mozzarella sticks (from 12-oz package), unwrapped and cut crosswise into thirds
  • 3 tablespoons butter, melted
  • ⅔ cup Progresso™ Italian style panko crispy bread crumbs
Instructions
  1. Heat oven to 375°F. Unroll dough sheet; press into rectangle, 12x8 inches. Using pizza cutter, cut rectangle into 6 rows by 4 rows to make 24 (2-inch) squares.
  2. Place mozzarella stick in center of each rectangle; bring dough up and around cheese sticks; press edges to seal.
  3. Place melted butter in small bowl. Place bread crumbs in another small bowl. Dip each stick into butter; shake off excess. Roll in bread crumbs to coat. Place about 1 inch apart on ungreased large cookie sheet.

Oh, Cod!

Ingredients
  • 2 tablespoons olive oil
  • ½ onion, chopped
  • 1 clove garlic, chopped
  • 1 teaspoon lemon pepper
  • 1 (3 ounce) fillet cod, or more to taste
  • 2 tablespoons dry white wine
  • 1 tablespoon grated Parmesan cheese, or to taste (optional)
Instructions
  1. Heat olive oil in a large frying pan over medium-high heat; cook and stir onion, garlic, and lemon pepper until onion is slightly tender, about 3 minutes. Add cod to the frying pan, flipping the cod over to coat both sides with oil.
  2. Cook cod in the onion mixture until it flakes easily with a fork, occasionally sliding fish around so it doesn't stick, about 4 minutes per side.
  3. Pour wine into the frying pan and bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Slide the cod around the pan, flip it over, and slide around again until coated in wine, about 1 minute.
  4. Transfer cod to a serving plate; top with onion mixture and Parmesan cheese.

These bad boys were SO good! Seriously, I can’t wait to make this dish for my family this holiday season! Apples wrapped in dough with a delicious gooey sauce on top?! Man oh man…It doesn’t get much better than this! Doesn’t even take long to make at all! Sure does taste like it did!

Ingredients
  • 2 (8 each) Cans refrigerated crescent roll dough
  • 2 Sticks of butter
  • 1½ CUPS Brown sugar
  • 1 tsp Vanilla extract
  • 1 tsp Cinnamon
  • 1 Can (12oz) Mountain Dew
  • 2 large Granny Smith apples, peeled and cored
Instructions
  1. Preheat oven to 350°F.
  2. Wash the apples, peel and cut into eight equal slices.
  3. Unwrap the crescent roll and separate the triangles.
  4. Place a piece of apple on each triangle of dough (on a wider side) and roll it in a croissant.
  5. Butter a 13 x 9-inch baking dish.
  6. In a separate bowl, combine the butter, cinnamon, sugar and vanilla, mix until you get a liquid mixture without lumps and pour over the rolls.
  7. Pour soda (Mountain Dew) between rolls (but not over) and bake for 35-45 minutes, or until they become golden brown.
  8. Serve immediately

  • oats

  1. Preheat oven to 375°F. Stir together oats, baking powder, cinnamon, ginger, salt, and ½ cup of the almonds in a large bowl. Stir together milk, syrup, vanilla, egg, and 3 tablespoons of the butter in a separate bowl. Add oat mixture to milk mixture; stir to combine. Fold in ½ of the berries.
  2. Spoon mixture into an 11- x 7-inch baking dish coated with cooking spray. Top with remaining almonds and berries. Bake in preheated oven until set and golden, 35 to 40 minutes.
  3. Remove from oven. Drizzle with remaining 3 tablespoons melted butter. Serve in shallow bowls; drizzle each serving with heavy cream and maple syrup.

This is my favorite chicken recipe. Everyone in my family loves this recipe and it is super easy!

  • ½ cup apple jelly
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • 4 skinless, boneless chicken breast halves
Instructions
  1. Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  2. Mix apple jelly, honey, mustard, cinnamon, and salt together in a bowl. Brush chicken breasts with glaze.
  3. Place glazed chicken breasts on the preheated grill; cook, occasionally brushing chicken with more glaze, until chicken is no longer pink in the center, about 10 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

These babies satisfy that sweet craving you might get in the mornings and fill you up at the same time! I seriously don’t know anyone who would turn these down! They were gone in no time!

  • 1 CUP Whole milk
  • ¼ CUP Heavy cream
  • 2 Tbsp Granulated sugar
  • 4 Eggs
  • 2 tsp Vanilla extract
  • ¾ tsp Ground cinnamon
  • ¼ tsp Kosher sea salt
  • 7 CUPS Dried cubed bread
Topping:
  • ⅓ All-purpose flour
  • ¼ CUP Brown sugar
  • ½ Ground cinnamon
  • ¼ CUP Unsalted butter
Instructions
  1. Preheat oven to 350°F.
  2. In a large bowl, whisk together the milk, cream, sugar, eggs, vanilla, cinnamon and salt.
  3. Add the cubed bread into the mixture, toss gently to combine.
  4. Spray a 12 cup muffin pan with cooking spray. Scoop a ⅓ cup of the mixture into each well.
  5. Meanwhile, to make the topping, in a medium bowl, whisk together the flour, brown sugar and cinnamon.
  6. Using a pastry blender or your fingers, break the butter into small pea-size clumps.
  7. Sprinkle the streusel mixture over the tops of the muffins.
  8. Place in the oven and bake for 25-30 minutes or until golden brown on top.
  9. Remove from the oven and allow to cool for 5 minutes before removing and serving.
  10. Enjoy!

  • 1¾ cups (about 7½ oz.) all-purpose flour
  • 2 teaspoons baking powder
  • 1½ teaspoons kosher salt
  • 1 teaspoon granulated sugar
  • 1 (1-lb.) pkg. hot or mild ground pork sausage
  • 1 pound sharp Cheddar cheese, shredded (about 4 cups)
Instructions
  1. Preheat oven to 400ºF. Whisk together flour, baking powder, salt, and sugar in a large bowl. Add sausage and cheese, and mix gently by hand to combine, just until flour is incorporated.
  2. Pinch off pieces of the sausage mixture, about 1½ tablespoons each, and roll between your hands to form a mostly smooth ball. Place 1 inch apart on parchment paper-lined rimmed baking sheets. Bake in preheated oven until golden brown and cooked through, about 15 minutes, rotating pans top to bottom halfway through cook time. Place pans on wire racks, and cool 5 minutes. Serve warm.

These muffins are extra large and yummy with the sugary-cinnamon crumb topping. I usually double the recipe and fill the muffin cups just to the top edge for a wonderful extra-generously-sized deli style muffin. Add extra blueberries too, if you want!

  • 1½ cups all-purpose flour
  • ¾ cup white sugar
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • ⅓ cup vegetable oil
  • 1 egg
  • ⅓ cup milk
  • 1 cup fresh blueberries
  • ½ cup white sugar
  • ⅓ cup all-purpose flour
  • ¼ cup butter, cubed
  • 1½ teaspoons ground cinnamon
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
  2. Combine 1½ cups flour, ¾ cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
  3. To Make Crumb Topping: Mix together ½ cup sugar, ⅓ cup flour, ¼ cup butter, and 1½ teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
  4. Bake for 20 to 25 minutes in the preheated oven, or until done.
