BAILEYS CINNAMON SWIRL CARAMEL APPLE PIE
We’ve rolled back the years to bring a classic comfort food bang up to date. Our latest collaboration with Baileys, this pie is the perfect comfort food for shorter days and colder nights. If combining apples, Baileys and cinnamon swirls sounds like a match made in heaven, then this is the recipe for you.

Ingredients
Pie:
  • 2 refrigerated pie crusts
  • 30g unsalted butter,
  • melted
  • 4 tsp ground cinnamon
  • 55g butter
  • 150g brown sugar
  • 5g cinnamon
  • 25g flour
  • 120ml Baileys
  • 8 cups Granny Smith
  • apples peeled, cored,
  • thinly sliced
  • Egg wash
Caramel Sauce:
  • 225g caramel
  • 50ml Baileys
Instructions
  1. Pre-heat oven to 180ºC (350ºF).
  2. Roll out one pie crust. Brush with melted butter and sprinkle evenly
  3. with cinnamon. Roll tightly into a log. Cut into ¼" rounds. Repeat with
  4. second pie crust.
  5. Place half of the rounds in a greased pie dish and press to adhere and
  6. attach to form a crust right to the edges of the pie dish. Brush with egg
  7. wash and set aside.
  8. In a pan, butter, brown sugar and cinnamon until a caramel is formed.
  9. Remove from heat and cool down. Stir through Baileys until combined.
  10. Add apples and stir to coat completely.
  11. Place apples into prepared crust and ladle about 1-2 small ladles over top.
  12. Place remaining cinnamon swirl rounds in a circle in-between two
  13. pieces parchment paper. Roll out to ¼" thick and place on top of the
  14. apples. Press edges to seal and cut any excess pie crust. Brush the top
  15. evenly with egg wash and cut a small X in the center of the pie.
  16. Bake for 45 minutes until apples are cooked through and crust is golden
  17. brown.
  18. Meanwhile, heat caramel in a pot. Let cool slightly, Stir through Baileys.
  19. Sliced, Serve with Baileys caramel sauce and vanilla ice cream. Enjoy!

Chicken Parmesan Loaded Fries
Say hello to the most indulgent, delicious and naughty loaded fries! Get some friends together and get this dish out for the games, you'll be the favourite!

Ingredients
  • 4 chicken breasts, diced into bite size pieces
  • 3 eggs whisked
  • 1½ cups seasoned flour
  • 1½ cups bread crumbs
  • ⅓ cup grated parmesan
  • Salt and Pepper to taste
  • 1 tbsp butter
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 sprigs basil roughly chopped
  • 4 cups passata
  • Salt and pepper to taste
  • 1 tsp sugar
  • 1½ cups grated mozzarella
  • Grated parmesan
  • Chopped parsley
  • French Fries
  • Oil for Frying
Instructions
  1. Arrange a breading station with eggs in one bowl, seasoned flour in another and breadcrumbs in another. Add ⅓ cup parmesan to breadcrumbs and season with salt and pepper.
  2. Dip each piece of chicken in flour followed by egg then bread crumbs to coat. Repeat with remaining chicken. Set aside while oil heats.
  3. Heat oil to 170ºC. Fry chicken piece until golden brown, keep warm in the oven.
  4. Heat 1 tbsp butter in a wide pan over medium heat. Add onion and sauce until softened. Stir in garlic and cook until aromatic. Add basil and stir through. Pour in passata and season with salt, pepper and sugar. Cover with a lid and let cook until thickened about 10 minutes. Top with mozzarella cheese, cover with a lid to let steam.
  5. Meanwhile, fry chips!
  6. Top chips with breaded chicken. Pour sauce over chicken and fries. Sprinkle with more grated parmesan cheese and chopped parsley.
  7. Enjoy!

Sheet Pan Chicken Fajita Crunchwrap recipe.

Ingredients
  • 4 chicken breasts, sliced
  • 3 onions, sliced
  • 5 peppers, sliced
  • 2 tbsp fajita seasoning
  • 3 tbsp olive oil
  • 9 large flour tortillas
  • 1 tsp melted butter
  • 2 cups cheddar, grated
  • 2 cups spicy tortilla chips
  • For the dip:
  • 1 cup sour cream
  • ⅔ cup mayonnaise
  • 1 tbsp fajita seasoning
  • ½ cup pickled jalapenos
  • 1 tbsp honey
  • juice 1 lime
  • salt, to taste
Instructions
  1. Pop the chicken, peppers and onions on a large roasting tray with the 2 tbsp fajita seasoning and oil. Roast for 25 minutes at 200°C, stirring occasionally.
  2. Meanwhile, mix everything together for your dip and set aside.
  3. Brush your butter across the base of a sheet pan. Lay 7 tortillas in, as per the video. Put in half your cheese, half your chicken, all of your chips, then the rest of the chicken and cheese. Fold over the tortillas, then lay over a sheet of greaseproof and weigh down with a heavy tray.
  4. Bake for 30 minutes at 180°C.
  5. Cut up, dip and destroy!

Ingredients
  • 1 tbsp oregano
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp cayenne pepper
  • 1 tsp pepper
  • 3 chicken breasts
  • 1 tbsp oil
  • 1 tbsp butter
  • 200g oyster mushrooms
  • 3 garlic cloves, crushed
  • 500ml double cream
  • 1 tbsp dried parsley
  • 1 tbsp dried chives
  • 1 tbsp dried dill
  • 1 tsp salt
  • 400g penne, cooked to packet instructions
Instructions
  1. Mix together the oregano, onion powder, garlic powder, salt, cayenne and pepper. Sprinkle this mixture over the chicken breasts.
  2. Heat the oil and butter in a large pan and fry the chicken breasts for around 5 minutes on each side until cooked through. Remove from the heat and, when cool enough to handle, cut into chunks.
  3. Meanwhile, fry the mushrooms in the pan with the butter and oil. Add the garlic and cook until fragrant.
  4. Pour over the cream and reduce the heat to barely a simmer. Allow to thicken for 5 minutes, then add the dried herbs and salt. Add the cooked chicken and pasta and stir to combine.
  5. Serve hot. Enjoy!

Caramel Apple Pie Ice Box Cake
FAll is just around the corner and we're getting ready for those autumnal apple recipes. But right now, we're holding on to summer as much as we can with this no-bake caramel apple pie icebox cake. It's easy and a perfect dessert inbetween seasons!

Ingredients
  • 6 apples, peeled, cored and sliced
  • 1 tsp cinnamon
  • 2 tbsp butter
  • ¼ cup brown sugar
  • 2-3 packs Malted biscuit cookies
  • 4 cups whipping cream
  • 1 cup cream cheese, softened
  • 2 tbsp icing sugar
  • 1 tsp vanilla
  • Caramel sauce
Instructions
  1. Heat butter over medium heat in a large pan. Add apples, brown sugar, and cinnamon. Stir to coat and cook until apples have softened. Set aside to cool completely
  2. Whip together cream, cream cheese, icing sugar and vanilla until stiff peaks form.
  3. Spread a thin layer of cream on the bottom of a square/ round springform pan or a deep glass dish. Top with a layer of evenly places biscuits, followed by a layer of whipped cream and then apples and a drizzle of caramel sauce. Repeat to have 2 layers of apple and three layers of biscuit in total finishing with a layer of whipped cream and drizzle with caramel sauce.
  4. Cover and chill for 4 hours - overnight.
  5. Slice and enjoy!

Deep Dish Pizza Buns
We love a good deep dish pizza. But instead of making the dough we've done a cheats version and filled a bun with the same goodness. Brushed with garlic butter, these are incredibly delicious!

Ingredients
  • 2 tsp oil
  • 4 sausages removed from casing
  • ½ cup chopped pepperoni
  • 1 tbsp butter
  • 1 onion grated
  • 2 cloves garlic minced
  • 2 cups chopped tomatoes
  • Salt and Pepper to taste
  • 1 tsp oregano
  • 2 tsp sugar
  • 5 Hot dog buns, hollowed with a 2 cm edge
  • Sliced mozzarella cheese
  • Grated parmesan
  • ¼ cup garlic butter
Instructions
  1. In a large pan, heat oil over medium-high heat. Add sausage meat. Sear and break apart with the back of a spoon. When cooked, add pepperoni and cook through. Remove and let cool slightly.
  2. In a pot, melt butter over medium heat. Add onion and cook until softened and translucent. Add garlic and cook until fragrant. Add tomatoes, salt, pepper, oregano, and, sugar. Bring to a boil and simmer until thick.
  3. Arrange the buns in a tray. Top each with mozzarella and press down. Fill with a layer of sausage and pepperoni mix. Top with another slice of cheese & more sausage mix. Top with a layer of tomato sauce and a sprinkle of parmesan cheese.
  4. Brush outside with garlic butter.
  5. Bake for 8 minutes until cheese is melted, enjoy!

Have you ever had deep fried pizza? It's delicious and this is your chance. Stuffed pizza dough falls fried until golden brown is the perfect appetizer or game day snack! Make a load of these Pizza Fritti Bombs and everyone will enjoy!

Ingredients
  • 2 cups grated mozzarella
  • ½ cup chopped pepperoni
  • ½ tsp oregano
  • 250g pizza dough
  • 1 cup grated parmesan
  • 2 tbsp chopped parsley
  • ½ tsp ground pepper
  • ¼ tsp garlic powder
  • ½ cup pizza dough
  • Oil for frying
Instructions
  1. Heat oil in a deep pot to 170ºC.
  2. Mix together cheese, pepperoni, and oregano until combined.
  3. Roll out golf balls sized dough balls flat. Place 1 tsp pizza sauce in the centre and top with about 1 tbsp of the cheese mix. Fold over the edges and pinch to seal into a ball.
  4. Fry each dough ball until golden brown.
  5. Meanwhile, mix together parmesan, parsley, garlic powder, and pepper. Toss warm dough balls until coated evenly
  6. Enjoy hot!

Ingredients
  • 2 tbsp olive oil
  • 1 large onion, finely diced
  • 3 diced mixed peppers
  • 500g 20% fat beef mince
  • 1 pouch Santa Maria Medium Taco Seasoning Mix
  • 1 heaped tbsp brown sugar
  • 100g mild cheddar, grated
  • 1 Pack Santa Maria Coconut & Black Pepper Tortillas
  • 2 tbsp flour
  • 2 tbsp water
  • 1 litre oil, for frying
  • 100g Santa Maria Sour Cream
  • 100g Santa Maria Medium Salsa
Instructions
  1. Fry the onion and diced peppers in the olive oil until soft. Add the ground beef and break up with a wooden spoon, then add the Santa Maria Medium Taco Seasoning Mix and brown sugar and continue cooking under the beef is tender and there’s very little liquid left in the pan.
  2. Take off the heat and allow to cool.
  3. Heat the oil to around 170°C.
  4. In a small bowl thoroughly whisk the flour and water together to make a smooth paste.
  5. Place dollops of the beef mixture in the middle of the Santa Maria Mini Coconut & Black Pepper Tortillas along with sprinklings of cheddar. Brush one half of the rim with the paste and fold over to stick together.
  6. Fry in batches (careful not to overcrowd the pan) until golden and crisp. Place on kitchen paper to soak up the excess oil then place on to a wire cooling rack while you make the dip.
  7. Whisk the Santa Maria Sour Cream and Salsa together and top with chopped coriander.

Ingredients
  • 4 slices 2" thick cut white bread
  • 4 eggs
  • 250ml Elmlea Heavy Cream
  • 30g sugar
  • 10g vanilla essence
  • 3g cinnamon
Apple Pie Filing:
  • 30g g butter
  • 470g apple peeled, cored and finely chopped
  • 20g tsp cinnamon
Instructions
  1. In a shallow dish, whisk egg, Elmlea Double, vanilla, sugar and cinnamon
  2. In a skillet over medium heat, melt butter. Add apple, vanilla, cinnamon, brown sugar, lemon juice, and salt. Cook until apples have softened.
  3. Cut a slit in the side of each slice of bread being careful not to go all the way through. Using your fingers press inside slightly to create a pocket. Fill each with apple mixture. Dip sandwich into egg mixture and soak on both sides.
  4. In a non-stick skillet melt butter over medium heat. Add sandwiches and cook on both sides until golden brown, about 2-3 minutes each side. Be sure to control the heat so it doesn't burn.
  5. Meanwhile, whip 1 cup of Elmlea Double with icing sugar and vanilla
  6. Serve apple pie stuffed French toast with whipped Elmlea Double and a drizzle of caramel sauce
  7. Enjoy!

Big Mac Dippers
Check out these - crispy, fried, cheesy circles of joy. Slathered with everyone's favourite "secret" sauce these are the perfect snack for literally any occasion.

Ingredients
  • 500g beef mince
  • 1 tbsp salt
  • 1 tsp pepper
  • 24 slices white bread
  • 2 tbsp flour
  • 3 tbsp water
  • American cheese, cut into circles
  • 300g mayo
  • 2 tsp mild mustard
  • 1 tbsp gherkin relish
  • 2 tsp white vinegar
  • 1 ½ tsp onion powder
  • 1 ½ tsp garlic powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • 1 tsp sugar
Instructions
  1. Mix the mince together with the salt and pepper. Form into 12 small patties.
  2. Fry them each in a frying pan for around 30 seconds on each side then remove and cool.
  3. With a large cookie cutter cut circles out of the bread slices and squash them with a rolling pin.
  4. Whisk together the flour and water.
  5. Place a burger on top of a round of bread and a small circle of American cheese on top. Brush the paste around the edge and place another piece of bread on top, then pinch them together to seal the burger and cheese inside. Repeat 12 times.
  6. Set them aside and whisk together the ingredients for the big mac sauce.
  7. Heat the oil to 170°C/340°F. Fry in batches until golden and crisp.
  8. Dip in the sauce.
