Ingredients
  • 4 eggs
  • 1½ cups panko breadcrumbs
  • 1 cup grated parmesan
  • 1 tbsp oregano
  • 1 tbsp basil
  • 1 tbsp salt
  • 4 chicken breasts, cut into strips
  • ¼ cup flour
  • ¼ cup water
  • 10 tortilla wraps
  • 20 slices mozzarella
  • 3 cups marinara sauce
  • 1 cup grated parmesan
Instructions
  1. Mix the parmesan, dried herbs and salt into the breadcrumbs. Dip the chicken breast pieces one at a time first into the flour, then the eggs, then the breadcrumb mix. Fry in batches in hot oil for 3 - 4 mins, until cooked through completely.
  2. Use a fork to mix the flour and water together to make a paste and use this to stick together three tortillas, overlapping them. Stick another two on top to make a rough triangle shape, then cover with a layer of mozzarella slices and repeat the tortilla pattern on top to make an enormous quesadilla.
  3. Preheat the oven to 180°C/360°F. Pile up the fried chicken bits in the middle of the tortilla shape and cover with marinara, more mozzarella and parmesan. Roll the whole thing up carefully and spread more marinara on top, and a final layer of parmesan. Bake for roughly 20 minutes.

Nacho Crusted Fajita Roll
NACHO CRUSTED FAJITA ROLL

Ingredients
  • 1kg beef mince
  • 80g breadcrumbs
  • 8 slices cheddar cheese
  • 2 peppers, sliced and fried in a little olive oil
  • 1 small onion, sliced and fried in a little olive oil
  • 2 tbsp fajita spice
  • 1 egg, beaten
  • 2 packets Manomasa Chipotle and Lime, crushed
Instructions
  1. Preheat the oven to 180°C/350°F.
  2. Mix the beef mince with the fajita spice mix. On a sheet of tin foil press the beef into an even rectangle.
  3. Lay slices of cheddar cheese across the middle and top with the peppers and onions.
  4. Gently roll the meat up from the smaller end of the rectangle, using the foil to push it into a large sausage shape. Set in the fridge for 30 minutes.
  5. Roll log in flour and gently dust off any extra flour. Coat in egg and let excess egg drain off. Roll in crushed Manomasa chips until filled coated.
  6. Bake, covered, for 20 minutes, then uncover and bake for a further 30 minutes.
  7. Enjoy!

Ingredients
  • 1 tbsp groundnut oil
  • 4 sirloin steaks, cut into slices
  • 2 tbsp flour
  • 1 tbsp salt
  • 1 tsp pepper
  • 1 tbsp butter
  • 3 white onions, thinly sliced
  • 3 garlic cloves, diced
  • 2 cups beef stock
  • 1 cup white wine
  • 12 slider rolls, cut in half
  • 3 cups grated emmental
Instructions
  1. Heat the oil in a large frying pan with a lid and add the sliced steak. Leave the beef so it colours and then stir in the flour, salt and pepper. Remove from the pan and add the butter.
  2. Stir in the onions and cook for around 3 minutes until beginning to colour, then add the garlic and re add the beef.
  3. Pour over the beef stock and wine then bring to a gentle simmer and put the lid on. Cook for around 40 minutes or until the beef has broken down.
  4. While the beef is cooking lay the buns on a baking tray, cut side up, and sprinkle with emmental. Grill for around 3 minutes until the cheese is bubbling.
  5. Spoon the beef mixture onto the bottom buns and add the top buns on top and serve warm.

Ingredients
  • 600g cinnamon roll dough
  • 1 cup packed brown sugar
  • ½ cup softened butter
  • 3 tbsp cinnamon powder
  • ½ cup cream cheese, softened
  • ¾ cup butter, softened
  • 2 cups icing sugar, sifted
  • 1 tsp vanilla
  • 2 tsp cream
Instructions
  1. Roll dough out into a large rectangle. Spread butter evenly over top. In a small bowl mix together brown sugar and cinnamon powder. Sprinkle every overtop and press gently to adhere to the butter.
  2. Roll into a tight log and twist into a circle and attach the two ends.
  3. Pre-heat oven to 180ºC.
  4. Using scissors cut slits but not all the way through every inch. Twist each roll side ways. Cover and let rise for 30 minutes.
  5. Bake for 30 minutes until golden brown.
  6. While baking, blend together icing sugar, cream cheese, butter, vanilla and cream until smooth.
  7. Spread icing on cinnamon rolls while still warm.
  8. Enjoy!

  • 4 eggs
  • ½ cup milk
  • ½ cup cream
  • ½ tsp garlic powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 3 slices bread
  • 1 tsp oil
  • 1 tsp butter
  • Pinch of sesame seeds
  • 4 slices American style cheese
  • 2 cups burger mince
  • 1 tsp salt
  • 1 tsp black pepper
Instructions
  1. Whisk the eggs, milk, cream, garlic powder and seasoning together to make the French toast batter. Dip the pieces of bread in and let them soak.
  2. Heat the butter and fry the three pieces of bread - top one with sesame seeds and the other two with cheese.
  3. Mix the mince with the salt and pepper and fashion into large, square burger pattys.
  4. Add a little more oil and and fry both at the same time then layer up the Big Mac French toast.
  5. Start with the first piece of French toast then top with sauce, onion, lettuce and the first burger. Cover with pickles then the second piece of French toast, followed by sauce, onion, lettuce and pickles. Add the final layer of French toast and eat.

Ingredients
  • 500 g cream cheese, softened
  • 1 cup grated cheddar
  • 1 cup grated mozzarella
  • 3 jalapeños, finely diced
  • ½ tsp pepper
  • 3 baguettes
  • Bacon rashers
Instructions
  1. Pre-heat oven to 190ºC.
  2. In a large bowl mic together cream cheese, cheddar, mozzarella, jalapeños and pepper until combined.
  3. Cut baguette in half and scoop out some of the insides. Save for breadcrumbs.
  4. Fill each cavity with the mix. Place top half back on top of bottom half.
  5. Arrange bacon flat on a parchment-lined baking sheet. Top with one baguette and wrap with bacon.
  6. Bake the oven for 20-30 minutes until bacon is cooked and golden.
  7. Enjoy!

Ingredients
  • 800g beef mince
  • Sliced cheddar cheese cut into 1” squares
  • Bacon rashers, cooked and chopped into 1” pieces
  • 2 tsp salt
  • 1½ tsp pepper
  • 1 tsp Garlic powder
  • Egg wash
  • Sesame seeds
  • 660g pizza dough
Instructions
  1. Pre-heat oven to 180ºC (350ºF).
  2. In a large bowl mix together beef mince, salt, pepper and garlic powder until combined. Form into small meatballs and then flatten into mini patties.
  3. Fry each beef patty in a bit of oil in a pan over medium heat until browned.
  4. Make golf ball sized dough balls from the pizza dough. Press flat into a disk but not too thin. Top each in the middle with one piece of cheese followed by bacon, mini burger and more cheese. Wrap bread dough evenly to seal. Arrange each on a tray.
  5. Brush with egg wash and sprinkle with sesame seeds.
  6. Bake dough balls for 30 minutes until golden brown.
  7. Enjoy!

  • 6 medium potatoes
  • 2 tbsp groundnut oil
  • 1 tbsp sea salt
  • 4 slices mozzarella, cut into small squares
  • 2 cups ragu
  • 1 cup bechamel sauce
  • 6 slices mozzarella
Instructions
  1. Preheat the oven to 180°C/360°F.
  2. Cut parallel lines down the length of the potatoes – you can use two wooden spoons laid next to the potato as a guide to stop you cutting all the way through if you need to.
  3. Lay the potatoes in a greased skillet and brush with oil and sprinkle with salt. Bake for an hour or until the potatoes have fanned out.
  4. Spoon the ragu over each potato and drizzle with the bechamel, then drape with a final piece of mozzarella.
  5. Bake again for another half an hour, then serve with a delicious side salad.

  • 12 slices soft white bread
  • 12 thin sausages, cooked
  • 12 rashers bacon, cooked
  • 3 eggs
  • ½ cup milk
  • 1 tsp salt
  • ½ tsp pepper
Instructions
  1. Cut crusts of each slice of bread. Roll flat with a rolling pin.
  2. Place one strip of bacon on one end of the bread topped with a sausage. Roll tightly into a small log shape.
  3. In a large bowl, whisk together eggs, milk, salt, and pepper.
  4. Dip and soak each bread roll.
  5. Heat oil in a non-stick pan over medium-low heat. Pan fry each of the rolls turning constantly to get even coloring.

  • 4 chicken breasts
  • 8 slices emmental
  • 8 slices ham
  • Salt
  • Pepper
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups milk
  • 1 tsp dijon mustard
  • 3 tbsp parmesan
  • ½ cup breadcrumbs
  • 3 tbsp parmesan
  • ¼ cup finely chopped parsley
Instructions
  1. Preheat the oven to 180°/360°F.
  2. Butterfly the chicken breasts and lay them between two sheets of baking paper and bash them with a rolling pin until they are around 1 cm thick. Discard the paper and lay two sheets of cheese over the breasts, followed by two slices of ham, and roll up.
  3. Pack the pieces of chicken snugly in a greased baking dish and season generously.
  4. In a saucepan heat the butter until foaming and whisk in the flour. Allow to brown slightly and then whisk in the milk a little bit at a time to make a smooth sauce. Stir in the parmesan and dijon mustard then season to taste and pour over the chicken roll ups.
  5. In a small bowl mix together the breadcrumbs, parmesan and parsley and sprinkle over the top of the saucy chicken then bake for around 40 minutes or until the chicken is cooked through.
