Ingredients
  • 1 tbsp olive oil
  • 1 cup / 2oog pancetta
  • 3 cloves garlic, finely diced
  • 1 onion, finely diced
  • 2.2 lb / 1 kg beef mince
  • 1 cup / 250g passata
  • 1 tbsp tomato puree
  • ½ cup /150ml beef stock
  • ½ cup / 150ml wine
  • 1 cup / 250ml double cream
  • Around 4 sheets lasagna, chopped into squares
  • 1 cup grated parmesan
  • 1 cup torn mozzarella
  • Lotsa lotsa fries
Instructions
  1. Fry the pancetta in the olive oil until nicely browned then add the garlic and fry for a minute.
  2. Add the onion and cook for another 3 minutes until nice and soft, then add the beef mince and cook until it's brown all over, breaking it up in the pan with a wooden spoon.
  3. Pour in the tomatoes, tomato puree, stock and red wine and give everything a stir, then leave to bubble away for around an hour.
  4. Pour in the cream, the chopped up pasta, the parmesan and the mozzarella and give everything a stir.
  5. Pour over the fries and sprinkle with parmesan. Eat with mates (not alone you monster).

Bacon Cheeseburger Braid
It's like a giant cheeseburger to share with a crowd. The cheeseburger mix is intertwined between soft bread and surrounded in layers of gooey cheese. Serve it up with burger sauce it you're up for it.

Ingredients
  • 500g beef mince, cooked
  • ½ cup crispy bacon bits
  • ½ cup ketchup
  • 2 tsp garlic powder
  • 1 tsp pepper
  • 500g pizza dough
  • 2 cups grated cheddar cheese
  • Oil
  • Sesame seeds
  • Ketchup
Instructions
  1. Pre-heat oven to 200ºC. n a large bowl mix together mince, bacon, ketchup, garlic powder and pepper.
  2. Split dough into 200g balls. On a floured surface, roll each ball into a tube. Roll to flatten Ito a long strip about 8".
  3. Sprinkle cheese down the centre of each strip. Top with burger mixture and top with another layer of cheese.
  4. Bring edges together and pinch to seal.
  5. Place three rolls together and pinch to attach and one end. Braid dough to form a plait.
  6. Brush with oil and sprinkle with sesame seeds.
  7. Bake for 30 minutes until golden brown.

Crispy Cordon Bleu Chicken Pasta
Chicken 'cordon bleu' is French for Chicken 'blue ribbon', which is potentially confusing. It also has nothing to do with the famous Cordon Bleu cookery school. Despite these mysterious origins, the concept of deep fried, rolled chicken breast with ham and cheese has international appeal (why wouldn't it). We're taking a new slant on this erroneously monikered dish - introducing it to a wonderful, creamy pasta and adding parmesan - sorry Italy!

Ingredients
  • 2 chicken breasts
  • Plain flour
  • Beaten eggs
  • Panko bread crumbs
  • 1 tbsp butter
  • 3 cloves garlic
  • 300ml double cream
  • 200g gruyere
  • ½ cup parmesan
  • 200g chopped ham
  • 1 tbsp dijon mustard
  • Seasoning
  • 500g cooked penne
Instructions
  1. Season and place each chicken breast between two layers of clingfilm and bash with a rolling pin - don't hit too hard as you'll just turn the chicken to mush. Keep bashing until the chicken is roughly 1cm thick all the way through.
  2. Take each chicken breasts and dip it first in the bowl of shower, shaking off excess, then the eggs, and finally the breadcrumbs.
  3. Fry each chicken breast in a shallow (but stable) pan of oil at 170°C, turning over half way through. Keep them warm while you make the pasta.
  4. Fry the garlic in the butter for around a minute, then pour over the cream and stir in the cheeses, ham, mustard and seasoning. Stir everything together.
  5. Pour in the pasta and the parsley and stir together, then place in bowls. Top with the chicken (cut it into little squares to make it easier to eat) and sprinkle with parmesan.
  6. Consume.

Pizza Chicken Roll
Following on in the theme of chicken logs - we've had fajita and pesto - Twisted are pleased to bring you the Spiral Chicken Pizza Roll. Tender chicken, gooey mozzarella, delicious pizza sauce all encased in a beautiful pizza dough shell.

Ingredients
  • 6 chicken breasts
  • Salt
  • Pepper
  • 1/1 cup pizza sauce
  • 12 sheets mozzarella
  • 12 pieces pepperoni
  • Pizza dough
Instructions
  1. Preheat the oven to 180°C/360°F.
  2. Lay the chicken breasts between two pieces of clingfilm and hit them with a rolling pin to flatten them out to roughly 1cm thickness.
  3. Lay all six bashed out breasts on another large sheet of clingfilm. Make sure they overlap to make a big chicken rectangle.
  4. Spoon over the pizza sauce and spread it over the chicken, then top with a layer of the mozzarella slices, some pepperoni and more mozzarella.
  5. Use the clingfilm to lift up the chicken and roll it over, making a spiral shape. Roll it up in more clingfilm to tighten it up then leave to set in the fridge.
  6. Roll out the pizza dough to around 1 cm and place the chicken at one end then roll up, pinching together the ends to remove any superfluous dough. Place on a baking tray and cook for 40 - 50 minutes, until a thermometer registers the chicken as cooked.

Jalapeño Popper Chicken Fries
Fries alone are great but loaded fries laden with our favourites: bacon, cheese, jalapeños, creme and chicken are even better. These are not for one to enjoy but definitely to treat a crowd.

Ingredients
  • 2 tsp oil
  • 2 chicken breasts
  • 8 bacon slices, chopped
  • 4 jalapeños, finely diced
  • 2 clove garlic, minced
  • 700ml double cream
  • ½ tsp salt
  • 1 tsp pepper
  • 2½ cups grated yellow cheddar
  • Fries, Cooked
  • Chopped spring onions
Instructions
  1. In a large, deep sided saucepan heat oil over medium heat. Add oil and sear chicken for about 4 minutes each side. Take off and set aside and slice. Add the bacon and fry until they are golden, a few minutes. Add the garlic and jalapeños and fry until fragrant then pour over the cream. Add a touch of salt and pepper.
  2. Stir in cheese to incorporate, then add the chicken.
  3. Stir to combine and bring to a gentle simmer.
  4. Pour over the chips and sprinkle with chopped spring onions.
  5. Eat (with friends).

Crispy Chicken Alfredo Pasta Parcels
We love a good bowl of pasta. We love a good pasta bake. We love the crispy bit on the pasta bake. I want more of that. What if the crispy bit SURROUNDED my bowl of pasta. Welcome to Twisted - make this tonight.

Ingredients
  • 700ml whole milk
  • 300ml heavy cream
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp chopped parsley
  • 2 cups parmesan
  • 2 cups shredded chicken
  • 3 cups cooked penne
  • oil for frying
  • 1 cup flour
  • 2 eggs, beaten
  • 2 cloves
  • 1 cup panko breadcrumbs
  • 60g flour
  • 70g butter
  • 1 tbsp thyme leaves
  • tomato sauce, to serve
Instructions
  1. Heat the butter over medium heat until melted, then add the flour and stir through to form a roux. Cook out for a minute or so, before gradually adding the milk. Season with salt, pepper and thyme. Bring to a simmer. Add cream, parmesan, parsley, chicken and pasta. Cook slightly then spoon into a lined baking dish. Freeze for an hour or so.
  2. Cut into bricks. Flour, egg wash and breadcrumb each brick.
  3. Fry in hot oil until nicely golden brown and cooked through.
  4. Serve with parmesan and tomato sauce!

Apple Pie Cheesecake Taquitos
No time to make a full apple pie or a cheese cake? We’ve got you covered. These easy apple pie cheese cake taquitos combine the two and are made in a flash. No need for pie crust here!

Ingredients
  • 2 apples peeled cored and diced
  • 3 tbsp brown sugar
  • 1 tsp cinnamon
  • ¾ cup cream cheese
  • ¼ cup caramel
  • ½ tsp sea salt
  • 10 tortillas 6-inch
  • 2 tbsp melted butter
  • 2 tbsp granulated sugar
  • 1 tsp cinnamon
Instructions
  1. Pre-heat oven to 200ºC.
  2. In a sauté pan, heat butter over medium heat. Add apples, brown sugar and cinnamon. Cover and cook until just softened. Set aside to cool.
  3. In a bowl mix together cream cheese, caramel sauce and salt.
  4. Lay out tortillas and spread a couple tbsp of cream cheese mixture on one side. Top with apples. Roll very tightly into a log shape. Place seam side down on a baking sheet.
  5. Mix together cinnamon and sugar. Brush each roll with melted butter and sprinkle generously with cinnamon sugar.
  6. Bake for 15-20 minutes until crispy.
  7. Enjoy!

Sheet Pan Buffalo Chicken Quesadilla
Quesadillas - the grilled cheese of the tortilla world. Our recipe will have you craftily making a massive one and filling it with everyone's favourite thing, buffalo chicken, along with delicious mozzarella. The perfect thing to make for a few friends on game day.

Ingredients
  • 10 medium tortilla wraps
  • 4 chicken breasts, shredded
  • 1 cup hot sauce
  • ½ cup cream cheese
  • 1½ cups grated mozzarella
  • ¾ spring onions, finely chopped
  • 1 tsp salt
  • 1 tsp pepper
Instructions
  1. Preheat the oven to 180°C/360°F.
  2. Line your baking tray and brush with butter. Cut 3 of the tortillas in half and place the straight sides against the edge of the tray, then cover the remaining space in the sheet with whole tortillas. If you don't have enough because your baking tray is too big then play around with cutting a few more to size.
  3. In a bowl mix together the shredded chicken with the hot sauce, cream cheese, mozzarella, spring onions and seasoning.
  4. Spread this mix on the tortillas then top with more tortillas and spread again with butter. Top with a sheet of baking paper and another tray, then bake for around 10/15 minutes. Flip the tray and remove the bottom piece of paper and grill for a further 5 minutes until crispy.

Muffin Tin Big Macs
They say that some things are beyond perfection. The iconic Big Mac is supposedly one of them - a lily that shouldn't be gilded, a Mona Lisa of mince, bread and delicious sauce. They said the world was flat, but now we have Mini Muffin Tin Big Macs, simplicity incarnate, bite-sized bliss nestled neatly in a muffin tin.

Ingredients
  • 400g bread dough
  • 1 tbsp sesame seeds
  • 2 burger patties, broken into 8 equal sized chunks
For the Big Mac Sauce
  • 225g mayonnaise
  • 1 tbsp mustard
  • 1 tbsp finely chopped pickles
  • 1 tsp white vinegar
  • 1 tsp garlic powder
  • 1 tsp onion salt
  • 1 tsp white pepper
  • ½ tsp paprika
For the burgers
  • Finely chopped white onion
  • Shredded lettuce
  • Finely sliced gherkins
Instructions
  1. Preheat the oven to 180°C/360°F
  2. Grease a muffin tin and place 100g round balls of dough in four of the muffin tin holes. Sprinkle them with sesame seeds.
  3. Fashion the burger pieces into small burger patties and press them into the eight remaining holes - make sure they are a tiny bit too big for the holes as the meat tends to shrink, so they should fit to exactly the right size for the buns - satisfying much?
  4. Bake for 15 minutes until the burger buns have doubled in size and sound hollow when tapped.
  5. While the buns are in the oven whisk all the ingredients together for the sauce, adding more salt or sugar according to your taste.
  6. When out of the oven cut the burger buns into three pieces. Slather the bottom bun with the sauce, followed by some chopped onion, finely shredded lettuce, a piece of burger cheese, a burger from the tin and some pickles. Add the second piece of the bun and repeat these steps, finishing with the final top piece of the bun.
  7. Your tiny burgers are now complete! Have two, or even all four! Enjoy yourself!

  • 2 tbsp Brown Sugar
  • 2 tbsp Cocoa Powder
  • 2 tbsp Hazelnut Spread
  • 500ml Milk
  • 75g Milk Chocolate
  • 100 ml Baileys Original
Instructions
  1. Put all ingredients except for Baileys on hob and stir until nice and creamy.
  2. Take pan off fire and add Baileys.
  3. Add marshmallows, whipped cream, doughnuts, brownies and chocolate sauce.
  4. Enjoy!
