Lasagna Samosas
LASAGNA SAMOSAS

Ingredients
  • 10 8” tortillas, halved
  • 2 tbsp oil
  • 500g beef mince
  • 1 onion, finely diced
  • 3 cloves garlic, minced
  • 1 tbsp tomato paste
  • ½ cup red wine
  • 1 can chopped tomatoes
  • 2 tsp oregano
  • 1 tsp salt
  • ½ tsp pepper
  • ½ cup heavy cream
  • 1 cup chopped fresh lasagna noodles
  • ½ cup grated parmesan
  • ¼ cup flour
  • ¼ cup water
  • Mozarella Cheese
  • 2 cups finely grated parmesan cheese
  • 1 tsp pepper
  • 1 tbsp finely chopped parsley
  • 1½ tsp garlic powder
  • Oil for frying
Instructions
  1. Heat oil in a large in a large sauce pan over medium heat. Add onions and cook until just softened, add garlic and cook ti fragrant. Add mince and cook until browned.
  2. Stir in tomato paste until coated. Cook for 2 minutes. Add wine, bring to a boil and reduce to half. Add tomatoes and spices. Cook until just thickened.
  3. Add cream, noodles and parmesan cheese. Bring to a boil then cover and reduce to a simmer until thickened. Let cool completely.
  4. In a small bowl, mix together ¼ cup flour and ¼ cup water to form a paste.Spread a thin layer of paste on ⅓ of one half of tortilla. Fold over into a cone shape. Repeat with remaining tortillas.
  5. Fill each cone halfway with lasagna mixture, a piece of mozzarella and top with more lasagna mix leaving a gap at the top.
  6. Use more of the paste to seal the edge.
  7. Heat oil to 170ºC. Fry in batches until golden brown.
  8. In a large bowl, mix together parmesan, pepper, parsley and garlic powder. Toss each drained and slightly cooled triangle in the cheese mixture to coat.

Pizza Churros

Pizza Churros
Commonly served as a sweet street side snack or dessert, churros are a favorite treat. We put a savory spin on them with cheesy pizza flavors, fried till golden brown so they're slightly molten inside. Dipped in your favorite pizza sauce they're a great appetizer!

Ingredients
  • ½ cup butter
  • 1½ cups water
  • 1 tsp salt
  • 1 tsp oregano
  • ½ tsp dried basil
  • 1 tsp garlic powder
  • 1 tsp onion granules
  • 1¼ cups plain flour
  • 3 eggs
  • 1 cup grated mozzarella cheese
  • Oil for frying
  • Marinara Sauce
Instructions
  1. Heat oil to 190ºC (375ºF).
  2. In a medium saucepan, combine water and butter until just starting to melt and simmering. Add all of the spices and stir to dissolve and bring to a simmer.
  3. Add flour all at once. Stir until the dough pulls away from the sides of the pan and forms a ball. Remove from heat and let cool for 4 to 5 minutes.
  4. Stir in eggs one at a time until fully combined then add the cheese.
  5. Using a star-tip in a piping bag, pipe about 3-4-inch long churros. Fry until golden brown.
  6. Serve with marinara sauce to dip. Enjoy!

Franks Buffalo Chicken Tots
There are few things more wonderful than a tater tot - crisp little morsels of potato joy, the ultimate game day snack. However, imagine if you will how much better they would taste if they were stuffed full of chicken, mozzarella and bacon drenched in the world's most delicious hot sauce, Frank's RedHot.

Ingredients
  • ¾ cup melted butter
  • ½ cup Franks Hot Sauce
  • 3 cups shredded chicken
  • 1 cup cream cheese
  • 2 cups mozzarella
  • 6 rashers bacon, cooked crisp and chopped
  • 2 lb potatoes, parboiled
  • ¼ cup flour
  • 1 tbsp salt
  • 1 tbsp pepper
  • Oil for frying
Instructions
  1. Whisk the Frank's RedHot Sauce into the melted butter and set aside.
  2. Combine chicken, cream cheese, mozzarella, chopped bacon and half the buffalo sauce.
  3. Make thin ballotines by rolling spoonfuls of the mix in clingfilm then freeze for a few hours.
  4. Grate the potatoes into a bowl and stir in the flour and seasoning. Set aside while you cut up the frozen sausages into roughly ¾ inch sections.
  5. Take a small handful of the mixture and fashion it around a piece of the frozen sausage then set aside to make the rest.
  6. Heat the oil to 300°F and fry for around 4 - 5 minutes until golden and crispy.
  7. Pile high in a bowl and pour over the remaining buffalo sauce and enjoy!

Pizza Burger Dogs
Three of our favourite foods amalgamated into ONE! Cheeseburger + hot dog +pizza, hello perfect bite. It's delicious and doesn't take long to make either.

Ingredients
  • 500g Beef mince
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tsp oregano
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 4 sticks mozzarella cheese
  • 4 sliced mozzarella cheese
  • ½ cup pizza sauce
  • Pepperoni slices
Instructions
  1. In a large bowl, mix together mince, salt, pepper, garlic powder, oregano, and onion powder. Flatten portions of meat and fill each with one stick of mozzarella cheese. Wrap mince around tightly to seal.
  2. Fry until golden brown and cooked through in a heavy bottomed pan with a little oil. The cheese should be melted.
  3. Place into hot dog buns in a baking tray. Top each with pizza sauce, sliced mozzarella and pepperoni. Grill for 5-8 minutes until sauce is hot and cheese is melted and starting to turn golden brown.
  4. Enjoy!

Chocolate Banana French Toast Swirls
No time to make dough, no problem. These french toast spirals are laden with chocolate spread and bananas...a breakfast combo made in heaven!

Ingredients
  • 1 loaf soft white bread
  • 1 cup chocolate spread
  • 4 bananas, sliced thin
  • 3 eggs
  • 1 cup cream
  • ¼ milk
  • 1 tsp vanilla
  • 2 tbsp sugar
  • 1 cup icing sugar
  • 2 tbsp melted butter
  • 1 tbsp milk
Instructions
  1. Pre-heat oven to 180ºC (350ºF).
  2. Cut the crusts off all slices of bread. Put 3-4 together just slightly overlapping and press the seems together using your fingers to seal. Repeat with remaining bread.
  3. Spread chocolate spread over each piece of bread. Lay pieces of banana over the chocolate spread. Roll into a tight roll.
  4. Place each into a greased baking dish with high sides.
  5. In a large glass, jug whisk together eggs, cream, milk, sugar and 1 tsp vanilla until smooth. Pour over spirals and let soak for 10-15 minutes until completely absorbed.
  6. Bake in the oven for 40 minutes until puffed up, golden brown and cooked through. Cover with foil if it gets dark on top too quickly.
  7. In another jug whisk together icing sugar, milk, melted butter and ½ tsp vanilla.
  8. Pour glaze over while still warm.
  9. Enjoy!

Croque Monsieur Mash Balls
Following in the wake of the internet's indisputable hunger for all things mash come these deep fried delicacies. Oozing with the flavours of France's greatest sarnie, the croque monsieur, these are a great party snack. Crispy yet soft and rich with a tang of mustard these are easily adaptable (everything is good with mash, am I right?). Get creative!

Ingredients
  • 6 cups cold leftover mash
  • 4 slices ham, chopped into small cubes
  • 3 cups grated emmental
  • 2 tbsp dijon mustard
  • ¼ cup finely chopped parsley
  • 1 tbsp salt
  • 1 tbsp pepper
  • 1 cup flour
  • 4 eggs, beaten with a little milk
  • 2 cups panko breadcrumbs
  • Enough groundnut oil to deep fry
Instructions
  1. In a large bowl mix up the mash, ham, cheese, mustard, parsley and seasonings.
  2. Take a walnut sized chunk of the mash and roll it into a ball shape. Chill them for a little bit while you heat up the oil to 170°C/340°F.
  3. Take each ball and roll it in the flour, then egg mix, then breadcrumbs, shaking off excess each time.
  4. Fry them in batches of ⅚ until they are golden and crisp - not too long or the cheese will start oozing out.
  5. Serve with a lemony herb mayo dip.

Chicken Fajita Wrap Bombs
CHICKEN FAJITA WRAP BOMBS

Ingredients
  • 3 chicken breasts, sliced
  • 8 large flour tortillas
  • 1½ cups cheddar, plus a little more for topping
  • 2 tbsp fajita seasoning
  • 1 tsp salt
  • 2 tbsp lime juice
  • 1 jalapeno, diced
  • 2 cloves garlic, finely chopped
  • 3 peppers, sliced
  • 2 onions, sliced
  • 3 tbsp oil
  • ½ cup beer
  • sour cream, salsa, to serve
Instructions
  1. To your sliced chicken, add your lime juice, 1 tsp salt, 1 tbsp oil, fajita seasoning and diced jalapeno. Mix well, cover and leave to marinade for 1 hour (at room temperature).
  2. Heat 3 tbsp oil over medium-high heat. Add your peppers and onions and 1 tsp salt. Fry for 15 minutes or so, stirring frequently, until nicely caramelised, translucent and sweet. Add your garlic and fry briefly. Add your chicken and any marinade/juices. Fry until the meat has gathered a little colour. Deglaze with the beer and reduce until sticky (if necessary).
  3. Load into wraps with a good tbsp cheddar. You should have enough for 8 wraps. Wrap up with 6 or so folds. Place, folded side down, on a baking tray and sprinkle over some remaining cheese.
  4. Bake for 20 minutes at 180°C.
  5. Destroy!

Stuffed Fried Chicken Parmesan
Fried chicken and chicken parm - shining paragons of poultry cookery, undisputed titans of the chicken world. In this Twisted re-imagining we smash both of these together to create a thing of godlike, otherwordly magnificence.

Ingredients
  • 3 chicken breasts
  • Salt
  • Pepper
  • 2 cups mozzarella
  • 1 cup buttermilk
  • 1½ cups flour
  • ¾ cup grated parmesan
  • 1 tbsp salt
  • 1 tbsp pepper
  • 1 tbsp garlic powder
  • 1 litre groundnut oil
Instructions
  1. Neatly butterfly each chicken breast and season on both sides.
  2. Place some of the grated mozzarella in the middle of the butterflied breast and fold over, pressing together around the edges.
  3. Whisk together the flour, parmesan, salt, pepper, and garlic powder. Dip the whole breast in the buttermilk then press into the flour mix. Press the coating to the chicken.
  4. Shallow fry, turning over every now and then, for around 10 minutes, until the chicken has developed a lovely crisp skin.
  5. Serve with marinara sauce and bread.

Irish Stout Stroganoff Burgers
IRISH STOUT SALISBURY STEAK BURGERS

Ingredients
  • 1 kg beef mince
  • 3 tbsp breadcrumbs
  • 1 onion, finely diced
  • 100ml stout
  • 2 tbsp parsley
  • 1 tsp salt
  • 1 tsp black pepper
  • For the sauce:
  • 1 cup sliced mushrooms
  • 2 cloves garlic, crushed
  • 300ml double cream
  • 200ml beef stock
  • 200ml stout
  • ½ tsp salt
  • 1 tsp black pepper
  • 2 tbsp butter
  • 2 tbsp worcestershire sauce
  • 2 tbsp balsamic vinegar
Instructions
  1. For the burgers, mix together all of the ingredients. Form into 6 patties, then chill in the fridge for 30 minutes.
  2. Add 1 tsp oil to a non-stick skillet. Fry the burgers on the both sides until nicely browned and caramelised. Don't cook them all the way through as they will finish cooking in the sauce. Set aside.
  3. In the same pan, add the butter and fry the mushrooms. When they are golden, add the garlic. Fry until fragrant, then add the stout. Reduce over high heat until halved in volume. Add the beef stock and reduce to half volume again. Add the vinegar, worcestershire sauce, salt, pepper. When reduced, add the cream. Bring to a simmer then return the burgers to the pan and baste with the sauce.
  4. Reduce the sauce until thick and rich, basting and turning the burgers from time to time - about 10 minutes.
  5. Serve in burgers with cheese and toppings of your choice!!!

Sticky Honey Garlic Chicken
Winner winner, chicken dinner. This sticky honey garlic chicken is a quick meal that is delicious and a sure crowd pleaser. Served with mashed potatoes but feel free to serve it with rice and your favourite green vegetables for a complete meal.

Ingredients
  • 2 chicken breasts (butterfly if large)
  • Salt
  • pepper
  • 2 cups plain flour
  • 3 tbsp oil
  • 4 cloves garlic, minced
  • 1 tbsp soy sauce
  • ⅓ cup honey
  • 2 tbsp apple cider vinegar
  • 1 tbsp Butter
  • Chopped parsley
Instructions
  1. Season chicken breasts with salt and pepper. Dredge in flour being sure to shake off any excess.
  2. Heat 1½ tbsp oil in a large non stick pan over medium heat. Cook chicken until golden brown on both sides, take out.
  3. Add butter and remaining oil to pan. Add garlic and cook until fragrant. Stir in a soy sauce, vinegar and honey. Bring to a simmer and add back chicken, turning to coat in sauce.
  4. Serve with mashed potatoes or rice.
  5. Enjoy!
