Pumpkin Spice Latte Rolls

Ingredients
  • DOUGH
  • 2 cups whole milk, warm to the touch
  • ½ cup unsalted butter, melted
  • ½ cup granulated sugar
  • 1 pack active dry yeast
  • 5 cups flour, divided
  • 1 teaspoon baking powder
  • salt, to taste
  • FILLING
  • ¾ cup butter, softened
  • ¾ cup light brown sugar
  • 2 tablespoons pumpkin spice mix
  • FROSTING
  • 1 cup powdered sugar
  • ¼ cup coffee
  • 2 tablespoons whole milk
Instructions
  1. Generously butter two cast-iron pans or disposable foil cake pans.
  2. In a large bowl, whisk together warm milk, melted butter, and sugar. The mixture should be just warm, registering between 100-110˚F (37-43˚C). If it is hotter, allow to cool slightly.
  3. Sprinkle the yeast evenly over the warm milk mixture and let set for 1 minute.
  4. Add 4 cups (500g) of flour to the milk mixture and mix with a wooden spoon until just combined.
  5. Cover the bowl with a towel or plastic wrap and set in a warm place to rise for 1 hour.
  6. Preheat oven to 350˚F (180˚C).
  7. After 1 hour, the dough should have nearly doubled in size.
  8. Remove the towel and add an additional ¾ cup (95g) of flour, baking powder, and salt. Stir well, then turn out onto a well-floured surface.
  9. Knead the dough lightly, adding additional flour as necessary, until the dough just loses its stickiness and does not stick to the surface.
  10. Roll the dough out into a large rectangle, about ½-inch (1 cm) thick. Fix corners to make sure they are sharp and even.
  11. In a medium bowl, combine softened butter, brown sugar, and pumpkin spice mix, and stir well.
  12. Spread the mixture onto the rolled dough.
  13. Roll up the dough, forming a log, and pinch the seam closed. Place seam-side down. Trim off any unevenness on either end.
  14. Cut the log in half, then divide each half into 7 evenly sized pieces, about 1½ inches (4 cm) thick.
  15. Place 7 cinnamon rolls in each skillet or cake pan, one in the center, six around the sides. Cover with plastic wrap and place in a warm place to rise for 30 minutes.
  16. To prepare the frosting, in a medium-size mixing bowl, whisk together powdered sugar, coffee, and milk until smooth.
  17. Remove plastic wrap, and bake the cinnamon rolls in a preheated oven for 25-30 minutes, until golden brown.
  18. While still warm, drizzle evenly with frosting.
  19. Enjoy!

  • 3 c. ice
  • Lemon wedge

Instructions
  1. In a blender, combine vodka, champagne, blue curacao, lemonade and ice. Blend until combined.
  2. Run a lemon wedge around the rim of each glass then dip in sanding sugar.
  3. Pour frosties into rimmed glasses and serve immediately.

Ingredients
  • 200 g (½ lb) ground beef
  • salt, to taste
  • pepper, to taste
  • 1 ½ burger buns
BURGER SAUCE
  • 120 g (½ cup) mayonnaise
  • 1 gherkin, diced
  • 1 teaspoon white vinegar
  • 1 teaspoon yellow mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon white pepper
SALADS
  • onion, finely diced
  • lettuce, finely shredded
  • gherkin, thinly sliced
Instructions
  1. Roll half of the beef mince into a ball and pat it down until a finger thick, bigger than palm size patty. Repeat with remaining beef.
  2. Fry both patties with salt and pepper for 2 and a half minutes a side. Add 1 cheese single to one of the patties.
  3. Toast the burger buns on a dry pan on medium heat until one of the sides is golden brown.
  4. Mix all the sauce ingredients and set aside.
  5. Time to build this bad boy! Spread burger sauce on a bun, sprinkle diced onion, shredded lettuce, place the patty with cheese, place another slice of bun.
  6. Then more sauce, more onion, shredded lettuce, gherkin slices, another patty, and the last slice of bun!
  7. Dig in and get lovin’ it!
  8. Enjoy!

Batter:
  • 4 egg whites
  • 2 egg yolks
  • ⅓ cup wheat flour
  • 1¾ teaspoons baking powder
  • 2¾ tablespoons milk
  • Splash of vanilla extract
  • 4 tablespoons granulated sugar
  • Lemon juice
  • Oil, for pan
To garnish:
  • Whipped cream
  • Maple syrup
  • Powdered sugar
  • Mint
  • Mixed berries
Instructions
  1. Beat egg whites until soft peaks form, then add granulated sugar and continue to beat until combined.
  2. In a large bowl, whisk together the remaining batter ingredients. Fold one-third of the meringue into the batter at a time.
  3. Oil a frying pan over low heat, then cook about 1 cup of the batter at a time. Cook for 6 minutes, then flip it over when slightly browned.
  4. Continue cooking for about 15 minutes until cooked through.
  5. Serve with your favorite fruits and toppings.

  • 12 sliced soft white bread
  • ½ cup melted garlic butter
  • 1½ cups pizza sauce
  • 1½ cups grated mozzarella cheese
  • ¾ cup mini pepperoni
Instructions
  1. Pre-heat oven to 180ºC (350ºF).
  2. Roll out bread flat. Using a 4” round cookie cutter, cut the bread. Keep excess to make breadcrumbs.
  3. Brush garlic butter over each round and press them inside of a muffin tin. Bake for 10 minutes until toasted.
  4. Fill each cup with a little bit of cheese. Top with a tablespoon of pizza sauce. Cover with mozzarella and mini pepperoni.
  5. Bake for 15 minutes until cheese is melted.
  6. Enjoy!

Skillet Chicken Pot Pie

Ingredients
  • 1 tbsp. olive oil
  • 3 boneless, skinless chicken breasts, cut into 1" chunks
  • kosher salt
  • Freshly ground black pepper
  • ½ onion, chopped
  • 2 medium carrots, peeled and chopped
  • 2 stalks celery, chopped
  • 2 tsp. fresh thyme
  • 3 tbsp. flour
  • 1½ c. frozen peas
  • 2 c. chicken broth
  • 2 tbsp. heavy cream
  • 1 can refrigerated biscuit douhg
  • 1 Egg, lightly beaten
Instructions
  1. Preheat oven to 350°. In a large skillet over medium heat, heat oil. Add chicken and season with salt and pepper. Cook until browned on all sides and remove from skillet.
  2. Add onion, carrots, celery, and thyme and cook until vegetables are soft, 4-5 minutes. Sprinkle flour over vegetables and cook 2-3 minutes more. Add chicken broth and bring to a simmer, cooking 8-10 minutes more, until slightly thickened. Turn off heat and stir in cream, peas, and chicken.
  3. Remove biscuits from can and slice in half horizontally. Arrange, overlapping, in a ring on the outer circle of the skillet. Brush with egg wash and bake until golden, 25-30 minutes. Serve.

  • 1 (16.5-oz.) tube refrigerated sugar cookie dough
  • Christmas sprinkles
  • Hot cocoa, for serving (optional)
Instructions
  1. Preheat oven to 350 degrees F.
  2. Scoop about 1 tablespoon of dough to roll into a small ball. Repeat until all the cookie dough is used. Roll the cookie dough balls in sprinkles. Then insert popsicle sticks into the cookie dough balls. Transfer to a parchment-lined baking sheet.
  3. Bake according to package instructions, usually about 12-15 minutes Let cool for at least 10 minutes before serving. Serve with hot cocoa, if desired.

  • 4 lb. sweet potatoes, peeled and finely diced
  • ¼ c. melted butter
  • 2 c. brown sugar
  • ¼ c. water
  • 1 tsp. cinnamon
  • ½ tsp. vanilla
  • Pinch kosher salt
  • 1½ c. mini marshmallows
  • ½ c. whole pecans
Instructions
  1. Spray Crock-Pot with cooking spray. Place sweet potatoes in slow cooker.
  2. In a medium bowl, combine butter, sugar, water, cinnamon, vanilla, and a pinch of salt. Whisk to combine. Pour over sweet potatoes and toss until they are fully coated. Cook on high for 4 hours.
  3. Remove top and top with marshmallows and pecans. Reduce heat to low and cover. When marshmallows are melted, serve.

FOR THE CAKE
  • 3 8-oz. blocks cream cheese, softened
  • 1 15-oz. can pumpkin purée
  • 4 large eggs
  • ¾ c. sugar
  • ½ c. light brown sugar
  • ¼ c. sour cream
  • 2 tsp. pure vanilla extract
  • 2 tbsp. all-purpose flour
  • 1 tsp. pumpkin pie spice
  • ½ tsp. cinnamon
  • ¼ tsp. kosher salt
FOR THE OREO CRUST
  • 24 whole oreos
  • 6 tbsp. melted butter
  • FOR SERVING
  • ¼ c. semisweet chocolate chips, melted
  • ¼ c. Caramel
  • whipped cream or Cool Whip
Instructions
  1. Preheat oven to 350º and position an oven rack in the middle of the oven.
  2. Make cheesecake: In a large bowl using a hand mixer or in the bowl of a stand mixer using the paddle attachment, beat cream cheese until smooth. Add pumpkin purée, eggs, sugars, sour cream, vanilla, flour, pumpkin pie spice, cinnamon, and a generous pinch of salt and beat until combined and no clumps remain. Set aside.
  3. Make crust: In a large Ziploc bag or a food processor fitted with a metal blade, crush or blend Oreos until fine crumbs form. Transfer to a bowl and pour in melted butter. Stir until crumbs are completely coated and moist.
  4. Coat a 9" springform pan with cooking spray and press Oreo mixture into pan and ⅓ of the way up the sides, packing tightly. Pour cheesecake filling over crust.
  5. Place springform pan on a baking sheet (this will help catch any butter leaking from the crust since we're not pre-baking it) and bake until cheesecake is slightly jiggly in the center, 1 hour to 1 hour 15 minutes.
  6. (Cheesecakes tend to crack if you don't use a water bath. If you don't want to use one, bake as directed. If you do want to use a water bath, double wrap the outside of the pan in aluminum foil and place in a baking dish. Place on oven rack and pour in enough boiling water to reach halfway up the pan. Bake as directed.)
  7. If not using a water bath: Remove pan from oven and run a knife around the inside of the pan to release the cheesecake. Let cool 1 hour on a wire rack, then refrigerate until totally chilled, at least 4 hours and up to overnight.
  8. If using a water bath: Turn oven off, prop open oven door, and let cheesecake cool in oven, 1 hour. Remove pan from water and unwrap foil. Refrigerate cheesecake until totally chilled, at least 4 hours and up to overnight.
  9. When ready to serve, drizzle cheesecake with melted chocolate and caramel. Serve with whipped cream or Cool Whip, if desired.

Ingredients
  • 2 lb. green beans, cleaned with ends removed
  • ½ c. heavy cream
  • 2 garlic cloves, thinly sliced
  • 1 c. mozzarella
  • ⅔ c. freshly grated Parmesan, plus more for garnish
  • kosher salt
  • pinch red pepper flakes
  • 2 tsp. lemon zest
Instructions
  1. Preheat oven to 400°. Place green beans into a shallow baking dish or skillet. Pour cream over beans and scatter garlic. Season with salt and red pepper flakes.
  2. Sprinkle with mozzarella and Parmesan and bake until beans are tender and cheese is melted, 25-30 minutes. If desired, broil until cheese is browned. Garnish with more parm and serve.
