Ingredients
  • 2 bone-in chicken thighs
  • 8 ounces chicken breasts
  • 8 ounces chicken wings
  • 1 cup flour
  • 1 teaspoon allspice
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon ginger powder
  • 2 teaspoons salt and pepper
  • 2¾ cups milk, divided
  • 1 bouillon cube
  • 1 egg, beaten
Instructions
  1. In a bowl, combine the flour, allspice, chili powder, garlic powder, paprika, ginger, salt and pepper.
  2. In a sauce pot over low heat, add the chicken, 2¼ cups milk and bouillon cube. Cook for 20 minutes.
  3. Preheat oil to 400 degrees.
  4. In a shallow dish, combine remaining milk and the beaten egg. Dip each chicken piece into the egg mixture, then coat well in the flour mixture.
  5. Deep-fry chicken in batches until golden brown.

Pizza Churros
Commonly served as a sweet street side snack or dessert, churros are a favorite treat. We put a savory spin on them with cheesy pizza flavors, fried till golden brown so they're slightly molten inside. Dipped in your favorite pizza sauce they're a great appetizer!

Ingredients
  • ½ cup butter
  • 1½ cups water
  • 1 tsp salt
  • 1 tsp oregano
  • ½ tsp dried basil
  • 1 tsp garlic powder
  • 1 tsp onion granules
  • 1¼ cups plain flour
  • 3 eggs
  • 1 cup grated mozzarella cheese
  • Oil for frying
  • Marinara Sauce
Instructions
  1. Heat oil to 190ºC (375ºF).
  2. In a medium saucepan, combine water and butter until just starting to melt and simmering. Add all of the spices and stir to dissolve and bring to a simmer.
  3. Add flour all at once. Stir until the dough pulls away from the sides of the pan and forms a ball. Remove from heat and let cool for 4 to 5 minutes.
  4. Stir in eggs one at a time until fully combined then add the cheese.
  5. Using a star-tip in a piping bag, pipe about 3-4-inch long churros. Fry until golden brown.
  6. Serve with marinara sauce to dip. Enjoy!

Brussels Sprouts Hash

Brussels Sprouts Hash
Give brussels sprouts the respect they deserve.

Ingredients
  • 6 slices bacon, cut into 1" pieces
  • ½ onion, chopped
  • 1 lb. brussels sprouts, trimmed and quartered
  • kosher salt
  • Freshly ground black pepper
  • ¼ tsp. red pepper flakes
  • 3 tbsp. water
  • 2 garlic cloves, minced
  • 4 large eggs
Instructions
  1. In a large skillet over medium heat, fry bacon until crispy. Turn off heat and transfer bacon to a paper towel-lined plate. Keep most of bacon fat in skillet, removing any black pieces from the bacon.
  2. Turn heat back to medium and add onion and brussels sprouts to the skillet. Cook, stirring occasionally, until the vegetables begin to soften and turn golden. Season with salt, pepper, and red pepper flakes.
  3. Add 2 tablespoons of water and cover the skillet. Cook until the Brussels sprouts are tender and the water has evaporated, about 5 minutes. (If all the water evaporates before the Brussels sprouts are tender, add more water to the skillet and cover for a couple minutes more.) Add garlic to skillet and cook until fragrant, 1 minute.
  4. Using a wooden spoon, make four holes in the hash to reveal bottom of skillet. Crack an egg into each hole and season each egg with salt and pepper. Replace lid and cook until eggs are cooked to your liking, about 5 minutes for a just runny egg. Sprinkle cooked bacon bits over the entire skillet. Serve warm.

Chicken Fajita Wrap Bombs
CHICKEN FAJITA WRAP BOMBS

Ingredients
  • 3 chicken breasts, sliced
  • 8 large flour tortillas
  • 1½ cups cheddar, plus a little more for topping
  • 2 tbsp fajita seasoning
  • 1 tsp salt
  • 2 tbsp lime juice
  • 1 jalapeno, diced
  • 2 cloves garlic, finely chopped
  • 3 peppers, sliced
  • 2 onions, sliced
  • 3 tbsp oil
  • ½ cup beer
  • sour cream, salsa, to serve
Instructions
  1. To your sliced chicken, add your lime juice, 1 tsp salt, 1 tbsp oil, fajita seasoning and diced jalapeno. Mix well, cover and leave to marinade for 1 hour (at room temperature).
  2. Heat 3 tbsp oil over medium-high heat. Add your peppers and onions and 1 tsp salt. Fry for 15 minutes or so, stirring frequently, until nicely caramelised, translucent and sweet. Add your garlic and fry briefly. Add your chicken and any marinade/juices. Fry until the meat has gathered a little colour. Deglaze with the beer and reduce until sticky (if necessary).
  3. Load into wraps with a good tbsp cheddar. You should have enough for 8 wraps. Wrap up with 6 or so folds. Place, folded side down, on a baking tray and sprinkle over some remaining cheese.
  4. Bake for 20 minutes at 180°C.
  5. Destroy!

Ingredients
  • 1 rump roast
  • 1⅓ cups grated mozzarella cheese
  • 3½ ounces sliced smoked sausage
  • ½ red onion, sliced
  • ½ red bell pepper, sliced
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
Instructions
  1. Preheat oven to 390 degrees.
  2. Cut a slit in the roast, forming a pocket for the filling. Fill it with the cheese, sausage, onion and red bell pepper. Close the rump with a needle and twine. Place in a baking dish, and sprinkle both sides with salt, pepper and olive oil.
  3. Bake roast for 30 minutes on one side, then turn and roast for another 40 minutes on the other side. Slice and serve.

Ingredients
  • 6 boneless skinless chicken breasts
  • Olive oil
  • Kosher salt
  • Freshly ground black pepper
  • 1 tsp. Italian seasoning
  • 1 lb. fresh mozzarella, sliced
  • 1½ c. baby spinach
  • 2 tomatoes, sliced into half moons
  • Small bunch fresh basil
  • Balsamic glaze, for serving
Instructions
  1. Preheat oven to 400°. Place chicken on a cutting board and make 5 to 6 slits in each breast, being careful not to cut through completely. Transfer to a small baking sheet.
  2. Drizzle with olive oil then season chicken all over with salt, pepper and Italian seasoning. Stuff each breast with mozzarella, spinach and tomatoes.
  3. Bake until chicken is cooked through and no longer pink, about 25 minutes. Garnish with fresh basil then drizzle balsamic glaze on top.

Ingredients
  • 2 tablespoons olive oil
  • ½ green bell pepper, thinly sliced
  • Small red onion, thinly sliced
  • 1 tablespoon Cajun seasoning
  • 4 tablespoons tomato sauce
  • Salt and pepper
  • 1 large chicken breast, cubed
  • ½ pounds large shrimp, peeled and deveined
  • 2 links andouille sausage, cubed
  • 1 box penne pasta
  • 1½ cups heavy cream
  • Fresh parsley for garnish
Instructions
  1. Heat 1 tablespoon of oil in a large skillet. Cook the peppers and onion until tender, seasoning with a pinch of the Cajun seasoning and salt and pepper. Remove from skillet and set aside.
  2. Add another tablespoon of oil, then slowly add the chicken, cooking until brown. Add the shrimp and Cajun seasoning and cook until pink. Add the sausage and cook until warmed through.
  3. In a large pot of boiling water, cook the pasta to your preference and drain.
  4. Add the pasta to the skillet, then add the cream, the cooked vegetables and a pinch of salt and pepper. Bring to a boil. Sprinkle with parsley, transfer to a plate and serve.

Ingredients
  • 2 chicken breasts (butterfly if large)
  • Salt
  • pepper
  • 2 cups plain flour
  • 3 tbsp oil
  • 4 cloves garlic, minced
  • 1 tbsp soy sauce
  • ⅓ cup honey
  • 2 tbsp apple cider vinegar
  • 1 tbsp Butter
  • Chopped parsley
Instructions
  1. Season chicken breasts with salt and pepper. Dredge in flour being sure to shake off any excess.
  2. Heat 1½ tbsp oil in a large non stick pan over medium heat. Cook chicken until golden brown on both sides, take out.
  3. Add butter and remaining oil to pan. Add garlic and cook until fragrant. Stir in a soy sauce, vinegar and honey. Bring to a simmer and add back chicken, turning to coat in sauce.
  4. Serve with mashed potatoes or rice.
  5. Enjoy!

Chorizo Manchego Carbonara

Chorizo Manchego Carbonara
This take on traditional carbonara uses sliced chorizo, vodka, and Manchego cheese not just as an ingredient, but as a serving vessel too.

Ingredients
  • 1 manchego cheese wheel
  • 2 large eggs
  • 1 large egg yolk
  • 3 tablespoons olive oil
  • ½ cup diced chorizo
  • 2 cloves garlic, sliced
  • ½ teaspoon red pepper flakes
  • 6 ounces spaghetti, cooked
  • Salt and pepper, to taste
  • 2 tablespoons parsley, minced
  • Splash of vodka
Instructions
  1. Using a cheese plane or a melon baller, shave enough space from the cheese wheel to resemble a bowl. Reserve the shaved cheese (about ¾ cup). In a small bowl, whisk eggs, yolk, and shaved manchego into a paste.
  2. In a frying pan, heat oil, and cook the chorizo until crispy. Add garlic and cook for 30 seconds, until fragrant and lightly golden. Add red pepper flakes and the cooked pasta. Coat the pasta with oil. Remove the pan from the heat, and add salt and pepper to taste. Pour over the manchego-egg mixture, add parsley and quickly toss everything together.
  3. Pour a little vodka into the hollowed out cheese bowl and light on fire. Toss chorizo carbonara inside of the cheese bowl and serve immediately.

General Tso Meatballs

General Tso Meatballs
Skip the takeout and create your own version as a meatball.

Ingredients
  • 1 lb. ground beef
  • ½ c. panko bread crumbs
  • 4 green onions, thinly sliced, divided
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp. ginger, minced or grated
  • 1 tsp. sesame oil
  • kosher salt
  • pinch red pepper flakes
  • ¼ c. cornstarch
  • Vegetable oil, for frying
  • ½ c. low-sodium chicken broth
  • ¼ c. soy sauce
  • 2 tbsp. apple cider vinegar
  • 2 tbsp. hoisin sauce
  • 1 tbsp. honey
  • 2 tsp. sesame seeds
Instructions
  1. In a large bowl, combine ground beef, panko bread crumbs, 2 green onions, egg, garlic, ginger, and sesame oil. Season with salt and pepper and mix to combine.
  2. Roll mixture into small balls, about a heaping tablespoon. Then toss meatballs in cornstarch.
  3. In large skillet over medium high heat about ½” of vegetable oil. Add meatballs and cook until seared on all sides, about 3 minutes per side. Remove meatballs from skillet and drain fat.
  4. To the skillet over medium heat, add chicken broth, soy sauce, apple cider vinegar, hoisin, and honey. Whisk to combine then add back meatballs. Simmer until meatballs are cooked through, 6 to 8 minutes more.
  5. Remove from heat and sprinkle with remaining green onion and sesame seeds.
