Homemade Gumdrops

Homemade Gumdrops
Don't blame us if you eat an entire batch of Homemade Gum Drops in one sitting! ??

Ingredients
  • Nonstick cooking spray, for spraying the molds
  • Two ¼-ounce envelopes unflavored gelatin
  • ½ cup granulated white sugar, plus more for coating
  • One 3-ounce package cherry-flavored gelatin
  • Granulated red sugar, for coating Coarse white sugar, for coating
Instructions
  1. Special equipment: a 15-count silicone gumdrop or chocolate candy mold
  2. Spray a 15-count silicone gumdrop or chocolate candy mold with cooking spray.
  3. Sprinkle the unflavored gelatin over ½ cup water to soften; set aside.
  4. Put the granulated white sugar and ½ cup water in a saucepan and bring to a boil, stirring to dissolve the sugar. Add the cherry-flavored gelatin to the pan, followed by the softened unflavored gelatin. Stir and remove from the heat. Continue stirring until the gelatins are dissolved, 1 to 2 minutes. Strain into a measuring cup and let cool for 5 minutes; it will be warm but not yet set.
  5. Pour the liquid into the prepared mold. Refrigerate for at least 4 hours or overnight.
  6. Remove the gumdrops from the mold and place onto wax paper. Let them sit out for an hour to come to room temperature. Coat some in granulated red sugar, some in granulated white sugar and some in coarse white sugar; return to the wax paper. Let sit overnight to dry out and set.

Crust
  • 1 cup raw walnuts
  • 1 cup raw almonds
  • 10 medjool dates. pitted
  • 3 TBS melted coconut oil
  • ¾ cup shredded unsweetened coconut
  • ¼ tsp sea salt
Filling
  • 3½ cup raw cashews (soaked 3 hrs or overnight)
  • 1 cup coconut cream
  • ¾ cup maple syrup
  • ½ cup lemon juice
  • ½ cup melted coconut oil
  • 2 tsp vanilla
  • 1 cup blueberries
Instructions
  1. Blend

  3. Using a food processor blend crust ingredients until fine crumbs. Pour into a 9in springform cake pan. Press down and smooth out with the back of a measuring cup. Set aside.

  6. In a high power blender, blend together all the fillings except the blueberries until very smooth. Set aside half of the mixture.

  15. Let freeze. Take out of freezer 15-20 minutes before serving.

  17. Save or make extra white filling. Then add natural colorants.
  18. For lavender color add a little blueberries.
  19. For dark red color add beet juice and blueberries or raspberries.

Christmas Tree Nutella Pie
This is the kind of Christmas tree that everyone will want to gather around.

Ingredients
  • 2 sheets puff pastry
  • 50 grams nutella
  • 30 grams diced almonds
  • 1 egg yolk
Instructions
  1. Cut out puff pastry in the shape of a Christmas tree.
  2. Spread nutella on one sheet of pastry and sprinkle with diced almonds.
  3. Place the other sheet of puff pastry on top. Cut slits on both sides spacing them 1 centimeter apart, leaving the center intact.
  4. Twist each strip of pastry twice.
  5. Cut out a star shape with the leftover pastry and place this on the top.
  6. Brush pastry with egg yolk mixed with a little water.
  7. Bake for 20 minutes at 220 degrees C.

Easy Candy Cane Cookie Platter

Ingredients
  • 2 cups unsalted butter, softened to room temperature
  • 2 cups powdered sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 teaspoons peppermint extract
  • 6 cups all-purpose flour
  • 1 teaspoon salt
  • ¾-1 teaspoon red food coloring
  • Crushed peppermint candies for decorating
  • Frosting for decorating
Instructions
  1. Cream softened butter and sugar in a mixing bowl in a stand mixer or with a hand mixer until an icing like consistency forms. Mix in the eggs and vanilla.
  2. On a low speed mix in flour and salt until just incorporated, making sure not to overwork the dough.
  3. Take out about two thirds of the dough, reserve.
  4. Place the remaining dough remaining in the mixer and add peppermint and red food coloring (until desired color is reached) and mix just until combined.
  5. Wrap each of the doughs in plastic and chill for at least 1 hour.
  6. When ready to bake the cookies, preheat the oven to 375°F/190˚C and take out dough.
  7. Take the uncolored dough and roll it out to about ¼-½ inch thick.
  8. Use cut outs to make cookies, place on a baking sheet with parchment.
  9. Re-ball the leftover dough from cut outs and take off about 2 tablespoons worth of dough from the both the uncolored and red doughs.
  10. Roll each into a rope about 4 inches long. Pinch the two ropes together at the top and gently twist them together.
  11. Place the twisted cookies on the baking sheet and gently hook the twist to create a candy cane shape.
  12. Repeat with the remaining dough.
  13. Bake all cookies for 10 to 12 minutes, until the edges of the cookies are just barely starting to turn golden.
  14. When finished garnish candy cane twists with crushed candy canes.
  15. When cookies are cooled, decorate with frosting.

Don't even think about heading to a Christmas party without a batch of this.

Ingredients
  • 3 c. corn chex
  • 2 c. wheat chex
  • 2 c. mini pretzels
  • 2 c. mini marshmallows
  • 1 c. red and green M&Ms
  • 20 oz. white chocolate
  • Red and green sprinkles, for garnish
Instructions
  1. In a large bowl, mix together Corn Chex, Wheat Chex, pretzels, mini marshmallows, and M&Ms.
  2. Melt white chocolate and pour over mixture. Stir until fully coated.
  3. Transfer mixture to a parchment-lined baking sheet or dish and top with sprinkles, then refrigerate until firm, 1 hour.
  4. Break up into bite-size pieces and serve.

Ingredients
  • Waffles
  • 2 cups flour
  • ½ teaspoon salt
  • 4 teaspoons baking powder
  • 2 eggs
  • 2 tablespoons sugar
  • ½ vegetable oil
  • 1 cup milk
  • 1 cup Baileys Irish Cream
  • Bailey’s whipped cream
  • 1 cup whipping cream
  • ¼ cup Bailey’s Irish Cream
  • 1 teaspoon vanilla extract
  • 2 tablespoon powdered sugar
Instructions
  1. 1. To make waffles, sift the dry ingredients into a large bowl and mix to combine.
  2. 2. Separate egg whites and egg yolks into two different bowls.
  3. 3. Using a hand mixer whip egg whites until stiff peaks form.
  4. 4. In the bowl with the egg yolks stir in milk, Baileys Irish Cream, oil, and vanilla.
  5. 5. Add the wet ingredients into the dry ingredients and mix well.
  6. 6. Fold in the whipped egg whites.
  7. 7. Pour 1 cup of the mix into the greased and heated waffle iron on medium-high heat for 6–8 minutes
  8. 8. To make whipped cream, beat whipping cream in a bowl until stiff peaks form. Then fold in the remaining ingredients until combined. Spoon a dollop of whipped cream onto the waffles to serve.

Ingredients
  • ¾ pound unsalted butter, at room temperature
  • 1 cup sugar, plus extra for sprinkling
  • 1 teaspoon pure vanilla extract
  • 3½ cups all-purpose flour
  • ¼ teaspoon salt
  • 6 to 7 ounces very good semisweet chocolate, finely chopped
Instructions
  1. Preheat the oven to 350 degrees F.
  2. In the bowl of an electric mixer fitted with a paddle attachment, mix together the butter and 1 cup of sugar until they are just combined. Add the vanilla. In a medium bowl, sift together the flour and salt, then add them to the butter-and-sugar mixture. Mix on low speed until the dough starts to come together. Dump onto a surface dusted with flour and shape into a flat disk. Wrap in plastic and chill for 30 minutes.
  3. Roll the dough ½-inch thick and cut with a 3 by 1-inch finger-shaped cutter. Place the cookies on an ungreased baking sheet and sprinkle with sugar. Bake for 20 to 25 minutes, until the edges begin to brown. Allow to cool to room temperature.
  4. When the cookies are cool, place them on a baking sheet lined with parchment paper. Put 3 ounces of the chocolate in a glass bowl and microwave on high power for 30 seconds. (Don't trust your microwave timer; time it with your watch.) Stir with a wooden spoon. Continue to heat and stir in 30-second increments until the chocolate is just melted. Add the remaining chocolate and allow it to sit at room temperature, stirring often, until it's completely smooth. Stir vigorously until the chocolate is smooth and slightly cooled; stirring makes it glossier.
  5. Drizzle ½ of each cookie with just enough chocolate to coat it.

Pumpkin Spice Latte Rolls
It's not too late for pumpkin spice, ESPECIALLY if it looks like this ?!

Ingredients
  • DOUGH
  • 2 cups whole milk, warm to the touch
  • ½ cup unsalted butter, melted
  • ½ cup granulated sugar
  • 1 pack active dry yeast
  • 5 cups flour, divided
  • 1 teaspoon baking powder
  • salt, to taste
  • FILLING
  • ¾ cup butter, softened
  • ¾ cup light brown sugar
  • 2 tablespoons pumpkin spice mix
  • FROSTING
  • 1 cup powdered sugar
  • ¼ cup coffee
  • 2 tablespoons whole milk
Instructions
  1. Generously butter two cast-iron pans or disposable foil cake pans.
  2. In a large bowl, whisk together warm milk, melted butter, and sugar. The mixture should be just warm, registering between 100-110˚F (37-43˚C). If it is hotter, allow to cool slightly.
  3. Sprinkle the yeast evenly over the warm milk mixture and let set for 1 minute.
  4. Add 4 cups (500g) of flour to the milk mixture and mix with a wooden spoon until just combined.
  5. Cover the bowl with a towel or plastic wrap and set in a warm place to rise for 1 hour.
  6. Preheat oven to 350˚F (180˚C).
  7. After 1 hour, the dough should have nearly doubled in size.
  8. Remove the towel and add an additional ¾ cup (95g) of flour, baking powder, and salt. Stir well, then turn out onto a well-floured surface.
  9. Knead the dough lightly, adding additional flour as necessary, until the dough just loses its stickiness and does not stick to the surface.
  10. Roll the dough out into a large rectangle, about ½-inch (1 cm) thick. Fix corners to make sure they are sharp and even.
  11. In a medium bowl, combine softened butter, brown sugar, and pumpkin spice mix, and stir well.
  12. Spread the mixture onto the rolled dough.
  13. Roll up the dough, forming a log, and pinch the seam closed. Place seam-side down. Trim off any unevenness on either end.
  14. Cut the log in half, then divide each half into 7 evenly sized pieces, about 1½ inches (4 cm) thick.
  15. Place 7 cinnamon rolls in each skillet or cake pan, one in the center, six around the sides. Cover with plastic wrap and place in a warm place to rise for 30 minutes.
  16. To prepare the frosting, in a medium-size mixing bowl, whisk together powdered sugar, coffee, and milk until smooth.
  17. Remove plastic wrap, and bake the cinnamon rolls in a preheated oven for 25-30 minutes, until golden brown.
  18. While still warm, drizzle evenly with frosting.
  19. Enjoy!

Souffle Pancake
For flapjacks that are extra fluffy try separating the egg whites from the yolks in the style of a souffle.

Batter:
  • 4 egg whites
  • 2 egg yolks
  • ⅓ cup wheat flour
  • 1¾ teaspoons baking powder
  • 2¾ tablespoons milk
  • Splash of vanilla extract
  • 4 tablespoons granulated sugar
  • Lemon juice
  • Oil, for pan
To garnish:
  • Whipped cream
  • Maple syrup
  • Powdered sugar
  • Mint
  • Mixed berries
Instructions
  1. Beat egg whites until soft peaks form, then add granulated sugar and continue to beat until combined.
  2. In a large bowl, whisk together the remaining batter ingredients. Fold one-third of the meringue into the batter at a time.
  3. Oil a frying pan over low heat, then cook about 1 cup of the batter at a time. Cook for 6 minutes, then flip it over when slightly browned.
  4. Continue cooking for about 15 minutes until cooked through.
  5. Serve with your favorite fruits and toppings.

Holiday Cookie Pops
You NEED to try dunking these in hot cocoa.

  • 1 (16.5-oz.) tube refrigerated sugar cookie dough
  • Christmas sprinkles
  • Hot cocoa, for serving (optional)
Instructions
  1. Preheat oven to 350 degrees F.
  2. Scoop about 1 tablespoon of dough to roll into a small ball. Repeat until all the cookie dough is used. Roll the cookie dough balls in sprinkles. Then insert popsicle sticks into the cookie dough balls. Transfer to a parchment-lined baking sheet.
  3. Bake according to package instructions, usually about 12-15 minutes Let cool for at least 10 minutes before serving. Serve with hot cocoa, if desired.
