Chocolate Swirl Pie

Chocolate Swirl Pie
Because normal pie crusts are boring! Put a twist and swirl your pie crust for fun presentation. Filled with a rich chocolate filling ready to be devoured with some ice cream.

Ingredients
  • 350g melted choc
  • 150g melted butter
  • 6 eggs
  • 30g sugar
  • 30g flour
  • 1 tsp vanilla
  • 2 refrigerated pie crusts
  • 3 tbsp cocoa powde
  • 3 tbsp cing sugar
  • 2 tbsp Melted butter
  • Egg wash
Instructions
  1. Preheat oven to 180ºC (350ºF).
  2. Roll out one pie crust. Brush with melted butter and sift over cocoa mixed with icing sugar. Roll tightly into a log. Cut into ¼” rounds. Repeat with second pie crust.
  3. Press one logs worth into the bottom of an 8” cake tin and press too adhere. Brush with egg wash and set aside.
  4. In bowl, mix together melted chocolate and butter, set aside. In another large bowl, whisk together eggs, sugar, flour, and vanilla. Pour into pie base.
  5. Place remaining swirl rounds in a circle in-between two pieces of parchment paper. Roll out to ¼” thick and place on top of chocolate filling. Press edges to seal and cut any excess pie crust.
  6. Brush the top evenly with egg wash. Bake for 30-40 minutes until crust is golden brown.

Lasagna Subs
Close your eyes. Imagine a lasagna. Think of those layers of perfectly cooked pasta, thinking of oozing mozzarella, deeply rich beef ragu. Now think of that, but in a brioche bun - the ease of convenience.

Ingredients
  • 5 hot dog buns
  • ½ cup garlic butter
  • 1 tbsp olive oil
  • ½ cup pancetta
  • 1 onion, diced
  • 1.8 lb beef mince
  • 3 cloves garlic, finely diced
  • 1 tin chopped tomatoes
  • 1 glass red wine
  • 1 tbsp tomato puree
  • 1 tbsp salt
  • 1 tsp pepper
  • 10 strips of fresh lasagna sheets
  • 15 strips of mozzarella
  • Parmesan
Instructions
  1. Preheat the oven to 180°C/360°F.
  2. Fry the pancetta in the oil until golden, then add the onion and cook for a further 5 minutes. Add the garlic and cook for 1 more minute then add the mince and break up in the pan with a wooden spoon, moving it around as you go to brown it.
  3. Add the can of tomatoes, wine and tomato puree then season. Gently simmer until the liquid has reduced considerably - you want it to be almost dry.
  4. Meanwhile, take the hot dog buns and hollow them out with a sharp knife. Brush with garlic butter and bake for 10 - 15 minutes.
  5. Layer up the buns - a strip of pasta on the bottom followed by a few spoonfuls of ragu and a strip of mozzarella. Top with more ragu, more pasta and another strip of mozzarella, then sprinkle with the parmesan. Bake for around half an hour, covering with foil if the buns look like they'll burn.

Loaded fries are really, really decadent. These are something else - gooey, creamy cheese sauce spiked with mustard and served with crispy fries. Vive La France!

Ice Cube Easter Truffles

Ice Cube Easter Truffles
Treat the family with these little easter truffles. No baking required and super fun for the kids to get involved too!

Ingredients
Ganache:
  • 2 tsp corn syrup
  • 150ml heavy cream
  • 300g milk chocolate
Chocolate Coating:
  • Candy Melts
  • 300g Dark Chocolate
  • 1 tbsp coconut oil
  • Mini Eggs of choice
Instructions
  1. Melt coloured candy melts of choice until runny. (Add coconut oil if needed).
  2. Drizzle each candy melt colour into a silicone ice cube tray. Let set
  3. Meanwhile, in a microwavable jug, add chopped dark chocolate and coconut oil. Microwave. on high for 2 minutes until completely melted. Pour into ice cube tray and tilt tray in all directions, allowing chocolate to cover the sides. Flip trays upside down to let excess chocolate drip out. Keep remaining chocolate for topping. Then refrigerate for 5 minutes.
  4. Heat cream and corn syrup until steaming but not boiling, about 1-2 minutes in the microwave. Pour over milk chocolate. Let sit for 30 seconds then stir to melt and incorporate. Let cool until room temperature and slightly thickened. Transfer to a piping bag.
  5. Fill each ice cube cavity with ganache and one mini egg in the middle. Cover with ganache.
  6. Top with remaining chocolate (reheat in microwave if needed).
  7. Chill again for 30 minutes or until set.
  8. Enjoy!

Baileys Chocolate Fudge Cake
BAILEYS CHOCOLATE FUDGE CAKE

Ingredients
  • 250g plain flour
  • 450g sugar
  • 75g unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1½ teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon instant coffee
  • 250ml Baileys
  • 125ml vegetable
  • 2 large eggs
  • 2½ teaspoons vanilla extract
  • 250ml boiling water
  • 100 g Dark Chocolate (7oz)
  • 300 g Milk Chocolate (21oz)
  • 200ml baileys
  • 250ml double cream
Instructions
  1. Pre-heat oven to 180ºC (350ºF).
  2. Add flour, sugar, cocoa, baking powder, baking soda, salt and espresso powder to a large bowl or the bowl of a stand mixer. Whisk through to combine or, using your paddle attachment, stir through flour mixture until combined well.
  3. Add Baileys, vegetable oil, eggs, and vanilla to flour mixture and mix together on medium speed until well combined. Reduce speed and carefully add boiling water to the cake batter until well combined.
  4. Distribute cake batter evenly between the two prepared cake pans. Bake for 30-35 minutes, until a toothpick or cake tester inserted in the centre of the chocolate cake comes out clean.
  5. Remove from the oven and allow to cool for about 10 minutes, remove from the pan and cool completely.
  6. In microwaveable jug, heat cream and baileys for 2 minutes until steaming. Our over chopped chocolate. Let sit for 5 minutes then stir to incorporate. Let set until thick at room temperature.
  7. Place one layer of cake down and top with ganache. Top with second piece of cake. Cover entire cake with remaining ganache.
  8. Slice and Enjoy!

Don't think we don't read the comments under our videos. It has come to our attention that a small minority of people have noticed our preoccupation with hasselbacking stuff - this one is for you guys. This originally Swedish technique has taken the internet by storm - everything from aubergines to olives have felt the punishing edge of a sharp chefs knife. This dish combines a few classics, pizza and chicken, to devastating (if hugely inauthentic) effect.

Ingredients
  • 4 chicken breasts
  • 1 tbsp oregano
  • 1 tsp salt
  • 1 tsp pepper
  • ¼ cup olive oil
  • 1 tsp garlic powder
  • 1 pack small pepperoni, sliced in half
  • 1½ cups pizza sauce
  • Sliced mozzarella
  • Fresh basil leaves
Instructions
  1. Preheat the oven to 180°C/360°F.
  2. Using a very sharp knife cut even parallel lines ⅘ the way down the length of each chicken breast, around ½ cm apart.
  3. Place the chicken in a bowl and sprinkle with oregano, pepper, salt and garlic powder.
  4. Arrange the chicken on an oiled skillet or baking tray and place a slice of pepperoni between each slit. Pour over the pizza sauce and top with mozzarella, then bake for around half an hour or until the chicken is cooked through and the cheese is bubbling.
  5. Serve immediately with a salad and fresh crusty bread.

Ingredients
  • 2 tbsp unsalted butter
  • 3 tbsp soft light brown sugar
  • 3 tbsp maple syrup
  • 5 firm bananas, sliced carefully lengthways
  • 200g unsalted butter
  • 100g caster sugar
  • 100g light muscovado sugar
  • 3 medium free-range eggs
  • 300g plain flour
  • 1 tsp baking powder
  • 3 ripe bananas, mashed
  • 130g dark chocolate chips
  • 150ml whole milk
Instructions
  1. Preheat the oven to 180°C/360°F. Put the 50g butter, brown sugar and maple syrup in a non stick saucepan. Cook until the sugar dissolves then pour the caramel into a well greased 23 cm cake tin. Arrange the sliced bananas, cut-side down, over the base of the tin - feel free to cut them up to make them fit!
  2. Put the 200g butter and sugar in a bowl and beat until pale and creamy. Add the eggs, one at a time, beating after each one goes in. Sift in the flour and baking powder and fold through the mixture. Fold in the mashed up bananas, chocolate chips and milk then pour on top of the bananas and caramel.
  3. Bake for 45-50 minutes or until golden on top and a skewer comes out clean. Leave to cool for a bit in the tin then flip over onto a serving plate. Enjoy with ice cream.

BBQ chicken nacho’s are such a winning combination. The tang and slight kick from BBQ sauce pairs so well. Make your own flavoured tortilla chips for extra flavour and kick!

Ingredients
  • 1 tbsp bbq seasoning
  • ½ cup melted butter
  • 1 pack tortillas
  • 2 cups shredded cooked chicken
  • ¼ cup cooked crispy bacon bits
  • 1 cup bbq sauce
  • ⅓ cup chopped spring onions
  • 2 cups mixed grated cheese
  • Chopped spring onions
  • Chopped tomatoes
Instructions
  1. Pre-heat oven to 180ºC. Line a large sheet tray with parchment paper.
  2. Cut tortillas into 8ths.
  3. Add bbq seasoning to melted butter and whisk to incorporate. Toss tortilla triangles in seasoning and arrange on lined tray in an even layer. Bake for 8 minutes until golden brown and crispy. Then arrange half on a sheet tray.
  4. Meanwhile, mix together chicken, bacon, bbq sauce and spring onions. Divide on top of the tortillas, sprinkle with half of the cheese mix. Top with remaining tortillas and repeat with chicken mix and cheese.
  5. Bake for 6-8 minutes until cheese is melted through.
  6. Top with chopped tomatoes and spring onions.
  7. Enjoy!

BACON JALAPENO POPPER DAUPHINOISE

Ingredients
  • 1kg potatoes, sliced 0.5 cm thick
  • 400ml double cream
  • 250 ml whole milk
  • 3 jalapenos, sliced
  • 12 rashers bacon, diced
  • 3 cloves of garlic
  • 1 tbsp salt
  • 1 tbsp black pepper
  • ½ cup mozzarella
  • ½ cup cheddar
Instructions
  1. In a large pot, fry the bacon until the fat is rendered and it's crisp. Add the milk, cream, jalapenos, salt, pepper and garlic. Bring to a simmer, then add the potatoes. Simmer for 5 minutes.
  2. Transfer half of the potatoes to a skillet using a slotted spoon, then add half the cheeses. Top with the remaining potatoes and the rest of the cheese.
  3. Bake for 40 minutes at 180°C, or until melted, golden and delicious.
  4. Delicious with steak!

Monster Cheesesteak Burrito
Supposedly invented by a bored hot dog vendor in the 1930s, the winning combination of succulent sauteed beef, melted cheese and bread has earned the philly cheesesteak its place in the hall of fame. Our take on this American classic takes the poor burrito, that oft bastardised imitation of a rich and ancient cuisine, and stuffs it with all the good stuff, then pours cheese sauce all over it. Have pity, food gods.

Ingredients
  • 3 tbsp
  • 2.2lb steak, cut into very thin slices. It helps if you freeze it for around half an hour beforehand.
  • 1 white onion, sliced
  • 3 green peppers, sliced
  • 2 cups chestnut mushrooms, sliced
  • 1 tbsp pepper
  • 1 tbsp salt
  • 1 tsp garlic powder
  • ¼ cup flour
  • ¼ cup water
  • 5 large flour tortillas
  • 18 slices mozzarella
  • Cheese sauce
Instructions
  1. Preheat the oven to 180°C/360°F.
  2. Heat the oil in a large heavy bottomed frying pan and fry the steak quickly. Remove from the pan.
  3. Add the peppers and onions and fry until soft, then add the steak back in and season everything with the pepper, salt and garlic powder. Take off the heat.
  4. In a small bowl whisk the flour and water. Stick the tortillas together in a truncated triangle shape - three along the bottom, two along the top. Place some mozzarella on the bottom layer and top with a layer of the cheesesteak mix, then another layer of mozzarella, then more mix and more mozzarella. Carefully roll the whole thing up, cover with cheese sauce and bake until the sauce is bubbling and it's heated through, roughly 30 mins.
