Cheesy Swedish Meatball Pasta Bake
CHEESY SWEDISH MEATBALL PASTA BAKE
Author:
Cuisine: Italian
Recipe type: Pasta
Ingredients
  • 100g breadcrumbs
  • 100ml milk
  • 1 tbsp butter
  • 1 large egg
  • 1 large clove garlic, crushed
  • ½ tbsp parsley
  • 1 tbsp oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ of an onion , finely chopped
  • 450g beef mince
  • 300g pork mince
  • 2 onions, finely sliced
  • 50g butter
  • 50g flour
  • 1 litre beef stock
  • 200ml double cream
  • 200g mild cheddar
  • 500g rigatone, cooked to packet instructions
  • 1 large ball mozzarella, torn
  • 100g parmesan, grated
Instructions
  1. Preheat the oven to 180°C/360°F.
  2. In a large bowl soak the breadcrumbs in milk. Add the butter, egg, garlic, salt, pepper, grated onion and parsley. Stir everything together, then add the beef and pork and mix thoroughly with your hands - the mixture should be a little wet but not sloppy. Roll into meatballs weighing roughly 30g (around the size of a walnut).
  3. Fry them in a little oil until browned on all sides then remove from the pan.
  4. Add a little oil and cook the onion until soft, then add the butter and cook until foaming. Stir through the flour and cook out - roughly a minute.
  5. Gradually pour in the beef stock, making sure each addition is incorporated before adding the next splash. Pour in the cream and season to taste, then add the meatballs and bring to a gentle simmer to cook them through. Add the grated cheddar and stir together on a really low heat, then add the pasta and stir through the cheesy sauce.
  6. Add to a baking dish with the torn mozzarella and scatter with parmesan. Bake for around 30 minutes, or until the top has browned nicely.

Author:
Cuisine: American
Recipe type: Main dish
Ingredients
  • 1 tbsp olive oil
  • 2 garlic cloves, crushed
  • 800g passata
  • 1 tbsp dried oregano
  • 1 tsp salt
  • ½ tbsp sugar
  • 1 tsp black pepper
  • 5 chicken breasts
  • 300g plain flour
  • 1 tbsp fine sea salt
  • 200g panko breadcrumbs
  • 100g parmesan, finely grated
  • 3 eggs, beaten with a little milk
  • 1 ltr groundnut oil
  • 7 large flour tortillas
  • Grated mozzarella
Instructions
  1. Preheat the oven to 180°C.
  2. Make the sauce - fry the garlic in the oil until fragrant, then pour in the passata - be careful and have a lid ready as it will spatter. Stir in the oregano, salt and pepper. Leave to simmer gently and reduce until it's almost a paste.
  3. Meanwhile, bash the chicken breasts out until they are around 1.5 cm thick.
  4. Place the flour, egg wash and breadcrumbs in bowls. Season the flour with the salt and thoroughly mix the grated parmesan with the breadcrumbs.
  5. Dip the chicken breasts in the flour, shake off excess, then in the egg mix, then finally the breadcrumbs.
  6. Heat the oil to 170°C in a wide, heavy pan. Fry the coated chicken breasts in batches, turning frequently, until crisp and golden. Remove from the oil, dab with paper towel and leave to dry on a wire cooling rack.
  7. In a skillet arrange the tortillas in a flower shape around the edges with one tortilla in the middle. Place the chicken pieces on top. Cover with the sauce and the grated mozzarella. Add another tortilla on top and fold over the edges to create a giant wrap shape. Place a heavy object on top to squash the tortillas into submission, then bake for around 20 minutes.

Cheesy Heinz Beanz Potato Lasagna

Cheesy Heinz Beanz Potato Lasagna
If you’ve been longing for a dauphinoise that delivers more bean for your buck, then this is the dish for you. Cuisine: Italian
Recipe type: Lasagna
Ingredients
  • 830g Heinz Beanz
  • 750g Potatoes, peeled
  • 8oz Vegetable Stock
  • 7oz Whole milk
  • 150g Cheddar Cheese
  • 3 cloves Garlic, minced
  • 1 tsp salt
  • 1 tsp pepper
  • 2g parsley, chopped

  2. Heat the stock, milk, garlic, black pepper, and salt to a simmer. Add the potatoes in batches and cook until they are pliable, then take them out of the mixture and leave them in a separate dish so they don’t turn too mushy at this stage
  3. Place a layer of the potatoes in the bottom of a deep baking dish and top with a few spoons of Beanz and a good sprinkling of cheddar cheese. Repeat with as many layers as it takes to reach the top of the dish. Over the final layer of potatoes pour all the excess cream and sprinkle with any remaining cheddar. then cover and take away to bake for roughly 40 minutes, or until cooked through and bubbling.
  4. Sprinkle with parsley
  5. Enjoy!

Apple Crumble Trifle

Apple Crumble Trifle
This is a recipe for those of you who, even in the depths of summer, where long, parched days bleed endlessly into each other, crave the comforts of winter. The thought of a chicken roasting in the oven while it greyly snows outside, of roast potatoes and gravy. Apple crumble trifle brings a dish usually banished to shorter, colder days and marries it to that glory of summer cooking, the trifle.

  • 1 tsp vanilla essence
