Instant Pot Mango BBQ Fish Tacos
You won’t want to wait for Taco Tuesday!

Ingredients
Fish Mixture:
  • 1 lb catfish cut into chunks (or tilapia or flounder)
  • 1 tsp kosher salt
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ¼ tsp pepper
Sauce Mixture:
  • 1 cup fresh mango cubes
  • 1-2 tsp hot sauce (we like Jalapeno Tabasco: https://amzn.to/2xzXXu1)
  • ½ cup BBQ sauce
  • 2 tbsp olive oil
Coleslaw Mixture:
  • 1½ tsp lemon juice
  • 1 tsp mayonnaise
  • 1 tsp vinegar
  • ½ tsp sugar
  • Salt to taste
  • ½ cup shredded cabbage
For Serving:
  • Corn tortillas, warmed
  • Additional fresh mango cubes
  • Chopped cilantro and sliced, fresh jalapeno (optional)
Instructions
  1. In a medium bowl, mix together the Fish Mixture and let marinate for 15 minutes.
  2. Meanwhile, thoroughly combine Sauce Mixture ingredients in a blender or food processor. Set aside.
  3. Add olive oil to the Instant Pot. Using the display panel select the SAUTE function.
  4. When oil gets hot, add fish pieces in a single layer and brown 3 minutes. Flip and repeat.
  5. Add prepared mango BBQ sauce to the fish and fold in gently.
  6. Turn the pot off by selecting CANCEL, then secure the lid, making sure the vent is closed.
  7. Using the display panel select the MANUAL function*. Use the +/- keys and program the Instant Pot for 5 minutes.
  8. Meanwhile, in a medium bowl, whisk together all Coleslaw Mixture ingredients except the cabbage, then add cabbage and stir to coat.
  9. When the time is up, let the pressure naturally release for 3 minutes, then quick-release the remaining pressure.
  10. Serve fish mixture on warmed tortillas topped with coleslaw, mango, and optional chopped cilantro/jalapeno.

Crockpot BBQ Chicken
Ever craved BBQ chicken but don’t feel like going through the effort of actually making it? This recipe will blow you away once you realize how easy it is! Seriously, I have never made BBQ chicken that was so simple and tasted so delicious! All you do is mix all the ingredients and let it cook while you run your errands or are at work all day! The flavor is so sweet and tangy, it will have you going back for seconds in no time!

Ingredients
  • 2lbs Boneless, skinless chicken breasts
  • 1 CUP BBQ sauce
  • ¼ CUP Zesty Italian dressing
  • ¼ CUP Brown sugar
  • 1 Tbsp Worcestershire sauce
  • Salt to taste
Instructions
  1. Season chicken breast lightly (a small pinch per breast) with some sea salt and place in your crockpot.
  2. In a mixing bowl combine BBQ sauce, Italian dressing, brown sugar and Worcestershire sauce. Stir until well combined.
  3. Pour over chicken, cover and cook on HIGH for 3-4 hours
  4. Once time is up, you can serve the breast whole, or shred with 2 forks. If shredding, recover and let cook in sauce for about 10-15 more minutes to soak up all that delish flavor.
  5. Serve on fresh rolls, topped with coleslaw.

Instant Pot Miracle Mom Breakfast Burritos
Breakfast for the whole week that can be heated up in only seconds!

Ingredients
  • 6 eggs
  • ¼ cup milk
  • ¼ cup sour cream
  • ½ cup shredded cheddar cheese
  • 1 tsp onion salt
  • ⅛ tsp pepper
  • 2½ cups frozen hash browns
  • 1 cup diced ham
  • 1 cup fresh spinach, chopped (optional)
  • 12 6” flour tortillas (“fajita size”), warmed
Instructions
  1. In a medium bowl, whisk the Egg Mixture ingredients until thoroughly incorporated. Set aside.
  2. Coat the inside of a 1.5 qt casserole (these fit perfectly: https://amzn.to/2DtfXM4) with non-stick spray.
  3. Layer hash browns then ham in an even layer in the casserole dish. Pour egg mixture over the top. Cover with foil.
  4. Pour one cup of water in the Instant Pot and insert the steam rack. Carefully lower the casserole on to the steam rack, then secure the lid, making sure the vent is closed.
  5. Using the display panel select the MANUAL function*. Use the +/- keys and program the Instant Pot for 25 minutes.
  6. When the time is up, quick-release the remaining pressure. Open the pot and rinse the inside of the lid in cold water to help it reseal.
  7. Add the chopped fresh spinach, stir, then replace the foil. Secure the lid, making sure the vent is closed.
  8. Using the display panel select the MANUAL function*. Use the +/- keys and program the Instant Pot for 10 minutes.
  9. When the time is up, quick-release the remaining pressure.
  10. Divide the egg mixture among the tortillas, roll and serve immediately, or store for up to 4 days in the refrigerator in a tightly sealed container. Reheat for 30 seconds in the microwave for a quick on-the-go breakfast.

Crescent Roll Apple Dumplings
These bad boys were SO good! Seriously, I can’t wait to make this dish for my family this holiday season! Apples wrapped in dough with a delicious gooey sauce on top?! Man oh man…It doesn’t get much better than this! Doesn’t even take long to make at all! Sure does taste like it did!

Ingredients
  • 2 (8 each) Cans refrigerated crescent roll dough
  • 2 Sticks of butter
  • 1½ CUPS Brown sugar
  • 1 tsp Vanilla extract
  • 1 tsp Cinnamon
  • 1 Can (12oz) Mountain Dew
  • 2 large Granny Smith apples, peeled and cored
Instructions
  1. Preheat oven to 350°F.
  2. Wash the apples, peel and cut into eight equal slices.
  3. Unwrap the crescent roll and separate the triangles.
  4. Place a piece of apple on each triangle of dough (on a wider side) and roll it in a croissant.
  5. Butter a 13 x 9-inch baking dish.
  6. In a separate bowl, combine the butter, cinnamon, sugar and vanilla, mix until you get a liquid mixture without lumps and pour over the rolls.
  7. Pour soda (Mountain Dew) between rolls (but not over) and bake for 35-45 minutes, or until they become golden brown.
  8. Serve immediately

French Toast Muffins
Think of your favorite breakfast dish and then think of that in muffin form! French Toast Muffins. Yep, I said it. These babies satisfy that sweet craving you might get in the mornings and fill you up at the same time! I seriously don’t know anyone who would turn these down! They were gone in no time!

Ingredients
  • 1 CUP Whole milk
  • ¼ CUP Heavy cream
  • 2 Tbsp Granulated sugar
  • 4 Eggs
  • 2 tsp Vanilla extract
  • ¾ tsp Ground cinnamon
  • ¼ tsp Kosher sea salt
  • 7 CUPS Dried cubed bread
Topping:
  • ⅓ All-purpose flour
  • ¼ CUP Brown sugar
  • ½ Ground cinnamon
  • ¼ CUP Unsalted butter
Instructions
  1. Preheat oven to 350°F.
  2. In a large bowl, whisk together the milk, cream, sugar, eggs, vanilla, cinnamon and salt.
  3. Add the cubed bread into the mixture, toss gently to combine.
  4. Spray a 12 cup muffin pan with cooking spray. Scoop a ⅓ cup of the mixture into each well.
  5. Meanwhile, to make the topping, in a medium bowl, whisk together the flour, brown sugar and cinnamon.
  6. Using a pastry blender or your fingers, break the butter into small pea-size clumps.
  7. Sprinkle the streusel mixture over the tops of the muffins.
  8. Place in the oven and bake for 25-30 minutes or until golden brown on top.
  9. Remove from the oven and allow to cool for 5 minutes before removing and serving.

Caramel Churro Chex Mix
First of all, can I just say that ANY puppy chow recipe is going to be fun and delicious to eat?! Especially when it’s coated with cinnamon and sugar. Only the best combo ever! These were seriously gone in no time!

Ingredients
  • 6 cups Rice Chex cereal
  • 1CUP Packed brown sugar
  • 1 Stick Salted butter
  • ¼ CUP Light corn syrup
  • ¼ tsp Baking soda
  • ⅔ CUP Granulated sugar
  • 2 tsp Ground cinnamon
Instructions
  1. Preheat oven to 350°F
  2. Place cereal in a large, heat safe bowl. Line a large baking sheet with foil and spray with nonstick baking spray.
  3. In a small bowl, combine cinnamon and sugar and set aside.
  4. In a heavy saucepan over medium heat, heat brown sugar, butter, and corn syrup until the mixture comes to a boil.
  5. Let boil for one minute, stirring constantly, then remove from heat and stir in baking soda. Pour over cereal and stir until cereal is coated.
  6. Spread cereal on prepared baking sheet.
  7. Sprinkle evenly with cinnamon/sugar mixture.
  8. Bake for about 5 minutes, then flip with a spatula and bake for 3 more minutes, until cereal turns golden brown.

Instant Pot Pizza Pasta Casserole
Kids will line up for this pizza-flavored dish.

Ingredients
  • 1 tbsp butter
  • 1 lb Italian sausage, casings removed
  • 1 onion, finely diced
  • 8 oz sliced mushrooms (optional)
  • 4 cups chicken or beef broth
  • 1 cup pasta sauce
  • 14-16 oz cavatappi, rotini, penne or other short pasta
  • 14 oz jar pizza sauce
  • 2 oz + 1 oz sliced pepperoni, divided
  • 4 oz + 4 oz shredded mozzarella, divided
  • Fresh basil for garnish (optional)
Instructions
  1. Cut 2 oz of the pepperoni in quarters. Leave the other 1 oz in whole slices. Set aside.
  2. Add butter to the Instant Pot. Using the display panel select the SAUTE function.
  3. When butter gets hot, add sausage and onion. Cook and stir until no pink remains.
  4. Add mushrooms (optional) and broth to the pot and deglaze by using a wooden spoon to scrape the brown bits from the bottom of the pot.
  5. Onto the meat mixture, evenly layer pasta sauce, then pasta, then pizza sauce. Do not stir.
  6. Turn the pot off by selecting CANCEL, then secure the lid, making sure the vent is closed.
  7. Using the display panel select the MANUAL function*. Use the +/- keys and program the Instant Pot for 5 minutes.
  8. When the time is up, quick-release the remaining pressure.
  9. Add the 2oz of quartered pepperoni and 4 oz of cheese and stir to combine.
  10. Top with remaining cheese and whole pepperoni and close the lid until the cheese is melted and pepperoni heated through. Serve warm.

Country Apple Fritter Bread
This country apple fritter bread is absolutely the best I have ever had! I mean, anything that has the title ‘Apple Fritter’ in it is obviously going to be amazing, but this is on a whole new level! This recipe is great to have around the holidays and will bring you all the warm fuzzy feelings after just one bite!

Ingredients
  • ⅓ CUP Light brown sugar
  • 1 tsp Ground cinnamon
  • ⅔ CUP White sugar
  • ½ CUP Butter, softened
  • 2 Eggs
  • 1½ tsp Vanilla extract
  • 1½ CUPS All-purpose flour
  • 1¾ tsp Baking powder
  • ½ CUP Milk
  • 2 Apples, peeled and chopped (any kind)
Old-Fashioned Creme Glaze
  • ½ CUP Powdered sugar
  • 2 Tbsp of milk or cream
Instructions
  1. Preheat oven to 350°F.
  2. Use a 9×5-inch loaf pan and spray with non-stick spray or line with foil and spray with non-stick spray to get out easily for slicing.
  3. Mix brown sugar and cinnamon together in a bowl. Set aside.
  4. In another medium-sized bowl, beat white sugar and butter together using an electric mixer until smooth and creamy.
  5. Beat in eggs, 1 at a time, until blended in; add in vanilla extract.
  6. Combine & whisk flour and baking powder together in another bowl and add into creamed butter mixture and stir until blended.
  7. Mix milk into batter until smooth.
  8. Pour half the batter into the prepared loaf pan; add half the apple mixture, then half the brown sugar/cinnamon mixture.
  9. Lightly pat apple mixture into batter.
  10. Pour the remaining batter over apple layer and top with remaining apple mixture, then the remaining brown sugar/cinnamon mixture.
  11. Lightly pat apples into batter; swirl brown sugar mixture through apples using knife or spoon.
  12. Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, approximately 50-60 minutes.
  13. To make glaze, mix powdered sugar and milk or cream together until well mixed.
  14. Let cool for about 15 minutes before drizzling with glaze.

French Dip Sliders
These sliders were absolutely everything I dreamed they would be! Seriously–the best sliders I’ve ever had. The roast beef with the melted provolone cheese…matched with the perfect amount of crisp from the onions…sooo good. It gets even better once you add the savory sauce that drizzles on top. These flavors will blow you away!

Ingredients
  • 2 Tbsp Unsalted butter softened
  • 1 package Hawaiian sweet rolls 12 rolls total
  • 1 pound deli roast beef (I got mine from the deli)
  • 12 slices Provolone cheese separated
  • 1½ CUPS French fried onions
Seasoning:
  • 8 Tbsp Unsalted butter
  • 1 Packet Au Jus seasoning mix separated
  • 1 tsp Worcestershire sauce
  • 1 Tbsp toasted sesame seeds
  • ¾ tsp Dried minced garlic
  • ½ tsp Onion powder
  • ½ tsp Salt
Instructions
  1. Preheat the oven to 350°F.
  2. Butter the bottom of a 9 x 13 baking dish with the softened unsalted butter.
  3. Without separating the rolls, slice the package of rolls in half.
  4. Place the bottom half of the rolls in the baking dish. Top with the 6 slices of the provolone cheese, roast beef, french fried onions, remaining 6 slices of cheese, and the other half of the rolls.
  5. In a small bowl, melt the butter in the microwave. Mix in 1 tablespoon of the au jus seasoning mix, Worcestershire sauce, sesame seeds, dried minced garlic, onion powder, and salt. Whisk until well combined.
  6. In a small pan, heat the butter then Mix in 1 tablespoon of the au jus seasoning mix, Worcestershire sauce, sesame seeds, dried minced garlic, onion powder, and seasoned salt **(I like things salty! If you don’t leave this out). Whisk until well combined.
  7. Top the rolls evenly with this mixture.
  8. Bake the sliders uncovered until the cheese is gooey and the tops of the rolls are golden brown (about 15-20 minutes)

Instant Pot French Dip Sandwich

Instant Pot French Dip Sandwich
Better-than-restaurant French dip sandwiches at home!

Ingredients
For the pot:
  • 1 tbsp oil
  • 2.5 lbs beef chuck roast, left at room temperature for 15 minutes
  • 2 tsp kosher salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • 1 onion, thinly sliced
  • ½ cup red wine
  • 14 oz beef broth
  • 1 bay leaf
To finish:
  • 1 tbsp kosher salt, or to taste
  • 6 soft rolls
  • 3 tbsp butter, melted
  • ½ tsp garlic salt
  • 6 slices provolone cheese
  • Flat-leaf parsley for garnish (optional)
Instructions
  1. Add olive oil to the Instant Pot. Using the display panel select the SAUTE function.
  2. Season the beef with salt, pepper and garlic powder.
  3. When oil gets hot, brown the meat on all sides, 3-4 minutes per side. Meat will not be cooked through. Transfer browned meat to a shallow dish and cover loosely with foil.
  4. Add onion to the pot and saute until soft, 3-4 minutes.
  5. Add wine to the pot and deglaze by using a wooden spoon to scrape the brown bits from the bottom of the pot.
  6. Add beef broth and bay leaf to the pot. Put the meat back into to the pot, turning once to coat.
  7. Turn the pot off by selecting CANCEL, then secure the lid, making sure the vent is closed.
  8. Using the display panel select the MANUAL function*. Use the +/- keys and program the Instant Pot for 100 minutes.
  9. When the time is up, let the pressure naturally release for 25 minutes, then quick-release any remaining pressure.
  10. Carefully remove the meat from the pot to a cutting board and shred.
  11. Strain remaining liquid. Reserve onions to serve with the sandwich (optional).
  12. Use a spoon or fat separator to skim fat from remaining juices. Discard fat. Season au jus with 1 tbsp kosher salt, or to taste.
  13. Slice open rolls, brush with melted butter and garlic salt and set under a broiler 2-3 minutes, until lightly toasted.
  14. Top toasted rolls with shredded beef and cheese. Return to broiler for 2-3 minutes, until cheese begins to melt.
  15. Top with chopped parsley (optional) and serve with au jus for dipping.
