Stuffed Queso Meatloaf

Stuffed Queso Meatloaf
There's a spicy molten center waiting in each slice of this queso-inspired meatloaf.

Ingredients
  • Three 6-inch corn tortillas
  • 1 pound ground beef
  • 1 pound ground pork
  • 2 large eggs, lightly beaten
  • 1 small onion, grated
  • 1 clove garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 cup canned diced tomatoes with green chiles, drained
  • Kosher salt and freshly ground black pepper
  • 8 ounces processed cheese, such as Velveeta, cut into 4 rectangular sticks
  • ½ cup pickled jalapeno slices
  • 1 cup ketchup
Instructions
  1. Preheat the oven to 350 degrees F and line a baking sheet with parchment.
  2. Pulse the tortillas in a food processor until they are crumbs and transfer to a large bowl. Add the beef, pork, eggs, onion, garlic, chili powder, cumin, ½ cup of the tomatoes, 1 teaspoon salt and ½ teaspoon pepper. Mix with your hands until well combined.
  3. Using your hands, shape the mixture into a 12-by-3-inch log on the prepared baking sheet. Create a well in the center running the length of the log. Put the cheese in the well and top with the jalapenos. Shape the meatloaf mixture up and over the filling, making sure to seal completely; you should have a 12-by-4-inch loaf.
  4. Whisk together the ketchup and remaining ½ cup diced tomatoes in a medium bowl. Spoon the mixture over the top and sides of the meatloaf.
  5. Bake until the meatloaf reaches an internal temperature of 165 degrees, about 1 hour. Let cool for 10 minutes before transferring to a serving platter and slicing.

Cookie Dough Pie

Cookie Dough Pie
Never turn your oven on again.

Ingredients
FOR THE CRUST
  • Cooking spray, for pan
  • 1 c. (2 sticks) butter, softened
  • 1 c. sugar
  • 1¼ c. all-purpose flour
  • ¼ c. milk
  • 2 tsp. pure vanilla extract
  • ½ tsp. kosher salt
  • 1 c. mini chocolate chips
FOR THE FILLING
  • 1½ c. whole milk
  • 1 packet instant chocolate pudding
  • 1 (8-oz.) container Cool Whip
  • ¼ c. chocolate chips, melted
Instructions
  1. Make crust: Grease a shallow pie dish with cooking spray. In a large bowl using a hand mixer, beat butter and sugar until smooth. Add flour, vanilla and salt and beat until combined. Stir in mini chocolate chips.
  2. Press about two-thirds of the mixture into greased pie dish. Refrigerate while you make the filling and topping.
  3. Make filling: In a large bowl whisk together milk and pudding mix until smooth and thickened, about 5 minutes. Fold in Cool Whip and melted chocolate until evenly combined. Pour filling into crust.
  4. Make topping: Roll extra cookie dough into small balls. Place in a pile on top of filling.
  5. Freeze pie until the filling is solid, about 4 hours.
  6. Slice and serve cold.

Ingredients
  • 1 large sweet potato, peeled and cut into ½" cubes
  • 1 large red onion, diced
  • 4 tbsp. olive oil, divided
  • kosher salt
  • Freshly ground black pepper
  • 2 c. baby spinach
  • 1 lb. Boneless Skinless Chicken Breast
  • ½ tsp. ground ginger
  • ½ tsp. garlic powder
  • 1 small garlic clove, minced
  • 1 tbsp. soy sauce
  • 2 tbsp. smooth peanut butter
  • 1 tbsp. honey
  • ¼ c. lime juice
  • 1 tbsp. sesame oil
  • 1 tbsp. Chopped cilantro
  • 1 tsp. Toasted sesame seeds
  • 1 avocado, thinly sliced
  • 4 c. cooked brown rice
Instructions
  1. Preheat oven to 425 degrees F. Spread sweet potatoes and red onions onto a large baking sheet. Drizzle with about 1 tablespoon of olive oil. Season with salt and pepper and toss to coat. Bake for 20-25 minutes, until the sweet potatoes are tender.
  2. Meanwhile, make chicken. Heat 1 tablespoon of olive oil in a large skillet. Season chicken all over with salt, pepper, garlic powder and ground ginger. Add chicken to skillet and cook for 6-8 minutes pre side, or until cooked through. Let rest for 10 minutes, then cut each breast into 1" pieces.
  3. Make dressing. Whisk together garlic, soy sauce, peanut butter, honey and lime juice until evenly combined. Whisk in sesame oil and 1 tablespoon of olive oil until smooth.
  4. Divide rice between bowls. Top with sweet potatoes, chicken, avocado and baby spinach. Sprinkle with cilantro and sesame seeds and drizzle dressing on top.

Ingredients
  • 3 large pickles
  • ¼ c. mayonnaise
  • 1 tbsp. ketchup
  • 1 tbsp. Relish
  • 1 tsp. Worcestershire sauce
  • kosher salt
  • ¼ lb. corned beef, thinly sliced
  • 3 Slices swiss cheese
Instructions
  1. Slice pickles in half lengthwise. Using a spoon, scoop out the seeds.
  2. In a small bowl, make sauce: Whisk together mayonnaise, ketchup, relish, and Worcestershire sauce.
  3. Spread sauce on bottom “bun” of pickles. Top with corned beef and cheese. Top with top pickle “bun” and secure with toothpick if desired. Serve.

Ingredients
  • 1 16-oz. jar salsa verde
  • 1 lb. boneless, skinless chicken breasts
  • 1 tbsp. extra-virgin olive oil
  • kosher salt
  • Freshly ground black pepper
  • 1 tsp. garlic salt
  • 1½ c. Shredded Monterey Jack
  • ¼ c. Chopped cilantro
  • lime, cut into wedges
  • cooked white rice, for serving
Instructions
  1. Preheat the oven to 400 degrees F. Pour salsa verde into a large baking dish.
  2. Brush chicken all over with olive oil. Season with salt, pepper and garlic powder. Nestle chicken into salsa verde and bake for 30-40 minutes, until the chicken is cooked through.
  3. Remove chicken from the oven and sprinkle cheese on top. Place it under the broiler for 1-2 minutes until the cheese is melted and bubbly. Squeeze lime over chicken and garnish with cilantro. Serve over cooked white rice.

Perfect Banana Pudding Recipe
Look no further for the banana pudding of your dreams.

Ingredients
  • 1⅓ c. milk
  • 1 package instant vanilla pudding mix
  • 1 can sweetened condensed milk (14 oz.)
  • 3 c. heavy cream
  • 1 tsp. pure vanilla extract
  • 1 box vanilla wafer cookies (12 oz.)
  • 4 bananas, sliced into coins
  • 2 tsp. sugar
Instructions
  1. In a large mixing bowl, combine milk, vanilla pudding mix and sweetened condensed milk. Whisk thoroughly, breaking up any lumps, and refrigerate for at least 5 minutes, or until set.
  2. In another large bowl, combine heavy cream and vanilla. Beat until stiff peaks form, 2 to 3 minutes. Set aside half of the mixture for topping the dish. Fold remaining half into the pudding mixture.
  3. Cover the bottom of a 3-quart trifle dish with vanilla wafers. Top with one-third of the pudding mixture. Cover with another layer of the wafer cookies—you may want to also stand some cookies up vertically, so you see the full circle along the edge of the trifle dish. Top with an even layer of banana slices. Continue layering the pudding, wafer cookies and banana slices until you reach the top, ending with a final layer of banana pudding.
  4. Refrigerate for at least 3 hours, or up to overnight.
  5. Sweeten the remaining whipped cream: Add sugar to whipped cream, stirring to combine. Just before serving, dollop on top of the banana pudding, then sprinkle crumbled wafer cookies on top.

Cauliflower Fried Rice

Ingredients
  • 1 medium head cauliflower
  • 2 tbsp. sesame oil
  • ½ white onion, diced
  • 1 jumbo carrot, peeled and diced
  • 1 clove garlic, minced
  • 2 tbsp. soy sauce
  • ½ c. frozen peas, cooked according to package directions
  • kosher salt
  • Freshly ground black pepper
  • 2 Eggs, beaten
  • 1 scallion, thinly sliced
Instructions
  1. Core and roughly chop cauliflower. Add to food processor and pulse in 2 batches until finely chopped.
  2. In a skillet over medium-high heat, heat sesame oil. Add onion and carrot and cook until tender, 5 minutes. Add garlic and continue cooking for 1 minute. Stir in cauliflower and cook for until softened, about 5 minutes. Pour 1 tablespoon soy sauce over veggies and stir until combined. Add peas. Season with salt and pepper and cook 2 minutes more.
  3. Scoot rice to one side of the skillet and pour eggs into empty space. Scramble until just set and mix into the rice. Add remaining soy sauce and continue cooking 1 minute more.
  4. Divide into 4 bowls. Garnish with scallions. Devour immediately.

  • 2 c. powdered sugar
  • 1⅓ c. smooth peanut butter
  • ¼ c. butter, melted
  • ⅔ c. graham crackers crumbs
  • 1 tbsp. maple syrup
  • 1 tsp. kosher salt
  • 2 c. white chocolate, melted
  • 2 tsp. coconut oil
  • Sprinkles, for garnish
Instructions
  1. In a large bowl, combine powdered sugar, peanut butter, butter, graham cracker crumbs, maple syrup and salt. Using a whisk or a hand mixer, mix ingredients until smooth and fully incorporated.
  2. Using a small cookie scoop, form mixture into balls and place on cooling rack fitted onto a baking sheet. In a medium bowl, combine white chocolate and coconut oil and stir until smooth. Dip peanut butter balls in white chocolate and return to cooling rack. Garnish with sprinkles and let set in the refrigerator, about 10 minutes. Serve.

Shrimp Stuffed Avocado

Everyone's favorite can of sparkling water is the perfect instrument for this moist, fragrant roasted chicken.

Ingredients
  • 1 (3-pound) roaster chicken
  • 3 tablespoons olive oil
  • 2 tablespoons tangerine zest
  • 1 tablespoon lemon zest
  • 1 tablespoon brown sugar
  • 2 teaspoons fresh thyme leaves, picked, plus more for roasting
  • 1 teaspoon fresh rosemary, minced, plus more for roasting
  • 1 teaspoon sea salt
  • Freshly ground black pepper
  • 3 tangerines, halved
  • 1 lemon, sliced into rounds
  • 1 head garlic, halved
  • ¼ cup white wine
  • 1 (12-ounce) can citrus seltzer like La Croix Tangerine or Grapefruit
Instructions
  1. Preheat the oven to 400 degrees and remove the second rack. Secure the lower rack at the lowest setting so the chicken will fit standing upright.
  2. Pat chicken skin dry. In a small bowl, combine olive oil, tangerine zest, lemon zest, brown sugar, thyme leaves and minced rosemary. Stir to combine and brush over entire chicken. Stuff 1 tangerine half in the top cavity of the chicken. Sprinkle entire bird with salt and pepper.
  3. In a medium roasting pan, place remaining halved tangerines, sliced lemon, halved garlic and additional sprigs of rosemary and thyme. Add white wine. Place open seltzer can in the middle of the pan.
  4. Place the chicken over the can by opening the rear cavity and sliding it over the can until only about an inch of the can is showing. Rest legs on sliced citrus to avoid burning.
  5. Roast for 15 minutes to brown skin, then reduce heat to 350 and roast for 45 minutes, or until the internal temperature is 160 and the skin is crisp and golden.
  6. Remove the pan from the oven and carefully transfer the chicken from the can to a flat surface. Let rest for 20 minutes before slicing to serve. Serve drizzled with pan juices.
