Loaded Pickle Chips

Loaded Pickle Chips

Ingredients
  • 1 c. Sliced pickles
  • 1 c. panko bread crumbs
  • 2 tbsp. melted butter
  • ½ tsp. garlic powder
  • ¼ tsp. cayenne pepper
  • kosher salt
  • Freshly ground black pepper
  • ½ c. all-purpose flour
  • 2 large eggs, lightly beaten
  • 4 slices bacon
  • 1½ c. shredded Cheddar
  • Sour cream, for serving
  • 1 tbsp. finely chopped chives
Instructions
  1. Preheat oven to 450° and line a large baking sheet with parchment paper. Pat pickles dry with paper towels.
  2. In a medium shallow bowl, mix together panko, butter, garlic powder and cayenne. Season mixture with salt and pepper. Working in batches, toss pickle coins in flour until lightly coated, then toss pickles in eggs. Dredge the pickles in the panko mixture until fully coated. Place pickles on prepared baking sheet.
  3. Bake until the coating is golden and crispy, about 15 minutes.
  4. Meanwhile, cook bacon. In a large skillet over medium heat, cook bacon until crisp. Drain slices on paper towels then chop finely.
  5. Sprinkle cheese and bacon on baked pickle chips and return for another 5 minutes, or until the cheese is melty. Top with sour cream and chives and serve.

Zucchini Parmesan Chips
If you love Parmesan raise your hand and then go make these amazingly simple, totally addictive two-ingredient chips.

Ingredients
  • 2 large zucchini, thinly sliced
  • kosher salt
  • Freshly ground black pepper
  • 1½ c. freshly grated Parmesan
  • Marinara, for dipping
Instructions
  1. Preheat oven to 400º and line a baking sheet with parchment. Arrange zucchini slices on baking sheet and season with salt and pepper. Top each with Parmesan.
  2. Bake until deeply golden and crisp, 20 to 25 minutes.
  3. Serve with marinara.

Skillet Slutty Brownie
This is the ultimate girls' night dessert.

Ingredients
  • 1 log refrigerated chocolate chip cookie dough (such as Pillsbury)
  • 18 Oreos, plus more crushed for topping
  • 1 box brownie mix, plus ingredients called for on the box
  • Vanilla ice cream, for serving
  • Warm chocolate Sauce, for serving
Instructions
  1. Preheat an oven to 350º and spray a 12" oven-safe skillet with cooking spray (if using a larger skillet, use more Oreos to create a full layer). Press cookie dough into bottom of skillet. Add a layer of Oreos on top and pour over ⅔ of the brownie batter (bake remaining brownie batter separately, if desired).
  2. Top brownie layer all over with crushed Oreos and bake until a toothpick inserted in the brownie layer is only slightly gooey, about 35 minutes.
  3. Let cool at least 20 minutes, then top with vanilla ice cream and chocolate sauce and serve.

Loaded Slow-Cooker Potatoes
The best thing about comfort food is not actually have to cook it.

Ingredients
  • Cooking spray
  • 2 lb. baby potatoes, halved and quartered if large
  • 3 c. shredded Cheddar
  • 2 cloves garlic, thinly sliced
  • 8 slices bacon, cooked
  • ¼ c. sliced green onions, plus more for garnish
  • 1 tbsp. paprika
  • kosher salt
  • Freshly ground black pepper
  • Sour cream, drizzling
Instructions
  1. Line a slow cooker with foil and spray with cooking spray. Add half the potatoes, 1¼ cups cheese, half the garlic, ⅓ of the cooked bacon, half the green onions, and half the paprika. Season with salt and pepper. Repeat.
  2. Cover and cook on high until potatoes are tender, 5 to 6 hours. (The bigger your potatoes, the longer they'll need.) About 20 to 30 minutes before serving, top with remaining cheese and bacon (this is your moment to make the potatoes look pretty!).
  3. Garnish with more green onions, drizzle with sour cream, and serve.

  • 2 tbsp. mayonnaise

  • 2 c. shredded rotisserie chicken
  • 4 stalks celery, cut into 3" pieces
  • ⅓ c. crumbled blue cheese
  • Ranch, for drizzling
  • chives, for garnish
Instructions
  1. In a medium bowl, whisk together hot sauce and mayo and season with salt and pepper. Pour over shredded chicken and mix to combine.
  2. Spoon chicken mixture into celery boats.
  3. Top with blue cheese, drizzle with ranch and garnish with chives.

Ingredients
  • 4 cups flour, sifted
  • 4 tablespoons baking powder
  • 4 cups milk, warm to the touch
  • ¾ cup butter, melted
  • 3 egg yolks
  • 4 egg whites
  • maple syrup, to serve
Instructions
  1. In a bowl, add the flour and baking powder together, stirring to combine.
  2. In a separate bowl, add the butter, milk, and egg yolks, stirring to combine.
  3. In a third bowl, use a hand mixer to beat the egg whites until soft peaks form.
  4. Gently combine the bowl of flour with the butter and milk mixture, stirring until combined. Gently fold in the egg whites.
  5. Pour a large scoop of pancake batter into an 8-inch (20 cm) nonstick pan on low heat. Place the lid on top, and cook for 3 to 5 minutes, or until a toothpick comes out clean. Repeat with remaining batter.
  6. Serve with maple syrup.
  7. Enjoy!

  • Cooking spray, for pan
  • 12 slices ham
  • 1 c. shredded Cheddar
  • 12 large eggs
  • kosher salt
  • Freshly ground black pepper
  • Chopped fresh parsley, for garnish
Instructions
  1. Preheat oven to 400º and spray a 12-cup muffin tin with cooking spray.
  2. Line each cup with a slice of ham and sprinkle with cheddar. Crack an egg in each ham cup and season with salt and pepper.
  3. Bake until eggs are cooked through, 12 to 15 minutes (depending on how runny you like your yolks).
  4. Garnish with parsley and serve.

Bell Pepper Meatloaves

Ingredients
  • 3 bell peppers
  • 1 lb. ground beef
  • ¼ c. bread crumbs
  • 1 Egg, lightly beaten
  • 1 tsp. Worcestershire sauce
  • ½ Onion, finely chopped
  • ½ tsp. fresh thyme leaves, chopped
  • 1 clove garlic, minced
  • 1 tbsp. tomato paste
  • kosher salt
  • Freshly ground black pepper
  • ¼ c. ketchup
  • 1 tbsp. brown sugar
  • 2 c. Shredded Monterey Jack
  • 1 tbsp. Fresh parsley, for garnish
Instructions
  1. Preheat oven to 350° and line a medium baking sheet with parchment paper. Cut ends off peppers and set aside. Remove seeds and slice peppers into 2” thick rings. Place on prepared baking sheet.
  2. In a large bowl, combine beef with bread crumbs, egg, Worcestershire sauce, onion, thyme, garlic and tomato paste. Season with salt and pepper and stir until combined. Fill each pepper with meatloaf mixture.
  3. In a small bowl, whisk together ketchup and brown sugar and brush on tops of meatloaf. Bake for 35 minutes, then top with cheese, and bake 5 to 10 minutes more, or until cheese is melty. Garnish with parsley and serve.

  • 1 box Devil's Food Cake mix
  • 1 package instant chocolate pudding
  • 1 c. whole milk
  • 3 eggs
  • ½ c. unsalted butter, melted
  • ¼ c. sour cream
  • 1 tsp. pure vanilla extract
  • ½ tsp. kosher salt
  • 2 c. semisweet chocolate chipes
  • Cooking spray, for Crock-Pot
  • Ice cream, for serving (optional)
Instructions
  1. In a large bowl, combine cake mix and pudding mix. Whisk to combine. Add milk, eggs, melted butter, sour cream, vanilla and salt and mix until smooth. Fold in chocolate chips.
  2. Grease the bowl of Crock-Pot with nonstick cooking spray. Add batter to Crock-Pot and smooth top with spatula. Cook on high for 2 to 2½ hours checking at 2 hours to make sure the edges aren’t burning. Cake can be kept on warm for up to 4 hours before serving. The finished cake should be set on the sides and still gooey in the center. Serve with ice cream, if using.

  • 1 tbsp. extra-virgin olive oil
  • 1 yellow onion, chopped
  • 1 lb. chicken sausage links
  • 4 cloves garlic, minced
  • 28 oz. can crushed tomatoes
  • 4 c. low-sodium chicken broth
  • 1 tsp. crushed red pepper flakes
  • kosher salt
  • Freshly ground black pepper
  • 2 9-oz. packages refrigerated cheese tortellini
  • 15 oz. can white beans, drained and rinsed
  • 5 oz. baby spinach
  • Grated Parmesan, for garnish
Instructions
  1. In a large pot over medium heat, heat oil. Add onion and cook until tender and lightly golden, 6 minutes. Add chicken sausage and cook until sausage is golden, 4 minutes more. Stir in garlic, crushed tomatoes, chicken broth, and red pepper flakes and season with salt and pepper.
  2. Bring to a rolling simmer and add tortellini. Simmer 20 minutes.
  3. Stir in white beans and spinach and cook until wilted, 1 minute.
  4. Garnish with Parmesan and serve.
