Nutella Brownie
How to make Nutella Brownies.

Ingredients
  • 1½ cups Nutella
  • 7 tablespoons butter, melted
  • 2 eggs
  • ½ cup sugar
  • ¾ cup all-purpose flour
  • Vanilla ice cream, for serving
Instructions
  1. Preheat oven to 350 degrees.
  2. Grease and flour a pan.
  3. Place 14 tablespoons of Nutella in bain-marie and add the butter.
  4. In a bowl, beat the eggs with sugar until the mixture is foamy and smooth.
  5. Transfer the Nutella to the bowl and mix well.
  6. Slowly add flour and incorporate until the dough is homogeneous.
  7. Place the dough in the pan and use two spoons to form small spheres with the remaining Nutella.
  8. Bake for 40 minutes or until the top of the brownies crack, with a still-humid center.
  9. Serve with a scoop of ice cream on top.

Tater Tot Pot Roast Hot Pot Dish

Tater Tot Pot Roast Hot Pot Dish
Heartier than your grandma's rib-sticking-est midwinter stew, this hot pot is thicc!

Ingredients
For the pot roast:
  • 2 pounds beef
  • Kosher salt
  • Freshly ground black pepper
  • 2 tablespoons olive oil
  • 3 carrots, chopped
  • 2 stalks celery, chopped
  • 2 bay leaves
  • 4 sprigs of thyme
  • 1 (12-ounce) can crushed tomatoes
  • 1½ cups red wine
  • 1 cup water
For the mushroom cream sauce:
  • ¼ cup (1/2 stick) unsalted butter
  • 8 ounces mixed mushrooms, such as crimini, shiitake, maitake, and/or oyster, cleaned and finely chopped
  • 4 medium shallots, chopped
  • 4 cloves garlic, grated, divided
  • ¼ cup all-purpose flour
  • 1½ cups reserved braising liquid
  • ½ cup heavy cream
  • Kosher salt
  • Freshly ground pepper
To assemble:
  • Frozen peas
  • 8 ounces shredded sharp cheddar cheese, divided
  • Frozen tater tots
Instructions
  1. Preheat oven to 350 degrees.
  2. Cut the beef into 2-inch cubes and season with salt and pepper. Heat olive oil in a Dutch oven until hot, and sear the beef on all sides. Add the chopped vegetables, herbs, tomatoes, wine and water. Cover and bake for 3 to 4 hours until fall-apart tender.
  3. Remove beef and shred using two forks. Remove vegetables and roughly chop. Reserve cooking liquid.
  4. For the sauce, saute mushrooms, shallots and garlic in butter until soft. Add flour and fry until browned. Add reserved braising liquid and cream, simmering over medium-high heat until thick enough to coat the back of a spoon. Salt and pepper to taste.
  5. To assemble, place shredded beef and vegetables into a 9 by 13 inch pan. Add frozen peas, mushroom sauce and half the shredded cheddar cheese. Mix well. Top with frozen tater tots, packing them tightly, round side facing up to cover the entire dish.
  6. Bake at 350 degrees for 20 minutes. Top with the remaining shredded cheddar cheese. Increase oven to 450 degrees and bake 10 minutes more until browned and crispy.

Mini Lasagna Stuffed Meatloaves
Meatloaf can be pretty boring but when it's stuffed with our favourite pasta dish, lasagna; its a winner! These Mini Lasagna Stuffed Meatloaves are fun to make in individual servings and full of flavour.

Ingredients
Meatloaf:
  • 1lb beef mince
  • ⅔ cup breadcrumbs
  • 2 eggs, whisked
  • ¼ cup finely chopped parsley
  • 3 coves garlic, minced
  • 1 tbsp tomato paste
  • 1 tsp salt
  • 1 tsp pepper
Ricotta Filling:
  • 1 cup ricotta cheese
  • ½ cup grated parmesan cheese
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ tsp nutmeg
  • 2 tsp chopped parsley
  • 2” cut round egg pasta sheet disks
  • 2” mozzarella disks
  • ½ cup tomato sauce
Instructions
  1. Mix together all of the ricotta filling ingredients. Set aside.
  2. Mix together all of the meatloaf ingredients until combined well.
  3. Take a good handful of the meat mixture and shape into a bal. Press a 2”can or a bottle in the centre and shape the meat around the bottom to create a sort of cup.
  4. Layer with lasagna noodle followed by ricotta mixture and cheese. Repeat for 2 layers in each. Top with a thin layer of meat and pinch edges to seal.
  5. Repeat with remaining ingredients to have 6.
  6. Arrange on a lined baking sheet. Bake in a 180ºC oven for 30 minutes until cooked through.
  7. Remove from oven. Top with about one heaped tbsp of tomato sauce and a cheese. Grill for 2 minutes until golden and bubbly.
  8. Enjoy!

Baked Jalapeño Popper Chicken Spaghetti
BAKED JALAPEÑO POPPER CHICKEN SPAGHETTI

Ingredients
  • 2 cups mozzarella
  • 2 cups cheddar
  • 1 cup parmesan
  • 2 tbsp cornflour
  • 250ml double cream
  • 1 cup cream cheese
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tbsp butter
  • 8 rashers bacon, diced
  • 3 cloves garlic, finely chopped
  • 3 jalapenos, deseeded and diced
  • 2 cups shredded chicken
  • 350g dried spaghetti
  • some reserved pasta water (about 1 cup)
Instructions
  1. Toss the three cheeses with the cornflour and set aside.
  2. Fry the bacon in a non-stick saute pan until quite crisp. Add jalapenos and garlic and fry until fragrant. Add cream, cream cheese, salt, pepper and chicken. Stir to combine and simmer briefly. Turn the heat off and stir through half the cheese mix. Add the cooked pasta and the cup of pasta water. Mix well, then remove from heat and transfer to baking dish. Top with remaining cheese mix. Bake for 15 minutes at 180°C, then grill on high until the top is a pleasing, crisp brown.
  3. Get stuck in.

Bloomin' Grilled Apples
We all know Outback's famous for its Bloomin' Onion, so we got inspired and turned the app into a dessert. The technique for cutting the apples only looks hard — you'll have them on the grill in 10 minutes flat.

Ingredients
  • 4 apples
  • 2 tbsp. melted butter
  • 1 tbsp. cinnamon-sugar
  • ½ c. caramel, plus more for drizzling
  • ⅓ c. chopped pecans
  • Vanilla ice cream, for serving
Instructions
  1. Slice off the top ¼ of the apples and scoop out cores.
  2. Using a paring knife, make a deep cut around the center of the apple.
  3. Flip over apples and make narrow cuts all around, making sure to not cut through the bottom. In a small bowl, stir together melted butter and cinnamon-sugar. Brush apples all over with mixture, then fill center with caramel and pecans.
  4. Wrap apples in foil and grill until tender, about 15 minutes.
  5. Top with ice cream and drizzle with more caramel.

Ingredients
  • 1 box vanilla cake mix
  • 1 box instant vanilla pudding mix
  • 1½ c. cold milk
  • 1 c. sweetened condensed milk
  • ½ c. chopped bananas
  • 2 c. heavy cream
  • ¼ c. powdered sugar
  • ½ tsp. vanilla
  • sliced bananas, for garnish
  • Nilla wafers, for garnish
Instructions
  1. Preheat oven to 350° and line a cupcake with cupcake lines. Bake cake mix according to cupcake package instructions. Let cool completely.
  2. Make pudding: In a large bowl, combine vanilla pudding, milk and sweetened condensed milk. Whisk until thickened, about 5 minutes. Fold in chopped bananas.
  3. Make whipped cream: In a large bowl, combine heavy cream, powdered sugar and vanilla and beat with a hand mixer on high until light and fluffy, about 5 minutes. (Alternatively, you can beat the cream in the bowl of a stand mixer with a whisk attachment.)
  4. Using a paring knife, cut small wells out of cooled cupcakes. Fill with banana pudding, then top with whipped cream. Garnish each cupcake with a banana slice, a Nilla wafter, and Nilla wafer crumbles.

Oreo Funfetti Icebox Cake

Ingredients
  • 3 c. heavy cream, cold
  • ½ c. powdered sugar
  • 1 tsp. pure vanilla extract
  • ½ c. rainbow sprinkles, plus more decorating
  • 52 Golden Oreos
Instructions
  1. In a large bowl using a hand mixer (or in the bowl of a stand mixer using the whisk attachment), beat heavy cream, powdered sugar, and vanilla until stiff peaks form. Fold in sprinkles.
  2. Spread a very thin layer of whipped cream onto the bottom of an 8" springform pan, then top with an even layer of whole Oreos. (You should need 13!) Spread more whipped cream on top of cookies and repeat layering process until you have 4 layers of cookies.
  3. Spread a final layer of whipped cream on top, then cover top of cake with sprinkles. Transfer any remaining whipped cream to a piping bag fit with a large star tip to garnish later. (It's OK if you don't have any leftover!) Refrigerate both cake and whipped cream until cookies have softened, at least 4 hours and up to overnight.
  4. When ready to serve, pipe more whipped cream on top.

Who knew chocolate and peanut butter could get any better?

Ingredients
  • 1 c. semi-sweet chocolate chips
  • ⅔ c. smooth peanut butter
  • 2 tsp. coconut oil
  • 2 bananas, sliced into 1" rounds
  • Flaky sea salt
Instructions
  1. Line a large, rimmed baking sheet with parchment paper.
  2. In a medium bowl, heat chocolate in 30-second intervals until melted. Heat peanut butter for 15 seconds in microwave until runny.
  3. In a medium bowl, mix chocolate and coconut oil until combined.
  4. Into small baking cups, add teaspoon scoops of chocolate. Top with a slice of banana, a teaspoon-sized scoop of peanut butter, and another scoop of chocolate. Repeat until you have used all your banana slices. Top with a pinch of sea salt.
  5. Place tray in freezer for 2 hours, or until frozen. Serve.

S'mores Cheesecake Bars

Ingredients
FOR THE CRUST
  • 9 graham crackers (1 sleeve), crushed into fine crumbs
  • 6 tbsp. butter, melted
  • 2 tbsp. sugar
  • pinch of kosher salt
FOR THE CHEESECAKE
  • 2 8-oz. blocks cream cheese, softened
  • ¾ c. sugar
  • 2 large eggs
  • ¼ c. sour cream
  • ½ tsp. pure vanilla extract
  • pinch of kosher salt
FOR THE TOPPING
  • 1½ c. semisweet chocolate chips
  • ¾ c. hot heavy cream
  • 2 c. mini marshmallows
Instructions
  1. Preheat oven to 325º and line a 9"-x-9" pan with foil. Make the crust: In a large bowl, stir together graham crackers, butter, sugar and salt until completely combined and moist. Set aside.
  2. Make the cheesecake: In a large bowl using a hand mixer or in a stand mixer using the whisk attachment, beat cream cheese, sugar, eggs, sour cream, vanilla and salt until completely smooth.
  3. Spray crust with cooking spray, then add crust to foil and pack in tightly. Pour over cheesecake mixture and smooth top.
  4. Bake until only slightly jiggly, 35 minutes. Let cool, then refrigerate until firm, 3 hours, or up to overnight.
  5. Make the ganache: Place chocolate chips in a small heat-proof bowl and pour over hot heavy cream. Let sit 2 minutes, then whisk until no clumps remain.
  6. Pour ganache over cheesecake bars and spread with a spatula. Top all over with mini marshmallows and broil until golden, 2 to 3 minutes.
  7. Slice into bars and serve.

Ingredients
  • 2 thinly sliced sushi grade squid
  • 15 grams sushi rice
  • Mentaiko (seasoned cod roe)
  • Shredded egg
  • Nori
  • Black sesame seeds
Instructions
  1. Cut out two thin sheets of squid.
  2. Cut out three triangles out of one sheet. One will be the tail and the other two will be the fins.
  3. Mold sushi rice into an oval shape. Top with mentaiko, shredded egg and nori.
  4. Arrange the fins and tail. Cover with the other sheet of squid and place two sesame seeds for the eyes.
