Triple Decker Mississippi Mud Pie

Ingredients
For the crust:
  • 60 chocolate wafers
  • 4 tablespoons butter, melted
  • 1 teaspoon salt
For the cake layer:
  • ¼ cup coffee
  • 1 cup dark brown sugar
  • 13 ounces dark chocolate, approximately 70% cacao, chopped into pieces
  • 1 cup butter, cubed
  • 5 large eggs, separated
  • 1 teaspoon vanilla extract
For the chocolate pudding layer:
  • ¾ cup sugar
  • ½ cup dark cocoa powder
  • ¼ cup cornstarch
  • ½ teaspoon salt
  • 4 large egg yolks
  • 2½ cups whole milk
  • 3 tablespoons butter
  • 3 ounces dark chocolate, approximately 70% cacao, chopped into pieces
  • 2 teaspoons vanilla extract
  • 2 cups whipped cream, for topping
  • 1 cup chocolate shavings, for topping
Instructions
  1. Preheat the oven to 350 degrees. Line a 10-inch springform pan with parchment paper. Line the edges with aluminum foil, creating a taller cake pan, approximately 8 inches tall.
Make the crust:
  1. In the bowl of a food processor, pulse chocolate wafers until they resemble course sand. Add butter and salt and pulse to combine. Press into the prepared pan all the way up to nearly the top of the foil and set in the freezer for 15 minutes. Bake for 10 minutes and allow to cool for up to 2 hours while you make the cake.
Make the cake:
  1. In a small saucepan, combine coffee and brown sugar and heat on medium-low until melted. In a medium bowl, combine chocolate and butter. Pour sugar mixture over chocolate and stir until smooth and completely melted. Add egg yolks and vanilla and allow to cool completely.
  2. In another bowl, whisk egg whites until stiff, and slowly incorporate into melted chocolate mixture. Carefully pour into prepared and cooled cookie crust, and bake until cake is barely set, approximately 30 to 35 minutes. Remove from oven and allow cake to cool completely. Set in refrigerator to cool for up to 3 hours.
Make the chocolate pudding:
  1. In a medium saucepan, combine sugar, cocoa powder, cornstarch and salt. Add egg yolks and whisk until combined. Slowly add in whole milk and bring mixture to a boil, stirring constantly to prevent burning. Remove from heat and transfer to a large bowl. Stir in butter, dark chocolate and vanilla and stir to combine. Allow to cool and set in the refrigerator for up to 3 hours.
Assemble the pie:
  1. Remove cake from fridge and top with chocolate pudding. Top with whipped cream and chocolate shavings. Serve immediately. Pie will keep up to 4 days covered in the refrigerator.

Fajita Roll Ups
Ever look at a fruit roll up and think "yeah, but what if it was made of steak?"

Ingredients
  • 1 pound skirt steak
  • ¼ cup olive oil plus 1 tablespoon
  • ⅛ cup lime juice
  • 2 teaspoons garlic powder
  • 2 teaspoons cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 bunch of asparagus, trimmed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 1 portobello mushroom, sliced
To garnish:
  • Cilantro
  • Chipotle sauce
Instructions
  1. Preheat oven to 375 degrees.
  2. Cut steak into 5 to 6 inch pieces. Add to a bowl and season with olive oil, lime juice, garlic powder, cumin, chili powder, paprika, salt and pepper. Add a few pieces of asparagus, peppers and onions to the center of each piece of steak. Roll tightly and use toothpicks to hold them closed.
  3. Heat a saute pan on medium-high heat. Add 1 tablespoon olive oil, and brown steak rolls on all sides. Transfer to a baking sheet and bake 5 to 8 minutes until cooked through. Garnish with cilantro and chipotle sauce to serve.

Cabbage Burritos
Prefer a smaller burrito? Use one leaf instead of two! (You'll get 8 smaller burritos instead of 4 big ones!)

Ingredients
  • 8 large green cabbage leaves (from 1 head)
  • 1 tbsp. extra-virgin olive oil
  • ½ onion, chopped
  • 1 lb. ground beef
  • 2 cloves garlic, minced
  • 1 tbsp. taco seasoning mix
  • Kosher salt
  • Freshly ground black pepper
  • 1 (15-oz.) can black beans
  • 1½ c. chopped cherry tomatoes
  • 1 c. corn, canned and drained or frozen
  • 1 c. shredded Monterey Jack
  • ½ c. shredded cheddar
Instructions
  1. Preheat oven to 350º and line a small baking sheet with parchment paper. In a large pot of boiling water, use tongs to dip cabbage leaves in water for 30 seconds to blanch. Place on a paper towel-lined plate to dry.
  2. In a large skillet over medium heat, heat olive oil. Add onion and cook until soft, about 5 minutes, then stir in ground beef and garlic. Cook, stirring often, until beef is no longer pink, about 5 minutes. Drain excess fat, then season with taco seasoning mix, salt, and pepper. Stir in black beans, cherry tomatoes, and corn.
  3. Lay 2 cabbage leaves side by side, overlapping slightly. Place a heaping spoon of ground beef mixer, then top with cheese. Fold short sides of cabbage leaves in first, then roll into a cylinder — like a burrito! Repeat with remaining beef mixture.
  4. Place on baking sheet and bake until cheese is melted, about 10 minutes.

No-Bake Oreo Strawberry Cheesecake
When your favorite cookie meets a fruity cheesecake, you know it's gonna be good.

Ingredients
  • 200 grams cream cheese, softened at room temperature
  • 100 grams heavy cream
  • 100 grams yogurt
  • 180 grams strawberry jam
  • 1 tablespoon lemon juice
  • 5 whole strawberries, cut into cubes
  • 50 milliliters hot water
  • 10 grams powdered gelatin
  • 9 oreos
  • 30 grams butter, melted
  • Decoration:
  • 4 oreos, cut in half
  • 7 whole strawberries, cut in half
Instructions
  1. Sprinkle gelatin onto hot water and set aside for 10 minutes.
  2. Combine 9 oreos and melted butter inside a ziploc bag and crush until crumbly.
  3. Pour crumbs into a cheesecake pan lined with parchment paper and flatten down firmly with a spoon.
  4. Arrange strawberry halves around the sides, with the insides of the strawberry facing outwards.
  5. In a blender, combine cream cheese, cream yogurt, jam, lemon juice and gelatin mixture and blend until smooth.
  6. Fold in cut up strawberries and pour mixture into the pan. Refrigerate for at least 2 hours.
  7. Once chilled and firm, transfer to a serving plate and decorate with oreos.

Avocado Ice Cream
This is everything we avo wanted and more.

Ingredients
For the ice cream:
  • 4 avocados
  • 3 limes, juiced
  • 1 can sweetened coconut cream
  • 1 can unsweetened coconut cream
  • 2 teaspoons vanilla
  • 2 tablespoons coconut oil
  • ½ teaspoon salt
For the cake pops:
  • 3 cups chocolate cake, crumbled
  • 1 cup chocolate icing
  • 1 cup milk chocolate
  • ¼ cup coconut oil
Instructions
  1. Blend all the ice cream ingredients and freeze for 1½ to 2 hours. You want the ice cream to be semi-frozen, the consistency of soft-serve.
  2. In a medium bowl, mix chocolate cake and icing until well combined. Form into balls and freeze.
  3. Melt chocolate and coconut oil and combine. Dip frozen cake balls to coat; set aside until ready to serve.
  4. To serve, fill empty avocado shells with avocado ice cream and finish with a cake pop “pit”.

Snickers Egg Rolls
Ok, ok. We know. It's a very simple recipe. Trust us, though—once you try these egg rolls, you'll never want Snickers any other way.

Ingredients
  • 12 egg roll wrappers
  • 12 Snickers bars
  • ⅓ c. granulated sugar
  • ½ c. semisweet chocolate chips, melted
Instructions
  1. Place an egg roll wrapper on a clean surface in a diamond shape and place a half of a Snickers bar. Fold up bottom half and tightly fold in sides. Gently roll, then seal fold with a couple drops of water. Repeat until all egg roll wrappers are used.
  2. In a large skillet over medium heat, heat oil (it should reach 1" up the side of pan) until a drop of water bubbles in pan. Add egg rolls and fry until golden, 1 minute per side. Transfer to a paper towel-lined plate and sprinkle with sugar immediately.
  3. Serve with melted chocolate for dipping.

French Fry Corn Dog
All your favorite fair foods in one delicious package!

Ingredients
  • 4 jumbo beef hot dogs
  • 2 string cheese, cut in half longways
  • 2 cups all-purpose flour
  • 2 eggs, beaten
  • 2 cups cornmeal batter
  • 2 cups crinkle-cut frozen french fries, halved longways and thawed
  • Oil, for frying
To garnish:
  • Ketchup
  • Mustard
  • Ranch dressing
Instructions
  1. In a large heavy bottomed stock pot, preheat oil to 320 degrees.
  2. Use a chopstick or metal straw to hollow out the hot dog. Slide cheese into cavity. If cavity is too small push cut cheese in half and place in both ends of hot dog.
  3. Dredge stuffed hotdog in flour, then generously coat with cornmeal batter. Place halved crinkle fries all over the battered dog.
  4. Fry in preheated oil for 4-6 minutes or until golden brown and crispy. Allow to cool slightly before eating. Dip in condiments and enjoy!

Ingredients
  • ¾ c. balsamic vinegar
  • 3 cloves garlic, minced
  • 2 tbsp. honey
  • 2 tbsp. extra-virgin olive oil
  • 1 tbsp. dried thyme
  • 1 tbsp. dried oregano
  • 4 steak fillets, such as sirloin
  • 2 beefsteak tomatoes, sliced
  • kosher salt
  • 4 slices mozzarella
  • Fresh basil leaves, for serving
  • In a small bowl, whisk together balsamic vinegar, garlic, honey, olive oil, dried thyme, and dried oregano.
  • Pour over steak and let marinate 20 minutes.
  • Season tomatoes with salt and pepper.
  • Heat grill to high. Grill steak 5 minutes per side, then top with mozzarella and tomatoes and cover grill until cheese is melty, 2 minutes.
  • Top with basil before serving.

Quesadilla Burger
No longer do you have to choose between a quesadilla or a burger.

Ingredients
  • 1 lb. ground beef
  • 1 clove garlic, minced
  • 1 jalapeño, minced
  • 1 tsp. chili powder
  • kosher salt
  • Freshly ground black pepper
  • 2 tbsp. vegetable oil, divided
  • 8 Small flour tortillas
  • 1½ c. shredded Cheddar
  • 1½ c. Shredded Monterey Jack
  • 1½ c. Shredded lettuce
  • 1 c. Pico de Gallo
  • Sour cream, for drizzling
Instructions
  1. In a large bowl, combine ground beef, garlic, jalapeño, and chili powder. Season with salt and pepper and mix until just combined.
  2. Shape mixture into four large, thin patties. Heat 1 tablespoon oil in a large skillet over medium-high heat. When the pan is hot, add the patties and cook until cooked to your desired doneness, about 4 minutes per side.
  3. Set aside burgers and wipe skillet clean. In the same skillet over medium heat, heat remaining tablespoon oil. Add one flour tortilla and top with cheddar, Monterey Jack and lettuce.
  4. Place one cooked burger on top then sprinkle more cheese and top with pico de gallo. Drizzle with sour cream then place a second tortilla on top. Cook until the bottom tortilla is golden, about 2 minutes.
  5. Carefully flip quesadilla and cook until the other side is golden, about 2 more minutes. Repeat with remaining ingredients and burgers. Serve immediately.

Funfetti Cheesecake
Funfetti fans, we've got the cheesecake for you.

Ingredients
  • 1 box Funfetti cake mix, plus ingredients called for on box
  • 3 8-oz. blocks cream cheese, softened
  • 1 c. sugar
  • 3 large eggs
  • ¼ c. sour cream
  • 2 tsp. pure vanilla extract
  • ½ c. rainbow sprinkles, plus more for decorating
  • ½ c. vanilla frosting
Instructions
  1. Preheat oven to 350° and grease a 9” springform pan with cooking spray.
  2. Prepare Funfetti cake mix according to package instructions and pour about half of the batter into prepared pan. Bake until a toothpick inserted into the middle of the cake comes out clean, 23 to 25 minutes. Let cake cool for 10 minutes.
  3. Make cheesecake mixture: In a large bowl using a hand mixer, beat cream cheese and sugar until combined. Add eggs and beat until combined, then stir in sour cream and vanilla and fold in sprinkles.
  4. Pour cream cheese batter onto cooled cake and bake until cheesecake is slightly jiggly in the center, 1 hour to 1 hour 10 minutes. (Cheesecakes tend to crack if you don't use a water bath. If you don't want to use one, bake as directed. If you do want to use a water bath, double wrap the outside of the pan in aluminum foil and place in a baking dish. Place on oven rack and pour in enough boiling water to reach halfway up the pan. Bake as directed.)
  5. If not using a water bath: Remove pan from oven and run a knife around the inside of the pan to release the cheesecake. Let cool 1 hour on a wire rack, then refrigerate until totally chilled, at least 4 hours and up to overnight.
  6. Pipe vanilla frosting along border of the cheesecake then garnish with more sprinkles. Slice and serve cold.
