Triple Decker Mississippi Mud Pie

Ingredients
For the crust:
  • 60 chocolate wafers
  • 4 tablespoons butter, melted
  • 1 teaspoon salt
For the cake layer:
  • ¼ cup coffee
  • 1 cup dark brown sugar
  • 13 ounces dark chocolate, approximately 70% cacao, chopped into pieces
  • 1 cup butter, cubed
  • 5 large eggs, separated
  • 1 teaspoon vanilla extract
For the chocolate pudding layer:
  • ¾ cup sugar
  • ½ cup dark cocoa powder
  • ¼ cup cornstarch
  • ½ teaspoon salt
  • 4 large egg yolks
  • 2½ cups whole milk
  • 3 tablespoons butter
  • 3 ounces dark chocolate, approximately 70% cacao, chopped into pieces
  • 2 teaspoons vanilla extract
  • 2 cups whipped cream, for topping
  • 1 cup chocolate shavings, for topping
Instructions
  1. Preheat the oven to 350 degrees. Line a 10-inch springform pan with parchment paper. Line the edges with aluminum foil, creating a taller cake pan, approximately 8 inches tall.
Make the crust:
  1. In the bowl of a food processor, pulse chocolate wafers until they resemble course sand. Add butter and salt and pulse to combine. Press into the prepared pan all the way up to nearly the top of the foil and set in the freezer for 15 minutes. Bake for 10 minutes and allow to cool for up to 2 hours while you make the cake.
Make the cake:
  1. In a small saucepan, combine coffee and brown sugar and heat on medium-low until melted. In a medium bowl, combine chocolate and butter. Pour sugar mixture over chocolate and stir until smooth and completely melted. Add egg yolks and vanilla and allow to cool completely.
  2. In another bowl, whisk egg whites until stiff, and slowly incorporate into melted chocolate mixture. Carefully pour into prepared and cooled cookie crust, and bake until cake is barely set, approximately 30 to 35 minutes. Remove from oven and allow cake to cool completely. Set in refrigerator to cool for up to 3 hours.
Make the chocolate pudding:
  1. In a medium saucepan, combine sugar, cocoa powder, cornstarch and salt. Add egg yolks and whisk until combined. Slowly add in whole milk and bring mixture to a boil, stirring constantly to prevent burning. Remove from heat and transfer to a large bowl. Stir in butter, dark chocolate and vanilla and stir to combine. Allow to cool and set in the refrigerator for up to 3 hours.
Assemble the pie:
  1. Remove cake from fridge and top with chocolate pudding. Top with whipped cream and chocolate shavings. Serve immediately. Pie will keep up to 4 days covered in the refrigerator.

No-Bake Oreo Strawberry Cheesecake
When your favorite cookie meets a fruity cheesecake, you know it's gonna be good.

Ingredients
  • 200 grams cream cheese, softened at room temperature
  • 100 grams heavy cream
  • 100 grams yogurt
  • 180 grams strawberry jam
  • 1 tablespoon lemon juice
  • 5 whole strawberries, cut into cubes
  • 50 milliliters hot water
  • 10 grams powdered gelatin
  • 9 oreos
  • 30 grams butter, melted
  • Decoration:
  • 4 oreos, cut in half
  • 7 whole strawberries, cut in half
Instructions
  1. Sprinkle gelatin onto hot water and set aside for 10 minutes.
  2. Combine 9 oreos and melted butter inside a ziploc bag and crush until crumbly.
  3. Pour crumbs into a cheesecake pan lined with parchment paper and flatten down firmly with a spoon.
  4. Arrange strawberry halves around the sides, with the insides of the strawberry facing outwards.
  5. In a blender, combine cream cheese, cream yogurt, jam, lemon juice and gelatin mixture and blend until smooth.
  6. Fold in cut up strawberries and pour mixture into the pan. Refrigerate for at least 2 hours.
  7. Once chilled and firm, transfer to a serving plate and decorate with oreos.

Avocado Ice Cream
This is everything we avo wanted and more.

Ingredients
For the ice cream:
  • 4 avocados
  • 3 limes, juiced
  • 1 can sweetened coconut cream
  • 1 can unsweetened coconut cream
  • 2 teaspoons vanilla
  • 2 tablespoons coconut oil
  • ½ teaspoon salt
For the cake pops:
  • 3 cups chocolate cake, crumbled
  • 1 cup chocolate icing
  • 1 cup milk chocolate
  • ¼ cup coconut oil
Instructions
  1. Blend all the ice cream ingredients and freeze for 1½ to 2 hours. You want the ice cream to be semi-frozen, the consistency of soft-serve.
  2. In a medium bowl, mix chocolate cake and icing until well combined. Form into balls and freeze.
  3. Melt chocolate and coconut oil and combine. Dip frozen cake balls to coat; set aside until ready to serve.
  4. To serve, fill empty avocado shells with avocado ice cream and finish with a cake pop “pit”.

Snickers Egg Rolls
Ok, ok. We know. It's a very simple recipe. Trust us, though—once you try these egg rolls, you'll never want Snickers any other way.

Ingredients
  • 12 egg roll wrappers
  • 12 Snickers bars
  • ⅓ c. granulated sugar
  • ½ c. semisweet chocolate chips, melted
Instructions
  1. Place an egg roll wrapper on a clean surface in a diamond shape and place a half of a Snickers bar. Fold up bottom half and tightly fold in sides. Gently roll, then seal fold with a couple drops of water. Repeat until all egg roll wrappers are used.
  2. In a large skillet over medium heat, heat oil (it should reach 1" up the side of pan) until a drop of water bubbles in pan. Add egg rolls and fry until golden, 1 minute per side. Transfer to a paper towel-lined plate and sprinkle with sugar immediately.
  3. Serve with melted chocolate for dipping.

Funfetti Cheesecake

Funfetti Cheesecake
Funfetti fans, we've got the cheesecake for you.

Ingredients
  • 1 box Funfetti cake mix, plus ingredients called for on box
  • 3 8-oz. blocks cream cheese, softened
  • 1 c. sugar
  • 3 large eggs
  • ¼ c. sour cream
  • 2 tsp. pure vanilla extract
  • ½ c. rainbow sprinkles, plus more for decorating
  • ½ c. vanilla frosting
Instructions
  1. Preheat oven to 350° and grease a 9” springform pan with cooking spray.
  2. Prepare Funfetti cake mix according to package instructions and pour about half of the batter into prepared pan. Bake until a toothpick inserted into the middle of the cake comes out clean, 23 to 25 minutes. Let cake cool for 10 minutes.
  3. Make cheesecake mixture: In a large bowl using a hand mixer, beat cream cheese and sugar until combined. Add eggs and beat until combined, then stir in sour cream and vanilla and fold in sprinkles.
  4. Pour cream cheese batter onto cooled cake and bake until cheesecake is slightly jiggly in the center, 1 hour to 1 hour 10 minutes. (Cheesecakes tend to crack if you don't use a water bath. If you don't want to use one, bake as directed. If you do want to use a water bath, double wrap the outside of the pan in aluminum foil and place in a baking dish. Place on oven rack and pour in enough boiling water to reach halfway up the pan. Bake as directed.)
  5. If not using a water bath: Remove pan from oven and run a knife around the inside of the pan to release the cheesecake. Let cool 1 hour on a wire rack, then refrigerate until totally chilled, at least 4 hours and up to overnight.
  6. Pipe vanilla frosting along border of the cheesecake then garnish with more sprinkles. Slice and serve cold.

Watermelon Cake

Ingredients
  • Nonstick cooking spray
  • 2 boxes white cake mix, plus ingredients called for on box
  • 5 tsp. red gel food coloring, divided
  • 1 c. mini dark chocolate chips
  • 2 tbsp. all-purpose flour
  • 3 c. (6 sticks) unsalted butter, softened
  • 10 c. powdered sugar
  • ½ c. whole milk (plus more as needed)
  • 2 tbsp. vodka
  • 2 tsp. green gel food coloring
  • 2 tsp. yellow gel food coloring
  • A handful of black mini jelly beans
Instructions
  1. Preheat oven to 350°. Line four 8” round cake pans with parchment paper and grease with cooking spray.
  2. Prepare cake mixes according to package instructions and add 4 teaspoons of the red gel food coloring to achieve a watermelon red color.
  3. Toss the chocolate chips with flour to coat and fold into the batter.
  4. Divide cake batter between prepared pans and bake according to package instructions or until a toothpick inserted into the center comes out clean, about 30 minutes. Let cakes cool in pans for 10 minutes, then invert onto wire racks to cool completely.
  5. Make frosting: In a large bowl using a hand mixer, beat butter and about half of the powdered sugar until smooth. Add the remaining powdered sugar, ½ cup of milk, and ¼ teaspoon salt and beat until fluffy. If the mixture is too stiff, add more milk.
  6. Divide frosting into two medium bowls. Leave one bowl of frosting white and stir in the remaining 1 teaspoon of red gel food coloring into the other bowl of frosting.
  7. Level the top of each cake to create even layers. Place a small dab of red frosting on the cake plate (to keep cake in place). Place down one cake and top with about ¾ cup red frosting, then top with second cake and repeat with the third and fourth layer.
  8. Scrape a heaping ½ cup of frosting in a pastry bag fitted with a 1-inch tip and pipe a ring around the outer edge of the cake. Using about a cup and a half of frosting, smooth a crumb coat around the outside of the cake. Transfer the cake to the refrigerator until the frosting is hardened, 1 hour.
  9. Spread the outside of the cake with the remaining white frosting. Fill in the top center of the cake with red frosting, being careful to keep the red frosting inside the piped white ring.
  10. Arrange jelly beans in the top red frosting, pressing them in gently to adhere.
  11. In 2 small bowls, mix 1 tablespoon vodka each with the green, light green and yellow gel food coloring. Using 2 separate sponges, blot the colors in vertical lines up the sides of the white frosting, creating a watermelon rind pattern.

Oreo Brownie Ice Cream Sandwiches

Ingredients
Ice Cream
  • 400ml thickened/whipping cream
  • ½ cup powdered sugar
  • 1 tsp vanilla
  • 1 cup chopped Oreos
  • 40g plain flour
  • 40g cocoa
  • 150g castor sugar
  • 150g butter
  • 150g chocolate
  • 3 eggs
  • 1 cup chopped Oreos
  • 20 whole Oreos
Instructions
Ice Cream
  1. Add cream, sugar and vanilla to a large mixing bowl and whip on high speed until you reach stiff peaks. Add chopped Oreos and fold in.
  2. Place in a 8” x 8” cake pan and freeze overnight.
Brownies
  1. Preheat a fan forced oven to 175C (340F). Spray 30/20cm baking tray pan with non stick cooking spray and lay the bottom and sides with parchment paper. Set aside.
  2. Add butter and chocolate to a microwave safe bowl. Microwave for 20 seconds at a time and repeat until it becomes smooth.
  3. Add flour, eggs, sugar to a large mixing bowl and mix on low speed using the paddle attachment or a wooden spoon until everything is combined.
  4. Slowly add chocolate and butter mixture while mixing on low speed.
  5. Add chopped Oreos and fold in.
  6. Add batter to baking tin lined with baking paper. Add whole Oreos on top. Bake for 30 min or until a pick comes out with moist crumbs.
  7. Once the brownies have baked and cooled completely use a 3 inch round cookie butter to cut out 12 shapes from the brownies. I found placing a chopping board on top of your brownies and flipping them over on to the baking tray helps because you cut from the side without Oreos.
  8. Add a scoop of ice cream on top of one brownie cookie and then add another cookie on top and squish the ice cream.

Grilled Peach Sundaes
Underripe peaches are the worst — unless they're grilled. Over the flame, they get deliciously charred and caramelized.

  • 2 peaches, halved, pits removed
  • ¼ c. maple syrup
  • 1 tbsp. cinnamon sugar
  • Pinch salt
  • Vanilla ice cream, for serving
  • Caramel, for serving
  • Crushed graham crackers, for garnish
Instructions
  1. Heat grill to high. Brush cut sides of peaches with maple syrup then sprinkle with cinnamon sugar and salt.
  2. Put peaches on grill, cut side-down, and cook until charred, about 2 minutes. Flip and cook another two minute, to allow peaches to soften slightly.
  3. Serve peaches with ice cream scooped on top. Drizzle with caramel and sprinkle with crushed graham c

S'mores Cheese Ball
Can't find marshmallow bits? Quarter mini marshmallows for a similar effect.

  • 16 oz. cream cheese, softened
  • ½ c. powdered sugar
  • ⅓ c. marshmallow crème
  • 1 tsp. pure vanilla extract
  • Pinch kosher salt
  • ⅔ c. mini chocolate chips
FOR COATING
  • ¼ c. mini chocolate chips
  • ¼ c. marshmallow bits
  • ¼ c. crushed graham crackers
  • Whole graham crackers, for serving
Instructions
  1. In a medium bowl using a hand mixer, beat together cream cheese, powdered sugar, marshmallow crème, vanilla, and salt. Fold in mini chocolate chips, then place in refrigerator to firm up, 30 minutes.
  2. Meanwhile, make coating: Combine mini chocolate chips, marshmallow bits, and crushed graham crackers on a shallow plate. When marshmallow mixture is firm, shape into a large round ball and roll in coating. Serve with graham crackers.

Ultimate Oreo Fudge Brownie Bars
The fudging ultimate Oreo brownie dessert!

Ingredients
Brownies
  • 75g plain flour
  • 75g cocoa
  • 300g castor sugar
  • 300g butter
  • 300g chocolate
  • 6 eggs
  • 2 pkts Oreos
Ice Cream
  • 700ml thickened/whipping cream
  • ½ cup powdered sugar
  • 1 tsp vanilla bean paste
Fudge sauce
  • 200gm good quality dark chocolate
  • 25g butter
  • 25g brown sugar
  • 125ml cream
Instructions
Fudge sauce
  1. Add all the ingredients into a large microwave safe bowl and microwave for 20 seconds at a time, mixing each time until smooth. Any left-over sauce can be stored in an air tight container for up to 3 months.
Ice Cream
  1. Add cream, powdered sugar and vanilla bean paste into a large mixing bowl and whip to stiff peaks using a hand mixer.
  2. Transfer cream mixture to a deep baking dish. Freeze for at least 2-3 hrs.
Brownies
  1. Preheat a fan forced oven to 175C (340F). Spray a 10 by 7 inch square pan with non stick cooking spray and lay the bottom with parchment paper. Set aside.
  2. Add butter and chocolate to a microwave safe bowl. Microwave for 20 seconds at a time and repeat until it becomes smooth.
  3. Add flour, eggs, sugar to a large mixing bowl and mix on low speed using the paddle attachment or a wooden spoon until everything is combined.
  4. Slowly add chocolate and butter mixture while mixing on low speed.
  5. Add a thin layer of batter to baking tin lined with baking paper and then add a layer of oreos. Then add the rest of the brownie batter and add a final layer of oreos on top. Bake for 30 min or until a pick comes out with moist crumbs.
  6. To assemble cut the brownies into 8 pieces. Scoop some vanilla bean ice cream and place on top of each piece. Drizzle with fudge sauce before serving.
