Chicken Fried Steak Fingers

Ingredients
FOR THE FRIED STEAK FINGERS
  • 1½ lb. cube steak
  • 1 c. all-purpose flour
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • ¼ tsp. paprika
  • ½ tsp. cayenne pepper
  • kosher salt
  • Freshly ground black pepper
  • ¾ c. whole milk
  • 2 large eggs, beaten
  • Vegetable oil, for frying
FOR THE GRAVY
  • 4 tbsp. butter
  • 3 tbsp. all-purpose flour
  • 1¼ c. whole milk
  • 1 tbsp. finely chopped chives
  • kosher salt
  • Freshly ground black pepper
Instructions
  1. Slice steak into thin long strips about ½” thick. Set aside.
  2. Set up a dredging station: In a shallow bowl, combine flour, garlic powder, onion powder, paprika and cayenne, and season with salt and pepper. In a second shallow bowl, whisk together milk and eggs. Season steak with salt and pepper. Working in batches, dredge the steak strips thoroughly in the flour mixture then add them to the egg mixture and turn the pieces to coat. Return steak to the flour and dredge once more.
  3. In a Dutch oven or large deep skillet, add about 1” of vegetable oil and heat over medium heat. When the oil is shimmering (it should be about 350°), place the steak strips, one by one, into the oil with tongs. Cook until golden all over, about 2 minutes per side. Place them on a plate lined with paper towels to drain off any excess grease.
  4. Make gravy: In a small skillet over medium heat, melt butter. When the butter is foamy, whisk in flour and cook mixture until the flour is golden, about 1 minute. Gradually whisk in milk and bring mixture to a boil. Reduce heat to gently simmer the gravy until thickened. Stir in chives and season with salt and pepper to taste.
  5. Serve the chicken fried steak “fries” warm with gravy for dipping.

Nacho Fried Chicken Dippers
These chicken tortillas are cheesy, crunchy, and delicious. Serve them up with this queso dip for the best pairing ever!

Ingredients
  • 3 chicken breasts, butterflied
  • 1 cup seasoned flour
  • 3 eggs, whisked
  • 2 bags cheese tortilla chips crushed
  • 1 can evaporated milk
  • 2 cups grated cheddar cheese
  • 2 tbsp corn starch
  • 2 tbsp hot sauce
  • 2 jalapeños, seeded and diced
  • Chopped tomatoes
  • Chopped coriander
  • Oil for frying
Instructions
  1. Cut butterflied breasts into triangles. Coat each in flour, then egg, then crushed chips. Repeat into egg then chips.
  2. Heat about ½ inch oil in a cast iron pan to 180ºC. Shallow fry each of the chicken pieces until golden on both sides. Keep warm.
  3. In a large pot, heat evaporated milk, mix cheese and cornstarch together and add to milk. Mix, stirring until thickened. Stir in hot sauce and jalapeños. Pour into a bowl. Top with tomatoes and chopped coriander.
  4. Serve chicken along side dip, enjoy!

Jalapeño Popper Hasselback Chicken
Jalapenos are without a doubt a Mexican icon up there with sombreros and Frida Kahlo. These smooth, glossy torpedoes of joy are ubiquitous not only south of the border but north too, peppering Tex-Mex cuisine with their distinctive mellow heat and dark green hue. Combined with chicken, bucketloads of cheese and that classic prerequisite for a good time, double cream, you are onto a winner.

Ingredients
  • 1 cup cream cheese
  • 6 Jalapeno peppers
  • 2 cups mixed mozzarella & cheddar
  • 1 tbsp salt
  • 1 tbsp pepper
  • ¾ cup double cream
  • 4 chicken breasts
  • Sliced cheddar cheese
  • Thinly cut bacon, cooked until crisp and cut into narrow strips
  • Salt
  • Pepper
Instructions
  1. In a large bowl mix together the cream cheese, jalapenos, two cheeses, salt, pepper and cream. Set aside.
  2. Cut parallel slices down the length of each chicken breast then lay them in a greased skillet and insert alternate slices of cheese and bacon into each.
  3. Season then spoon over dollops of the cheesy popper mixture. Bake for around 40 - 50 minutes until the sauce is bubbling and the chicken has cooked through.
  4. Serve with salad to offset all that dairy.

Meatball Parm Skewers
All the flavor of meatball parm in one perfect bite.

Ingredients
  • 1 lb. ground beef
  • ½ c. bread crumbs
  • 1 Egg, lightly beaten
  • 2 tbsp. chopped parsley
  • 2 c. marinara sauce
  • 4 garlic cloves (divided)
  • ½ c. finely grated Parmesan, divided
  • kosher salt
  • Freshly ground black pepper
  • 6 mozzarella slices, cut into small squares
  • Fresh basil leaves, for serving
Instructions
  1. Mince two cloves of garlic and thinly slice the remaining to cloves.
  2. In a large bowl, ground beef, bread crumbs, egg, parsley, minced garlic and ¼ cup Parmesan. Season with salt and pepper. Mix until just combined. Roll into golf-size balls.
  3. Heat olive oil in a large skillet over medium-high heat. Add the meatballs and cook to brown on all sides. When the meatballs have developed a nice crust, remove them from the skillet and wipe the skillet clean. Return skillet to stovetop over medium heat. Pour marinara into the skillet. Stir in thinly sliced garlic and remaining Parmesan, bring sauce to simmer then add the meatballs back to the pan. Spoon sauce over the meatballs. Cover the pan with a lid and simmer meatballs for another 10-12 minutes, or until cooked through.
  4. Top each meatball with mozzarella. Cover pan with lid and cook until the cheese is melted. Turn off heat. Top each meatball with a whole basil leave, folded, and pierce with a toothpick to serve.

Ingredients
  • 750g beef mince
  • 1 onion, diced
  • 2 tsp oil
  • 2 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 1 can evaporated milk
  • 2 cups grated cheddar cheese
  • 2 tbsp cornflour
  • ¼ cup diced pickled jalapeños
  • 1 bag of fries, oven baked
  • diced tomatoes
  • shredded lettuce
  • chopped spring onions
Instructions
  1. Heat oil in a large non-stick pan over medium-high heat. Add beef mince, breaking apart well. Cook until all the juices have come out and the beef begins to fry.
  2. Add the onions and garlic and cook until aromatic and onions are slightly softened. Add 2 tbsp taco seasoning and cook for two minutes. Keep warm.
  3. In a pot, add evaporated milk. Toss together cornstarch and grated cheese. Add to evaporated milk and stir continuously until melted and thickened. Add pickled jalapeños and stir to combine.
  4. Toss fried with 2 tbsp taco seasoning to coat. Spoon beef mince over the fries. Pour over cheese sauce. Sprinkle chopped tomatoes, shredded lettuce and spring onions.
  5. Enjoy!

There's something about the combination of caramel and apples that appeals to everyone - tart, squidgy fruit goes so well with that sugary richness. These upside down muffins are a stunning addition to any bake sale, lunch box or binge sesh.

Ingredients
  • For the caramel:
  • ¾ cup butter
  • ¾ cup soft brown sugar
  • 3 tbsp maple syrup
  • 3 Braeburn, Cox or Granny Smith apples, peeled, cored and sliced into roughly ¼ inch slices
  • For the muffins:
  • ½ cup unsalted butter, melted
  • ¾ cup light brown sugar
  • 2 large eggs, lightly beaten
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
Instructions
  1. In a large saucepan heat the sugar, butter and maple syrup gently until the sugar has melted - carefully rub the caramel with your fingers (make sure you cool it on a spoon first) and see if its gritty. Add the add slices and allow them to cook until soft. Braeburn apples hold their shape on cooking and become jelly like and go a beautiful bronze colour.
  2. Grease a 12 hole muffin tin and place a spoonful of the apple caramel mixture in the bottom of each hole. Set aside.
  3. Whisk together all the wet ingredients and the sugar until they are combined and gooey, then sift in the dries and fold everything together. Spoon into the tray on top of the caramelised apples and bake for roughly 20 minutes, until risen a little.
  4. Tip them carefully out of the tray and serve warm with ice cream.

Stuffed Baked Spiral Bread
This spiraling bread stuffed with meat & cheese has got us hypnotized!

Ingredients
  • Meat sauce filling:
  • ½ white onion, chopped
  • 3 cloves garlic, chopped
  • ½ pound ground beef
  • 10 ounces tomato sauce
  • 1 teaspoon fresh thyme
  • ½ tablespoon fresh oregano
  • Olive oil, for cooking
  • For the bread:
  • 16 ounces pizza dough
  • 10 ounces shredded mozzarella cheese
  • 1 egg, beaten
  • 2 teaspoons granulated garlic
  • Chili flakes, for garnish
  • Chopped parsley, for garnish
Instructions
  1. In a large saucepan, saute onions and garlic in olive oil until translucent and slightly browned. Add beef. Once browned, add the tomato sauce and bring to a boil. Reduce to a simmer and allow to simmer for 20 minutes. Add fresh thyme and oregano and simmer an additional 10 minutes. Remove from heat and allow to cool to room temperature.
  2. Preheat oven to 350 degrees. Line a 12-inch cast-iron pan with parchment paper.
  3. Roll out the pizza dough into a large rectangle. Using a pizza cutter, cut 4 strips of the dough lengthwise.
  4. Once the sauce is cooled, place the cheese topped with meat sauce filling along the top of the dough strips. Pinch both sides of the dough together to form a tube. Shape the tubes into a spiral inside the cast-iron, starting from the outside and working your way in towards the center. Brush spiraled dough with beaten egg. Sprinkle the top of the bread with granulated garlic and bake for 30 minutes or until golden brown. Garnish with chili flakes and parsley before serving.

SHEET PAN CHEESY CHICKEN ENCHILADA

Ingredients
  • 500g shredded chicken
  • 9 large tortilla wraps
  • 2 cups enchilada sauce
  • 3 cups cheddar cheese, grated
  • 3 tbsp olive oil, plus 1 tsp
  • 2 onions, thinly sliced
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp oregano
  • 1 tsp salt
  • 1 tsp cayenne
Instructions
  1. Add your oil to a hot frying pan then add your onions and a little salt. Fry until lightly golden brown, about 10 minutes. Add your spices then chicken and stir to combine. Add a little water to loosen if necessary. Set aside
  2. Brush 1 tsp olive oil into a non-stick sheet pan. Lay in your tortillas in the base as per the video, overlapping as you go.
  3. Spoon in your chicken mix then sprinkle over half your cheese. Place two tortillas on top and fold in the rest. Place a tray on top and bake at 180°C until hot and golden brown - 20 minutes.
  4. Flip out, top with enchilada sauce and the remaining cheese, then grill for 5 minutes.
  5. Destroy.

Ingredients
  • ½ lb. Brussels sprouts, thinly sliced
  • 1 tbsp. olive oil
  • 2 tbsp. freshly grated Parmesan
  • 1 tsp. garlic powder
  • Kosher salt
  • Freshly ground black pepper
  • Caesar dressing, for dipping
Instructions
  1. Preheat oven to 400°. In a large bowl, toss Brussels sprouts with olive oil, Parmesan, and garlic powder and season with salt and pepper. Spread in an even layer on a medium baking sheet.
  2. Bake 10 minutes, toss, and bake 8 to 10 minutes more, until crisp and golden. Serve with caesar dressing for dipping.

Jalapeño Popper Cheeseburger Hot Dog
What to get the guy who's eaten everything? How about all the bar foods wrapped into one savory package?

Ingredients
  • 4 large jalapeños, as straight as possible
  • 8 oz. ground beef
  • 4 pieces string cheese
  • 1 cup flour
  • 2 eggs, beaten
  • 2 cups plain bread crumbs
  • 4 hot dog buns
  • Ketchup, for garnish
  • Mustard, for garnish
Instructions
  1. Fill a large heavy bottom saucepan with 4 inches of oil. Preheat oil to 325 degrees.
  2. Cut off the ends of jalapeño and hollow out seeds and white membrane. Stuff with string cheese. Wrap jalapeño in 2 oz. of ground beef until completely covered. Season flour and bread crumbs with salt and pepper. Dredge wrapped jalapeño in flour and shake off any excess. Next roll jalapeño in beaten egg followed by bread crumbs.
  3. Carefully place in hot oil and cook for 5-8 minutes Drain on a paper towel lined plate. Serve in a hot dog bun with ketchup and mustard. Enjoy!
