Chicken Alfredo Garlic Bread Roll
CHICKEN ALFREDO GARLIC BREAD ROLL

Ingredients
  • 1½ cups cream cheese
  • 3 tbsp double cream
  • 1 cup parmesan
  • 1 garlic clove, minced
  • 1 tsp salt
  • 1 tsp pepper
  • ¼ cup parsely
  • 3 cups shredded chicken
  • 6 rashers bacon, chopped and cooked
  • White bread, 12 slices
  • 12 slices mozzarella
  • ½ cup garlic butter
Instructions
  1. Mix the cream cheese, cream, parmesan, garlic, salt and pepper, chicken and bacon bits together to make the filling. Set aside (but don't refrigerate).
  2. Lay the crustless slices of bread in a sheet on a large piece of baking paper. Make sure the sides are overlapping. Press together with a rolling pin (if you press hard enough they'll stick together).
  3. Place the mozzarella in a sheet on top and sprinkle with the alfredo mix.
  4. Bring up the edge of the sheet and roll into a spiral.
  5. Place on a baking sheet and brush with the garlic butter.
  6. Bake for 30 minutes until golden brown and crisp.

Ingredients
  • 3 apples, peeled and diced small
  • 1 tbsp butter
  • ½ cup light brown sugar
  • ½ tsp cinnamon powder
  • Pinch of salt
  • Juice of two lemons
  • ¼ cup water
  • 2 sheets ready rolled puff pastry
  • Egg wash
  • Demerera sugar
  • Caramel Sauce
Instructions
  1. In a saute pan over medium heat, melt butter. Add apples and toss to coat. Stir in brown sugar, salt, cinnamon, lemon juice, and water. Cook until reduced and apples have softened. Set aside to cool completely.
  2. Pre-heat oven to 180ºC (350ºF).
  3. Roll out puff pastry. Spread apple mix in a circle around the center of the puff pastry leaving a 4” empty circle. Top with the second piece of puff pastry. And press to adhere. Place a bowl I the middle of the pastry where there is no apple mixture. Cut slits around the bowl 4 quadrants and 4 slices in each. Twist two slices into each other and pinch to seal at the end. Continue with remaining to create a star shape.
  4. Remove the bowl and cut our center. Brush evenly with egg wash and sprinkle with demerera sugar.
  5. Bake for 30 minutes until golden brown. Serve with caramel sauce.
  6. Enjoy!

Philly French Dip Sliders
PHILLY FRENCH DIP SLIDERS

  • 1 tsp vegetable oil
  • 1kg thinly sliced sirloin steak
  • 2 green peppers, diced small
  • 1 large white onion, diced small
  • 150g white mushrooms, sliced
  • 1 ltr beef stock
  • 1 tsp Worcestershire sauce
  • 12 slider buns
  • 24 slices provolone cheese
Instructions
  1. Preheat the oven to 180°C/360°F.
  2. Heat a little oil in a deep sided frying pan with a lid and brown the steak all over, then remove from the pan with a pair of tongs.
  3. Add the onions and peppers and fry until soft, then add the mushrooms and keep cooking until a little of their moisture has evaporated. Add the garlic and stir until fragrant.
  4. Pop the beef back in and add the flour, salt and pepper.
  5. Pour over the beef stock and the Worcestershire sauce and bring to a simmer, then cover with a lid and cook until the beef is soft and the gravy nice and thick, around an hour.
  6. Arrange the bottom halves of all the slider rolls on a tray and top with cheese, then use a slotted spoon to add the beef mixture, followed by more cheese. Top with the top of the rolls and spoon gravy all over them.
  7. Bake for around 10 - 15 minutes until they are cooked through and the cheese has melted.

LASAGNA BRAID

Ingredients
  • 1½ cups beef ragu
  • 6 sheets fresh lasagna, par cooked
  • 1½ cups ricotta cheese
  • ½ cup grated parmesan
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tbsp chopped fresh basil
  • 9 slices mozzarella cheese
  • Ready rolled puff pastry, defrosted
  • Egg wash
Instructions
  1. Pre-heat oven to 200ºC (390ºF).
  2. Lay out puff pastry onto a sheet of parchment paper.
  3. In a bowl mix together ricotta, parmesan, salt, pepper, and basil.
  4. Place two large noodles in the middle of the puff pastry with about 3” on either side. Spread a thin layer of rage in the middle of the lasagna noodles. Top with ricotta mixture and 3 slices of cheese. Top with a thinner lasagna noodle on top to cover. Repeat with remaining ragu, ricotta, cheese, and noodles for 3 layers with the final layer being lasagna noodle. Fold over excess lasagna noodle from the base layer to cover the sides.
  5. Cut diagonal lines along the left and right side of the cheese and pepperoni about an inch apart. Remove the corner pieces. Starting from the top, fold down the flap then alternate right and left until the bottom. Fold the bottom flap up and finish alternating between right and left.
  6. Brush evenly with egg wash and transfer to a flat baking sheet.
  7. Bake for 20-25 minutes until golden brown and puffed up.
  8. Enjoy!

Ingredients
  • 1 tsp oil
  • 1 white onion finely sliced
  • 2 cups of mixed peppers finely sliced
  • 2 garlic cloves minced
  • ⅓ cup fajita spice mix
  • ½ cup passata
  • 22 6 inch tortillas
  • ¼ cup flour
  • ¼ cup water
  • vegetable oil for brushing
  • 1 cup pesto
Instructions
  1. In a large saute pan, heat oil over medium heat. Add onions, peppers, and garlic. Cook until softened. Add shredded chicken, fajita seasoning, and passata. Cook to heat through. Remove and chop into small pieces.
  2. Pre-heat oven to 180ºC (350ºF). Cut tortillas in half. In a small bowl mix together flour and water to form a paste. Spread a thin layer of paste on ⅓ of one half of tortilla. Fold over into a cone shape. Repeat with remaining tortillas.
  3. FIll each cone with fajita mix and use more of the flour paste to seal the triangle. Arrange on a lined baking sheet and brush with oil. bake for 25 minutes until just golden brown.
  4. Place two onto one skewer and brush generously with pesto.
  5. Enjoy!

Baileys Chocolate Christmas Tree
BAILEYS CHOCOLATE CHRISTMAS TREE

Ingredients
  • 300g (heaping) hazelnuts, skinned and roasted
  • 30g sugar
  • 2g kosher salt
  • 1 lb semisweet chocolate, melted and still hot
  • 115g butter
  • 125 ml Baileys
  • 30ml heavy cream
  • 2 rectangles rolled puff pastry
  • Egg wash
  • ½ cup Baileys Chocolate Luxe
  • ¼ cup cocoa powder
  • ¼ golden syrup
  • 2 oz chocolate, chopped
Instructions
  1. Add butter to melted chocolate and mix until butter has melted.
  2. In a blender, add hazelnuts, sugar, and salt. Blitz until just smooth. Add chocolate and blitz to combine. Add Baileys and cream and blend just to combine. Do not over blend.
  3. Pour into a jar and store for later use.
  4. Pre-heat oven to 190ºC (375ºF). Lay out one rectangle of puff pastry. Spread some of the Baileys hazelnut spread in a rough triangle shape.
  5. Place the second piece of pastry on top of the first, then cut out a triangle shape over the spread section. Discard the trimmings.
  6. Now make even cuts down both sides of the triangle, leaving an inch uncut in the center, to keep the tree together.
  7. Twist each strip from top to bottom to create tree branches.
  8. Brush the pastry with the whisked egg. Bake for 20-25 minutes or until well risen and golden brown.
  9. In a small pot, whisk together Baileys chocolate luxe, cocoa powder, and golden syrup together. Bring to a boil stirring, then let simmer for 3 minutes to thicken. Remove from heat and whisk in chocolate until smooth.
  10. Dip pastry into Baileys fudge sauce

Ingredients
  • 2.5 kg potatoes, peeled, par boiled and grated
  • ½ cup plain flour
  • 1½ tsp salt
  • 1 tsp pepper
  • 1 tsp dried oregano
  • ½ tsp dried basil
  • 1 tsp garlic powder
  • Oil for frying
Pizza:
  • Pepperoni
  • Cubed Mozzarella cheese
  • Marinara sauce
Hot Dog:
  • 4 hot dogs
  • 8 slices American cheese
  • Ketchup
Jalapeno Popper:
  • 250g cream cheese, softened
  • ½ cup grated mixed cheese
  • ⅓ cup cooked crumbled bacon
  • ½ tsp salt
  • ¼ tsp pepper
  • 5 jalapeños, cored
Instructions
  1. Pre-heat oil in a large heavy-bottomed pot to 170ºC (350ºF).
  2. In a large bowl, mix together potatoes, flour, salt, pepper, oregano, basil, and garlic powder until combined.
  3. Fill with desired filling.
  4. Fry each stuffed tot until golden brown. Enjoy!

  1. Take a small amount of potato mix and with damp hands press flat onto one palm. Add a piece of pepperoni and cube of mozzarella. Wrap the potato mixture tightly around in the shape of a tater tot.
  2. Lay on a tray and freeze while making the rest.
Hot Dog:
  1. Wrap one hot dog in two sliced of American cheese. Slice into 4 even pieces.
  2. Take a small amount of potato mix and with damp hands press flat onto one palm. Add one mini hot dog wrapped in cheese. Wrap the potato mixture tightly around in the shape of a tater tot.
  3. Lay on a tray and freeze while making the rest.
Jalapeno Popper:
  1. In a bowl mix together cream cheese, grated cheese, bacon, salt and pepper. Fill each jalapeño completely with mixture. Slice into thirds.
  2. Take a small amount of potato mix and with damp hands press flat onto one palm. Add one third of stuffed jalapeño int the middle. Wrap the potato mixture tightly around in the shape of a tater tot.
  3. Lay on a tray and freeze while making the rest.

Croque Monsieur Croissant Lasagna
CROQUE MONSIEUR CROISSANT LASAGNA

Ingredients
  • 6 croissants
  • 3 tbsp dijon mustard
  • 18 slices emmental
  • 12 slices ham
  • 50g butter
  • 50g flour
  • 700ml milk
  • 1 tbsp salt
  • 1 cup grated emmental
Instructions
  1. Preheat the oven to 180°C/360°F.
  2. Cut each croissant in half lengthways and spread the bottom with dijon mustard. Layer cheese and ham and place the top layer of croissant on top.
  3. Place a layer of three croissants in a greased baking tray and top with more cheese and ham, then add the final three with another layer of cheese on top.
  4. In a sauce pan heat the butter until its foaming and stir in the flour. Cook for a minute or so until it smells biscuity, then gradually stir in the butter to make a smooth sauce. Stir in the salt and cheese and pour directly over the croissants and bake for around 30 minutes, until bubbling and golden on top.
  5. Serve straight away, wear a beret.

Ingredients
  • 1 packet brownie mix
  • 1 cup dark chocolate chunks
  • 400 g dark chocolate, melt
  • 2½ cups heavy cream
  • 2 tbsp icing sugar
  • 1 tsp vanilla
Instructions
  1. Make Brownie mix according to the package. Fold in dark chocolate chunks. Bake according to package directions and let cool completely.
  2. In a large bowl, add vanilla and icing sugar to the cream. Whip until stiff peaks form. Fold into melted chocolate until smooth.
  3. Pour over cooled brownie and smooth into an even layer. Refrigerate until set about 3 hours.
  4. Enjoy!

Ingredients
  • 12 sliced soft white bread
  • ½ cup melted garlic butter
  • 1½ cups pizza sauce
  • 1½ cups grated mozzarella cheese
  • ¾ cup mini pepperoni
Instructions
  1. Pre-heat oven to 180ºC (350ºF).
  2. Roll out bread flat. Using a 4” round cookie cutter, cut the bread. Keep excess to make breadcrumbs.
  3. Brush garlic butter over each round and press them inside of a muffin tin. Bake for 10 minutes until toasted.
  4. Fill each cup with a little bit of cheese. Top with a tablespoon of pizza sauce. Cover with mozzarella and mini pepperoni.
  5. Bake for 15 minutes until cheese is melted.
  6. Enjoy!
