Ingredients
  • 2 cups cream cheese
  • 3 shredded chicken breasts
  • 2 cups mozzarella
  • 1 cup parmesan
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 cloves garlic, crushed
  • 2 cups flour
  • 4 eggs, beaten with a little milk
  • 2 cups breadcrumbs seasoned with a little fine sea salt
Ranch Dressing
  • 1 cup mayonnaise
  • ½ cup sour cream
  • 2 tbsp chopped parsley
  • 2 tbsp chopped fresh oregano
  • 1 tsp dried basil
  • 1 clove garlic, crushed
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tbsp lemon juice
  • 1 tbsp Worcester sauce
Instructions
  1. Warm the cream cheese in the microwave to make it a little looser and easier to work with. Add the chicken, mozzarella, parmesan, garlic and seasoning and fold everything together.
  2. Line a 23cm square baking tray and spread the mixture evenly into it, then freeze until solid (roughly 3-4 hours).
  3. While the mix is freezing whisk together all the ingredients for the ranch dressing and set aside.
  4. Cut the slab of frozen chicken - cheese goodness into strips, then (working fairly quickly) dip them in the flour, egg mix, seasoned breadcrumbs and back again into the egg mix and breadcrumbs.
  5. Fry in batches in a large, stable pot of oil at around 170°C until they are crisp and brown. Serve with the ranch dressing.

Cheesy hot dogs wrapped in a jalapeño popper flavoured mashed potato. These “corn dog” like treats are easy to make and the mash can be flavoured with more or less spice!

Ingredients
  • 4 cups potatoes, mashed
  • 10 sliced bacon, chopped and cooked crispy
  • 6 jalapeños, diced
  • ¼ cup cream cheese
  • 2 eggs,beaten
  • 1 tsp salt
  • 1 tsp pepper
  • 3-4 hot dogs, cut in half
  • Sliced mozzarella cheese
  • 3 Beaten Eggs
  • Flour
  • Seasoned breadcrumbs
  • Oil for frying
  • Skewers
Instructions
  1. In a large bowl, mix together potatoes, bacon, jalapeños, sour cream, salt, pepper and eggs.
  2. Wrap each hot dog half in a slice of mozzarella cheese the same size. Poke one skewer through each hot dog.
  3. Wrap each in potato mix and chill in the freezer for 30 minutes.
  4. Coat each in four then egg then breadcrumbs.
  5. Heat oil to 170ºC. Fry each until golden brown
  6. Dip into sauce of choice, enjoy!

Sheet Pan French Toast
This is everything French toast should be - crunchy in some places, soft in others. Stuffed with chocolate and strawberries, served with ice cream, what could be more glorious? Making it massive.

Ingredients
  • 3 eggs
  • 1 cup cream
  • ½ cup milk
  • 3 tbsp sugar
  • 1 tsp vanilla essence
  • 500g strawberries, chopped into slices
  • 300g chocolate, chopped
  • Icing sugar
Instructions
  1. Preheat the oven to 180°C/360°F.
  2. Whisk the eggs with the cream, milk, eggs and vanilla.
  3. Dip each slice of crustless bread in the mixture and lay overlapping on a lined baking sheet (you may need more or less bread depending on the size of the sheet).
  4. Spread the strawberry slices over the top (leave a gap around and sprinkle the chopped chocolate on top of that). Place another overlapping layer of egg soaked bread on the top.
  5. Bake for 20 -30 minutes until they bread has browned and is a bit crispy in places.
  6. Sprinkle over some icing sugar.
  7. Vanilla ice cream to serve.

Ingredients
Dough:
  • 1 cup (240ml) milk, warmed
  • ½ cup (135g) granulated sugar
  • 2 tablespoons active dry yeast (2 standard size packets)
  • ½ cup (115g) unsalted butter, softened to room temperature and cut into 4 pieces
  • 2 large eggs
  • ½ teaspoon salt
  • 4 and ½ cups (562g) all-purpose flour, plus more for dusting/rolling
  • ½ cup unsalted butter, softened
  • ½ cup dark brown sugar
  • 2 tbsp cinnamon
  • 2 cups icing sugar
  • ½ cup cream
  • 1 tsp vanilla
Instructions
  1. In a large bowl, add warm milk, sugar, and yeast. Let it sit for about 5 minutes until frothy
  2. Add softened butter, salt, eggs, and flour to the bowl and mix well.
  3. Place dough into an oiled bowl, cover and let rise in a warm place about 1 hour or until the dough has doubled in size.
  4. Roll the dough out on a lightly floured surface, until it is approx 16 inches long by 12 inches wide. It should be approx ¼ inch thick
  5. Spread butter In an even layer over the dough. Mix together the cinnamon and brown sugar and spread evenly over the butter. Cut the dough into four and roll each into a tight roll pinching the edges to seal. Cut into ½” pieces and place into a greased bundt tin.
  6. Cover with cling film and let proof for 30 minutes.
  7. Bake in a 180ºC oven for 30-40 minutes until golden brown and cooked through. Let cool
  8. In a jug whisk together icing sugar, cream and vanilla until smooth. Pour over warm cake.
  9. Slice, serve and enjoy!

Cheese Stuffed BBQ Fried Chicken
CHEESE STUFFED BBQ FRIED CHICKEN

Ingredients
  • 4 small chicken breasts
  • 1 hpd tbsp each of: onion powder, garlic powder, chilli flakes, salt, black pepper, paprika
  • 2 cups flour
  • 2 cups buttermilk
  • 1 tbsp salt
  • sliced cheddar
  • oil, for frying
  • buns and slaw, for serving
  • For the BBQ sauce:
  • 1 cup tomato ketchup
  • 2 tbsp butter
  • ¼ cup tomato puree
  • ¼ cup cider vinegar
  • 3 tbsp worcestershire sauce
  • ¼ cup brown sugar
  • 2 tbsp spice mix (see above)
Instructions
  1. Make a large incision in the thicker end of each chicken breast. Insert a piece of sliced cheddar. Season the buttermilk with 1 tbsp salt and dunk the stuffed chicken breasts in there. Marinade for 1+ hours.
  2. Mix together your spice mix. Add all but 2 tbsp into the flour. Drain each chicken breast of a little buttermilk and dunk into the seasoned flour. Cover both sides of the chicken. Fry in hot oil until golden and crisp and the cheese is started to melt out of the coating. If you need to continue cooking the chicken in order to reach 70°C, transfer to a very hot oven for 5-10 minutes.
  3. Make your sauce. Melt the butter in a small pan over low-medium heat. Add spices and tomato puree. Cook for 30 seconds or so, then chuck in the tomato ketchup, vinegar, worcestershire sauce and brown sugar. Heat until bubbling. Remove from the heat.
  4. Slap your BBQ sauce all over your chicken pieces, then load into grilled brioche buns with lots of creamy slaw.
  5. Destroy!

Cheesy Beef Loaded Fries

Ingredients
  • 1 tbsp oil
  • 2.2 lb sirloin steak, cut into thin strips
  • 3 tbsp flour
  • 1 tbsp salt
  • 1 tbsp pepper
  • 1 onion, sliced roughly
  • 1 tbsp tomato puree
  • 2 cups beef stock
  • 1 cup wine
  • Thyme
Instructions
  1. Heat the oil in a large, deep pan with a lid. Add the steak pieces and fry until they have a nice colour, then stir in the flour and seasoning and cook until the steak has browned all over. Remove from the pan.
  2. Add the onions and fry until soft, then add the garlic, tomato puree, stock, wine and thyme. Deglaze some of the sticky bits from the bottom of the pan. Bring to a simmer and cover with a lid and leave, stirring occasionally, for about 40 minutes, or until the beef has softened.
  3. Put the fries on a platter and sprinkle with the cheddar, then pour over the beef stew.
  4. Eat.

Creamy Chicken Fajita Pasta
Everyone likes pasta. It's without a shadow of a doubt the world's greatest carb, sublime with sauce and tremendous with cheese. Here at Twisted we particularly like our pasta with chicken (SORRY ITALY) and cream, and this culinary twist brings that combination up to new levels of deliciousness. Creamy, spicy, meaty - what's not to love?

Ingredients
  • 1 tbsp vegetable oil
  • 3 medium chicken breasts
  • 1 tbsp butter
  • 1 red onion, diced
  • 3 mixed peppers, diced
  • 3 cloves garlic, finely diced
  • 1 tsp salt
  • 1 tbsp smoked paprika
  • 1 tbsp cumin
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 cup chicken stock
  • 1 cup double cream
  • ½ cup cream cheese
  • 1½ cups grated red cheddar
  • 2 tbsp parsley, finely chopped
  • 1 large packet penne, cooked al dente
Instructions
  1. Using a heavy bottomed, deep sided frying pan heat the oil and fry the chicken breasts for around 4 - 5 minutes on each side - you want a real colour on them. Remove from the heat and pop in the oven for another 5 minutes to cook through. Slice into thin slices.
  2. Meanwhile, heat the butter in the same pan then add the onion and peppers and fry until soft. Add the garlic and fry for another minute or so, then add the spices and seasoning.
  3. Stir everything together then pour in the stock, cream, cream cheese and stir. Bring to a bubble and stir in the cheese, then re add the chicken, pasta and parsley and stir it up again and serve.

Snickers Hot Chocolate
SNICKERS HOT CHOCOLATE

Ingredients
  • 2 Snickers Chocolate Bars
  • 2 tbsp cocoa powder
  • 950ml whole milk, hot
  • 2 tbsp chunky peanut butter
  • 1 tbsp caramel
  • Chocolate sauce (Optional)
  • Chopped peanuts (Optional)
  • Caramel sauce (Optional)
  • Whipped cream (Optional)
Instructions
  1. In a blender, add 2 snickers bars broken into pieces, cocoa powder, peanut butter, caramel and hot milk.
  2. Blend on high until smooth
  3. Rim 6 small mugs with chocolate sauce then dip into chopped peanuts and allow to stick. Pour hot chocolate into mugs and top with whipped cream and caramel sauce.
  4. Stay warm, enjoy!

Ingredients
  • 12 scrambled eggs
  • 1 cup crispy bacon
  • 3 peppers, diced
  • 1 large onion, diced
  • 6 large potatoes (skin on), diced
  • 3 tbsp olive oil
  • 2 tbsp paprika
  • 1 tsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp salt
  • 1 tbsp black pepper
  • 2 cups grated cheddar
  • 9 large, flour tortillas
  • 1 tsp butter
Instructions
  1. Chuck your potatoes, onions, peppers, garlic powder, onion powder, paprika, salt and oil onto a tray. Roast for an hour at 200°C, turning occasionally. Cool.
  2. Spread a tsp of butter onto a sheet pan. Lay in your tortillas. Sprinkle in half of your cheese, followed by the hash. Crumble over your bacon, spoon in your scrambled eggs, then finish with the rest of the cheese. Lay down 2 more tortillas, then fold over to seal the wrap. Lay on a sheet of baking parchment, weigh down with a heavy tray and bake for 25 minutes at 200°C.
  3. Turn out, slice up and enjoy!

Cheesy Penne Lasagna
No bother fussing to make a béchamel or cooking lasagna noodles! Layered bolognese with creamy coated penne bakes up beautifully for an easy spin on a lasagna!

Ingredients
  • 500g beef mince
  • 1 onion, diced
  • 1 tbsp oil
  • 3 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp oregano
  • 2 tbsp tomato paste
  • ⅓ cup red wine
  • 4 cups passata
  • 500g cooked penne
  • 1½ cups ricotta cheese
  • 1 cup grated mozzarella, split
  • ½ cup grated parmesan
  • 1 tsp salt
  • ½ tsp pepper
  • ½ cup heavy cream
  • Chopped parsley
Instructions
  1. In a large saute pan, heat oil over medium heat. Add onions and cook until softened, add garlic and cook until fragrant. Add mince, breaking apart with a spoon and brown.
  2. Stir in tomato paste until coated. Cook for 2 minutes. Add red wine scraping the bottom of the pan to release the bits. Let reduce by half.
  3. Add the passata, salt, pepper and oregano. Bring to a boil then reduce to a simmer and cover. Cook until thickened.
  4. In a large bowl mix penne, ricotta cheese, half the mozzarella, parmesan, salt, pepper and cream.
  5. Layer bolognese into a dish, topped with pasta, more bolognese and finish with pasta later. Top with remaining mozzarella cheese.
  6. Bake covered in a 180ºF oven for 30 minutes. Grill for 5 minutes until golden brown.
  7. Enjoy!
