Cauliflower Nachos

Cauliflower Nachos
We gave these "nachos" a traditional Mexican spice, but feel free to eliminate or even up the amounts to your heart's desire.

Ingredients
  • 2 small heads (or 1 large head) cauliflower, chopped
  • 3 tbsp. extra-virgin olive oil
  • 1 tsp. kosher salt
  • ½ tsp. cumin
  • ½ tsp. paprika
  • ¼ tsp. chili powder
  • ¼ tsp. garlic powder
  • 1 c. Colby-Jack, shredded
  • Salsa, for serving
  • Guacamole, for serving
  • Pickled Jalapeños, for serving
Instructions
  1. Preheat oven to 425º.
  2. To a large baking sheet, add cauliflower. Drizzle with olive oil. Sprinkle all over with salt, cumin, paprika, and chili powder. Toss to coat. Roast until tender and golden, 20 to 25 minutes.
  3. Top with Colby-Jack cheese and return to oven until melted, 5 minutes more.
  4. Garnish with your favorite salsa, guacamole, and pickled jalapeños.

Cookie Cake
Bigger is better, especially when we're talking cookies.

Ingredients
  • 1 c. unsalted butter, at room temperature
  • ¾ c. brown sugar
  • ¾ c. granulated sugar
  • 2 large eggs
  • 2 tsp. vanilla extract
  • 2⅔ c. all-purpose flour
  • 1 tsp. baking soda
  • ½ tsp. kosher salt
  • 2 c. chocolate chips (plus more for sprinkling)
  • ¼ c. rainbow sprinkles (plus more for sprinkling)
  • Flaky sea salt, to finish
  • 1 c. vanilla frosting
Instructions
  1. Preheat oven to 350° and line a 9" round cake pan with parchment paper. Spray with cooking spray.
  2. In a large bowl, combine butter and sugars. Beat with a hand mixer until light and fluffy. Add eggs, one at a time, beating well between each addition. Stir in vanilla. Add flour, baking soda and salt and mix on low until just combined. Fold in chocolate chips and rainbow sprinkles.
  3. Press cookie dough into an even layer in the prepared pan. Top with more chocolate chips and sprinkles, if desired. Bake until the cookie is golden, about 25 minutes. Let cool in pan for 15 minutes then transfer cake to a cooling rack to cool completely.
  4. Transfer frosting to a piping bag fit with a large star tip. Pipe frosting around the edge of the cooled cookie cake. Slice into wedges.

Crescent Breakfast Squares
So easy you could probably make it in your sleep.

Ingredients
  • Cooking spray, for pan
  • 2 cans crescent dough
  • 3 tbsp. butter, divided
  • 12 large eggs
  • ¼ c. milk
  • kosher salt
  • Freshly ground black pepper
  • ¼ c. finely chopped chives
  • ½ lb. deli ham
  • 12 slices cheddar
  • 1 tsp. sesame seeds
  • 1 tsp. poppy seeds
  • 1 tsp. minced onion
  • 1 tsp. dried garlic
  • Flaky sea salt
Instructions
  1. Preheat oven to 375° and grease a baking sheet with cooking spray. In a large bowl, whisk together eggs and half-and- half.
  2. In a large nonstick pan over medium heat, melt 1 tbsp. butter. When butter is foamy, reduce heat to low and add egg mixture. Cook, stirring often with a spatula, until eggs are just set. Season with salt and pepper and remove from heat.
  3. Unroll one can of crescents onto greased baking sheet and pinch seams together. Add a layer of ham then top with scrambled eggs, chives and cheese. Unroll second crescent dough and place on top of cheese. Pinch together crescent sheets to seal.
  4. Melt remaining butter in microwave. Brush melted butter on top of crescent dough then sprinkle with poppy seeds, sesame seeds, minced onion, dried garlic, and flaky sea salt.
  5. Bake until crescent dough is golden and cooked through, about 25 to 30 minutes. (If the crescent dough is browning too quickly, cover with foil.)
  6. Let cool for at least 15 minutes before slicing into squares.

  • 2 tbsp. butter
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • kosher salt
  • Freshly ground black pepper
  • 2 tbsp. all-purpose flour
  • 1 c. chicken broth
  • 1 c. heavy cream
  • 10 oz. egg noodles, cooked according to package instructions
  • 1½ c. cooked shredded chicken
  • ½ c. frozen corn
  • ½ c. frozen peas
Instructions
  1. In a large skillet over medium heat, melt butter. Add carrots, celery, onion, and garlic and season with salt and pepper. Cook until softened, 3 minutes, then stir in flour and cook 1 minute.
  2. Stir in chicken broth and heavy cream and bring to a boil, then reduce heat and simmer, stirring occasionally, until thickened, about 5 minutes. Stir in pasta, chicken, corn, and peas and simmer until warmed through. Season with salt and pepper. Serve.

Ingredients
  • boneless chicken thighs
  • kosher salt
  • Freshly ground black pepper
  • 1 c. buttermilk ranch dressing
  • ¼ tsp. cayenne
  • extra-virgin olive oil
  • 3 garlic cloves, minced
  • 1 onion, chopped
  • 2 c. low-sodium chicken stock
  • 1 bunch kale, chopped into 1" pieces
  • 1 c. baby spinach
  • 1 c. white rice
  • ¼ c. chopped parsley
Instructions
  1. In a large mixing bowl season chicken with salt and black pepper. Add ranch dressing and cayenne pepper; marinate 5 minutes. Remove chicken from marinade and pat dry with paper towels.
  2. In a large skillet over medium-high heat add 2 tablespoons olive oil and sear chicken skin-side down until golden, about 5 minutes. Transfer to a plate skin-side up; set aside. Drain skillet, reserving 1 tablespoon fat, and discard balance. Turn heat down to medium and cook garlic and onion for 2 minutes, until beginning to soften. Stir in stock, kale (if using), rice, 1 teaspoon salt, and ½ teaspoon black pepper. Place chicken in rice mixture, skin-side up. Simmer until rice is tender, about 20 minutes.
  3. Stir in baby spinach and parsley. Serve immediately.

Ingredients
FOR THE CRUST
  • 10 graham crackers
  • ⅓ c. granulated sugar
  • 6 tbsp. butter, melted
  • kosher salt
FOR THE FILLING
  • 2 8-oz blocks cream cheese, softened
  • 2 ripe avocados, peeled and pitted
  • 1 c. sugar
  • Pinch salt
  • ¾ c. heavy cream
  • ½ c. fresh lime juice
  • Zest of 1 lime
  • small lime wedges (for garnish)
Instructions
  1. Preheat oven to 350° and spray a pie dish with nonstick cooking spray.
  2. Make crust: In a food processor, pulse graham crackers until fine crumbs form. Transfer to a medium bowl then add melted butter, sugar, and a pinch of salt and mix until combined.
  3. Press graham cracker mixture firmly into prepared dish. Bake until the crust looks slightly toasted, 8 to 10 minutes. Let cool to room temperature.
  4. Make filling: In a large bowl using a hand mixer or a stand mixer with the paddle attachment, beat cream cheese, sugar and a pinch of salt until smooth and fluffy, 3 minutes. Add avocados and beat until smooth.
  5. Add heavy cream, lime juice, and most of lime zest (save some for garnish!). Beat until stiff peaks form, 2 to 3 minutes more.
  6. Transfer filling to cooled pie crust. Garnish with more lime zest and small lime wedges. Freeze until solid, 4 to 5 hours. Serve immediately.

Baileys Cheesecake
Whether or not you're celebrating St. Patty's Day, you deserve this fudgy cheesecake.

Ingredients
FOR THE CRUST
  • 4 tbsp. butter, melted, plus more for pan
  • 26 Oreo cookies
  • pinch of kosher salt
FOR THE CHEESECAKE
  • 4 8-oz. bars cream cheese, softened
  • 1½ c. sugar
  • ¼ c. cornstarch
  • 4 large eggs
  • ⅔ c. Baileys Irish Cream
  • 1 tsp. pure vanilla extract
FOR THE GANACHE
  • ⅔ c. heavy cream
  • 2 c. semisweet chocolate chips
Instructions
  1. Preheat oven to 325º and butter an 8" or 9" springform pan.
Make crust:
  1. In a food processor, blend Oreos with melted butter and salt. Pat into a springform pan and set aside while you make filling.
Make cheesecake:
  1. In a large bowl using a hand mixer, beat cream cheese and sugar until completely smooth and fluffy. Add cornstarch, then add eggs. Add Baileys and vanilla.
  2. Pour batter into crust and place on a large baking sheet.
  3. Bake until center of cheesecake is only slightly jiggly, 1 hour 20 minutes to 1 hour 30 minutes. Let cheesecake cool in oven, 1 hour, then refrigerate until completely cool, 4 hours or up to overnight. (If you'd like to use a water bath, tightly wrap outside of springform pan with two layers of aluminum foil. Transfer to a deep roasting pan and pour in enough boiling water to reach halfway up the cheesecake pan. Bake as directed.)
When ready to serve, make ganache:
  1. In a small saucepan over low heat, heat heavy cream. Place chocolate in a heat-proof bowl and pour over hot heavy cream. Let sit 3 minutes, then stir until creamy and no lumps remain. Refrigerate ganache until slightly thick, 15 minutes, and spread all over cheesecake. Let set 10 minutes, then serve.

Ingredients
  • 2 tbsp. olive oil
  • 2 lb. brussels sprouts, shaved
  • kosher salt
  • Freshly ground black pepper
  • 1 tbsp. red wine vinegar
  • ½ c. creamy caesar dressing
  • ¼ c. freshly grated Parmesan, plus more for garnish
  • 1 Garlic clove, minced
  • Juice of ½ lemon
  • ½ tsp. dried oregano
  • croutons, for serving
Instructions
  1. In a large skillet over medium high heat, heat olive oil. Add brussels sprouts and season with salt and pepper. Cook, stirring occasionally, until the the brussels sprouts are crisp tender and a vibrant green, about 5 minutes. Stir in red wine vinegar and remove from heat. Transfer to a large serving bowl.
  2. In a medium bowl, whisk together caesar dressing, Parmesan, garlic, lemon juice and oregano. Drizzle some of the dressing over brussels sprouts and toss to combine. Add more dressing if desired. Garnish with more grated Parmesan and croutons.
  3. Serve warm or at room temperature.

Asian Sloppy Joes
A twist to everyone's favorite weeknight dinner.

Ingredients
  • 2 tsp. sesame oil
  • ½ onion, chopped
  • 3 cloves garlic, minced
  • 1 lb. ground pork (or ground beef)
  • ½ c. ketchup
  • ½ c. hoisin sauce
  • 2 tbsp. low sodium soy sauce
  • 2 tbsp. brown sugar
  • 1 tbsp. apple cider vinegar
  • kosher salt
  • Freshly ground black pepper
  • 1 c. Shredded cabbage
  • 2 tbsp. mayonnaise
  • Juice of half lime
  • 2 tbsp. sesame seeds
  • 2 Thinly sliced green onions
  • 4 sesame buns
Instructions
  1. In a large skillet over medium heat, heat sesame oil until fragrant, about 30 seconds. (Sesame oil can burn quickly, so don't heat it for too long!) Add onions and cook until beginning to turn tender, about 4 minutes, then stir in garlic and cook until fragrant, about 30 seconds.
  2. Add ground pork, breaking up meat with a wooden spoon, and cook until no longer pink, about 6 minutes. Add ketchup, hoisin, soy sauce, brown sugar, and apple cider vinegar. Season with salt and pepper and bring mixture to a simmer. Cook until mixture thickens, about 5 minutes. Remove from heat.
  3. In a medium bowl, combine shredded cabbage, mayonnaise and lime juice. Season with salt and pepper.
  4. Make sandwiches: Top the bottom half of each bun with sloppy joe mixture then sprinkle with green onions and sesame seeds. Top with remaining bun halves.

Ingredients
  • Cooking spray, for pan
  • 2 (11-oz.) tubes refrigerated bread dough
  • 2 c. pizza sauce
  • 2 c. mozzarella
  • ½ c. mini pepperoni
  • 1 tsp. oregano
  • 1 tbsp. Chopped parsley, for garnish
Instructions
  1. Preheat oven to 350°. Grease a bundt pan with cooking spray. Place bread dough into the bottom of the pan and pinch all ends together to form a single ring. Bake until golden brown and cooked through, about 25-30 minutes. Let cool for 5 minutes, then invert onto cooling rack to cool completely.
  2. When bread is cool, slice in half lengthwise. Spread pizza sauce evenly on cut side of bread, then top with cheese and pepperoni. Season with oregano and bake until cheese is melty and pepperoni are crisp, 12 to 15 minutes. If desired, switch oven to broil and cook 2 minutes more.
  3. Garnish pizza bagel with parsley, slice and serve.
