Keto Peanut Butter Cookies

Keto Peanut Butter Cookies
A no bake cookie with no guilt.

Ingredients
  • 1½ c. smooth unsweetened peanut butter, melted (plus more for drizzling)
  • 1 c. coconut flour
  • ¼ c. coconut sugar
  • 1 tsp. pure vanilla extract
  • Pinch kosher salt
  • 2 c. dark chocolate chips, melted
  • 1 tbsp. coconut oil
Instructions
  1. In a medium bowl, combine peanut butter, coconut flour, coconut sugar, vanilla and salt. Stir until smooth.
  2. Line a baking sheet with parchment paper. Using a small cookie scoop, form mixture into rounds then press down lightly to flatten and place on baking sheet. Freeze until firm, about 1 hour.
  3. In a medium bowl, whisk together melted chocolate and coconut oil.
  4. Using a fork, dip peanut butter rounds in chocolate until fully coated then return to baking sheet. Drizzle with more peanut butter then freeze until chocolate sets, about 10 minutes.
  5. Serve cold. Store any leftovers in the freezer.

Thin Mint Cheesecake
Not that you need another excuse to buy more Thin Mints.

Ingredients
FOR THE CRUST
  • 24 whole Thin Mint Cookies
  • 6 tbsp. butter, melted
  • Pinch of kosher salt
FOR THE CHEESECAKE
  • 4 (8-oz.) blocks of cream cheese, softened
  • 1 c. granulated sugar
  • 3 large eggs
  • 1 tsp. mint extract
  • ¼ c. sour cream
  • 2 tbsp. all-purpose flour
  • ¼ tsp. kosher salt
  • Green food coloring
  • 15 Thin Mint cookies, crushed
FOR THE GANACHE
  • ⅔ c. heavy cream
  • 2 c. semisweet chocolate chips
FOR THE TOPPING
  • 1 c. Cool Whip
  • 5 Thin Mint cookies, halved
  • 5 Thin Mint cookies, crushed
Instructions
  1. Preheat oven to 325° and grease an 8" or 9" springform pan with cooking spray. Make crust: In a large Ziploc bag or a food processor fitted with a metal blade, crush Thin Mints until fine crumbs form. Transfer to a bowl and pour in melted butter. Add salt and stir until crumbs are completely coated and moist.
  2. Make cheesecake: In a large bowl using a hand mixer (or in the bowl of a stand mixer), beat cream cheese and sugar together until no lumps remain. Add eggs, one at a time, then stir in mint extract and sour cream. Add flour, salt, and green food coloring and beat until just combined. Fold crushed Thin Mints into cheesecake mixture. Pour mixture over crust and smooth into an even layer.
  3. Wrap bottom of pan in aluminum foil and place in a large roasting pan. Pour in enough boiling water to come up halfway in the baking pan. Bake until center of cheesecake only slightly jiggles, about 1 hour 30 minutes. Turn off oven, prop open door, and let cheesecake cool in oven, 1 hour.
  4. Remove foil and refrigerate cheesecake for at least 5 hours and up to overnight.
  5. When ready to serve, make ganache: In a small saucepan over low heat, heat heavy cream. Place chocolate in a heat-proof bowl and pour over hot heavy cream. Let sit 3 minutes, then stir until creamy and no lumps remain.
  6. Refrigerate ganache until slightly thick, 10 minutes, and spread on the top of cheesecake.
  7. Sprinkle crushed thin mints all over top of the cheesecake. Pipe 10 dollops of Cool Whip around the edge and top each dollop with a halved Thin Mint and serve.

Prosecco Grapesicles

Ingredients
  • 1 lb. Red and green grapes
  • 15 wooden skewers
  • ½ bottle prosecco or other bubbly
  • 1 c. vodka
Instructions
  1. Skewer red and green grapes on skewers and place in a shallow baking dish.
  2. Pour over prosecco and vodka and transfer to the refrigerator. Let soak 1 hour.
  3. Drain booze (keep for cocktails if desired) and freeze skewers until frozen, 2 hours more.

Cool Whip Easter Eggs

Ingredients
  • 12 hard boiled eggs
  • White vinegar
  • 3 c. whipped topping
  • Food coloring
Instructions
  1. Place eggs in a large bowl and cover with white vinegar. Soak for 2 minutes, drain and dry the eggs thoroughly.
  2. On a large plate or small baking sheet, spread your whipped topping in an even layer about ½” deep. Drop food color in single drops about an inch apart, in as many colors as you choose. Use a toothpick to swirl the colors to a marbled effect.
  3. Roll eggs in whipped cream and let sit 10 to 15 minutes. Remove from whipped cream (you may want to use latex gloves to avoid staining hands) and rinse until no whipped topping remains. Let dry completely on a paper towel and display.

Ingredients
  • Cooking spray, for pan
  • FOR THE FILLING
  • 1 c. brown sugar
  • 1 tbsp. cocoa powder
  • 1 tsp. instant espresso powder
  • FOR THE CAKE
  • ¾ c. (1½ sticks) butter, softened to room temperature
  • 1½ c. sugar
  • ⅓ c. brown sugar
  • 2 tsp. baking powder
  • 3 large eggs
  • ⅔ c. sour cream
  • 1 c. whole milk
  • ¼ c. Baileys
  • 3 c. all-purpose flour
Instructions
  1. Preheat oven to 350° and grease a 9”x13” pan with cooking spray. Make filling: In a medium bowl, combine brown sugar, cocoa powder and instant espresso powder. Whisk to combine.
  2. Make cake batter: In a large bowl, combine butter, sugars and baking powder. Using a hand mixer, beat until smooth. Next, beat in eggs one at a time.
  3. Add sour cream, whole milk, and Baileys and mix again, until just combined. Gradually beat in flour.
  4. Pour half the batter into prepared baking dish, sprinkle with filling in an even layer, and top with the rest of the batter.
  5. Make topping: In a medium bowl, combine sugar, flour, cocoa powder, espresso powder and a pinch of salt. Whisk to combine. Add melted butter and stir until well combined.
  6. Scatter topping over the top of the coffee cake batter in an even layer. Bake for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.
  7. Drizzle with melted chocolate and let cool for 10 to 15 minutes. Slice and serve.

  • 1 8-oz. block cream cheese, softened
  • 1 14-oz. can sweetened condensed milk
  • 5 large eggs, yolks and whites separated
  • Powdered sugar, for serving (optional)
Instructions
  1. Preheat oven to 325°.
  2. In a large bowl using a hand mixer or in the bowl of a stand mixer using the whisk attachment, beat cream cheese until smooth, 1 minute. Add sweetened condensed milk and mix 1 minute. Add egg yolks and mix until fully combined, 2 minutes.
  3. In another large mixing bowl, beat egg whites until stiff peaks form, 5 to 6 minutes.
  4. Gently fold egg whites into the sweetened condensed milk mixture until fully combined.
  5. Tightly wrap an 8" or 9” springform pan with aluminum foil and spray insides with cooking spray. Transfer batter to pan, then place the pan in a large baking dish. Pour enough boiling water into the baking dish to reach ⅓ of the way up the outside of the cheesecake pan.
  6. Bake 50 minutes, then turn off heat and let cool in oven for 1 hour. Let cool completely until ready to serve.
  7. Dust with powdered sugar before serving, if desired.

Ingredients
  • 6 boneless skinless chicken breasts
  • Olive oil
  • Kosher salt
  • Freshly ground black pepper
  • 1 tsp. Italian seasoning
  • 1 lb. fresh mozzarella, sliced
  • 1½ c. baby spinach
  • 2 tomatoes, sliced into half moons
  • Small bunch fresh basil
  • Balsamic glaze, for serving
Instructions
  1. Preheat oven to 400°. Place chicken on a cutting board and make 5 to 6 slits in each breast, being careful not to cut through completely. Transfer to a small baking sheet.
  2. Drizzle with olive oil then season chicken all over with salt, pepper and Italian seasoning. Stuff each breast with mozzarella, spinach and tomatoes.
  3. Bake until chicken is cooked through and no longer pink, about 25 minutes. Garnish with fresh basil then drizzle balsamic glaze on top.

  • 1½ c. all-purpose flour
  • 1 c. sugar
  • 1 tsp. cinnamon
  • 1 tsp. kosher salt

  • ¾ c. canola oil
  • 2 large Eggs, beaten
  • 1½ c. grated carrots (from 1 large)
  • ½ c. raisins
  • ½ c. chopped pecans or walnuts
FOR THE CHEESECAKE
  • 2 8-oz. packages cream cheese, at room temperature
  • ¾ c. sugar
  • ¼ tsp. kosher salt
  • 1½ tbsp. all-purpose flour
  • ½ tbsp. pure vanilla extract
  • 2 large eggs
  • ½ c. sour cream
FOR THE FROSTING
  • 1 c. powdered sugar
  • 4 tbsp. butter, softened
  • 4 oz. softened cream cheese
  • ½ tsp. pure vanilla extract
  • Chopped pecans or walnuts, for garnish
Instructions
  1. Preheat oven to 350° and grease a 9" springform pan.
  2. Make carrot cake mixture: In a large bowl, combine flour, sugar, cinnamon, salt and baking soda. Stir in oil, then add eggs and mix until combined. Add carrots, raisins and nuts and mix until combined.
  3. Make cheesecake mixture: In a large bowl using a hand mixer or in the bowl of a stand mixer using the whisk attachment, beat cream cheese and sugar until smooth. Stir in salt and flour.
  4. Mix in vanilla and eggs, beating 1 minute between each addition, then add sour cream.
  5. Assemble cheesecake: Pour ⅔ carrot cake mixture into prepared pan and smooth top with spatula. Top with spoonfuls of ⅓ cheesecake mixture, then pour over remaining carrot cake mixture. Top with remaining cheesecake mixture and smooth top with a spatula.
  6. Bake until center is only slightly jiggly, 1 hour.
  7. Let cool completely, 1 hour, then transfer to the fridge to cool, 4 hours, or up to overnight.
  8. When ready to serve, make frosting: Beat sugar, butter, cream cheese and vanilla until smooth.
  9. Frost cheesecake, then garnish with pecans or walnuts and let chill, 10 minutes, before serving.
