Pumpkin Cinnamon Rolls

Ingredients
Dough:
  • 1½ cups whole milk
  • ½ cup vegetable oil
  • ½ cup granulated sugar
  • 1 package (2¼ teaspoons) active dry yeast
  • 1 cup pumpkin puree
  • 4½ cups all-purpose flour, plus more for flouring, sprinkling and rolling
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon (heaping) baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • Melted butter, for buttering pans
Filling:
  • 1 stick (1/2 cup) butter, melted
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • ½ teaspoon cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • 1 cup finely chopped pecans
Frosting:
  • 8 ounces cream cheese, softened
  • 1¾ cups to 2 cups powdered sugar
  • ¼ cup whole milk, plus more if needed
  • 2 tablespoons butter, melted
  • Dash of salt
Instructions
  1. For the dough: In a large saucepan, combine the milk, vegetable oil and granulated sugar. Heat until hot but not boiling, then remove the pan from the stove and allow it to cool until the mixture is warm to the touch but not too hot. Sprinkle the yeast over the surface of the liquid and allow it to sit for 5 minutes. Stir in the pumpkin puree until combined.
  2. Combine 4 cups of the flour with the cinnamon, ginger and nutmeg. Sprinkle it into the saucepan and stir until it just comes together. Cover the saucepan with a dish towel and set in a warm, draft-free place for 1 hour.
  3. After 1 hour, the mixture should be very puffy and at least doubled in size. Stir in the baking powder, baking soda, salt and remaining ½ cup flour until totally combined.
  4. Preheat the oven to 375 degrees F. Drizzle butter into 3 pie pans (or a larger baking dish) and smear it all over the bottom of the pans.
  5. Turn out the dough onto a floured surface and press it into a rectangular shape. If it is overly sticky, sprinkle generously with flour until easier to handle. Flour a rolling pin and roll the dough into a large rectangle about 18 inches by 24 inches.
  6. For the filling: Drizzle the melted butter over the dough and smear it all over the surface with your fingers. Mix together the brown sugar, granulated sugar, cinnamon, ginger and nutmeg in a medium bowl. Sprinkle this mixture all over the surface of the dough, covering all the melted butter. Sprinkle with ½ cup to ¾ cup chopped pecans.
  7. Starting at the top, roll the dough toward you into a large log, moving back and forth down the line of dough (in a "typewriter" motion) and always rolling toward you. Roll it tightly as you go so the rolls with be nice and neat. When it's all rolled, pinch the seam closed and turn the roll over so that the seam is facing down. Slice into ½- to ¾-inch slices and place the slices in the buttered pan(s). Allow to rise for 20 minutes.
  8. Bake until the rolls are nice and golden brown around the edges, 15 to 18 minutes.
  9. For the frosting: While the rolls are baking, make the frosting by combining the cream cheese, powdered sugar, milk, butter and salt in the bowl of an electric mixer. Beat until fluffy, adding more milk if you'd like a thinner frosting.
  10. Frost the rolls the second they come out of the oven. Sprinkle the extra pecans over the frosting, then allow them to sit for 15 minutes before serving.

ONE SKILLET GROUND BEEF STROGANOFF

Ingredients
  • 1 tbsp olive oil
  • 8 oz. white button mushrooms, sliced
  • 2 tbsp butter
  • ½ onion, diced
  • 1 lb. ground beef
  • 2 tsp garlic powder
  • 3 tbsp flour
  • 1 tsp paprika
  • ¼ cup dry sherry (or beef broth)
  • 4 cups low sodium beef broth
  • 1½ tsp salt
  • ½ tsp black pepper
  • 4 cups dry egg noodles
  • ½ cup sour cream
  • 1 to 2 tbsp freshly chopped parsley
Instructions
  1. Add the olive oil to a large skillet (that has a lid) and sauté the mushrooms over medium heat, until tender, about 5 to 6 minutes. Remove from skillet to a plate.
  2. Return the skillet to the stove top and melt the butter. Add the ground beef, onion and garlic powder and cook until ground beef is broken up and cooked through. Drain any fat and return skillet to stove top.
  3. Stir in the flour and paprika until thick, about 1 to 2 minutes. Splash the dry sherry into the pan and stir, scraping any browned bits from the bottom of the pan, cooking until dry sherry is evaporated.
  4. Gradually stir in the beef broth, salt and pepper. Bring mixture to a boil and add the egg noodles. Reduce heat to a simmer and cover. Stir often until noodles are tender, about 8 to 10 minutes. Return the mushrooms to the skillet and stir to combine.
  5. Stir in the sour cream and freshly chopped parsley. Serve warm and enjoy!

These refreshing treats made with real watermelon and kiwis look elaborate but are surprisingly simple to make.

Ingredients
Green layer:
  • 1 kiwi, cubed
  • 1½ tablespoons granulated sugar
  • ¼ cup water
  • 1½ teaspoons gelatin, soaked 1½ tablespoons water
White layer:
  • ¼ cup Calpis soda
  • ½ teaspoon gelatin, soaked in 1 tablespoon water
  • Chocolate pen
  • Red layer:
  • ½ miniature watermelon
  • 2½ teaspoons gelatin, soaked in 2½ tablespoons water
Instructions
  1. Using a melon baller, scoop about 8 balls out of the watermelon and set aside.
  2. Remove the remaining watermelon flesh, add to a small bowl and set aside.
  3. In a sauce pot over medium heat, add kiwi, water and sugar and bring to a simmer. Reduce heat to low and cook for 2 minutes then turn off heat. Stir in dissolved gelatin and mix well.
  4. Pour a layer of kiwi jelly into each glass, and place glasses in refrigerator until layer is set.
  5. In a small bowl, combine Calpis and gelatin and stir until combined. Pour a layer of this mixture on top of the green layer.
  6. Using a chocolate pen or melted chocolate, draw seeds on the insides of the glasses. Place glasses in refrigerator until chocolate and white layer are set.
  7. In a blender, add the watermelon and puree. Strain seeds out if necessary, and place watermelon into a bowl along with gelatin. Stir until combined. Pour a layer of watermelon mixture on top of the white layer. Place glasses back in the fridge until set.
  8. Add watermelon balls on top of each glass, and enjoy!

Zucchini Ravioli

  • 2 medium zucchini
  • olive oil, to taste
  • 2 cloves garlic, minced
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 2 tablespoons fresh basil, finely sliced
  • salt, to taste
  • pepper, to taste
  • 1 cup marinara sauce
  • ½ cup shredded mozzarella cheese
Instructions
  1. Preheat oven to 425°F (220°C).
  2. Cut off the end of each zucchini then using a vegetable peeler, peel each zucchini into wide strips.
  3. Transfer the zucchini strips to a plate then layer two strips vertically and two strips horizontally to make a cross. Repeat process with remaining strips.
  4. Heat a pan over medium-high heat.
  5. Add olive oil then garlic and sauté for 30 seconds to 1 minute.
  6. Add spinach and sauté for 1-2 minutes, until wilted down.
  7. Remove from heat and allow to cool for 10 minutes.
  8. In a large bowl, add the spinach and garlic.
  9. Add the ricotta, basil, salt, and pepper. Mix until well combined.
  10. Using a spoon or cookie scoop, scoop approximately 1 tablespoon of the mixture and place in the middle of each zucchini noodle cross.
  11. Fold each side to seal the ricotta mixture then flip over the ravioli so the seam side is on the bottom.
  12. In a baking dish pour the marinara sauce then smooth with a spatula.
  13. Evenly place the zucchini raviolis then top with mozzarella cheese.
  14. Bake for 15-20 minutes.
  15. Serve with fresh basil.

Ingredients
DOUGH
  • ½ cup unsalted butter, melted
  • 2 cups whole milk, warm to the touch
  • ½ cup granulated sugar
  • 1 pack active dry yeast
  • 5 cups all-purpose flour, divided
  • 1 teaspoon baking powder
  • 2 teaspoons salt
FILLING
  • ¾ cup butter, softened
  • ¾ cup light brown sugar
  • 2 tablespoons ground cinnamon
FROSTING
  • 4 oz cream cheese, softened
  • 2 tablespoons butter, melted
  • 2 tablespoons whole milk
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
Instructions
  1. Generously butter a 9-inch (23cm) cast iron or cake pan.
  2. In a large bowl, whisk together warm milk, melted butter, and granulated sugar. The mixture should be just warm, registering between 100-110˚F (40˚C). If hotter, allow to cool slightly.
  3. Sprinkle the yeast evenly over the warm mixture and let sit for 1 minute.
  4. Add 4 cups (500 grams) of all-purpose flour to the milk mixture and mix with a wooden spoon until just combined.
  5. Cover the bowl with a towel or plastic wrap and set in a warm place to rise for 1 hour.
  6. Preheat oven to 325˚F (160˚C).
  7. After 1 hour, the dough should have nearly doubled in size. Remove the towel and add an additional ¾ cup (95 grams) of flour, the baking powder, and salt. Stir well, then turn out onto a well-floured surface.
  8. Knead the dough lightly, adding additional flour as necessary, until the dough just loses its stickiness and does not stick to the surface.
  9. Roll the dough out into a large rectangle, about ½-inch (1.5 cm) thick. Fix corners to make sure they are sharp and even.
  10. In a small bowl combine the filling ingredients and stir to combine.
  11. Spread the filling mixture evenly over the rolled out dough, spreading right to the edges.
  12. Using a pizza cutter, make 3 horizontal cuts to divide the dough into four long, evenly sized strips.
  13. Starting from the bottom, roll the first strip up right to left. Take the first roll and place it back on top of the next strip, starting again on the right side and rolling up right to left, building on the first. Continue with the remaining two strips until you have a giant cinnamon roll.
  14. Place the giant cinnamon roll in the prepared cast iron or cake pan and cover with plastic wrap. Place in a warm spot and leave to rise for 30 minutes. The cinnamon roll should expand to the edges of the pan during this time.
  15. Bake for 45 minutes. Cover the cinnamon roll with foil to prevent the outside from burning, and bake for an additional 35 minutes.
  16. While the cinnamon roll is baking, prepare the frosting.
  17. In a medium-size mixing bowl, whisk together cream cheese, butter, vanilla, whole milk, and powdered sugar, until smooth.
  18. Remove the cinnamon roll from the oven and let cool in the pan for at least 20 minutes. Once cool, remove from pan and drizzle frosting over the roll before serving.

  • 1 box chocolate cake mix, plus ingredients called for on box
  • 12 frozen, plain 1" cheesecake squares
  • 1 c. unsalted butter, softened
  • 2½ c. powdered sugar
  • ¾ c. cocoa powder
  • 2 tsp. vanilla extract
  • Pinch kosher salt
  • ¼ c. heavy cream, plus more if needed
  • Rainbow sprinkles, for decoration
Instructions
  1. Preheat oven to 350° and line a 12-cup muffin tin with cupcake liners.
  2. In a large bowl, prepare cupcake batter according to package directions. Fill half the muffin tin with batter, then place a piece of cheesecake in the center. Cover with more batter and bake for 25 minutes. Let cool completely.
  3. Meanwhile, make frosting: In a large bowl using a hand mixer, beat butter, powdered sugar, cocoa powder, vanilla, and salt until light and fluffy. Beat in heavy cream (adding more by the tablespoon until consistency is creamy but can hold peaks).
  4. Pipe cupcakes with frosting and decorate with rainbow sprinkles.

Ingredients
  • 2 tsp oil
  • 2 small white onions, diced
  • 1 lb ground beef
  • 1½ tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • ½ cup passata
  • ¼ cup ketchup
  • 3 cups bechamel
  • 450g yellow cheddar cheese, grated
  • 8 large fresh lasagna sheets
  • Chopped gherkins
  • Sesame seeds
Instructions
  1. Preheat oven to 180C (350F).
  2. In a large saucepan over medium heat, add oil to pan and onions. Cook until translucent, about 5 minutes.
  3. Add ground beef, breaking apart with a spoon. Cook until browned and just dry. Add passata, ketchup, salt, pepper, and garlic powder. Stir to combine and bring to a boil. Turn down to a simmer and cook for 5 minutes to reduce. Take off heat and cool completely.
  4. Add béchamel to a pot over medium heat. Add 350g cheddar cheese and stir until completely melted, take off the heat and cool.
  5. In a 11×13-inch deep baking dish, add a layer of beef mixture. Top with two lasagna sheets followed by a layer of cheesy béchamel, two more lasagna sheets, beef mixture, two more lasagna sheets, cheesy béchamel and two final lasagna sheets.
  6. Top with remaining grated cheese evenly.
  7. Cover with foil and bake for 25 minutes. Remove foil and bake for another 10 minutes. Grill cheese on top if necessary.
  8. Sprinkle with chopped gherkins and sesame seeds.
  9. Slice and enjoy!

This steak nacho party ring is going to impress all your friends at the next get-together ?!

Ingredients
  • 6 oz steak, 2
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • ½ teaspoon cayenne
  • 3 cups shredded cheddar cheese
  • 3 jalapeño, sliced
  • 1 red onion, chopped
  • 4 roma tomato, diced
  • 1 can black bean, drained and rinsed
  • 18 oz tortilla chip, 1 bag
  • sour cream, to serve
  • guacamole, to serve
  • pico de gallo, to serve
Instructions
  1. Preheat the oven to 450˚F (230˚C).
  2. Season the steaks with the salt, pepper, paprika, garlic powder, cumin, and cayenne, rubbing fully over the meat.
  3. Add oil to a skillet over medium-high heat and add the steaks. Cook the steaks for 3 minutes per side.
  4. Let the steaks rest for 10 minutes, and then cut into bite-sized pieces. Set aside.
  5. Spray a bundt pan with cooking spray and create three layers of nachos consisting of shredded cheddar cheese, sliced jalapeños, diced red onion, diced tomatoes, black beans, and the steak. Top with more cheese.
  6. Place into the oven to melt and heat up for about 10 minutes.
  7. Take a serving tray and place on top of the warm bundt pan and carefully invert the nacho ring onto the tray.
  8. Top with sour cream, guacamole, pico de gallo, or whatever else you would like.
  9. Enjoy!
