Imagine all the flavours of a croque monsieur with none of the tedium of making and eating an actual sandwich. With our simple recipe you can get all that bechamel based deliciousness in a small dough ball. Simply:

Ingredients
  • 3 cups bechamel sauce
  • 1 cup grated emmental
  • 1 cup grated gruyere
  • 1 cup chopped ham
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp mustard (optional)
  • More emmental, for grating
Instructions
  1. Mix the cheeses, ham, seasoning and mustard into the bechamel.
  2. Spread this into an ice cube tray and freeze until solid, roughly 3 hours.
  3. Pop them out of their tray and wrap each bechamel ice cube in a walnut sized ball of pizza dough.
  4. Lay them all quite close together on a baking sheet, brush with egg wash and sprinkle with grated emmental.
  5. Bake for 20 mins until they've grown in size and gone a lovely golden colour.

Skillet Bread with Creamy Spinach Artichoke Dip
Indulge in every bite of this rich, chewy, ooey-gooey skillet bread with creamy spinach artichoke dip center.

Ingredients
  • 14 frozen dinner rolls, thawed
  • 2 tablespoons extra-virgin olive oil
  • 2 cups fresh baby spinach
  • 1 (14-ounce) can artichoke hearts, drained and chopped
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 8 ounces cream cheese, room temperature
  • ½ teaspoon garlic powder
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese, divided
  • Salt and pepper, to taste
  • ½ cup unsalted butter
  • 2 teaspoons red chili flakes
  • 1 tablespoon fresh parsley, chopped
Instructions
  1. Preheat oven to 350 degrees
  2. Spray a large cast-iron skillet with cooking spray, and place a small bowl top side down in the center of the skillet. Spray bowl with cooking spray, and arrange the bread rolls around the outside of the skillet. Cover with plastic wrap and let proof until doubled in size for about an hour.
  3. In a medium nonstick skillet, heat the olive oil. Add the spinach and artichokes and cook until the spinach is slightly wilted. Add in the sour cream, mayonnaise, cream cheese, garlic powder, mozzarella cheese and half the Parmesan, stirring until the cheese melts, about 5 minutes. Season with salt and pepper.
  4. In a small saucepan, melt the butter and add chili flakes and chopped parsley. Stir to combine.
  5. Remove the bowl from the center of the cast-iron skillet and carefully spoon the dip into the center well. Brush the tops of the rolls with the melted butter mixture and sprinkle with the remaining Parmesan.
  6. Bake for 20 to 25 minutes or until the rolls are golden brown and the dip is nice and bubbly. Let cool slightly, serve in the skillet and enjoy!

Chocolate Fondue Banana Bread Boat
Just when you thought we couldn't do anything else with banana bread... ?

Ingredients
BANANA BREAD
  • 4 bananas, as ripe as possible
  • 4 tablespoons vegetable oil
  • 1 egg
  • ½ cup sugar
  • 1 teaspoon vanilla extract
  • 1 ½ cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon
CHOCOLATE FONDUE
  • 12 oz semi sweet chocolate, chopped
  • 6 tablespoons heavy cream
  • 6 tablespoons milk
  • 1 teaspoon vanilla extract
  • 2 bananas, sliced, to serve
  • 12 strawberries, to serve
Instructions
  1. Preheat oven to 350˚F (180˚C).
  2. In a large bowl, mash the bananas with a fork.
  3. Add in the oil, egg, sugar, and vanilla. Stir until combined.
  4. Add in the flour, baking powder, baking soda, salt, and cinnamon. Stir until just combined.
  5. Pour the banana bread batter into a greased loaf pan.
  6. Bake for 45-55 minutes, or until a toothpick comes out clean.
  7. In a small saucepan, combine the cream milk and chocolate, and melt over low heat.
  8. Add the vanilla and stir to combine. Remove from heat, and cover with a lid.
  9. Let the banana bread cool in the pan for 30 minutes, then remove from the loaf pan and place on a serving dish.
  10. Using a knife cut a rectangle out of the top center of the loaf, leaving a 2- to 3-inch (5 cm to 7cm) perimeter of banana bread, making sure to not slice through the bread. Cut the rectangle into 2-inch(5-cm) slices. Gently pull out each slice one at a time. Press the crumbs into the base of the cut out bread.
  11. Reheat the chocolate if needed then pour the chocolate into the banana bread boat.
  12. Place sliced bananas, strawberries, and the inside of the banana bread around the fondue boat.
  13. Enjoy!

Instructions
  1. Line a mini muffin tin with liners. In each cup, add 2 teaspoons melted chocolate. Sprinkle pomegranate seeds on top and drizzle with more melted chocolate.
  2. Refrigerate until chocolate is firm, 20 minutes.
  3. Unwrap and serve.

Rolo Pretzel Bites

Rolo Pretzel Bites
Pretzels and Rolos are a salty/sweet match made in heaven.

Ingredients
  • 30 pretzels
  • 15 Rolos
  • ½ c. peanut butter, divided
  • 1 tbsp. powdered sugar
  • 2 c. chocolate chips, melted
  • 1 tbsp. coconut oil
Instructions
  1. Preheat broiler to high.
  2. Place half of the pretzels on a baking sheet and top with Rolos. Broil until Rolos are slightly melty, about 2 minutes.
  3. While the pretzels are baking, mix ¼ cup peanut butter with the powdered sugar in a medium bowl. Spread the peanut butter mixture on one side of the other half of the pretzels.
  4. When the pretzels and Rolos come out of the oven, place the peanut butter pretzels on top of them, peanut butter side down. Place in the freezer to harden for 10 minutes.
  5. In a medium bowl, mix the melted chocolate with the coconut oil. Dip the chilled pretzels into the chocolate mixture. Return to the freezer for 5 minutes to set.
  6. Microwave the remaining peanut butter on high for 5 seconds. Place in a Ziploc bag and cut off a small corner. Drizzle the hardened pretzel bites with peanut butter and serve.

  • 12 pickle spears
  • 12 strips of bacon
  • ¼ c. ranch dressing
Instructions
  1. Preheat oven to 425°.
  2. Wrap each pickle spear in bacon. Place the bacon-wrapped pickles on a baking sheet, seam side-down.
  3. Bake until the bacon is cooked through and crispy, 12 to 15 minutes, turning halfway if needed.
  4. Serve warm or at room temperature with ranch, if desired.

Homemade Chocolate Croissants (Pain Au Chocolate)

Ingredients
  • 4 cups flour
  • ½ cup water
  • ½ cup milk
  • ¼ cup sugar
  • 2 teaspoons salt
  • 1 packet instant yeast
  • 3 tablespoons unsalted butter, softened
  • 1 ¼ cups cold unsalted butter, cut into ½-inch (1 cm) thick slices
  • 1 egg, beaten
  • 2 bars chocolate
Instructions
  1. In a large bowl, mix the flour, water, milk, sugar, salt, yeast, and butter.
  2. Once the dough starts to clump, turn it out onto a clean counter.
  3. Lightly knead the dough and form it into a ball, making sure not to over-knead it.
  4. Cover the dough with plastic wrap and refrigerate for one hour.
  5. Slice the cold butter in thirds and place it onto a sheet of parchment paper..
  6. Place another piece of parchment on top of the butter, and beat it with a rolling pin.
  7. Keeping the parchment paper on the butter, use a rolling pin to roll the butter into a 7-inch (18 cm) square, ½-inch (1 cm) thick. If necessary, use a knife to trim the edges and place the trimmings back on top of the butter and continue to roll into a square.
  8. Transfer the butter layer to the refrigerator.
  9. To roll out the dough, lightly flour the counter. Place the dough on the counter, and push the rolling pin once vertically into the dough and once horizontally to form four quadrants.
  10. Roll out each corner and form a 10-inch (25 cm) square.
  11. Place the butter layer on top of the dough and fold the sides of the dough over the butter, enclosing it completely.
  12. Roll the dough with a rolling pin to seal the seams, making sure to lengthen the dough, rather than widening it.
  13. Transfer the dough to a baking sheet and cover with plastic wrap. Refrigerate for 1 hour.
  14. Roll out the dough on a floured surface until it’s 8x24 inches (20x61 cm).
  15. Fold the top half down to the middle, and brush off any excess flour.
  16. Fold the bottom half over the top and turn the dough clockwise to the left. This completes the first turn.
  17. Cover and refrigerate for one hour.
  18. Roll out the dough again two more times, completing three turns in total and refrigerating for 1 hour in between each turn. If at anytime the dough or butter begins to soften, stop and transfer back to the fridge.
  19. After the final turn, cover the dough with plastic wrap and refrigerate overnight.
  20. To form the croissants, cut the dough in half. Place one half in the refrigerator.
  21. Flour the surface and roll out the dough into a long narrow strip, about 8x40 inches (20x101 cm).
  22. With a knife, trim the edges of the dough.
  23. Cut the dough into 4 rectangles.
  24. Place the chocolate on the edge of the dough and roll tightly enclosing it in the dough.
  25. Place the croissants on a baking sheet, seam side down.
  26. Repeat with the other half of the dough.
  27. Brush the croissants with the beaten egg. Save the rest of the egg wash in the fridge for later.
  28. Place the croissants in a warm place to rise for 1-2 hours.
  29. Preheat oven to 400°F (200°C).
  30. Once the croissants have proofed, brush them with one more layer of egg wash.
  31. Bake for 15 minutes or until golden brown and cooked through. Serve warm.
  32. Enjoy!

A big bowl of chili is a super comfort food for us. This chili recipe is one pot, easy and delicious. We topped it with cheese stuffed doughballs to dip right into the chili. Fill the dough balls with any cheese you like or just keep them coated in garlic butter. Either way, this is a crowd pleaser!

Ingredients
  • 1 lb beef mince
  • 1 white onion, diced
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • 1 tsp cumin powder
  • 1 tbsp oil
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp tomato paste
  • 1 cup beef stock
  • 1 can chopped tomatoes
  • 1 tbsp brown sugar
  • 1 can drained kidney beans
  • 500g pizza dough
  • Cubed mozzarella
  • ½ cup Garlic butter
Instructions
  1. In a large skillet heat oil over medium heat. Add onions and garlic and cook until softened and aromatic. Add beef mince breaking apart with a spoon. Cook until browned.
  2. Add all spices and tomato paste and stir to coat well. Stir in beef stock, chopped tomatoes and brown sugar. Add kidney beans and bring to a boil. Reduce to a simmer and cover with a lid. Cook for 40 minutes until thickened.
  3. Pre-heat oven to 180ºC (350ºF).
  4. Separate dough into 45g balls. Flatten out and place one cube of mozzarella cheese inside. Bring up sides over mozzarella and pinch to seal.
  5. Arrange cheese filled dough balls over the chilli mixture. Brush generously with garlic butter. Bake in the oven for 30 minutes until buns are golden brown.

  • 12 slices bacon, cut into 1" squares
  • ¼ c. lime juice
  • 2 tbsp. sriracha
  • 1 tbsp. brown sugar
  • Ranch, for dipping
Instructions
  1. Preheat oven to 375° and line a medium cooking sheet with parchment paper. Lay bacon pieces in a single layer on the baking sheet.
  2. In a small bowl, combine Sriracha, lime juice and sugar in a bowl and whisk to combine. Brush onto bacon pieces. Place in the oven and bake until bacon is crisp, 10 to 12 minutes.
  3. Let cool slightly, then serve with ranch dressing on the side, for dipping.

Ingredients
  • 1 large cucumber
  • ⅓ c. hummus
  • ¼ c. crumbled feta
  • ¼ c. chopped kalamata olives
  • ¼ c. chopped cherry tomatoes
  • Small sprigs fresh dill
  • Lemon wedges (optional)
Instructions
  1. Using a vegetable peeler, slice cucumber into thin flat strips. Lay slices down on paper towels to drain excess moisture.
  2. On a cutting board or clean work surface, lay two slices on top of each other. Spread a thin layer of hummus on top of each slice, then sprinkle feta, kalamata olives, and cherry tomatoes on top.
  3. Tightly roll each cucumber slice. Stick a small sprig of dill into each sushi piece. Squeeze fresh lemon juice on top, if using.
