Ingredients
  • 3 medium zucchini, halved lengthwise
  • 8 oz. cream cheese, softened
  • ½ c. finely chopped artichoke hearts
  • ½ c. frozen spinach, defrosted, drained, and chopped
  • 1 c. shredded mozzarella
  • ½ c. freshly grated Parmesan
  • 1 Garlic clove, minced
  • ½ tsp. red pepper flakes, plus more for garnish
  • kosher salt
  • Freshly ground black pepper
  • 12 slices bacon
Instructions
  1. Preheat oven to 350°. Line a baking sheet with parchment paper and fit with a cooling rack. Using a spoon, remove the seedy centers of each zucchini.
  2. In a large bowl, combine cream cheese, artichoke hearts, spinach, mozzarella, parmesan, garlic and red pepper flakes. Season with salt and pepper and stir to combine.
  3. Scoop cream cheese mixture into zucchini boats, then wrap each boat with 2 slices bacon. Place on prepared cooling rack and place in oven to bake, 35 to 40 minutes, or until zucchini is tender and bacon is crisp. Let cool slightly and serve.

  • 100 grams spaghetti, cooked
  • 2 tablespoons olive oil
  • 1 clove garlic, sliced
  • Chili
  • 150 grams tomato sauce
  • 1 teaspoon sugar
  • Salt
  • Pepper
  • Bouillon granules
  • Mozzarella cheese
  • Camembert cheese
  • Blue cheese
  • Parmigiano reggiano
  • Shredded cheese
Instructions
  1. Heat olive oil, garlic and chili in a frying pan over low heat until fragrant. Add in tomato sauce, sugar, salt, black pepper and bouillon granules and mix well.
  2. Add in cooked spaghetti and cheese.
  3. Bake for 10 minutes at 220 degrees C.
  4. Sprinkle more black pepper on top before serving.

Cheese Stuffed BBQ Fried Chicken
CHEESE STUFFED BBQ FRIED CHICKEN

Ingredients
  • 4 small chicken breasts
  • 1 hpd tbsp each of: onion powder, garlic powder, chilli flakes, salt, black pepper, paprika
  • 2 cups flour
  • 2 cups buttermilk
  • 1 tbsp salt
  • sliced cheddar
  • oil, for frying
  • buns and slaw, for serving
  • For the BBQ sauce:
  • 1 cup tomato ketchup
  • 2 tbsp butter
  • ¼ cup tomato puree
  • ¼ cup cider vinegar
  • 3 tbsp worcestershire sauce
  • ¼ cup brown sugar
  • 2 tbsp spice mix (see above)
Instructions
  1. Make a large incision in the thicker end of each chicken breast. Insert a piece of sliced cheddar. Season the buttermilk with 1 tbsp salt and dunk the stuffed chicken breasts in there. Marinade for 1+ hours.
  2. Mix together your spice mix. Add all but 2 tbsp into the flour. Drain each chicken breast of a little buttermilk and dunk into the seasoned flour. Cover both sides of the chicken. Fry in hot oil until golden and crisp and the cheese is started to melt out of the coating. If you need to continue cooking the chicken in order to reach 70°C, transfer to a very hot oven for 5-10 minutes.
  3. Make your sauce. Melt the butter in a small pan over low-medium heat. Add spices and tomato puree. Cook for 30 seconds or so, then chuck in the tomato ketchup, vinegar, worcestershire sauce and brown sugar. Heat until bubbling. Remove from the heat.
  4. Slap your BBQ sauce all over your chicken pieces, then load into grilled brioche buns with lots of creamy slaw.
  5. Destroy!

  • 6 tablespoons unsalted butter
  • 1 small onion, chopped
  • ¼ cup all-purpose flour
  • 2 cups half-and-half
  • 3 cups low-sodium chicken broth
  • 2 bay leaves
  • ¼ teaspoon freshly grated nutmeg
  • Kosher salt and freshly ground pepper
  • 4 7 -inch sourdough bread boules (round loaves)
  • 4 cups broccoli florets (about 1 head)
  • 1 large carrot, diced
  • 2½ cups (about 8 ounces) grated sharp white and yellow cheddar cheese, plus more for garnish
Instructions
  1. Melt the butter in a large Dutch oven or pot over medium heat. Add the onion and cook until tender, about 5 minutes. Whisk in the flour and cook until golden, 3 to 4 minutes, then gradually whisk in the half-and-half until smooth. Add the chicken broth, bay leaves and nutmeg, then season with salt and pepper and bring to a simmer. Reduce the heat to medium-low and cook, uncovered, until thickened, about 20 minutes.
  2. Meanwhile, prepare the bread bowls: Using a sharp knife, cut a circle into the top of each loaf, leaving a 1-inch border all around. Remove the bread top, then hollow out the middle with a fork or your fingers, leaving a thick bread shell.
  3. Add the broccoli and carrot to the broth mixture and simmer until tender, about 20 minutes. Discard the bay leaves. Puree the soup in batches in a blender until smooth; you'll still have flecks of carrot and broccoli. Return to the pot. (Or puree the soup in the pot with an immersion blender.)
  4. Add the cheese to the soup and whisk over medium heat until melted. Add up to ¾ cup water if the soup is too thick. Ladle into the bread bowls and garnish with cheese.

Cheesy Beef Loaded Fries

Ingredients
  • 1 tbsp oil
  • 2.2 lb sirloin steak, cut into thin strips
  • 3 tbsp flour
  • 1 tbsp salt
  • 1 tbsp pepper
  • 1 onion, sliced roughly
  • 1 tbsp tomato puree
  • 2 cups beef stock
  • 1 cup wine
  • Thyme
Instructions
  1. Heat the oil in a large, deep pan with a lid. Add the steak pieces and fry until they have a nice colour, then stir in the flour and seasoning and cook until the steak has browned all over. Remove from the pan.
  2. Add the onions and fry until soft, then add the garlic, tomato puree, stock, wine and thyme. Deglaze some of the sticky bits from the bottom of the pan. Bring to a simmer and cover with a lid and leave, stirring occasionally, for about 40 minutes, or until the beef has softened.
  3. Put the fries on a platter and sprinkle with the cheddar, then pour over the beef stew.
  4. Eat.

Key Lime Pie Pops
Enjoy mini key lime pies, graham cracker crust and all, dipped in chocolate on a stick.

Ingredients
Crust:
  • 1 cup graham cracker crumbs
  • 5 tablespoons butter, melted
  • 2 tablespoons sugar
  • 1 tablespoon cinnamon
Filling:
  • 1 (14-ounce) can sweetened condensed milk
  • 3 egg yolks
  • ½ cup lime juice
  • 1 teaspoon lime zest
Chocolate coating:
  • 12 ounces dark chocolate
  • ⅓ cup coconut oil
Instructions
For the crust:
  1. Preheat oven to 350 degrees.
  2. Add 12 cupcake liners to a muffin pan. In a medium-sized bowl, add graham cracker crumbs, butter, sugar and cinnamon. Stir to combine. Scoop graham cracker mixture into liners, filling them one-fourth of the way then pressing down into a flat layer.
For the filling:
  1. In a large measuring cup, add condensed milk, egg yolks, lime juice and zest. Mix until fully combined. Pour filling on top of crusts, filling them another fourth of the way.
  2. Bake for 10 to 12 minutes until set. Remove and let cool. Freeze for 2 hours. Remove from liners, and insert a popsicle stick into each.
For the chocolate:
  1. In a bowl over a double boiler, heat chocolate and coconut oil. Slowly stir until completely melted. Remove from heat.
  2. Dip pies into chocolate, then place flat on a parchment-lined baking sheet. Freeze until chocolate is set.

General Tso Meatballs

Ingredients
  • 1 lb. ground beef
  • ½ c. panko bread crumbs
  • 4 green onions, thinly sliced, divided
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp. ginger, minced or grated
  • 1 tsp. sesame oil
  • kosher salt
  • pinch red pepper flakes
  • ¼ c. cornstarch
  • Vegetable oil, for frying
  • ½ c. low-sodium chicken broth
  • ¼ c. soy sauce
  • 2 tbsp. apple cider vinegar
  • 2 tbsp. hoisin sauce
  • 1 tbsp. honey
  • 2 tsp. sesame seeds
Instructions
  1. In a large bowl, combine ground beef, panko bread crumbs, 2 green onions, egg, garlic, ginger, and sesame oil. Season with salt and pepper and mix to combine.
  2. Roll mixture into small balls, about a heaping tablespoon. Then toss meatballs in cornstarch.
  3. In large skillet over medium high heat about ½” of vegetable oil. Add meatballs and cook until seared on all sides, about 3 minutes per side. Remove meatballs from skillet and drain fat.
  4. To the skillet over medium heat, add chicken broth, soy sauce, apple cider vinegar, hoisin, and honey. Whisk to combine then add back meatballs. Simmer until meatballs are cooked through, 6 to 8 minutes more.
  5. Remove from heat and sprinkle with remaining green onion and sesame seeds.

Ingredients
  • 2 medium flour tortillas
  • 1½ c. Mini Marshmallows, divided
  • 1 chocolate bar, chopped
  • 1 graham cracker, crumbled
  • 2 tbsp. unsalted butter
  • 1 tbsp. cinnamon-sugar
  • ¼ c. melted chocolate, divided
Instructions
  1. Assemble quesadilla: Top one tortilla with 1 cup mini marshmallows, crushed graham crackers and chopped chocolate bar. Top with remaining tortilla.
  2. In a medium ovenproof skillet over medium heat, melt butter. Add quesadilla and cook until the bottom side is golden and the marshmallows are melty, about 2 minutes. Flip quesadilla and sprinkle the top with cinnamon-sugar then drizzle with about 2 tablespoons melted chocolate. Cover with remaining marshmallows and broil until the marshmallows are nice and toasty, about 1 minute.
  3. Drizzle with more melted chocolate and serve warm.

  • 1 lb. elbow macaroni
  • ½ c. butter, melted
  • 4 c. shredded Cheddar cheese
  • 4 oz. cream cheese
  • ½ c. finely grated Parmesan
  • 24 oz. evaporated milk
  • 2 c. whole milk
  • ½ tsp. garlic powder
  • ⅛ tsp. paprika
  • kosher salt
  • Freshly ground black pepper
Instructions
  1. In the bowl of the slow cooker, combine macaroni, butter, cheddar cheese, cream cheese, finely grated Parmesan, evaporated milk, whole milk, garlic powder and paprika. Season with salt and pepper.
  2. Cook on high until the pasta is cooked through and the sauce has thickened, about 2-3 hours. Check after 2 hours, then every 20 minutes after.

Jalapeño Mac 'n' Cheese Fries
Gooey, deep-fried mac 'n' cheese sticks coated in crispy jalapeño potato chips are your next snacking obsession.

Ingredients
  • 1 box macaroni and cheese
  • 2 tablespoons butter
  • ¼ cup half-and-half
  • ½ cup shredded cheddar cheese
  • 1½ cups flour
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon cayenne (optional)
  • 2 eggs, beaten well
  • 1 (8½ ounce) bag jalapeño-flavored potato chips, crushed
  • 2 cups vegetable oil
  • ½ cup mayonnaise
  • ⅓ cup sour cream
  • ¼ cup buttermilk
  • ½ teaspoon granulated garlic
  • 1 tablespoon chives
  • 1 tablespoon dill
Instructions
  1. In a 2-quart saucepan over high heat, heat 6 cups of water to a boil. Add macaroni and cook, stirring occasionally, for 7 to 8 minutes.
  2. Drain and place pasta back into saucepan. Add butter, sauce powder, half-and-half and shredded cheese, stirring until combined and cheese has melted.
  3. Pour into a parchment-lined rectangular baking dish and press flat until about ½-inch thick. Chill 30 minutes to overnight.
  4. Using a knife or pizza cutter, cut ⅓-inch by 3-inch batons out of the chilled macaroni.
  5. In a small dish, add flour mixed with salt, pepper and cayenne. In a separate shallow dish, add the beaten eggs. In a third dish, add the crushed jalapeño chips.
  6. Dip a mac 'n' cheese baton into the flour until lightly coated, then dip into egg, then coat well with crushed chips. If needed, dip again in the egg, then in the chips. Repeat with remaining macaroni batons.
  7. In a 2-quart saucepan, heat 2 cups vegetable oil over medium heat to 350 degrees.
  8. In batches, taking care not to overcrowd the pan, fry the coated macaroni until golden brown. Drain on a paper towel-lined plate.
  9. To make ranch dip: Stir ingredients together in a mixing bowl and allow to chill for 30 minutes.
  10. Serve fries alongside ranch dressing.
