Garlic Butter Scallops
Rich and creamy garlic butter scallops on pasta... delightfully decadent!

Ingredients
  • 1½ pounds scallops, approximately 20 pieces
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • ½ cup white wine
  • 1 cup heavy cream
  • 2 tablespoons lemon juice
  • Red pepper flakes
  • ¼ cup chopped parsley, more to garnish
  • 1 tablespoon lemon zest
  • Salt, to taste
Instructions
  1. Heat a large nonstick pan to medium-high heat and add olive oil. Place scallops spaced evenly in the pan, 8 to 10 at a time. Cook until the bottoms are golden, approximately 3 to 4 minutes, and flip. Cook until scallops are translucent, another 3 to 4 minutes. Remove from heat and set aside while you make the cream sauce.
  2. Keeping the pan on medium-high heat, add butter and garlic and saute until golden and fragrant. Add white wine to deglaze the pan and finish with heavy cream, lemon juice, red pepper flakes and parsley. Reduce heat to medium-low and return scallops to pan to warm. Top with parsley and lemon zest and serve over your favorite rice or pasta.

This version marries the flavours of tacos to spaghetti with devastating effect - perfect for your next midweek supper!

Ingredients
  • 2 tbsp oil
  • 3 mixed peppers, diced
  • 3 cloves garlic, finely crushed
  • 800g beef mince
  • 2 tbsp taco seasoning
  • 1 tsp salt
  • 200g tomatoes, chopped
  • 400ml double cream
  • 200g grated cheddar
  • 300g spaghetti, cooked to packet instructions
  • 3 spring onions, finely sliced
Instructions
  1. Heat the oil in a frying pan and fry the peppers on a high heat until they've started to soften.
  2. Add the garlic and continue to cook for around 30 seconds or until fragrant.
  3. Add the beef and stir to brown all over, then add the seasoning, stir, and add the tomatoes and simmer until slightly reduced.
  4. Turn down the heat the lowest setting and pour the cream into the sauce, mixing to combine. Add the cheese and stir it in.
  5. Add the pasta and stir to combine.
  6. Serve with spring onions.

Baked Jalapeño Popper Chicken Spaghetti
BAKED JALAPEÑO POPPER CHICKEN SPAGHETTI

Ingredients
  • 2 cups mozzarella
  • 2 cups cheddar
  • 1 cup parmesan
  • 2 tbsp cornflour
  • 250ml double cream
  • 1 cup cream cheese
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tbsp butter
  • 8 rashers bacon, diced
  • 3 cloves garlic, finely chopped
  • 3 jalapenos, deseeded and diced
  • 2 cups shredded chicken
  • 350g dried spaghetti
  • some reserved pasta water (about 1 cup)
Instructions
  1. Toss the three cheeses with the cornflour and set aside.
  2. Fry the bacon in a non-stick saute pan until quite crisp. Add jalapenos and garlic and fry until fragrant. Add cream, cream cheese, salt, pepper and chicken. Stir to combine and simmer briefly. Turn the heat off and stir through half the cheese mix. Add the cooked pasta and the cup of pasta water. Mix well, then remove from heat and transfer to baking dish. Top with remaining cheese mix. Bake for 15 minutes at 180°C, then grill on high until the top is a pleasing, crisp brown.
  3. Get stuck in.

Garlic Bread Bowl with Spaghetti

Ingredients
  • 1 large sourdough loaf
  • 1 cup butter, melted
  • 4 tablespoons chopped parsley
  • 4 cloves minced garlic
  • ¼ cup grated Parmesan cheese
  • 2 teaspoons salt, divided
  • 2 tablespoons olive oil
  • 2 cups marinara sauce, warmed
  • 1 cup spaghetti, cooked
  • 1 pound ground beef
  • 1 pound ground pork
  • 2 large eggs
  • 2 tablespoons finely chopped parsley
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 cups breadcrumbs
Instructions
  1. Make the garlic bread bowl: Preheat the oven to 375, and line two baking sheets with parchment paper.
  2. In a small bowl, combine butter, parsley, garlic, Parmesan and salt. Set aside while you prepare the bread loaf.
  3. Cut the top third off the loaf. Cut slits in the loaf, approximately 3 lengthwise and 5 widthwise, taking care to not cut all the way through to the bottom. Carve out the inside of the bottom loaf, leaving less than an inch border around the sides. Save the filling for breadcrumbs for the meatballs. Brush the top (which should now look like fifteen ½-inch rectangles) with half of the butter mixture. Brush the inside of the bowl with the remaining butter mixture, and bake both for 10 to 12 minutes until golden and fragrant. Wrap the bowl and top in foil to keep warm while you make the filling.
  4. Make the breadcrumbs: In a medium bowl, break up the remaining loaf insides into small ½-inch pieces. Add olive oil and remaining salt and toss to coat. Spread the pieces on the other baking sheet and bake for 25 to 30 minutes until dried out and golden. Once cooled, grind crumbs into fine pieces resembling coarse sand.
  5. Make the meatballs: Preheat the oven to 400 degrees, and line a baking sheet with parchment.
  6. In a medium bowl, add ground beef, pork, eggs, parsley and garlic. Mix to combine, and add salt and pepper. Fold in breadcrumbs and roll into approximately twenty 2-inch meatballs. Evenly space the meatballs out on the prepared baking sheet and bake for 10 to 12 minutes until the center temperature reads 150 degrees.
  7. Assemble the garlic bread bowl: Preheat the oven to broil, and line a baking sheet with parchment paper. Fill the garlic bread bowl halfway with warmed marinara sauce. Place prepared spaghetti and meatballs inside, and top with remaining marinara. Top the bowl with shredded mozzarella. Place in oven alongside the top of the bread bowl and broil for 5 minutes until cheese bubbles and turns golden. Remove from the oven and serve immediately.

Rainbow Spaghetti
The most colorful way to eat spaghetti.

Ingredients
  • 6 Ziploc bags
  • 1 lb. spaghetti, cooked
  • Food coloring (we used 6)
  • 1 c. Water, Divided
  • 3 tbsp. butter, melted
  • ⅓ c. freshly grated Parmesan
  • kosher salt
  • Freshly ground black pepper
Instructions
  1. Place 2 tbsp water into each ziplock back (we used 6 for 6 different colors). Add 10 drops gel food coloring to each bag.
  2. Divide the spaghetti into the 6 different bags. Shake until they are coated in their colors.
  3. Remove each pasta individually from ziplock bag and rinse with cold water. Combine in a large bowl and toss together with butter and parm. Season with salt and pepper and serve.

Because spaghetti pie was so last season, enjoy it now in cake form with layers of pasta, bolognese, mozzarella, ricotta and more.

Ingredients
  • 1 pound spaghetti noodles, cooked al dente
  • 3 eggs, beaten
  • 2 cups whole milk ricotta
  • 1 (8-ounce) package mozzarella slices
  • 2 cups bolognese sauce, cold
  • ½ cup shredded mozzarella
  • ¼ cup Parmesan, grated
  • Salt and pepper, to taste
  • Parsley, for garnish
Instructions
  1. Preheat oven to 375 degrees. Lightly grease a springform cake pan.
  2. In a large bowl, combine cooked and slightly cooled spaghetti with beaten eggs. Place one-third of the spaghetti mixture in the bottom of the prepared pan. Add slices of mozzarella cheese followed by 1 cup of the ricotta cheese and a sprinkle of salt and pepper. Use an offset spatula to spread ricotta evenly. Next, add 1 cup of the bolognese sauce. Repeat these steps one more time, ending with spaghetti on top.
  3. Sprinkle pasta with shredded mozzarella and Parmesan. Bake for 35 to 45 minutes. Allow layered pasta cake to cool for 20 to 30 minutes before serving. This will ensure that the layers stay intact for a surprising presentation. Cut slices like a cake and enjoy!

Spaghetti & Meatball Ring
You've never seen spaghetti and meatballs quite like this before.

Ingredients
  • olive oil, for drizzling
  • ¾ lb. ground beef
  • ½ c. finely chopped onion
  • ⅓ c. bread crumbs (preferably Italian)
  • ¼ c. plus 2 tbsp. grated parmesan, divided
  • ¼ c. chopped parsley, plus more for garnish
  • 1 Egg, lightly beaten
  • 2 cloves garlic, minced
  • kosher salt
  • Freshly ground black pepper
  • ½ lb. spaghetti
  • 2 c. marinara sauce
  • 2 tubes crescent dough
  • 1½ c. shredded mozzarella
Instructions
  1. Preheat oven to 400°. In a large bowl, combine ground beef, onion, bread crumbs, ¼ cup Parmesan, parsley, egg and garlic. Season with salt and pepper then mix until just combined. Shape mixture into small meatballs (about 1”) and place on baking sheet. Drizzle with olive oil.
  2. Bake until mostly cooked through, 12 to 15 minutes. Reduce oven temperature to 375°.
  3. Meanwhile, make pasta. Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 10 minutes. Drain.
  4. Line a large baking sheet with parchment paper. Unroll crescent rolls and piece together like a sun shape, slightly overlapping, on the parchment. Top with spaghetti then nestle baked meatballs on top. Spoon about 1 cup marinara sauce over meatballs and spaghetti then sprinkle mozzarella on top. Gently roll up.
  5. Brush tops of crescents with olive oil then sprinkle with remaining Parmesan.
  6. Bake until crescents are golden, 12 to 15 minutes. Sprinkle with more parsley and serve warm with marinara for dipping.

Ingredients
  • PASTA CRUST
  • 4 oz spaghetti, or angel hair, broken in half 2 times
  • 2 cloves garlic, minched
  • 2 tablespoons butter
  • 1 cup grated parmesan
  • 1 large egg, beaten
  • 2 tablespoons bread crumb
  • FILLING
  • 2 tablespoons oil, vegetable or canola
  • 1 small onion, diced
  • 8 oz ground beef, 90% lean
  • 15 oz tomato sauce, 1 can
  • 3 tablespoons tomato paste
  • 1 teaspoon sugar
  • 1 tablespoon fresh basil, minced
  • 1 cup ricotta cheese
  • 1 large egg
  • 1 teaspoon dried oregano
  • 1 ½ cups shredded mozzarella cheese
Instructions
  1. Preheat Oven to 350˚F (180˚C).
  2. Wrap pasta in a clean dish towel and fold twice, breaking pasta into smaller 1-3 inch (2½ - 7½ cm) pieces.
  3. Cook until al dente (about 3 minutes) and drain well.
  4. In medium-sized bowl, mix warm cooked pasta with garlic, butter, grated parmesan, egg, and bread crumbs. Still until well incorporated and the butter and cheese have completely melted.
  5. Press pasta mixture into a deep 10-inch (25-cm) pie plate or casserole dish. Top with bread crumbs.
  6. Bake 15-20 minutes, until crust is set and edges have started to brown
  7. Heat oil over medium heat in a large skillet. Add onions and cook until softened, about 3 minutes. Add in ground beef and cook until lightly browned. Using a spoon, drain off any excess fat that accumulates in the pan.
  8. Stir in tomato sauce, tomato paste, and sugar. Simmer until slightly thickened, about 5 minutes. Remove from heat and mix in basil. Season with salt and pepper.
  9. In a small bowl, mix together ricotta, egg, and oregano.
  10. Spread ricotta mixture over the cooked pasta crust. Spread the meat sauce over the top of the ricotta mixture then cover with mozzarella. Bake at 350˚F (180˚C) for 25 minutes or until golden brown on top.
  11. Let cool for 15-20 minutes before serving.
  12. Fancy-Pants Parmesan Crisps (optional for garnish): Pour a tablespoon of parmesan cheese onto a baking sheet lined with parchment paper. Bake at 400˚F (200˚C) until cheese has melted and become golden and crisp, about 5 minutes. Let cool before removing from parchment paper.
  13. Enjoy!

This easy dinner comes together in minutes and delivers a spicy kick.

Ingredients
  • 1 lb. spaghetti
  • 2 tbsp. vegetable oil
  • 1 lb. boneless, skinless chicken breasts, cubed
  • kosher salt
  • Freshly ground black pepper
  • 3 cloves garlic, minced
  • 2 tbsp. cornstarch
  • ⅓ c. soy sauce
  • ½ c. chicken broth
  • ¼ c. sweet chili sauce
  • 2 tbsp. sriracha
  • 2 tbsp. rice wine vinegar
  • ½ c. roasted peanuts, chopped
  • 3 green onions, thinly sliced
Instructions
  1. Bring a large pot of salted water to boil. Add pasta and cook according to package instructions; drain well.
  2. Meanwhile, heat vegetable oil in a large skillet over medium high heat. Season chicken all over with salt and pepper. Add to skillet and sauté, stirring occasionally, until golden and cooked through, about 6-8 minutes. Remove chicken from skillet.
  3. Stir in garlic and cook until fragrant, about 1 minute. Stir in cornstarch until evenly incorporated. Add soy sauce, chicken broth, sweet chili sauce, Sriracha and rice wine vinegar and whisk until combined. Simmer for 1-2 minutes, until reduced slightly. Stir in pasta, chicken, peanuts and green onions.

Here's a great, simple recipe for delicious spaghetti and meatballs! How do you make yours at home?

Ingredients
Tomato Sauce
  • 1 onion, peeled and halved
  • 1 28 ounce can crushed tomatoes
  • ½ cup unsalted butter
  • 1 teaspoon salt
Meatballs
  • 1 pound ground pork
  • 1 pound ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup shredded Parmesan
  • 1 cup panko
  • ¾ cup parsley, finely chopped
  • 2 tablespoons Worcestershire
  • 1 egg
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 pound spaghetti
  • Parmesan, to serve
Instructions
  1. Preheat the oven to 400˚F (200˚C).
  2. Add the crushed tomatoes, butter, onion, and salt to a pot and bring to a simmer over medium heat. Lower the heat and cook for 45 minutes, until the onions are soft and starting to break apart..
  3. In a bowl, mix the ground beef, ground pork, panko, Parmesan, egg, garlic, onion, Worcestershire, salt, pepper, and parsley until fully combined.
  4. Take a golf ball-sized handful of the meat mixture and roll it into a ball. Transfer to a baking sheet. Repeat with the remaining meat.
  5. Bake the meatballs for 16 minutes.
  6. Bring a pot of water to a boil, and cook the spaghetti according to the packaging instructions.
  7. Transfer the cooked meatballs to the sauce, and spoon over the pasta. Top with 8. Parmesan, and enjoy!
