Garlicky Shrimp Cocktail

Ingredients
  • 1 lb. raw, tail-on shrimp, cleaned and deveined
  • 2 tbsp. extra-virgin olive oil
  • Juice of ½ lemon
  • kosher salt
  • Freshly ground black pepper
  • 3 cloves garlic, minced
  • ¼ c. grated Parmesan
  • 2 tbsp. chopped fresh parsley
  • Marinara sauce, warmed, for dipping
Instructions
  1. Preheat oven to 400 degrees F. Line a large baking sheet with parchment paper.
  2. In a large bowl, mix together all ingredients. Place shrimp on baking sheet and roast until golden and cooked through, 8-10 minutes. Serve with warm marinara sauce.

Ingredients
  • 8 oz. cream cheese, softened
  • ½ c. finely chopped artichoke hearts
  • ½ c. finely chopped spinach
  • 2 c. shredded mozzarella
  • ½ c. freshly grated Parmesan
  • 2 garlic cloves, minced
  • ½ tsp. red pepper flakes
  • kosher salt
  • Freshly ground black pepper
  • 1 Crescent dough sheet
  • 1 egg, beaten
  • 1 tbsp. Chopped parsley, for garnish
Instructions
  1. Preheat oven to 350° and line a medium baking sheet with parchment paper. In a large bowl, combine cream cheese, artichoke, spinach, cheeses, garlic and red pepper flakes. Season with salt and pepper and fold until smooth.
  2. Remove crescent dough from can and lie flat on baking sheet. Spread all cream cheese mixture on dough, leaving a ½” crust. Brush crust with egg wash and bake until crust is golden and cheese is melted and bubbly, about 30 minutes. Garnish with more parmesan and parsley, slice and serve.

Creamy, Garlicky Shrimp Skillet
This super-quick and indulgent weeknight dinner takes a slight left turn from the standard fettuccine Alfredo. Red peppers and paprika transform it from expected to spectacular.

Ingredients
  • Kosher salt
  • 12 ounces fettucine
  • 3 tablespoons unsalted butter
  • 3 cloves garlic, thinly sliced
  • One 12-ounce jar roasted red peppers, drained and sliced in ½-inch-thick strips
  • 1 teaspoon sweet or smoked paprika
  • 2 cups heavy cream
  • 1 pound medium peeled and deveined shrimp, tails removed
  • 1½ cups grated Parmesan
  • 1 tablespoon fresh flat-leaf parsley, chopped
Instructions
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions for al dente. Drain and set aside.
  2. Meanwhile, melt the butter in a large skillet over medium heat. Stir in the garlic, red peppers and paprika and cook, stirring occasionally, until the peppers are heated through and the butter is fragrant and vibrant red, about 2 minutes. Add the cream and bring to a boil. Reduce the heat to medium low and simmer, stirring occasionally, until slightly thickened, 3 to 4 minutes.
  3. Add the shrimp and cook until they are firm and cooked through, about 5 minutes. Add the cooked pasta, Parmesan and 1 teaspoon salt and toss until well coated (see Cook's Note). Sprinkle with parsley.

Copycat Olive Garden Zuppa Toscana
We cracked Olive Garden's most popular soup recipe.

Ingredients
  • 1 lb. Hot Italian sausage, casings removed
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • kosher salt
  • Freshly ground black pepper
  • 6 c. low-sodium chicken broth
  • 4 large russet potatoes, diced
  • 1 bunch curly kale, leaves stripped and chopped
  • ¾ c. heavy cream
  • 4 slices cooked bacon, chopped
  • ¼ freshly grated Parmesan, for serving
Instructions
  1. In a large pot over medium heat, cook sausage, breaking up with the back of a wooden spoon, until browned and no longer pink, 5 to 7 minutes. Transfer to a plate to drain.
  2. Add onion to pot and let cook until soft, 5 minutes, then add garlic and cook until fragrant, 1 minute more. Season with salt and pepper. Add chicken broth and potatoes and cook until potatoes are tender, 23 to 25 minutes.
  3. Stir in kale and let cook until leaves are tender and bright green, 3 minutes, then stir in heavy cream, sausage, and bacon and simmer 5 minutes more.
  4. Season with pepper, garnish with Parm, and serve.

Ingredients
  • 7 red potatoes, medium
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 cups heavy cream
  • 2 tablespoons butter, softened
  • 8 yukon gold potatoes, medium or large
  • 10 slices cheddar cheese
  • 6 strips bacon, cooked until crispy
  • ¼ cup chives, finely chopped plus more to serve
  • 1 sheet puff pastry, cut into a 9-inch circle
  • 1 teaspoon onion powder
  • 1 teaspoon garlic
  • ¼ cup grated parmesan cheese
Instructions
  1. Preheat oven to 350°F (180°C).
  2. Using a mandolin, slice the red potatoes to about 3 millimeter-thick slices.
  3. Slice the gold potatoes to about 5-6 millimeters thick.
  4. In a large bowl, combine the red potatoes with the salt, pepper, and heavy cream, and stir until evenly coated.
  5. Butter an oven-safe, 8 or 9-inch, stainless steel mixing bowl.
  6. Starting from the center, lay the red potatoes in an overlapping, circular fashion, making sure they make good contact and are sticking to the bowl. Repeat the circular pattern up until roughly ½-inch from the top of the bowl.
  7. Place the sliced gold potatoes into the cream, stirring until fully coated with cream.
  8. Shake off the excess cream, then layer the potato slices at the bottom of the bowl, building in a similar circular fashion.
  9. After 2-3 rotations, place down 2 slices of cheddar. To fill the gaps, you might need to cut 2 more slices into halves and use those strips near the edges.
  10. Layer another 2 rotations of gold potatoes.
  11. Place the strips of bacon in a single layer across the potatoes.
  12. Layer another 2 rotations of gold potatoes.
  13. Sprinkle the chives in an even layer across the potatoes.
  14. Layer another 2 rotations of gold potatoes.
  15. Fan out the rest of the cheddar slices in a circular pattern on top of the potatoes.
  16. Layer another 2 rotations of gold potatoes.
  17. Place the circle of puff pastry on top, pressing it lightly into the potatoes.
  18. Bake, uncovered, for 1 hour and 30 minutes. If the pastry or the edges of potatoes near the top are starting to get too dark, cover the dish with foil and continue baking.
  19. Cool until the bottom of the dish is no longer warm.
  20. While the potatoes bake, prepare the garlic cream sauce by transferring the cream from the soaked potatoes into a medium saucepan or pot.
  21. Add the onion powder, garlic powder, and Parmesan, stirring while bringing to a boil. Set aside and reheat when serving.
  22. Preheat oven to 400°F (200°C).
  23. Run a knife along the sides of the bowl to make sure the potatoes are release, then invert it onto a baking tray.
  24. Bake for another 10 minutes or so, until the slices start to turn golden brown and slightly crispy.
  25. Transfer the dome to a cutting board, then slice into wedges.
  26. Serve with the cream sauce, a sprinkle of chives.
  27. Enjoy!

  • 24 oz pizza dough
  • 1 cup butter, melted
  • 6 cloves garlic, minced
  • ¼ cup fresh parsley, chopped
  • 1 teaspoon salt
  • 3 cups shredded mozzarella cheese
  • 3 cups shredded cheddar cheese
  • 10 slices deli ham, halved
Instructions
  1. Preheat oven to 400°F (200°C).
  2. Roll out pizza dough into an 18x10-inch rectangle.
  3. In a bowl, combine butter, garlic, parsley, and salt. Use a spatula to spread an even layer of the mixture over the dough.
  4. Sprinkle a generous handful of mozzarella and cheddar cheese in a square checkerboard pattern across the dough, making 20 squares.
  5. Place a piece of ham over each section of cheese.
  6. Cut the dough into 20 evenly sized squares and stack four on top of each other, alternating cheeses as you go. There will be five stacks of four.
  7. Place stacks in an 8½x4½-inch bread pan.
  8. Bake for 35 minutes.
  9. Enjoy!

Ingredients
  • 1 lb pizza dough, divided
  • 2 tablespoons olive oil
  • 8 cloves garlic, minced, divided
  • salt, to taste
  • pepper, to taste
  • 3 cups tomato puree
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • 12 oz tomato paste
  • 1 lb low moisture mozzarella, sliced
  • 2 lb meatballs
  • 2 cups caramelized onions
  • 3 cups bell peppers, chopped, sauteed
  • Parmesan, to serve
Instructions
  1. Preheat oven to 450°F (230°C).
  2. Cut a 1 pound ball of pizza dough in half and roll out two large discs of dough.
  3. Spray the inside of a springform pan with cooking spray and lay in one of the dough discs. Press the dough into the corners.
  4. Sprinkle the olive oil, 2 cloves of the minced garlic, salt, and pepper on the dough and brush to cover the surface. Press the bottom of the dough with a fork.
  5. Bake until the dough is cooked and lightly golden brown, 15 minutes.
  6. Mix together the tomato puree, dried basil, 4 cloves of minced garlic, dried oregano, and tomato paste in a bowl. Season to taste with salt and pepper.
  7. Into the partially cooked bottom layer of pizza dough, shingle a layer of mozzarella slices and then a layer of the homemade marinara sauce.
  8. Spiral the meatballs in the dish as tightly as possible. Cover with more marinara sauce.
  9. Add a layer of caramelized onions, and more sliced mozzarella.
  10. Add the green, yellow, and orange bell peppers on top of the mozzarella.
  11. Cut the second piece of dough into strips to form into a lattice pattern on top of the pie.
  12. Brush with 2 tablespoons more of olive oil, 2 cloves minced garlic, and kosher salt.
  13. Bake for 40 minutes to an hour, or until the dough on top is browned and the sauce, meatballs, and cheese are heated through.
  14. Slice the pie, serve with extra marinara sauce and grated parmesan.
  15. Enjoy!

  • 1½ cups cream cheese
  • 3 tbsp double cream
  • 1 cup parmesan
  • 1 garlic clove, minced
  • 1 tsp salt
  • 1 tsp pepper
  • ¼ cup parsely
  • 3 cups shredded chicken
  • 6 rashers bacon, chopped and cooked
  • White bread, 12 slices
  • 12 slices mozzarella
  • ½ cup garlic butter
Instructions
  1. Mix the cream cheese, cream, parmesan, garlic, salt and pepper, chicken and bacon bits together to make the filling. Set aside (but don't refrigerate).
  2. Lay the crustless slices of bread in a sheet on a large piece of baking paper. Make sure the sides are overlapping. Press together with a rolling pin (if you press hard enough they'll stick together).
  3. Place the mozzarella in a sheet on top and sprinkle with the alfredo mix.
  4. Bring up the edge of the sheet and roll into a spiral.
  5. Place on a baking sheet and brush with the garlic butter.
  6. Bake for 30 minutes until golden brown and crisp.

Brulee Sweet Potato
Take sweet potatoes to the next level by BRULEEING sugar on top!

Ingredients
  • 4 medium sweet potatoes
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 4 tablespoons coconut sugar
Instructions
  1. Preheat the oven to 400 degrees F.
  2. Prick each sweet potato 7 or 8 times with a fork, then place the potatoes on a nonstick baking sheet.
  3. Bake until very tender at the center and the skins are starting to wrinkle, 50 to 60 minutes. Remove from the oven and split the potatoes down the center to open.
  4. Whisk together the cinnamon, vanilla extract and 2 teaspoons water. Brush the centers of the potatoes with the liquid. Cool completely in the refrigerator, about 2 hours.
  5. When ready to serve, open the potatoes like a book and sprinkle each with 1 tablespoon coconut sugar. Using a kitchen torch, brulee the sugar until it melts and turns an even darker, almost black color. Allow to cool for 2 to 3 minutes, so the sugar firms up and becomes a tasty little crackle. Serve immediately.

Ingredients
  • 1 8- oz. block cream cheese, softened
  • ⅓ c. mayo
  • ⅓ c. sour cream
  • 1 tsp. garlic powder
  • 1 tsp. paprika
  • 1 16- oz. package frozen spinach, thawed and squeezed of water
  • 10 slices bacon, cooked and crumbled
  • 1 c. grated Parmesan
  • 1 c. shredded mozzarella
  • 1 baguette, sliced
Instructions
  1. Preheat oven to 350º. Stir together cream cheese, mayo, sour cream, garlic powder, and paprika until combined.
  2. Fold in spinach, cooked bacon, Parmesan, and ¾ cup mozzarella. Transfer spinach mixture to baking dish and sprinkle with remaining ¼ cup mozzarella. (If mixture is very high in baking dish, place a baking sheet below dish to catch spillage.)
  3. Bake until golden and bubbly, 25 to 30 minutes.
  4. Make crostini: Drizzle bread with olive oil and season with salt. Toast until golden, 10 minutes. Rub with a garlic clove while still warm.
  5. Serve with crostini.
