Cheesesteak Stuffed Peppers

Ingredients
  • 4 bell peppers, halved
  • 1½ lb. sirloin steak, thinly sliced
  • 1 large onion, sliced
  • 16 oz. Crimini mushrooms
  • kosher salt
  • Freshly ground black pepper
  • 16 slices provolone
Instructions
  1. Preheat oven to 325º. Place peppers in a large baking dish and bake until tender, 20 minutes.
  2. Meanwhile, in a large skillet over medium-high heat, heat oil. Add steak and cook about 1 minute per side. Set aside.
  3. Add onions and mushrooms to skillet and season with salt and pepper. Return steak to skillet and stir to combine.
  4. Add provolone to bottom of peppers and top with steak mixture. Top with another piece of provolone and broil, 3 minutes.
  5. Serve hot.

Baked Spinach Artichoke Dip

Ingredients
  • 8 oz. cream cheese, softened
  • ¾ c. mayonnaise
  • ¾ c. sour cream
  • 1 c. freshly grated Parmesan
  • ¾ c. shredded white Cheddar
  • ½ c. Gruyere
  • 1 (14-oz.) can artichoke hearts, drained and chopped
  • 1½ c. frozen spinach, defrosted and chopped
  • 2 cloves garlic, minced
  • 1 tsp. lemon zest
  • ½ tsp. red pepper flakes
  • kosher salt
  • Freshly ground black pepper
  • Baguette, for serving
Instructions
  1. Preheat oven to 350°. In a large bowl, combine all ingredients except baguette. Mix until fully combined and season with salt and pepper. Transfer to a baking dish and smooth top with a spatula.
  2. Bake until bubbly and slightly golden, 30 minutes. If you’d like the dip to develop a more golden top, broil on high for 2 minutes.
  3. Serve with baguette on the side, for dipping.

Mozzarella-Stuffed Chicken Parm

Mozzarella-Stuffed Chicken Parm
The more cheese the better.

Ingredients
  • 1 lb. boneless skinless chicken breasts
  • 8 oz. fresh mozzarella
  • kosher salt
  • Freshly ground black pepper
  • 1 c. panko bread crumbs
  • 1 tsp. dried oregano
  • ½ tsp. garlic powder
  • ½ c. freshly grated Parmesan, divided
  • Olive oil, for frying
  • 2 c. marinara
  • ¼ c. Thinly sliced basil
  • 2 tbsp. chopped parsley
Instructions
  1. Preheat oven to 425°. Using a sharp paring knife, cut a deep slit into each chicken breast. Stuff pockets with mozzarella then press edges of the chicken together to seal the chicken. Season outside of chicken with salt and pepper.
  2. Put the flour, eggs and panko bread crumbs into three separate shallow bowls. Into the panko bread crumbs, whisk in garlic powder, dried oregano, ¼ cup Parmesan and ½ teaspoon salt.
  3. Dip the stuffed chicken in flour, shaking off excess, then dip the chicken into egg, tossing to coat. Dredge chicken in bread crumbs, making sure the chicken is evenly coated.
  4. In a large skillet over medium heat, heat a thin layer of olive oil. Add chicken to skillet and cook until golden on both sides, about 4 minutes per side. Pour marinara around chicken and scatter basil on top of marinara. Turn off heat then sprinkle remaining Parmesan on top of chicken.
  5. Transfer skillet to oven and bake until the chicken is cooked through, about 20 minutes more. Garnish with parsley and serve warm.

Steak Fajita Power Bowls

Ingredients
  • 2 tbsp. vegetable oil, divided
  • ½ yellow onion, sliced into half moons
  • 2 bell peppers, thinly sliced
  • kosher salt
  • Freshly ground black pepper
  • 1 lb. skirt steak, cut into ½" slices
  • Juice of ½ lime
  • ½ tsp. cumin
  • ½ tsp. chili powder
  • 4 c. cooked brown rice
  • 1 c. black beans, drained and rinsed
  • 1 c. frozen corn, warmed
  • 1 avocado, thinly sliced
  • 1 tbsp. finely chopped cilantro, for garnish
  • Sour cream, for serving
Instructions
  1. In a large skillet over medium heat, heat 1 tbsp vegetable oil. Add the onions and peppers, and season with salt and pepper to taste. Cook until onions are translucent and peppers are tender, 7 to 10 minutes. Remove from skillet and reserve.
  2. Add remaining vegetable oil and let heat for about 30 seconds, then add skirt steak to pan. Squeeze lime over steak and season with cumin, chili powder, salt and pepper. Let them sit for a minute or so to get a nice sear, then cook to your preference, about another 5 minutes for medium well done steak. Remove from skillet.
  3. Build bowls: start with about 1 cup rice per bowl. Top with steak, onions and peppers, avocado, black beans and corn.
  4. Garnish with cilantro and drizzle with sour cream. Serve.

Cauliflower Baked Ziti

Ingredients
  • 1 tbsp. olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • pinch red pepper flakes
  • 1 lb. ground beef
  • kosher salt
  • Freshly ground black pepper
  • 2 tbsp. tomato paste
  • 1 tsp. dried oregano
  • 1 (28-oz.) can crushed tomatoes
  • 2 tbsp. thinly sliced basil, plus more for garnish
  • 1 large head of cauliflower, (about 3 cups) cut into florets, blanched, and drained well
  • 1½ c. fresh ricotta
  • 2 c. shredded mozzarella
  • ½ c. freshly grated Parmesan
Instructions
  1. Preheat oven to 375°. Heat olive oil in a large saucepan over medium heat. Add onion and sauté, stirring often, until onion is soft, about 5 minutes. Stir in garlic and red pepper flakes and cook for one minute. Add meat and season with salt and pepper. Sauté until browned. Drain fat.
  2. Add tomato paste and oregano and cook over medium heat for 2 minutes more, until slightly darkened. Add crushed tomatoes and bring sauce to a simmer, reduce heat and cook, stirring occasionally, until slightly reduced and flavors have melded, 10 to 15 minutes. Remove from heat and stir in basil.
  3. In a large bowl, pour sauce over cauliflower and stir to combine. In a large baking dish, place half the cauliflower in an even layer. Dollop all over with half the ricotta, and sprinkle with half the mozzarella and parmesan. Add the rest of the cauliflower in an even layer on top, and top with remaining cheeses.
  4. Bake until cheese is melty and golden, 25 minutes. Garnish with basil and serve.

BLT Sushi

Ingredients
  • 10 slices bacon
  • 2 tbsp. mayo
  • 1 c. chopped tomatoes
  • 1 c. shredded romaine
  • kosher salt
  • Freshly ground black pepper
Instructions
  1. Preheat oven to 400º. On a large baking sheet with a wire rack placed on top, line 5 slices bacon side by side. Lift one end of every other bacon slice and place another bacon slice on top of the lifted pieces. Lay the slices back down. Next, lift opposite bacon slices back and place a bacon slice on top. Lay the slices back down. Repeat the weaving process until you have a bacon weave of 5 strips by 5 strips.
  2. Bake until cooked but still pliable, 20 minutes.
  3. Pat bacon weave with paper towels to drain fat and transfer to a piece of saran wrap (helps for rolling!).
  4. Spread a thin layer of mayo on top of bacon weave, then top with tomatoes (keep them on the bottom ⅓ for easier rolling) and romaine. Season with salt and pepper.
  5. Starting from the bottom, tightly roll, then slice.

Ingredients
  • 24 Brussels sprouts
  • kosher salt
  • 12 sliced bacon
  • ¼ c. maple syrup
  • 2 tbsp. brown sugar
  • Pinch cayenne
Instructions
  1. Preheat oven to 400° and line a large baking sheet with foil. Trim the ends of Brussels sprouts and remove any tough outer leaves.
  2. In a small bowl, whisk together maple syrup, brown sugar and cayenne. Cut bacon in half crosswise, then brush bacon with syrup mixture.
  3. Wrap a slice of bacon around each brussels sprout, placing the brussels sprout seam side down on the baking sheet. Brush the tops of the again with the syrup mixture. Bake until the bacon is crispy and the brussels sprouts are crispy, about 20 minutes.
  4. Serve warm.

You've never had cauliflower like this before!

Ingredients
  • 1 head cauliflower, (to make about 4 cups processed cauliflower)
  • 2 eggs, lightly beaten
  • ½ c. finely grated Parmesan
  • ½ tsp. oregano
  • 1½ c. shredded white Cheddar
Instructions
  1. Cut cauliflower into florets. Process cauliflower florets in a food processor until the texture resembles rice. Alternatively, you can grate the cauliflower.
  2. In a medium bowl, combine processed cauliflower, eggs, Parmesan and oregano. Mix until evenly combined then season with salt and pepper.
  3. Heat a large nonstick skillet over medium heat. Spray with cooking spray then scoop the cauliflower mixture into a small patty on one side of the pan. Repeat to form a second patty on the other side. (These are your “bread” slices.) Press down on both pieces with a spatula and cook until golden underneath, about 5 minutes. Flip and cook until the other sides are golden, about 3 minutes more.
  4. Top one cauliflower slice with cheese then place the other cauliflower slice on top. Cook until the cheese is melted, about 2 minutes more per side. Repeat with remaining ingredients.

Instant Pot Fall-Off-The-Bone Chicken

Ingredients
  • 1 tbsp. olive oil
  • 1 tbsp. brown sugar
  • 1 tbsp. chili powder
  • 1 tbsp. smoked paprika
  • 1 tsp. chopped thyme leaves
  • kosher salt
  • Freshly ground black pepper
  • 1 small chicken (3-4lb)
  • ⅔ c. low sodium chicken broth
  • 2 tbsp. chopped parsley
Instructions
  1. In a small bowl, whisk together brown sugar, chili powder, paprika, and thyme. Pat chicken dry with paper towels then season generously with salt and pepper. Rub the brown sugar mixture all over chicken.
  2. Preheat Instant-Pot to sauté (normal) setting. When the Instant-Pot says it's hot, add olive oil then add chicken, breast side-down . Let sear until skin is crispy, about 4 minutes. Use very large tongs to flip chicken then pour chicken broth in the bottom of the Instant Pot. (This step can be tricky!)
  3. Change setting to pressure cook setting (normal) and set timer to 25 minutes. Lock the lid into place and set the valve to “Sealing.”
  4. Allow the Instant Pot to depressurize naturally (be careful of the hot steam) then remove lid and take out chicken. Let chicken reset for 10 minutes before slicing.
  5. Garnish with parsley and serve warm.

Ingredients
  • 1 c. Sliced pickles
  • 1 c. panko bread crumbs
  • 2 tbsp. melted butter
  • ½ tsp. garlic powder
  • ¼ tsp. cayenne pepper
  • kosher salt
  • Freshly ground black pepper
  • ½ c. all-purpose flour
  • 2 large eggs, lightly beaten
  • 4 slices bacon
  • 1½ c. shredded Cheddar
  • Sour cream, for serving
  • 1 tbsp. finely chopped chives
Instructions
  1. Preheat oven to 450° and line a large baking sheet with parchment paper. Pat pickles dry with paper towels.
  2. In a medium shallow bowl, mix together panko, butter, garlic powder and cayenne. Season mixture with salt and pepper. Working in batches, toss pickle coins in flour until lightly coated, then toss pickles in eggs. Dredge the pickles in the panko mixture until fully coated. Place pickles on prepared baking sheet.
  3. Bake until the coating is golden and crispy, about 15 minutes.
  4. Meanwhile, cook bacon. In a large skillet over medium heat, cook bacon until crisp. Drain slices on paper towels then chop finely.
  5. Sprinkle cheese and bacon on baked pickle chips and return for another 5 minutes, or until the cheese is melty. Top with sour cream and chives and serve.
