Cheeseburger Burritos
The burrito, meaning "little donkey" in Spanish, is a star of the Tex-Mex stable. Renowned across the world this corpulent, bean stuffed wrap seems beyond improvement. However, nothing is safe from the march of progress. Why not replace all the fillings with burger meat and cheese? Is there anything that can't be improved by stuffing it with beef and cheese, a Cheeseburger Burrito? We certainly don't think so.

Ingredients
  • 1.5lb beef mince
  • 1 tbsp salt
  • 1 tbsp white pepper
  • 1 tsp garlic powder
  • 1 small block red cheddar
  • 4 tortilla wraps
Instructions
  1. Preheat the oven to 180°C/360°F.
  2. Mix the beef mince with the salt, pepper and garlic powder.
  3. Cut the cheese into four sticks small enough to fit inside the tortillas.
  4. Flatten a quarter of the beef mince into a square patty. Roll the beef patty around a cheese stick and press it together to seal in the cheese.
  5. Lay down a tortilla and roll up the cheese stuffed burger, folding over the sides as you do so to seal it. Repeat with the remaining three burritos and wrap them all up in foil, then bake in the oven for around 20 - 30 minutes until the beef has cooked all the way through (measure the temperature with a thermometer).

Cheese Stuffed Bacon Burger Dogs
When you can’t decide if you want a burger or a hot dog, why not make a burger dog! Stuffed with cheese and wrapped with bacon, it’s like your favourite bacon cheeseburger but as a hot dog!

Ingredients
  • 500g beef mince
  • 1 tsp salt
  • 1 tsp pepper
  • ½ tsp garlic powder
  • 4 sticks cheddar cheese
  • 8 sliced bacon
  • Oil to fry
  • Ketchup
  • Mustard
  • Hot Dog Buns
Instructions
  1. In a large bowl, mix together mince, salt, pepper and garlic powder. Flatten portions of meat and fill each with one stick of cheddar cheese. Wrap mince around tightly to seal.
  2. Use two rashers of bacon per burger dog and wrap around the meat as seen in video.
  3. Fry until golden brown and cooked through in a heavy bottomed pan with a little oil. The cheese should be melted.
  4. Place into hot dog buns and dress with ketchup and mustard.
  5. Enjoy!

Jalapeño Popper Hasselback Potatoes
Hasselback potatoes have domino-like slots that are perfect for filling with delicious things like bacon and cheese. These have been topped with a creamy and cheesy jalapeño popper sauce which when heated seeps deep into the slots!

Ingredients
  • 7 medium potatoes
  • 2 tbsp groundnut oil
  • 1 tbsp sea salt
  • ½ tsp pepper
  • Sliced Cheddar cheese
  • 12 rashers cooked bacon, cut into thirds
  • 1 cup cream cheese
  • ¾ cup cream
  • 6 jalapeños, seeded and finely diced
  • ½ cup grated cheddar
  • ½ cup grated mozzarella
  • 1 tsp salt
  • 1 tsp pepper
Instructions
  1. Preheat the oven to 180°C/350°F.
  2. Cut parallel lines down the length of the potatoes - you can use two wooden spoons laid next to the potato as a guide to stop you cutting all the way through if you need to.
  3. Lay the potatoes in a greased skillet and brush with oil and sprinkle with salt and pepper. Bake for 45minutes to 1 hour or until the potatoes are fanned out.
  4. Meanwhile mix together cream cheese, cream, jalapeños, grated cheeses, salt and pepper until combined.
  5. Fill each slot alternating a slice of cheddar and a slice of bacon.Top each potato with jalapeño cheese mix.
  6. Cover with foil/parchment and bake for 20 minutes and then remove covering and bake for an additional 5 minutes.
  7. Enjoy!

Meatloaves can be boring an sometimes dry. But when you stuff one with jalapeño popper filling and while it cooks the cheese melts, there’s no doubt a Jalapeño popper stuffed meatloaf will be a winner at your dinner table!

Ingredients
  • 1lb beef mince
  • ⅔ cup breadcrumbs
  • 2 eggs, whisked
  • 1 tbsp dried parsley
  • 1 tsp salt
  • 1 tsp pepper
  • 2 cups cream cheese
  • 1 tsp salt
  • ½ tsp pepper
  • 1 cup grated cheddar cheese
  • 3 jalapeños diced
  • 1 tsp garlic powder
  • Barbecue Sauce
Instructions
  1. Preheat oven to 180ºC (350ºF).
  2. In a large bowl mix together beef, bread crumbs, eggs, parsley, salt, pepper.
  3. Press ¾ of mix into a loaf tin along the bottom and press up the edges keeping a well in the middle.
  4. Mix together cream cheese with 1 tsp salt and ½ tsp pepper, cheddar cheese, garlic powder, and jalapeños.
  5. Add cream cheese mixture to the well.
  6. Cover with remaining meat to seal.
  7. Bake for 30-40 minutes covered with foil. Take out and flip over onto a tray. Brush with barbecue sauce. Grill in the oven until glazed.

Chicken a La Croix
Everyone's favorite can of sparkling water is the perfect instrument for this moist, fragrant roasted chicken.

Ingredients
  • 1 (3-pound) roaster chicken
  • 3 tablespoons olive oil
  • 2 tablespoons tangerine zest
  • 1 tablespoon lemon zest
  • 1 tablespoon brown sugar
  • 2 teaspoons fresh thyme leaves, picked, plus more for roasting
  • 1 teaspoon fresh rosemary, minced, plus more for roasting
  • 1 teaspoon sea salt
  • Freshly ground black pepper
  • 3 tangerines, halved
  • 1 lemon, sliced into rounds
  • 1 head garlic, halved
  • ¼ cup white wine
  • 1 (12-ounce) can citrus seltzer like La Croix Tangerine or Grapefruit
Instructions
  1. Preheat the oven to 400 degrees and remove the second rack. Secure the lower rack at the lowest setting so the chicken will fit standing upright.
  2. Pat chicken skin dry. In a small bowl, combine olive oil, tangerine zest, lemon zest, brown sugar, thyme leaves and minced rosemary. Stir to combine and brush over entire chicken. Stuff 1 tangerine half in the top cavity of the chicken. Sprinkle entire bird with salt and pepper.
  3. In a medium roasting pan, place remaining halved tangerines, sliced lemon, halved garlic and additional sprigs of rosemary and thyme. Add white wine. Place open seltzer can in the middle of the pan.
  4. Place the chicken over the can by opening the rear cavity and sliding it over the can until only about an inch of the can is showing. Rest legs on sliced citrus to avoid burning.
  5. Roast for 15 minutes to brown skin, then reduce heat to 350 and roast for 45 minutes, or until the internal temperature is 160 and the skin is crisp and golden.
  6. Remove the pan from the oven and carefully transfer the chicken from the can to a flat surface. Let rest for 20 minutes before slicing to serve. Serve drizzled with pan juices.

Salisbury Steak

Ingredients
FOR THE PATTIES
  • 1 lb. ground beef
  • 1 large egg
  • ⅓ c. bread crumbs
  • 1 tbsp. ketchup
  • 1 tbsp. Worcestershire sauce
  • 1 Garlic clove, minced
  • kosher salt
  • Freshly ground black pepper
  • 1 tbsp. extra-virgin olive oil
FOR THE GRAVY
  • 2 tbsp. unsalted butter
  • 1 onion, chopped
  • 2 sprigs thyme
  • ½ c. Mushrooms, thinly sliced
  • 2 tbsp. all-purpose flour
  • 1 tbsp. Worcestershire sauce
  • 1 tbsp. tomato paste
  • 1 c. beef stock
  • kosher salt
  • Freshly ground black pepper
Instructions
  1. Make patties: In a large bowl, combine beef, egg, bread crumbs, ketchup, Worcestershire sauce and garlic. Season with salt and pepper and form into 4 oval patties.
  2. In a large skillet over medium heat, heat oil. Sear both sides of the patties until a crust forms, about 5 minutes per side. Remove onto a plate.
  3. Make gravy: Wipe out skillet and add butter. Add onions and thyme and stir until onion becomes translucent. Add mushrooms and cook until browned and tender, about 4 minutes. Sprinkle onions and mushrooms with flour, and stir until they are fully coated. Cook another 2 minutes, then add Worcestershire sauce, tomato paste, and beef stock. Stir to combine and season with salt and pepper.
  4. Bring the gravy to a simmer and return the patties to the skillet. Cover and cook for 10 to 15 more minutes, until the patties are done and the sauce has thickened. Plate the patties and top with more gravy. Serve.

Parmesan Shell Spaghetti Tacos

Ingredients
  • 2 cups shredded Parmesan cheese
  • ½ pound spaghetti, cooked
  • 16 mini meatballs, cooked
  • ½ jar marinara sauce
Instructions
  1. In a large nonstick skillet over medium heat, place 3 tablespoons to ¼ cup of Parmesan cheese in the center of the pan. Flatten with a rubber spatula to make a circular cheese disc. Cook for a few minutes until cheese is melted. Flip and cook for another minute. Quickly place cheese in the grooves of an upside down muffin tin to form a taco shell. Once it’s completely cooled the cheese will stay in a taco shell shape. Place spaghetti and meatballs inside each taco shell. Enjoy your Italian taco party!

Ingredients
  • For the steak:
  • 2 (10 oz) ribeye 1 inch thick
  • sea salt
  • freshly ground black pepper
  • 3 tablespoons of vegetable oil
  • 2 garlic cloves, whole
  • 4 tablespoons of butter
  • 4 sprigs of thyme
  • For the sauce:
  • 1 tablespoon of olive oil
  • 3 cloves of garlic, minced
  • 1 cup of heavy cream
  • 2 tablespoons of whole mustard seed
  • ½ cup of grated parmesan cheese
  • 1 tablespoon of butter
  • freshly ground black pepper
  • salt
  • ½ lemon, juiced
  • For the potatoes:
  • 6 small Idaho, boiled
  • olive oil
  • salt
  • pepper
  • ¼ cup of parsley, chopped
  • ½ cup of parmesan, grated
Instructions
  1. Pat dry ribeye with paper towel. Season both sides with salt and pepper.
  2. In the bottom of a heavy saute pan heat 2 tablespoons of vegetable oil on medium-high heat until oil becomes thin and smokes in the pan (about 5 minutes).
  3. Sear steak for 4 minutes on each side. Add garlic clove, thyme, and butter to the pan. Baste steak with butter for 5 minutes to impart flavor. Then remove the steak and allow it to rest.
  4. On a lined baking sheet, smash cooked potatoes, adding salt, pepper, parmesan, and olive oil. Broil for 10 minutes until golden brown.
  5. In a sauce pot on medium heat, simmer the oil and garlic for about 3 minutes. Add heavy cream, and gently bring to a simmer for about 5 minutes. Add whole-seed mustard, parmesan, butter, and lemon juice; season with salt and pepper.

Look no further than this big boy - exquisitely cooked beef served with gravy drenched peppers and onions, rounded off in a baguette with smooth cheesy sauce.

Ingredients
  • 30 sizzler steaks
  • 2 tbsp salt
  • 1 tbsp pepper
  • 4 garlic cloves, crushed
  • 2 tbsp oil
  • 1 large onion, halved
  • 3 green peppers, cut into slices
  • 1 onion, cut into slices
  • 2 tbsp butter
  • 2 tbsp flour
  • 3 cups milk
  • 1 cup parmesan
  • 1 cup grated mozzarella
  • Salt & pepper to taste
Instructions
  1. Preheat the oven to 140°C/380°F.
  2. Season the steaks with salt, pepper, garlic and a splash of oil.
  3. Skewer half an onion with a large sharp dowling round and thread the steaks onto it, one at a time, making sure they go up in a spiral to help it balance.
  4. When you're nearly at the top spike another onion on the stick.
  5. Scatter the peppers and onions around the base and bake for around ¾ hours or until the meat is tender, basting occasionally.
  6. Make the cheese sauce by heating the butter till foaming, adding the flour and then slowly adding the milk. When the sauce is smooth stir in the cheeses and season.
  7. Remove the kebab from the oven and slice with a sharp knife, then serve in sliced baguettes with the cheese sauce.

Burrito Zucchini Boats

Ingredients
  • 4 zucchini, halved lengthwise
  • 1 tbsp. extra-virgin olive oil
  • ½ onion, chopped
  • 2 cloves garlic, minced
  • 1 lb. ground beef
  • ½ tsp. chili powder
  • ½ tsp. ground cumin
  • ¼ tsp. paprika
  • Kosher salt
  • Freshly ground black pepper
  • 1 (15-oz.) can black beans
  • 1 c. chopped cherry tomatoes
  • ½ c. corn
  • 1 c. shredded cheddar
  • 1 c. shredded monterey
  • 2 tbsp. chopped cilantro
Instructions
  1. Preheat oven to 350°. Score zucchini (like you’re dicing an avocado) and scoop out insides into a large bowl.
  2. In a large skillet over medium heat, heat olive oil. Add onion and cook until soft, about 5 minutes. Stir in garlic and cook until fragrant, about 1 minute more. Add ground beef, breaking up the meat with a wooden spoon. Cook until beef is no longer pink, about 6 minutes. Drain fat.
  3. Stir in chili powder, cumin, and paprika, then season with salt and pepper. Stir in black beans, cherry tomatoes, and corn.
  4. Spoon beef mixture into zucchini then top with cheeses. Bake until zucchini is just tender and cheeses are melted, about 15 minutes. Garnish with cilantro and serve warm.
