Breakfast Mug Bake
No baking tins, no problem. Breakfast made easy with this mug bake hack!

Ingredients
  • ½ cup potato, shredded
  • 2 large eggs, beaten
  • ⅛ cup milk
  • ¼ cup cheddar cheese, shredded
  • ¼ cup red bell pepper, chopped
  • ¼ cup mushrooms, sliced
  • ¼ cup ground pork sausage, cooked
  • ⅛ cup green onion, chopped
  • Salt and pepper to taste
Instructions
  1. Preheat the oven to 375 degrees.
  2. Spray the inside of an oven-safe porcelain or ceramic mug with cooking spray. Add shredded potatoes to the bottom of the mug. Add a layer of cheese, bell pepper, mushroom and sausage.
  3. Add milk to beaten egg, season with salt and pepper and pour into mug. Bake 25 to 30 minutes. Let cool for a few minutes and place a small plate over the top of the mug, flip over and slowly lift way. Garnish with green onions.

Ham and Cheese French Toast Pockets
Ham and cheese are a sandwich classic. Stuffed between two pieces of bread into a little parcel dipped in French toast mix and fries make it an even better sandwich. Fill it with a number of different options but ham and cheese is one of our favourites!

Ingredients
  • 8 slices bread
  • 16 slices mozzarella
  • 8 pieces of ham
  • 3 eggs
  • 1 cup milk
  • ½ tsp salt
  • ¼ tsp peper
  • Butter
Instructions
  1. Cut the crust off one piece of bread, and lay one slice of mozzarella down, followed by ham and another piece of cheese.
  2. Top with another crustless piece of bread and using your fingers press round the edge to form the piece of bread together. Repeat.
  3. In a large bowl,dd your eggs, milk, cinnamon and vanilla to a bowl and whisk thoroughly.
  4. Dunk your stuffed breads into the mix and coat properly.
  5. Add your butter to a pan, when melted add your french breads and fry until nice and golden on both sides.
  6. Enjoy!

Grapefruit Rosemary Tartlets
If you like lemon tarts, you'll love this zesty, slightly herby sweet pastry.

Ingredients
  • Pre-made pie crust
  • 4 tablespoons cornstarch
  • Pinch of salt
  • 1 cup sugar
  • 1 sprig of rosemary
  • 1½ cups grapefruit juice
  • 2 tablespoons lime juice
  • 4 egg yolks
  • 4 tablespoons butter
  • Red food coloring
  • Rosemary as garnish
  • Sugared grapefruit zest as garnish
Instructions
  1. Line your tart pans with pie crust. Perforate the bottom and weigh down with baking beans. Bake according to package directions. Remove baking beans and set aside to cool.
  2. Combine cornstarch, salt, sugar and rosemary in a medium saucepan. Whisk in juices and egg yolks. Add a drop of red food coloring. Cook over medium heat, whisking constantly, until the mixture comes to a boil. Boil, while whisking, for 1 minute. Stir in the butter.
  3. Pour the mixture into your prepared tarts. Chill until set, or garnish with rosemary and grapefruit zest and enjoy warm.

Cheesesteak Pop Tarts
CHEESESTEAK POP TARTS

Ingredients
  • 1lb beef mince
  • 1 tbsp oil
  • 2 white onions, diced
  • 2 green peppers, diced
  • 1 tsp salt
  • 1 tsp pepper
  • 3 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Chili sauce
  • ½ cup Cream cheese
  • 12 slices mozzarella cheese
  • Egg wash
  • 2 sheets Short crust pastry, defrosted
Instructions
  1. In a large saute pan, heat ½ tbsp oil over medium-high heat. Add beef mince and sear until brown and just cooked through. Take out and drain.
  2. Add remaining oil to pan, onions and green peppers. Sauté until softened. Add back cooked beef mince, salt, pepper garlic, Worcestershire sauce and chilli sauce.
  3. Stir in cream cheese, set aside to cool.
  4. Pre-heat oven to 180ºC (350ºF).
  5. Roll out short crust pastry and cut out 6 rectangles from each. Place one piece of mozzarella down in the middle of each. Top with cheesesteak mix and another slice of mozzarella. Top with another short crust rectangle and crimp edge with a fork to seal.
  6. Brush evenly with egg wash. Poke two holes in the middle to let steam escape.
  7. Bake for 15-20 minutes until golden brown.

Garlic Mozzarella Tomato Soup Dippers
Cheese sandwiches and tomato soup go hand in hand. These fried cheesy garlic dippers add another dimension and are the perfect shape for dipping into the roasted tomato soup.

Ingredients
  • 24 slices soft white bread
  • 24 pieces pizza mozzarella
  • ¼ cup flour
  • ¼ cup water
  • 2 cups finely grated parmesan cheese
  • 1 tsp pepper
  • 1 tbsp finely chopped parsley
  • 1½ tsp garlic powder
  • Tomato sauce
  • Oil for frying
  • 3 cups mized tomatoes, quartered if large
  • 4 cloves garlic
  • 1 yellow onion, chopped
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp sugar
  • 8 slices cheddar or mozzarella cheese
  • 1¾ cups vegetable stock
Instructions
  1. Preheat oven to 180C (350F).
  2. Add tomatoes, garlic, onion, olive oil, sugar, salt and pepper to a roasting dish. Stir to coat well. Roast in the oven for 45 minutes until soft and slightly charred.
  3. Cut crusts off each slice of bread and cut in half lengthways.
  4. In a small bowl, mix together flour and water to form a paste. Place one slice of mozzarella in the center of rectangle Spread flour paste around the edges and cover with the second piece of bread. Press edges together to seal. Continue with remaining bread and mozzarella.
  5. Heat oil to 170ºC.
  6. Fry each bread stick until golden brown. Drain on a rack.
  7. In a large bowl, mix together parmesan, pepper, parsley and garlic powder. Toss each drained and slightly cooled bread ravioli in the cheese mixture to coat.
  8. Place roasted tomatoes into a blender. Add stock and blend until smooth.
  9. Dip cheesy garlic bread sticks into soup and enjoy!

Cheesy Beef Stroganoff Sliders
Beef Stroganoff is a very popular dish traditionally served with egg noodles. Rich and slightly creamy with a tang of sour cream, the beef gets tender along with mushrooms and onions. Serving stroganoff as cheesy sliders is great for a crowd and party!

Ingredients
  • 2 sirloin steaks, sliced thinly against the grain
  • 2 tsp oil
  • 2 cups thinly sliced mushrooms
  • 1 onion, thinly sliced
  • 2 tbsp butter
  • 1 tbsp dijon mustard
  • 3 tbsp sour cream
  • Salt and Pepper
  • 2 cups beef stock
  • 12 soft white slider buns
  • 24 Sliced mozzarella
  • ¼ cup garlic butter
Instructions
  1. Pre-heat oven to 180ºC (350ºF). Heat oil in a large pan over medium-high heat. Add steak and cook until browned and juices are evaporated. Remove and set aside.
  2. In the same pan over medium heat, add butter, onions, and mushrooms. Cook until softened and caramelized. Add mustard and mix to coat. Pour in beef stock and stir to combine. Stir in sour cream and steak. Season with salt and pepper to taste.
  3. Cut slider buns in half and lay in a deep sheet pan. Top with 12 slices of mozzarella, stroganoff mix letting the sauce drain. (Reserve remaining sauce) Top with remaining slices of mozzarella and finally the top of the buns. Brush the buns with garlic butter and heat in the oven for 20-30 minutes until the cheese is melted. Cover with foil if the tops start to get too hard.
  4. Dip in remaining sauce and enjoy!

Creamy Nacho Scalloped Potatoes
CREAMY NACHO SCALLOPED POTATOES

Ingredients
  • 1 kg potatoes
  • 3 tbsp melted butter
  • 2 tbsp sea salt
  • 5 tbsp cajun spice
  • 500ml double cream
  • 2 cloves garlic, minced
  • 1 tbsp oil
  • 3 mixed peppers, sliced
  • 1 onion
  • 500g beef mince
  • 2 tbsp tomato puree
  • 200g passata
  • 200g Red Cheddar
  • Chopped tomatoes
  • 2 chopped jalapeños
  • Spring onions
Instructions
  1. Pre-heat oven to 180ºC (350ºF).
  2. Mix sliced potatoes with melted butter, salt, cajun seasoning and cream until combined.
  3. Pour into a large deep sheet tray and spread into a flat layer. Bake for 45 minutes until potatoes are tender.
  4. In a large saute pan, heat oil. Add peppers and onions, stir then cover and cook until softened. Remove and set aside.
  5. Add beef mince to hot pan. Cook until brown and then add 2 tbsp cajun spice, tomato puree and passata, stir to combine. Add peppers back in and cook until thick.
  6. Top potato dish with an even layer of chilli mixture and then top with grated cheese. Bake for 10 minutes.
  7. Garnish with chopped tomatoes, jalapeños, spring onions and salsa.
  8. Enjoy!

Crispy Spiral Garlic Butter Chicken
CRISPY SPIRAL GARLIC BUTTER CHICKEN

Ingredients
  • 2 chicken breasts
  • 1 cup panko breadcrumbs
  • 1 cup plain flour
  • 2 eggs, beaten
  • salt, to taste
  • oil, for frying
  • 1 cup grated, chilled butter
  • 1 cup parmesan, grated
  • 3 tbsp parsley, finely chopped
  • 3 cloves garlic, grated
  • mash potato, to serve
Instructions
  1. Mix your chilled butter, garlic, parmesan and parsley. Mix until it forms cold crumbs. Refrigerate until ready.
  2. Bash your chicken breasts as thin as possible. Spoon a couple of tablespoons of butter mix over each breast. Roll up into a spiral, then transfer to a clean piece of clingfilm and roll up tightly. Freeze for 30 minutes.
  3. Dip each roll into flour, then egg, then breadcrumbs. Repeat.
  4. Shallow fry in hot oil until nicely browned and cooked through. If you need to cook your rolls further, transfer to a hot oven for 10 minutes.
  5. Serve with pillowy mash!

Bacon Stuffed French Toast Hearts
Don't go bacon our hearts! Make these bacon stuffed heart french toasts for somebody special. Who doesn't love french toast and bacon topped with maple syrup? They're super fun and perfect for breakfast in bed.

Ingredients
  • 12 pieces soft white bread
  • 24 sliced bacon, cooked
  • 3 eggs
  • 1 cup milk
  • 1 tbsp sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • ⅔ cup sugar
  • 2 tsp cinnamon
  • 1 tbsp butter
  • 1 tbsp oil
  • Maple syrup
Instructions
  1. Cut out heart shapes from the centre of each piece of bread. Lay four half pieces of bacon in the centre of the heart.
  2. Top with another heart and using your fingers press tightly around the edge to seal the bread together. Repeat with remaining bacon and bread.
  3. In a bowl whisk together eggs, milk, cinnamon and vanilla together. Dunk stuffed hearts into the mix and coat well.
  4. Add butter and oil to a heated pan and when melted, add your soaked bread. Fry until golden brown on both sides.
  5. Toss in cinnamon sugar while still hot and serve with maple syrup.
  6. Enjoy!

Sheet Pan Chicken Fajita Crunchwrap
SHEET PAN CHICKEN FAJITA CRUNCHWRAP

Ingredients
  • 4 chicken breasts, sliced
  • 3 onions, sliced
  • 5 peppers, sliced
  • 2 tbsp fajita seasoning
  • 3 tbsp olive oil
  • 9 large flour tortillas
  • 1 tsp melted butter
  • 2 cups cheddar, grated
  • 2 cups spicy tortilla chips
  • For the dip:
  • 1 cup sour cream
  • ⅔ cup mayonnaise
  • 1 tbsp fajita seasoning
  • ½ cup pickled jalapenos
  • 1 tbsp honey
  • juice 1 lime
  • salt, to taste
Instructions
  1. Pop the chicken, peppers and onions on a large roasting tray with the 2 tbsp fajita seasoning and oil. Roast for 25 minutes at 200°C, stirring occasionally.
  2. Meanwhile, mix everything together for your dip and set aside.
  3. Brush your butter across the base of a sheet pan. Lay 7 tortillas in, as per the video. Put in half your cheese, half your chicken, all of your chips, then the rest of the chicken and cheese. Fold over the tortillas, then lay over a sheet of greaseproof and weigh down with a heavy tray.
  4. Bake for 30 minutes at 180°C.
  5. Cut up, dip and destroy!
