  • What You’ll Need:
  • 200ml Baileys Original
  • 1 tbsp granulated sugar
  • 10ml vanilla essence
  • 1 tsp cinnamon powder
  • 3 eggs
  • 2 1½- inch sliced white bread
  • Dark Chocolate
  • Butter
  • Whipped cream:
  • 25ml Baileys Original
  • ⅔ cup whipping cream
  • 2 tbsp caramel plus extra or drizzling
Instructions
  1. Cut a slit in the side of each slice of bread being careful not to go all the way through. Using your fingers press inside slightly to create a pocket. Place chocolate pieces inside each slice of bread Place in a glass dish and set aside.
  2. In a pouring jug mix together eggs, Baileys, vanilla, cinnamon, and sugar until combined. Pour the egg mixture over both sandwiches and let soak. Flipping to soak both sides evenly.
  3. In a non-stick skillet melt butter over medium-low heat. Add one sandwich at a time and cook on both sides until golden brown, about 2-3 minutes each side. Be sure to control the heat so it doesn’t burn.
  4. Meanwhile, in a medium bowl add the 25ml Baileys, whipping cream and caramel until stiff peaks are formed.
  5. Serve french toast with whipped cream and a drizzle of caramel.

Ingredients
  • ½ cup chopped gherkins
  • 1 tbsp salt
  • 1 tbsp pepper
  • 1 tsp garlic powder
  • 12 chunks red cheddar
  • 24 rashers streaky bacon
  • 3 tbsp BBQ sauce
Instructions
  1. Preheat the oven to 180°C/360°F.
  2. Mix together the beef mince, gherkins, salt, pepper and garlic powder and form into 12 small patties.
  3. Add a cube of cheese to the centre of each and roll up the sides to make a cheese stuffed meatball.
  4. Wrap each meatball with two pieces of bacon, tucking the ends underneath.
  5. Arrange them on a baking tray and bake for 20 minutes then brush with BBQ sauce and bake again for a further 10/15 minutes until the bacon is sticky and crisp.

Ingredients
  • 5 medium sized chicken breasts
  • 2 cups flour, sifted, in a bowl
  • 3 eggs, beaten
  • 2 cups breadcrumbs
  • 3 liters oil
Instructions
  1. Preheat the oil to 160°C/380°F.
  2. Take each chicken breasts and cut parallel lines almost all of the way through, around ½ a cm apart, down the length of each breast.
  3. Dip the breasts in the flour, making sure it gets down all the slits, then shake off the excess.
  4. Dip them in the eggs and shake off the excess then finally roll them thoroughly in breadcrumbs.
  5. Pick them up cut side up with a pair of tongs, letting them drape over the sides, then dip them in the hot oil, letting them cook to hold their shape before letting go and letting them cook in the hot oil for around 4 minutes, until brown and cooked through.

Ingredients
  • 300g beef mince
  • 1 tsp salt
  • ½ tsp pepper
  • 12 thin slices of yellow cheddar cheese
  • 6 cooked bacon rashers
  • ¼ white onion, finely chopped
  • Puff pastry
  • Sesame seeds
  • Egg wash
Instructions
  1. Pre-heat oven to 200C (400f). Split beef mince into 50g balls and flatten each into a very thin rectangle.
  2. Heat oil in a cast iron pan over medium heat. Add beef patties to hot pan and season each side with salt and pepper. Sear on both sides until brown, about 1 minute each, set aside.
  3. Roll out puff pastry and cut into large rectangles abbot 2 inches larger than the patties.
  4. Place on puff pastry sheet down, top with one beef patty followed by 2 slices of cheese, 2 slice of bacon, cheese, and another beef patty. Brush edges with egg wash. Cover with another large piece of puff pastry and press to seal edges. Cut with a pizza cutter to adjust if needed and use a fork to completely seal sides.
  5. Brush entire top with egg wash and sprinkle with sesame seeds. Bake in the oven for 15 minutes until golden brown.
  6. Serve with condiments

  • 5 chicken breasts, shredded
  • 1½ bowls passata
  • ¾ bowl BBQ sauce
  • 1 tbsp salt
  • 1 tsp pepper
  • 20 rashers streaky bacon
  • 3 cups grated cheddar
  • 3 cups grated mozzarella
  • 9-12 fresh lasagna sheets
Instructions
  1. Mix together the shredded chicken with the passata, BBQ sauce, salt and pepper.
  2. In a greased lasagna dish spread a layer of the chicken then top with bacon. Sprinkle with cheddar then mozzarella and top with a layer of the pasta sheets.
  3. Repeat this process until you get to the top of the dish then sprinkle with more cheese and bake for 20 minutes until the pasta is cooked through.

  • 3 chicken breasts
  • 2 tbsp oil
  • ½ tsp salt
  • ¼ tsp pepper
  • 2 tbsp butter
  • 1 white onion, diced
  • 2 garlic clove minced
  • ¼ cup tomato paste
  • 1 tsp paprika
  • ½ tsp cayenne
  • 1 cup cream
  • 2 cups spinach
  • ½ cup grated parmesan, plus extra to garnish
  • Juice of 1 lemon
  • ¼ cup pasta water
  • 1 tbsp parsley, finely chopped
  • 500 g spaghetti, cooked
Instructions
  1. Heat oil in a large non-stick pan, over medium heat. Add chicken breasts and sear both sides with salt and pepper until golden brown and cooked. Remove, set aside and slice.
  2. Add butter to the pan and melt. Add onions stirring and cooking until soft. Add tomato paste, paprika and cayenne, stir and cook for 5 minutes until oil starts to separate.
  3. Stir in cream and spinach; bring to a simmer and add sliced chicken, parmesan, parsley and juice of one lemon.
  4. Stir in cooked spaghetti until coated.
  5. Serve with additional parmesan cheese.
  6. Enjoy!

Leftover Pizza Corn Dogs
  • Leftover slices margherita pizza
  • Hot dogs (same number as slices you’ve got left)
  • 2.5 cups/350g fine cornmeal
  • 1 cup/150g plain flour
  • 2 tbsp caster sugar
  • 1 tsp mustard powder (or mustard – if using the wet stuff, mix in when you add the wet ingredients)
  • 1½ tsp baking powder
  • 1 tsp salt
  • 1 tsp cayenne
  • 2 large eggs
  • 1¼ cups/300ml whole milk
  • ½ cup/100ml water
  • 2 litres oil, for frying
Leftover Pizza French Toast Bake
  • As many slices of leftover pizza as you can spare (preferably 5 or 6)
  • 6 eggs
  • 1¼ cups/250ml milk
  • 1 tsp Italian seasoning
  • 1 tsp chilli flakes
  • 1 tsp salt
  • 1 cup grated mozzarella
  • Bunch of basil leaves
Leftover Pizza Grilled Cheese
  • 2 slices Pepperoni Pizza
  • 4 slices swiss cheese
  • knob of butter, for frying
  • ketchup, to serve
Leftover Pizza Lasagna
  • 8 slices Pepperoni pizza
  • 2 cups pizza sauce
  • 1 cup mozzarella, sliced
  • 1 cup ricotta
  • 1 egg
  • 1 cup parmesan
  • ½ tsp salt
Instructions
Leftover Pizza Corn Dogs
  1. Microwave each slice of pizza on high for 30 seconds, until the cheese is bubbling.
  2. Leave to cool slightly (just enough that you don’t burn yourself) then wrap around each hot dog.
  3. Leave these to cool and set. When they’ve set stick some sturdy skewers through the hot dogs.
  4. Make the batter by whisking together the cornmeal, flour and other dry ingredients. When thoroughly combined add the eggs, milk and water. Pour the batter into a relatively narrow, high vessel – a pint glass or small vase would work really well. It needs to be deep enough to dip the whole pizza wrapped hot dog in.
  5. Preheat the oil to 170°C/380°F.
  6. Dip each pizza hot dog in the batter, then hold it carefully by the stick and submerge it in the oil.
  7. Keep it held underneath the surface until the batter has puffed up, then remove and leave to dry on some kitchen paper.
  8. Serve with ketchup and mustard.
Leftover Pizza French Toast Bake
  1. Chop up the leftover pizza into manageable chunks and place in a dish. You need them to be about two layers high.
  2. Whisk together the egg, milk and dry ingredients and pour over the pizza slices.
  3. Top with the grated mozzarella and basil and cover with tin foil.
  4. Bake for 40 minutes covered then 10 minutes uncovered to allow it to crisp up.
Leftover Pizza Grilled Cheese
  1. Lay a slice of pizza on a board and top with swiss cheese. Top with the other slice of pizza, cheese side facing down.
  2. Heat a knob of butter in a pan and add your sandwich. Fry gently with a lid on until the cheese has begun to melt.
  3. Flip your sandwich and fry, again with the lid on, until the cheese has fully melted.
  4. Serve with ketchup!!!
Leftover Pizzagna
  1. Put ½ cup of pizza sauce in a lasagna dish. Lay in 4 of your pizza slices. Mix ricotta with egg, parmesan and salt. Smooth this over your pizza slices. Top with more pizza sauce and mozzarella. Go on with your final layer of pizza, then top with remaining pizza sauce and mozzarella. Cover and bake for 30 minutes.

  • 1 burger patty, flattened slightly with a rolling pin so it fits a slice of bread
  • 1 tbsp oil, for frying
  • 2 slices of thick cut bread
  • 4 slices cheddar cheese
  • 4 eggs
  • ½ cup milk
  • ½ cup heavy cream
  • ½ tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp oil
  • 1 tbsp butter
Instructions
  1. Fry the beef patty in hot oil until both sides are brown and it’s cooked through.
  2. Lay two slices of bread on top of one slice of bread, then lay down the burger and put two more slices of cheese on top, then the final slice of bread.
  3. Whisk together eggs, milk, heavy cream, garlic powder, salt and black pepper and dip the sandwich completely in the mixture.
  4. Heat the oil and butter together then fry the sandwich gently on both sides until the cheese has melted.
  5. Serve with gherkins (if you wish), ketchup and mustard.

Ingredients
  • 1 cup spicy hot mini pepperoni, sliced finely
  • 2 tbsp olive oil
  • ¼ cup unsalted butter
  • ½ small white onion, finely diced
  • 1 cup plain flour
  • 2 cups whole milk, hot
  • ½ cup grated mozzarella
  • 2 tbsp finely chopped basil
  • ½ tsp oregano
  • 1 tsp of salt
  • ½ tsp black pepper
  • 2 free-range eggs, beaten
  • 150g panko breadcrumbs
  • 1 litre olive oil, to fry
Instructions
  1. Heat the oil and butter in a medium non-stick saucepan over a medium heat add the onion and pepperoni. Cook for about 5-6 minutes until the onion has softened.
  2. Add the flour and cook, stirring regularly, until no longer raw.
  3. Gradually whisk in the hot milk, until you have a smooth paste. Cook for another 10 minutes until thick like mashed potato. Stir in mozzarella, basil, oregano, salt, and pepper. Transfer to a shallow dish then cover, pressing the clingfilm on to the surface of the sauce to prevent a skin from forming. Refrigerate for at least 2 hours.
  4. Put the beaten eggs into a bowl, and the panic breadcrumbs into another and remaining ½ cup flour in another. Season the flour with remaining salt and pepper. With floured hands, roll spoonfuls of the mixture into cylinders and dip these into the egg, then roll in the panko breadcrumbs until well coated.
  5. Heat the oil in a large pan to 180C, or until it begins to shimmer. Fry the croquetas in batches for a couple of minutes until golden all over, then lift out with a slotted spoon and drain slightly. Serve immediately.

Ingredients
  • 2 steaks, cut into thin strips
  • 2 green peppers, sliced thinly
  • 1 white onion, sliced thinly
  • 2 cloves garlic, minced
  • 2 tsp Worcestershire sauce
  • 2 tsp salt
  • 1 tsp pepper
  • 1 tbsp cooking oil
  • 1 cup cream cheese
  • 2 cup cream, hot
  • 3 cups mozzarella, grated
  • 1 tsp paprika
  • ¼ tsp ground nutmeg
  • 1 tsp salt
  • 10 lasagna sheets, par cooked
  • 1 Jalapeño, deseeded and finely chopped (optional)
Instructions
  1. In a large skillet over medium-high heat, add ½ tbsp oil. Add sliced steak and cook until browned and no liquid remains. Remove from pan and set aside.
  2. In the same pan heat remaining oil. Add onions and peppers. Cover and cook until softened and lightly caramelized, about 10 minutes. Add steak back in with garlic, spices and Worcestershire sauce. Stir until garlic is just cooked, about 2 minutes. Set aside to cool
  3. In a blender add cream cheese, 1 cup mozzarella, spices and hot cream. Blend until smooth.
  4. Preheat oven to 180C (350F). Grease a large oven-proof dish.
  5. Take lasagna sheets and cut in half, sprinkle with cheese leaving an open edge of pasta at the end. Top with steak mixture evenly but not too much, about 1-2tbsp per roll. Roll up tightly. Cut each roll in half.
  6. Pour ¼ of the sauce on the bottom of the pan. Arrange the pasta pinwheels neatly on top of the sauce. Cover with remaining sauce.
  7. Bake for 30-40 minutes until sauce is bubbling and pasta is just golden brown on top.
  8. Sprinkle with jalapeño pepper and enjoy!
