Chocolate Stuffed French Toast Muffins
Another take on stuffed french toast. These are easy to take on the go with you and can be filled with a number different treats. The two pieces of French toast adhere through cooking and become a fun stuffed muffin!

Ingredients
  • 24 slices soft white bread
  • 4 eggs
  • 2 tbsp milk
  • 1½ tsp cinnamon
  • ½ cup plus 1 tbsp sugar
  • ½ tsp vanilla essence
  • 2 cups chocolate hazelnut spread
Instructions
  1. Pre-heat oven to 180ºC (350ºF) and grease a 12 whole cupcake tin, set aside.
  2. Using a 4” round cookie cutter, cut out the centre of each piece of white bread, keeping the crusts for breadcrumbs.
  3. In a bowl whisk together eggs, milk, ½ tsp cinnamon and 1 tbsp sugar until smooth. Dip a round of bread in the egg and then press into the centre of a cupcake cavity. Repeat with remaining rounds.
  4. Fill each with a heaping tablespoon of chocolate hazelnut spread. Cover with another egg dipped round and gently press the edges to adhere and press into the sides of the tin.
  5. Mix together remaining sugar and cinnamon, sprinkle generously over top of each and bake for 20-25 minutes until cooked and golden brown.

Creamy Nacho Scalloped Potatoes
CREAMY NACHO SCALLOPED POTATOES

Ingredients
  • 1 kg potatoes
  • 3 tbsp melted butter
  • 2 tbsp sea salt
  • 5 tbsp cajun spice
  • 500ml double cream
  • 2 cloves garlic, minced
  • 1 tbsp oil
  • 3 mixed peppers, sliced
  • 1 onion
  • 500g beef mince
  • 2 tbsp tomato puree
  • 200g passata
  • 200g Red Cheddar
  • Chopped tomatoes
  • 2 chopped jalapeños
  • Spring onions
Instructions
  1. Pre-heat oven to 180ºC (350ºF).
  2. Mix sliced potatoes with melted butter, salt, cajun seasoning and cream until combined.
  3. Pour into a large deep sheet tray and spread into a flat layer. Bake for 45 minutes until potatoes are tender.
  4. In a large saute pan, heat oil. Add peppers and onions, stir then cover and cook until softened. Remove and set aside.
  5. Add beef mince to hot pan. Cook until brown and then add 2 tbsp cajun spice, tomato puree and passata, stir to combine. Add peppers back in and cook until thick.
  6. Top potato dish with an even layer of chilli mixture and then top with grated cheese. Bake for 10 minutes.
  7. Garnish with chopped tomatoes, jalapeños, spring onions and salsa.
  8. Enjoy!

Crispy Spiral Garlic Butter Chicken
CRISPY SPIRAL GARLIC BUTTER CHICKEN

Ingredients
  • 2 chicken breasts
  • 1 cup panko breadcrumbs
  • 1 cup plain flour
  • 2 eggs, beaten
  • salt, to taste
  • oil, for frying
  • 1 cup grated, chilled butter
  • 1 cup parmesan, grated
  • 3 tbsp parsley, finely chopped
  • 3 cloves garlic, grated
  • mash potato, to serve
Instructions
  1. Mix your chilled butter, garlic, parmesan and parsley. Mix until it forms cold crumbs. Refrigerate until ready.
  2. Bash your chicken breasts as thin as possible. Spoon a couple of tablespoons of butter mix over each breast. Roll up into a spiral, then transfer to a clean piece of clingfilm and roll up tightly. Freeze for 30 minutes.
  3. Dip each roll into flour, then egg, then breadcrumbs. Repeat.
  4. Shallow fry in hot oil until nicely browned and cooked through. If you need to cook your rolls further, transfer to a hot oven for 10 minutes.
  5. Serve with pillowy mash!

Bacon Stuffed French Toast Hearts
Don't go bacon our hearts! Make these bacon stuffed heart french toasts for somebody special. Who doesn't love french toast and bacon topped with maple syrup? They're super fun and perfect for breakfast in bed.

Ingredients
  • 12 pieces soft white bread
  • 24 sliced bacon, cooked
  • 3 eggs
  • 1 cup milk
  • 1 tbsp sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • ⅔ cup sugar
  • 2 tsp cinnamon
  • 1 tbsp butter
  • 1 tbsp oil
  • Maple syrup
Instructions
  1. Cut out heart shapes from the centre of each piece of bread. Lay four half pieces of bacon in the centre of the heart.
  2. Top with another heart and using your fingers press tightly around the edge to seal the bread together. Repeat with remaining bacon and bread.
  3. In a bowl whisk together eggs, milk, cinnamon and vanilla together. Dunk stuffed hearts into the mix and coat well.
  4. Add butter and oil to a heated pan and when melted, add your soaked bread. Fry until golden brown on both sides.
  5. Toss in cinnamon sugar while still hot and serve with maple syrup.
  6. Enjoy!

Sheet Pan Chicken Fajita Crunchwrap
SHEET PAN CHICKEN FAJITA CRUNCHWRAP

Ingredients
  • 4 chicken breasts, sliced
  • 3 onions, sliced
  • 5 peppers, sliced
  • 2 tbsp fajita seasoning
  • 3 tbsp olive oil
  • 9 large flour tortillas
  • 1 tsp melted butter
  • 2 cups cheddar, grated
  • 2 cups spicy tortilla chips
  • For the dip:
  • 1 cup sour cream
  • ⅔ cup mayonnaise
  • 1 tbsp fajita seasoning
  • ½ cup pickled jalapenos
  • 1 tbsp honey
  • juice 1 lime
  • salt, to taste
Instructions
  1. Pop the chicken, peppers and onions on a large roasting tray with the 2 tbsp fajita seasoning and oil. Roast for 25 minutes at 200°C, stirring occasionally.
  2. Meanwhile, mix everything together for your dip and set aside.
  3. Brush your butter across the base of a sheet pan. Lay 7 tortillas in, as per the video. Put in half your cheese, half your chicken, all of your chips, then the rest of the chicken and cheese. Fold over the tortillas, then lay over a sheet of greaseproof and weigh down with a heavy tray.
  4. Bake for 30 minutes at 180°C.
  5. Cut up, dip and destroy!

Chicken Fried Buffalo Triangles
Favourite buffalo chicken stuffed into a tortilla, and then chicken fried! Delicious crispy coating and even better when served with our favourite ranch dressing. Try tossing them in extra buffalo sauce for kick!

Ingredients
  • 4 cups shredded chicken
  • ⅔ cup cream cheese
  • ½ cup hot sauce
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp salt
  • 2 tbsp chopped chives
  • 10 Tortillas, cut in half
  • ¼ flour
  • ¼ cup water
  • 3 eggs, whisked
  • 2 cups seasoned flour
  • Ranch Dressing
  • Buffalo sauce
Instructions
  1. In a large bowl mix together chicken, cream cheese, hot sauce, paprika, garlic powder, salt and chives until combined.
  2. In a small bowl, mix together ¼ cup flour and ¼ cup water to form a paste.Spread a thin layer of paste on ⅓ of one half of tortilla. Fold over into a cone shape. Repeat with remaining tortillas.
  3. Fill each cone with buffalo chicken mixture and use more of the paste to seal the edge.
  4. Heat oil to 170ºC.
  5. Dip each triangle in egg letting excess drip off, then into the flour shaking off excess. Repeat for a double coat. Repeat with remaining triangles.
  6. Fry in batches until golden brown.
  7. Serve with Ranch and extra buffalo sauce.
  8. Enjoy!

Banana Bread Cheesecake Roll
A banana bread meets Swiss roll meets cheesecake - the start of the most delicious joke ever.

Ingredients
  • 3 bananas
  • ½ cup brown sugar
  • ½ cup caster sugar
  • 3 eggs, beaten
  • ½ cup butter
  • ¾ cup flour
  • 1 tsp salt
  • 1½ tsp baking soda
  • 1 cup cream cheese
  • 3 tbsp butter
  • 2 cups icing sugar
  • Chocolate shavings
Instructions
  1. Preheat the oven to 180°C/360°F.
  2. Mash the bananas and whisk in the sugars, eggs and butter until light and fluffy.
  3. Sift in the flour, baking soda and salt.
  4. Fold everything together and pour onto a lined rectangular tray. Bake for around 15 minutes - don't bake too long or the cake will crack when rolled.
  5. When it's out of the oven cover with a lightly oiled sheet of baking paper and flip the tray to release the cake, then roll it up into a spiral with the paper inside. Allow to cool for an hour or so.
  6. Whisk together the cream cheese, butter and icing sugar.
  7. Unroll the cake and remove the greaseproof paper, then spread with the cream cheese mixture and roll it up again. Chill for an hour or so.
  8. Pour over the remaining cream cheese mix and sprinkle with chocolate shavings.

Ice Cube Cookie Dough Chocolates
Bite sized edible cookie dough coated in chocolate, ready to be dunked in a glass of milk. These no bake treats are easy to prepare and great to share!

  • Coating:
  • 500g dark chocolate, finely chopped
  • 2 tbsp coconutoil
  • ¾ cups butter, softened
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 1 ½ cups flour
  • 1 tsp salt
  • 1 tsp vanilla
  • 2 tsp milk
  • 1 cup chocolate chips
Instructions
  1. In a microwavable jug, add chopped chocolate and coconut oil. Microwave. on high for 2 minutes until completely melted. Pour into ice cube tray and tilt tray in all directions, allowing chocolate to cover the sides. Flip trays upside down to let excess chocolate drip out. Keep remaining chocolate for topping. Then refrigerate for 5 minutes.
  2. In a large bowl, cream together butter, brown sugar, granulated sugar ,and milk until pale a fluffy.
  3. Heat flour in microwavable-bowl for 1 minute. Let cool. Add flour, salt, and chocolate chips; fold until combined.
  4. Fill each ice cube mould with cookie dough. Top with remaining chocolate (reheat in microwave if needed).
  5. Chill again for 30 minutes or until set.
  6. Enjoy!

Croque Monsieur Crêpe Parcels
Making crepes looks harder than it actually is. THere’s enough batter for you to practice until you perfect them. They pair well with ham and cheese and especially béchamel. Serve these parcels with a side salad.

Ingredients
  • 2½ cups flour
  • 6 eggs
  • 6 tbsp butter melted
  • 2¼ cups milk
  • 1 tsp salt
  • 1½ cups bechamel
  • Sliced Swiss cheese
  • Sliced ham
  • ½ cup grated Swiss cheese
  • Chopped parsley
Instructions
  1. In a large bowl whisk together eggs, milk, butter flour and salt until smooth. Pour through a strainer if needed.
  2. Heat a non-stick pan over medium heat slightly greased with butter. Pour about 1 ladle full (1/4 cup) of batter into the centre and swirl to coat the pan evenly. Cook for 1 minute until just golden brown on the bottom. Flip and cook for an additional 30 seconds, set aside to cool.
  3. Lay out one crepe. Spread about 1-2 tbsp béchamel in the centre. Layer with sliced ham and sliced cheese finishing with a slice of ham. Fold crepe into a parcel. Lay seam side down into a parchment lined baking dish.
  4. Top with additional béchamel and grated Swiss cheese.
  5. Bake, covered for 20 minutes at 180ºC. Remove cover and grill for 5 minutes until just golden brown. Sprinkle with chopped parsley.
  6. Enjoy!

Baileys S’mores Cheesecake
BAILEYS S’MORES CHEESECAKE

Ingredients
  • 250g crushed cookie crumbs
  • 50g granulated sugar
  • 115g butter, melted
  • 750g cream cheese, softened
  • 150g granulated sugar
  • 3 large eggs
  • 30g flour
  • 1 tsp vanilla extract
  • 50ml Baileys
  • 250ml Baileys
  • 50g cocoa powder
  • 50g golden syrup
  • 100g chocolate, chopped
  • Marshmallows
Instructions
  1. Pre-heat oven to 180C (350F). Line a spring form pan with parchment paper.
  2. In a medium bowl mix together cookie crumbs, sugar, and butter until combined and wet sand-like texture. Press into the base of the spring form pan and use the back of a spoon or small bowl to press in.
  3. Bake for 10 minutes, set aside to cool.
  4. For the cheesecake filling, beat cream cheese with sugar, eggs, vanilla, flour and baileys until fluffy and smooth. Pour over graham crust. Bake in a 180ºC (350ºF) oven for 35 minutes. Turn oven off and keep oven ajar and let cheesecake cool.
  5. Remove from oven and cool completely for 4 hours in the fridge or overnight.
  6. In a small pot, whisk together Baileys chocolate luxe, cocoa powder, and golden syrup together. Bring to a boil stirring, then let simmer for 3 minutes to thicken. Remove from heat and whisk in chocolate until smooth.
  7. Pour fudge sauce over cooled cheesecake. Top with marshmallows and toast with a blow torch.
  8. Enjoy!
