Aligot (Cheesy Potatoes)

Ingredients
  • 1 ½ lb yukon gold potato, peeled and cut into 1-inch (2 cm) pieces
  • 2 cloves garlic, peeled
  • 5 cups cold water
  • salt, to taste
  • ½ cup butter, cubed
  • 1 cup heavy cream
  • 2 ½ cups shredded cheese, such as Swiss, Comté, Fontina or Gruyère
Instructions
  1. In a large pot over medium-high heat, add the potatoes, garlic, and cover with cold water. Add a big pinch of salt.
  2. Bring to a boil, reduce the heat to medium-low and simmer until the potatoes are fork-tender, about 20 minutes.
  3. Drain potatoes and garlic in a colander and press them through the holes of the colander with a metal spoon back into the pot. Alternatively, use a potato ricer.
  4. Add the butter and one clove of garlic to the potatoes and stir over medium-low heat with a rubber spatula until melted and smooth.
  5. Pour in the heavy cream and stir again until combined.
  6. Gradually add in the cheese, stirring between each addition, until completely melted.
  7. Continue stirring the potatoes until smooth, thick, and elastic.
  8. Begin to stretch the potatoes upwards with the spatula. If the mixture is breaking, add in more cheese. If the mixture is too thick add in more cream.
  9. Serve immediately as a side with roasted veggies or a meat of choice, or alone with fresh chopped garlic!

Ingredients
  • ¼ pound spiral-cut ham, cubed
  • 2 tablespoon unsalted butter
  • 1 large onion, thinly sliced
  • 1 small wheel brie cheese, sliced
  • 1 green apple, thinly sliced
  • 1 tablespoon Dijon mustard
  • 2 rolls crescent rolls dough
  • Fresh herbs for garnish
Instructions
  1. Heat a large sauté pan over medium heat and add the butter. Caramelize the onion until golden brown and very soft, stirring occasionally.
  2. Preheat oven to 375˚F/190˚C.
  3. Unroll the crescent roll dough and separate into triangles. On a large baking sheet, place a small bowl (about 5 inches in diameter) in the center. Arrange the triangles in a ring around the bowl, overlapping slightly. The points should be facing outward.
  4. Spread the Dijon mustard on the dough close to the ring. Layer the ham, apple, brie, and caramelized onions on top of the Dijon.
  5. Bring the top of the triangle over the filling, and tuck the edges under the bottom layer of dough. Repeat around the ring until the entire filling is enclosed.
  6. Bake 25-30 minutes or until golden brown.
  7. Cut into wedges.
  8. Enjoy!

  • 2 acorn squashes
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 ¾ cups vegetable stock
  • 1 cup brown rice, rinsed
  • 1 tablespoon olive oil
  • ½ red onion, diced
  • 1 clove garlic, minced
  • 1 bell pepper, diced
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • ¼ teaspoon onion powder
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon dried oregano
  • 15 oz black bean, 1 can, drained and rinsed
  • 11 oz corn, 1 can, drained and rinsed
  • 10 oz roasted diced tomato, 1 can
  • ½ cup shredded cheese blend
  • avocado, sliced, to serve
  • fresh cilantro, chopped, to serve
Instructions
  1. Preheat oven to 325°F (170°C).
  2. Cut off the ends of squash before cutting squash in half horizontally. Scoop out seeds and save for roasting.
  3. Drizzle squash with olive oil and sprinkle salt and pepper. Place cut-side up on a parchment paper-lined baking sheet.
  4. Bake for 40 minutes, or until tender.
  5. In a medium saucepan, add vegetable stock and rice.
  6. Stir and bring to boil over high heat.
  7. Cover and simmer for 45 minutes. Remove saucepan from heat.
  8. Heat olive oil in a large saucepan or skillet over medium heat.
  9. Add onions, stirring frequently until translucent.
  10. Add garlic and cook until fragrant.
  11. Add bell pepper, salt, pepper, chili powder, cumin, paprika, onion powder, cayenne pepper, and dried oregano. Stir until spices are evenly distributed.
  12. Mix in black beans, corn, tomatoes, and cooked rice.
  13. Fill squash halves with rice mixture and sprinkle with cheese.
  14. Bake for 5 minutes, or until cheese is melted.
  15. Top with avocado slices and cilantro.
  16. Enjoy!

Ingredients
  • 2 cups unsalted butter, softened to room temperature
  • 2 cups powdered sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 teaspoons peppermint extract
  • 6 cups all-purpose flour
  • 1 teaspoon salt
  • ¾-1 teaspoon red food coloring
  • Crushed peppermint candies for decorating
  • Frosting for decorating
Instructions
  1. Cream softened butter and sugar in a mixing bowl in a stand mixer or with a hand mixer until an icing like consistency forms. Mix in the eggs and vanilla.
  2. On a low speed mix in flour and salt until just incorporated, making sure not to overwork the dough.
  3. Take out about two thirds of the dough, reserve.
  4. Place the remaining dough remaining in the mixer and add peppermint and red food coloring (until desired color is reached) and mix just until combined.
  5. Wrap each of the doughs in plastic and chill for at least 1 hour.
  6. When ready to bake the cookies, preheat the oven to 375°F/190˚C and take out dough.
  7. Take the uncolored dough and roll it out to about ¼-½ inch thick.
  8. Use cut outs to make cookies, place on a baking sheet with parchment.
  9. Re-ball the leftover dough from cut outs and take off about 2 tablespoons worth of dough from the both the uncolored and red doughs.
  10. Roll each into a rope about 4 inches long. Pinch the two ropes together at the top and gently twist them together.
  11. Place the twisted cookies on the baking sheet and gently hook the twist to create a candy cane shape.
  12. Repeat with the remaining dough.
  13. Bake all cookies for 10 to 12 minutes, until the edges of the cookies are just barely starting to turn golden.
  14. When finished garnish candy cane twists with crushed candy canes.
  15. When cookies are cooled, decorate with frosting.
  16. Enjoy now or give as gifts to friends!

  • Waffles
  • 2 cups flour
  • ½ teaspoon salt
  • 4 teaspoons baking powder
  • 2 eggs
  • 2 tablespoons sugar
  • ½ vegetable oil
  • 1 cup milk
  • 1 cup Baileys Irish Cream
  • Bailey’s whipped cream
  • 1 cup whipping cream
  • ¼ cup Bailey’s Irish Cream
  • 1 teaspoon vanilla extract
  • 2 tablespoon powdered sugar
Instructions
  1. 1. To make waffles, sift the dry ingredients into a large bowl and mix to combine.
  2. 2. Separate egg whites and egg yolks into two different bowls.
  3. 3. Using a hand mixer whip egg whites until stiff peaks form.
  4. 4. In the bowl with the egg yolks stir in milk, Baileys Irish Cream, oil, and vanilla.
  5. 5. Add the wet ingredients into the dry ingredients and mix well.
  6. 6. Fold in the whipped egg whites.
  7. 7. Pour 1 cup of the mix into the greased and heated waffle iron on medium-high heat for 6–8 minutes
  8. 8. To make whipped cream, beat whipping cream in a bowl until stiff peaks form. Then fold in the remaining ingredients until combined. Spoon a dollop of whipped cream onto the waffles to serve.

I am a big fan of pizza and could probably eat pizza (or tacos) pretty much everyday of the week. Although that sounds delicious, it is probably not the most healthy of diets. Enter caulfilower pizza. When I want pizza but want one that is a little more nutritious, this is what I turn to. Although it is not exactly like pizza dough, this cauliflower pizza is pretty darn close. Feel free to put all of your favorite toppings on the crust. I like old school pizza sauce, cheese and basil but the sky is the limit in what you can top with pizza crust.

Ingredients
  • 1 medium sized cauliflower, stem removed and cut into florets
  • ¾ cup Parmesan cheese, grated
  • 1 egg, beaten
  • 1 tsp. salt
  • 1 cup almond flour
  • 1 tsp. dried oregano
  • Favorite pizza toppings such as marinara sauce, mozzarella, sausage and basil
Instructions
  1. Pre-heat oven to 425°F. Line a sheet tray with parchment paper.
  2. Using a food processor, pulse the caulfiower until it is well blended and the pieces are about the size of rice. You may have to do this in batches.
  3. Place processed cauliflower in a microwave safe bowl and microwave on high for about 3 minutes or until the cauliflower has started to steam. Remove and carefully place cauliflower on a clean kitchen towel (or nut bag) and squeeze as much water out as possible. Discard the water and place the cauliflower in a large bowl. Add Parmesean cheese, egg, salt, almond flour, and oregano. Using your hands shape the cauliflower into a round disk about ½" thick and 10" in diameter. Bake pizza crust for about 25 to 30 minutes or until the crust begins to brown. Remove and add your favorite toppings. Return the pizza to the oven and continue to bake until the cheese is melted, about 10 minutes.
  4. Let cool for at least 5 minutes before cutting.
  5. Makes 2 servings.

  • 5 leaves fresh mint
  • 2 lime wedges
  • 1 fl oz ginger syrup
  • ice
  • 2 fl oz bourbon
  • 3 fl oz club soda
  • fresh mint, to serve
  • lime wedge, to serve
GINGER SYRUP
  • 1 cup fresh ginger, peeled and chopped
  • 1 cup sugar
  • 2 cups water
Instructions
  1. In a small saucepan, combine ginger syrup ingredients and bring to a boil. Lower to a simmer and cook for 10 minutes.
  2. Strain through a sieve and cool.
  3. Place the mint and one lime wedge in the bottom of tall glass. Muddle well and add 1 ounce (30 ml) of ginger syrup. Add the second lime wedge and muddle again.
  4. Top off glass with the bourbon, ice, and club soda. Stir well and garnish with a lime wedge and a few mint leaves.
  5. Enjoy!

Ingredients
  • DOUGH
  • 2 cups whole milk, warm to the touch
  • ½ cup unsalted butter, melted
  • ½ cup granulated sugar
  • 1 pack active dry yeast
  • 5 cups flour, divided
  • 1 teaspoon baking powder
  • salt, to taste
  • FILLING
  • ¾ cup butter, softened
  • ¾ cup light brown sugar
  • 2 tablespoons pumpkin spice mix
  • FROSTING
  • 1 cup powdered sugar
  • ¼ cup coffee
  • 2 tablespoons whole milk
Instructions
  1. Generously butter two cast-iron pans or disposable foil cake pans.
  2. In a large bowl, whisk together warm milk, melted butter, and sugar. The mixture should be just warm, registering between 100-110˚F (37-43˚C). If it is hotter, allow to cool slightly.
  3. Sprinkle the yeast evenly over the warm milk mixture and let set for 1 minute.
  4. Add 4 cups (500g) of flour to the milk mixture and mix with a wooden spoon until just combined.
  5. Cover the bowl with a towel or plastic wrap and set in a warm place to rise for 1 hour.
  6. Preheat oven to 350˚F (180˚C).
  7. After 1 hour, the dough should have nearly doubled in size.
  8. Remove the towel and add an additional ¾ cup (95g) of flour, baking powder, and salt. Stir well, then turn out onto a well-floured surface.
  9. Knead the dough lightly, adding additional flour as necessary, until the dough just loses its stickiness and does not stick to the surface.
  10. Roll the dough out into a large rectangle, about ½-inch (1 cm) thick. Fix corners to make sure they are sharp and even.
  11. In a medium bowl, combine softened butter, brown sugar, and pumpkin spice mix, and stir well.
  12. Spread the mixture onto the rolled dough.
  13. Roll up the dough, forming a log, and pinch the seam closed. Place seam-side down. Trim off any unevenness on either end.
  14. Cut the log in half, then divide each half into 7 evenly sized pieces, about 1½ inches (4 cm) thick.
  15. Place 7 cinnamon rolls in each skillet or cake pan, one in the center, six around the sides. Cover with plastic wrap and place in a warm place to rise for 30 minutes.
  16. To prepare the frosting, in a medium-size mixing bowl, whisk together powdered sugar, coffee, and milk until smooth.
  17. Remove plastic wrap, and bake the cinnamon rolls in a preheated oven for 25-30 minutes, until golden brown.
  18. While still warm, drizzle evenly with frosting.
  19. Enjoy!

  • 4 tablespoons olive oil, divided
  • 1 yellow onion, diced
  • 3 bell peppers, seeded and chopped
  • 6 cloves garlic, minced, divided
  • salt, to taste
  • pepper, to taste
  • 1 lb eggplant, cut into ½-inch (1 cm) cubes
  • 2 yellow squashes, cut into ½-inch (1 cm) cubes
  • 2 medium zucchinis, cut into ½-inch (1 cm) cubes
  • 12 oz tomato paste
  • 1 tablespoon dried oregano
  • 2 tablespoons fresh thyme
  • 28 oz diced tomato
  • 30 oz ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ¼ cup fresh basil, chopped
  • ½ cup fresh parsley, chopped
  • 1 egg
  • 2 japanese eggplants, thinly sliced
  • 2 zucchinis, thinly sliced
  • 2 yellow squashes, thinly sliced
  • 6 roma tomatoes, thinly sliced
  • lasagna noodle, cooked
Instructions
  1. Preheat oven to 400°F (200°C).
  2. Add 2 tablespoons of olive oil to a skillet on medium-high heat. Once warmed, add the onion, bell peppers, 4 minced garlic cloves, salt, and pepper. Cook, stirring occasionally, until golden brown and caramelized.
  3. Add the eggplant, yellow squash, zucchini, tomato paste, dried oregano, thyme, and more salt and pepper. Cook until the vegetables are soft and the tomato paste deepens in color and starts to stick to the bottom.
  4. Add the diced tomatoes and bring the mixture to a simmer. Cook on low for at least 30 minutes. Set aside to prepare the rest of the lasagna layers.
  5. In a large bowl, mix together the ricotta, mozzarella, basil, parsley, salt, and pepper. Set aside.
  6. To a bowl, add the sliced Japanese eggplant, yellow squash, zucchini, eggplant, Roma tomatoes, garlic, 1 tablespoon thyme, salt, pepper, and 2 tablespoons olive oil, and gently toss to combine.
  7. In a 9x13-inch (23x33 cm) glass baking pan, add a layer of the ratatouille to the bottom. Top with lasagna noodles, and spread a layer of the ricotta mixture, then shingle alternating slices of the marinated vegetables. Repeat with another layer of ratatouille, noodles, ricotta, and on the top shingle the vegetables.
  8. Bake for 30 minutes, or until the cheese and sauce are bubbling slightly and the sliced vegetables on top have browned to your liking.
  9. Slice and serve.

  • Turkey, shredded
  • Tortillas
  • Mashed potatoes
  • Stuffing
  • Cooked squash
  • Cooked green beans
  • Cooked corn
  • Cranberry sauce
  • 2 cups gravy
  • 2 cups shredded monterey jack
  • Parsley, chopped, to serve
Instructions
  1. Preheat oven to 350˚F (180˚C).
  2. Place one tortilla on a work surface. Place a small amount of each of your thanksgiving leftovers on the tortilla. Fold the ends in, rotate the tortilla and roll upward, making sure none of the ingredients are coming out of the tortilla. Place in a baking dish.
  3. Once your baking dish is filled with “enchiladas” pour the gravy over the top. Sprinkle the monterey jack over the “enchiladas.” Bake for 30 minutes until golden and bubbling.
  4. Sprinkle parsley over the “enchiladas.” Serve immediately.
  5. Enjoy!
