Cappuccino Cheesecake

Cappuccino Cheesecake

Ingredients
  • 1 cup chocolate biscuits, crushed
  • 60g butter, melted
Coffee Cheesecake Layer:
  • 250g Block Cream Cheese, softened
  • ⅓ cup caster sugar
  • 1½ tbsp instant coffee, dissolved in 1 tablespoon boiling water
  • 1½ tsp gelatine, dissolved in 1½ tablespoons boiling water
  • ½ cup cream
Vanilla Cheesecake Layer:
  • 250g PHILADELPHIA Block Cream Cheese, extra, softened
  • ⅓ cup caster sugar
  • 3 tsp vanilla essence
  • 1½ tsp gelatine, dissolved in 1½ tablespoons boiling water
  • ½ cup cream, whipped
  • Cocoa powder to dust
Instructions
  1. Add the biscuit crumbs and butter into a food processor and process until fine crumbs form.
  2. Press into the base of a greased and base-lined 15cm spring form tin. Chill.
  3. To prepare gelatin mixtures add gelatin to a small mixing bowl along with hot water and mix until well combined. Microwave for 15 seconds just before using.
To make the coffee cheesecake:
  1. Add the cream cheese and sugar into a large mixing bowl.
  2. Use an electric mixer to whip until smooth. Beat in the coffee and gelatine mixture and cream until well combined.
  3. Repeat to make the vanilla cheesecake layer without the coffee.
  4. Add the coffee cheesecake to the pan. Use an offset spatula to spread evenly. Then add the vanilla cheesecake and repeat.
  5. Chill until set. Dust with cocoa powder to finish. I used a cooling rack to get a square grid pattern.

Piggy Steamed Buns with Char Siu Pork

Piggy Steamed Buns with Char Siu Pork
We are obsessed with how cute and delicious these piggy steamed buns are. Oink, oink!

Ingredients
  • Char siu pork:
  • ½ tablespoon sugar
  • 1½ tablespoons honey
  • 1½ tablespoons hoisin sauce
  • 1 teaspoon oyster sauce
  • 1½ tablespoons soy sauce
  • ½ teaspoon five-spice powder
  • 1 teaspoon sesame oil
  • 1½ tablespoons oil
  • 1 pound pork shoulder
  • Buns:
  • 2½ cups plus 2 tablespoons flour
  • ¾ teaspoon instant yeast
  • ¾ teaspoon baking powder
  • 3 tablespoons caster sugar
  • ⅔ cup water
  • 1 tablespoon canola oil
  • Black sesame seeds
Instructions
For the char siu pork:
  1. In a medium bowl, whisk marinade ingredients until well combined. Add the pork shoulder, and toss to make sure the pork is evenly coated. Cover, refrigerate and let marinate for at least 3 hours.
Preheat oven to 350 degrees.
  1. Line a baking tray with parchment paper and place a wire rack on top.
  2. Remove pork from marinade; reserve the marinade for basting. Place pork on wire rack, and pour water into the baking tray. Roast for 25 minutes, flip halfway through and baste with remaining marinade. The pork is done when the internal temperature is at least 145 degrees.
  3. Remove pork from oven, and let rest for 10 minutes before dicing into small pieces. Set aside until ready to use.
For the steamed buns:
  1. In a large mixing bowl, whisk together flour, yeast, baking powder and sugar. Stir in water and oil until most of the dough comes together. Turn out on a floured surface and knead for 10 minutes. Place in an oiled bowl, cover and let it proof for 1 hour or until double in size.
  2. After the first proofing, divide the dough into 12 pieces. Form into a ball, flatten the outer perimeter and add a hefty spoonful of the char siu pork into the center. Pull the edges up over the meat and reform dough into a tight ball. Pinch off some of the remaining dough for the ears, nose and tail and stick to the formed bun with a dab of water. Use black sesame seeds for the eyes and for the nose; use a toothpick to form the shape. Place each bun onto a square of parchment paper and let it proof for 15 minutes before steaming.
  3. While the buns proof for the final time, heat up water in your steamer. Make sure the water is boiling before adding the buns. Steam for 12 minutes. Turn off the heat and let the buns rest in the steamer for 2 minutes before serving.

We can't get enough of marble! Marble floors. Marble countertops. Marble cheeseboards. Celebrate Easter with these Marble Chocolate Eggs!

  • 6 tablespoons white chocolate, melted
  • Assorted candies
  • Colored chocolate:
  • 4 tablespoons white chocolate, melted
  • Food coloring
Instructions
  1. Mix 1 tablespoon melted chocolate with different food coloring to create desired colors. Drizzle colored chocolate into a silicone egg mold. Use a toothpick to swirl colors together to form a marbled pattern.
  2. Pour melted white chocolate over the top and rotate mold to ensure it is fully coated. Allow to cool until hardened, then remove from mold.
  3. Press one half of each egg onto a metal sheet pan that has been heated until the edges begin to melt. Quickly fill with assorted candies, then press the two halves together until sealed.

Psychedelic Cheesecake

Psychedelic Cheesecake
Bright and colorful, this spin art cake is a fun way to celebrate any occasion and will definitely brighten your day!

Ingredients
For the cheesecake:
  • 30 graham crackers
  • ½ cup butter, melted
  • 1 teaspoon salt
  • 3 cups cream cheese, softened
  • 1½ cups sugar
  • 3 large eggs
  • 2 teaspoons vanilla
  • 1 teaspoon lemon juice
  • Red, blue, green, yellow and orange food coloring
For the mirror glaze:
  • 1 cup water
  • 2 cups sugar
  • 1 cup sweetened condensed milk
  • 12 sheets of gelatin, bloomed in 1 cup cold water, strained
  • 2 cups white chocolate
  • White, red, blue, green, yellow and orange food coloring
Instructions
Make the cheesecake:
  1. Preheat the oven to 350, and spray an 8-inch springform pan with nonstick spray.
  2. In the bowl of a food processor, grind graham crackers until they resemble coarse sand. Add butter and salt and press into the bottom of the prepared pan. Set in the freezer until the batter is made.
  3. In a large bowl, beat cream cheese until soft. Add sugar and mix until combined. Add eggs one at a time and then vanilla and lemon juice. Divide batter into 5 bowls and dye each a separate color. Drop spoonfuls of the batter onto the crust, alternating the colors, until all the batter has been used. Drag a wooden skewer through the colors to marble them for a tie-dye effect, making sure the skewer reaches down to the bottom of the pan. Bake for 55 to 60 minutes until the cake is firm but has a slight jiggle. Cool for 30 minutes on a rack and then place in the fridge for up to 3 hours to completely set.
Make the mirror glaze:
  1. In a small saucepan, combine water, sugar and sweetened condensed milk. Heat on medium-high and bring to a boil. Remove from heat and stir in gelatin mixture until combined.
  2. Pour glaze mixture over white chocolate in a large bowl. Blend with an immersion blender and pour through a fine sieve. Pour one-third of the glaze into a large liquid measuring cup and color with white food coloring. Separate the remaining two-thirds into 5 bowls, and dye each bowl a separate color. Place drops of each color into the liquid measuring cup. Place the cooled cheesecake on a wire rack and slowly pour tie-dye mixture over the cheesecake. Allow the glaze to set and chill. Serve immediately. Cake will keep up to 5 days refrigerated.

Hangover Breakfast Sandwich
A late night out calls for an entire deep-fried Camembert cheese wheel topped with bacon jam, a fried egg and, oh, arugula — for some greens.

Ingredients
Bourbon bacon jam:
  • 1 pound thick-cut bacon, cut into small dice
  • ½ sweet onion, chopped
  • ⅓ cup brown sugar, tightly packed
  • 2 cups beef broth
  • 1 cup bourbon
  • 1 teaspoon smoked paprika
  • 2 tablespoon maple syrup
  • 2 tablespoons butter
Deep-fried Camembert:
  • 3 cups frying oil
  • 1 whole Camembert
  • ½ cup flour
  • 2 large eggs
  • 1 sprig rosemary, chopped
  • 1 cup panko
For the sandwich:
  • 1 egg, sunny-side up
  • 1 handful arugula
  • 1 bun, slice in half and toasted
Instructions
For the bacon jam:
  1. In a frying pan, cook bacon on medium heat for 5 minutes. Add chopped onion, and cook for another 5 minutes until onion is soft and bacon fat is rendered. Stir in brown sugar; cook until dissolved and thickened. Add beef broth and cook until all liquid has evaporated, about 20 minutes.
  2. Add bourbon and allow to reduce again. Jam should look sticky. Strain bacon through a sieve, and discard most of the fat. Stir in smoked paprika, maple syrup and butter.
  3. For the Camembert: In a heavy-bottomed pot, heat oil to 325 degrees.
  4. In one bowl, add flour. In a second bowl, add eggs. In a third bowl, add rosemary mixed with panko. Coat the camembert with flour first, then egg, then rosemary/panko last. Fry for 1 minute on each side until golden brown.
To build the sandwich:
  1. Lay out bottom bun. Top with arugula, Camembert, bacon jam, sunny-side egg and top bun.

Kentucky Fried Chicken Style Chicken

Ingredients
  • 2 bone-in chicken thighs
  • 8 ounces chicken breasts
  • 8 ounces chicken wings
  • 1 cup flour
  • 1 teaspoon allspice
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon ginger powder
  • 2 teaspoons salt and pepper
  • 2¾ cups milk, divided
  • 1 bouillon cube
  • 1 egg, beaten
Instructions
  1. In a bowl, combine the flour, allspice, chili powder, garlic powder, paprika, ginger, salt and pepper.
  2. In a sauce pot over low heat, add the chicken, 2¼ cups milk and bouillon cube. Cook for 20 minutes.
  3. Preheat oil to 400 degrees.
  4. In a shallow dish, combine remaining milk and the beaten egg. Dip each chicken piece into the egg mixture, then coat well in the flour mixture.
  5. Deep-fry chicken in batches until golden brown.

Blooming Chocolate Flower
Spring is here with these beautiful and tasty blooming chocolate flowers!

Ingredients
  • 2½ cups fresh strawberries, halved, stems removed
  • ¾ cup sugar
  • ⅓ cup lemon juice
  • 1 half vanilla bean, cut open
  • 1½ cups dark chocolate
  • Macaron, for inside the flower
  • Whipped cream
  • Fresh raspberries
  • Mint, for garnish
Instructions
For the strawberry coulis:
  1. In a medium saucepan over medium heat, add the strawberries, sugar, lemon juice and vanilla bean. Bring to a boil until fruit is softened. Pour cooked liquid into a blender, blend and strain. Set aside.
For the flowers:
  1. Melt the chocolate, and pour and spread over a 4-by-18-inch piece of acetate. Allow the chocolate to set slightly then cut small leaf-shaped petals out of the chocolate with a paring knife. Leave the chocolate on the acetate, bend the acetate and place between two cake pans to hold in a crescent shape. Allow to set then move to the freezer for 15 minutes before breaking into petals.
  2. Pour a circle of chocolate and allow it to set. Dip each set chocolate petal in a bit of melted chocolate and adhere to the base. Once half of the sphere of petals is assembled place the dessert inside. Assemble the remaining chocolate petals and chill slightly to set.
  3. When ready to serve, garnish with mint and place into a deep bowl. Warm the strawberry coulis and pour around the dessert. The warm coulis will melt the base of the chocolate flower and create a blooming effect!

Luxury Strawberry Jelly Cake
Quite possibly the most elegant and luxurious jello with strawberries and gold. Fancy, fancy.

Ingredients
  • 11 strawberries
  • 1 7-inch round sponge cake
Strawberry jelly:
  • 5 ounces strawberries, quartered
  • 1½ tablespoons granulated sugar
  • ½ tablespoon powdered gelatin plus 1 tablespoon water
Lemon gelatin:
  • 1¾ cups water
  • 3 tablespoons granulated sugar
  • 5 sheet gelatin, soaked in ice water
  • ⅓ cup lemon juice
  • 2 tablespoons honey
  • Gold leaf, optional
Whipped cream:
  • ¾ tablespoon granulated sugar
  • ½ tablespoon cherry fruit brandy
  • ¾ cup heavy cream
Instructions
  1. In a 7-inch round cake pan, add the sponge cake round. Line with whole strawberries. Set aside.
  2. In a food processor, add strawberry jelly ingredients and blend to combine.
  3. Line a 4-inch round cake pan with plastic wrap. Pour in the strawberry jelly mixture and cool until hardened.
  4. In a mixing bowl, add sugar, cherry brandy and heavy cream. Allow to sit for 8 minutes, then whip to soft peaks. Top set strawberry jelly with a layer of whipped cream and cool in freezer until set.
  5. In a saucepan over medium heat, add water and sugar. Add soaked sheet gelatin and allow to melt. Stir to combine. Add lemon juice, honey and gold leaf and stir until combined. Pour one-third of the gelatin mixture overtop of the sponge cake layer. Add the set strawberry jelly, and cover cake with remaining gelatin mixture.
  6. Place in refrigerator until set. Remove from mold. Add garnishes and serve.

Pickleback Corn-Dog Bites

Ingredients
  • Vegetable oil, for frying
  • ½ cup yellow cornmeal
  • ½ cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 tablespoon sugar
  • 1 large egg
  • ½ cup light beer
  • 1 tablespoon whiskey
  • 8 medium dill pickles
  • 8 hot dogs, patted dry
Instructions
  1. In a large heavy-bottomed saucepan, preheat 4 inches of oil to 350 degrees.
  2. In a medium mixing bowl, combine cornmeal, flour, baking powder, sugar, egg, beer and whiskey until combined and still slightly lumpy. Do not over mix. Set aside.
  3. Using an apple corer, hollow out the inside of each pickle. Skewer the hot dog and place inside the pickle. Dip each pickle/hot dog into the batter, allowing excess to drip off.
  4. Fry in preheated oil for 3 to 5 minutes or until golden brown. Let drain on paper towel-lined plate. Dip into ketchup or mustard. Enjoy!

Creamy Chocolate Torte
Chocoholics will go choco-nuts for this obscenely chocolatey chocolate torte.

Ingredients
  • 1 pound semisweet chocolate, chopped
  • ½ cup butter, cubed
  • 6 egg yolks
  • ½ cup sugar
  • ½ cup heavy cream
  • ½ teaspoon vanilla extract
  • 6 egg whites
  • Sprigs of rosemary for decoration
  • Cherries for decoration
  • For the ganache:
  • 1 pound semisweet chocolate, chopped
  • ¾ cup heavy cream
  • 1 tablespoon honey
Instructions
  1. Preheat oven to 350 degrees.
  2. Melt the chocolate and butter in a double boiler. Remove from heat and let the mixture cool slightly.
  3. Strain the yolks into the chocolate, add the sugar, and mix well. Add the heavy cream and vanilla and set aside.
  4. Beat the egg whites until stiff, and mix gently into the chocolate with a whisk.
  5. Pour into a greased baking pan sprinkled with cocoa, and bake for approximately 40 minutes, or until the edges are well done but it's still soft in the middle.
  6. Heat the ¾ cup heavy cream, pour over the 1 pound of chopped chocolate and stir well until completely melted. Add the honey and set aside to cool.
  7. Cover cake with the chocolate ganache, then garnish with rosemary sprigs and cherries.
