Cowboy Butter Steak

Cowboy Butter Steak
Basting the steak with butter not only adds flavor, but helps develop a crust. Don't skip it!

Ingredients
FOR THE STEAK
  • 1 lb. Walmart Fresh Angus New York Strip Steak
  • Kosher salt
  • Freshly ground black pepper
FOR THE BUTTER
  • 1 c. butter, softened
  • Zest of half a lemon
  • 2 cloves garlic, minced
  • 1 small shallot, minced
  • 2 tbsp. dijon mustard
  • 1 tbsp. prepared horseradish
  • ¼ tsp. paprika
  • 2 tbsp. freshly chopped parsley
  • 1 tbsp. freshly chopped chives
  • Kosher salt
  • Freshly ground black pepper
FOR THE POTATOES
  • 3 tbsp. vegetable oil, divided
  • 1 lb. baby potatoes, quartered
Instructions
  1. Remove steak from refrigerator and let come to room temperature, 30 minutes. Season all over with salt and pepper
  2. Meanwhile, make cowboy butter: In a medium bowl, combine all cowboy butter ingredients and stir to combine. Season with salt and pepper.
  3. Place on plastic wrap and form into a log. Refrigerate until firm, 30 minutes.
  4. Heat 1 tbsp vegetable oil in a large cast iron skillet over medium heat. Add potatoes and cook, stirring occasionally, until fork tender, 6 to 8 minutes.
  5. Drop approximately 1 tablespoon cowboy butter into potatoes and toss until butter is completely melted and potatoes are coated. Remove potatoes from skillet, wipe out pan, and return to heat.
  6. Heat remaining vegetable oil until just beginning to smoke. Add steak and cook, flipping occasionally, until a golden crust begins to form on both sides of the steak, about 5 minutes.
  7. Reduce heat to medium low and add approximately 2 tbsp cowboy butter to the pan. Using a kitchen towel, carefully grip the skillet handle and tilt towards you so that the melting butter forms a pool at the bottom of the skillet. Using a spoon, continually baste butter onto steak to form a deeper golden crust. Flip steak and repeat, 2 to 3 minutes in total. Using a meat thermometer, check for doneness: 120-125°F for medium rare, 130°F for medium.
  8. Remove steak from skillet and place on cutting board to rest, 10 minutes. Slice and serve with potatoes, dotted with cowboy butter.

You might not think to put taco seasoning on shrimp—but think again: Marinated in a mix of taco seasoning, enchilada sauce, and lime juice, these shrimp are seriously bangin'.

  • 1 lb. medium shrimp, peeled and deveined
  • Juice of 2-3 limes, plus more wedges for serving
  • ¼ c. red enchilada sauce
  • 2 tbsp. taco seasoning mix
  • 2 tbsp. vegetable oil
  • 1 tsp. garlic powder
  • Freshly ground black pepper
  • Freshly chopped cilantro, for garnish
Instructions
  1. In a large bowl, whisk together lime juice, enchilada sauce, taco seasoning, vegetable oil, and garlic powder and season with pepper. Add shrimp and toss until completely coated.
  2. Marinate 20 minutes.
  3. Heat grill to medium-high. Skewer shrimp and grill until pink and charred, 3 minutes per side.
  4. Garnish with cilantro and squeeze with more lime before serving.

Ingredients
  • ¼ c. extra-virgin olive oil
  • Juice of 1 lime
  • 1 tsp. chili powder
  • ½ tsp. garlic powder
  • ½ tsp. ground cumin
  • Kosher salt
  • Freshly ground black pepper
  • 2 lb. boneless skinless chicken breasts
  • 1 bell peppers, sliced
  • ½ small red onion, cut into half moons
  • ½ c. shredded cheddar
  • ½ c. shredded pepper jack
  • Lime wedges, for serving
  • Chopped cilantro, for garnish (optional)
Instructions
  1. In a medium bowl, whisk together olive oil, lime juice, chili powder, garlic powder, and cumin. Toss chicken breasts in mixture, cover with plastic wrap, and refrigerate for at least 20 minutes and up to 4 hours.
  2. Preheat grill to medium-high. Before grilling, shake off excess marinade from chicken transfer to a plate. Season both sides of chicken with salt and pepper. Use a paring knife to create slits in each chicken breast about ½” apart. (Be careful not to cut all the way through!) Stuff chicken with bell pepper and onion.
  3. Lay out four pieces of foil. Place a stuffed chicken breast onto each, then top with each with cheese. Fold foil around chicken to create a packet.
  4. Place on grill and cook until chicken is cooked through and cheese has melted, about 20 minutes.
  5. Squeeze lime juice over chicken and garnish with cilantro.

Mermaid Ice Cream

Ingredients
  • 3 c. heavy cream
  • 1 14-oz. can sweetened condensed milk
  • 1 tsp. pure vanilla extract
  • green, blue, and purple food coloring
  • Sprinkles, for topping (optional)
Instructions
  1. In a large bowl using a hand mixer or in the bowl of a stand mixer using the whisk attachment, beat heavy cream until medium peaks form.
  2. Fold in sweetened condensed milk and vanilla until totally combined, then divide mixture among five bowls.
  3. Add a different color food coloring to each bowl (we used different amounts of green, blue, and purple) and stir until combined.
  4. Layer dollops of the colors in a 9"-x-5" loaf pan until you run out of the mixture.
  5. Run a knife through the mixture to swirl the colors 3 or 4 times and then smooth top.
  6. Top with sprinkles (if using) and freeze until firm, 5 hours.
  7. Remove from freezer and let soften, 5 to 10 minutes, then scoop and serve.

  • ¾ c. balsamic vinegar
  • 1 tsp. garlic powder
  • 2 tbsp. honey
  • 2 tbsp. extra-virgin olive oil
  • 2 tsp. Italian seasoning
  • kosher salt
  • Freshly ground black pepper
  • 4 boneless skinless chicken breasts
  • 4 slices mozzarella
  • 4 slices avocado
  • 4 slices tomato
  • 2 tbsp. sliced basil
  • Balsamic glaze, for drizzling
Instructions
  1. In a small bowl, whisk together balsamic vinegar, garlic powder, honey, oil, and Italian seasoning and season with salt and pepper. Pour over chicken breasts and marinate 20 minutes.
  2. Heat grill to medium high. Grill chicken until internal temperature reaches 170ºF on an instant-read thermometer.
  3. Top chicken with mozzarella, avocado, and tomato and cover grill to melt, 2 minutes.
  4. Garnish with basil and drizzle with balsamic glaze.

Dessert Ravioli
How genius is this method?! You can fill these "ravioli" with all sorts of things, from fruit fillings to peanut butter and chocolate. We chose Nutella because we're obsessed with it.

Ingredients
  • 1 (14-oz.) package refrigerated pie dough
  • FOR FILLING
  • 4 oz. cream cheese, softened
  • ½ c. Nutella
  • ¼ c. chocolate chips, melted
  • ½ tsp. pure vanilla extract
  • Pinch kosher salt
  • 1 Egg wash (1 egg beaten with 1 tbsp. water)
  • Ice cube tray
  • 1 tbsp. cinnamon-sugar
Instructions
  1. Preheat oven to 375° and line a medium baking sheet with parchment paper. In a medium bowl using a hand mixer, beat cream cheese, Nutella, melted chocolate, vanilla, and salt until smooth.
  2. Flour a clean surface and roll pie dough until it's very thin (about 2 cm!). Drape pie dough over ice cube tray. Use the knuckle of your pointer finger to press the dough into the indents in the ice tray. Spoon Nutella mixture into each well of the ice cube tray, then trim the overhanging edges of the pie dough. Brush any exposed pie dough on the ice tray with egg wash.
  3. Roll out excess pie dough then place on top. Use a rolling pin to seal the two pie dough layers and trim any excess with a paring knife. Turn out onto a cutting board and cut in between each "ravioli" to separate.
  4. Place on prepared baking sheet about 2" apart, brush with egg wash, and sprinkle with cinnamon-sugar. Bake until golden, about 20 minutes, and serve.

Philly Cheesesteak Nachos

Ingredients
  • 2 tbsp. vegetable oil
  • 1 large onion, thinly sliced
  • 2 large bell peppers, thinly sliced
  • kosher salt
  • Freshly ground black pepper
  • 1 tsp. Italian seasoning
  • 1 lb. sirloin steak, thinly sliced
  • 2 c. shredded provolone
  • 1 c. shredded mozzarella
  • 1 large bag tortilla chips
Instructions
  1. Preheat oven to 375°. Line a large baking sheet with foil.
  2. Heat 1 tablespoon of oil in a large skillet over medium heat, then add onion and bell peppers. Season with salt and pepper and cook, stirring often, until the onions and peppers are tender, about 5 minutes.
  3. Push peppers and onions to one side of the pan and add 1 tablespoon of oil to the other side. Add steak in a single layer and season with salt and pepper. Cook until the steak is seared on one side. Season with salt, pepper and Italian seasoning then mix steak together with onions and peppers.
  4. Cook until the steak is seared on all sides, about 3 minutes. Remove from heat.
  5. On the prepared baking sheet, add about half of the chips. Top with half of the mozzarella, half the provolone and half the steak and peppers. Repeat to make another layer with remaining ingredients.
  6. Bake until the cheese is melted, about 15 minutes. Serve immediately.

  • 6 leaves cabbage
  • 12 slices Swiss cheese
  • ¼ lb. corned beef, thinly sliced
  • 1 c. sauerkraut
  • ¼ c. Russian dressing, for dipping
Instructions
  1. In a large pot, boil 4 cups water. Using tongs, dip each cabbage leaf in water for 30 seconds and place on a paper towel lined plate to dry.
  2. Place 2 slices Swiss cheese in the center of a cabbage leaf. Top with a couple slices of corned beef and a spoonful of sauerkraut and roll burrito-style into a small package. Serve with Russian dressing for dipping.

  • 4 large scoops (about 1½ c) vanilla ice cream
  • ¼ c. milk
  • Reddi Whip, for garnish
  • Sprinkles, for garnish

FOR PEANUT BUTTER CHOCOLATE MILKSHAKE
  • 4 large scoops (about 1½ c) vanilla ice cream
  • ¼ c. milk
  • ½ c. peanut butter
  • ½ c. chopped Reese's
  • Hot fudge, for garnish
  • Chocolate jimmies, for garnish
  • 1 mini Reese's, for garnish
FOR OREO MILKSHAKE
  • 4 large scoops (1½ c) vanilla ice cream
  • ¼ c. milk
  • ½ c. marshmallow fluff
  • ½ c. crushed Oreos
  • Reddi Whip, for garnish
  • Mini chocolate chips, for garnish
  • 1 Oreo, for garnish
Instructions
  1. MAKE VANILLA MILKSHAKE
  2. In a blender, blend together ice cream and milk.
  3. Pour into a glass and garnish with Reddi Whip, sprinkles, and a cherry.
  4. MAKE PEANUT BUTTER CHOCOLATE MILKSHAKE
  5. In a blender, blend together ice cream, milk, peanut butter, and chopped Reese’s until incorporated.
  6. Pour fudge onto the inside edges of a glass then pour in peanut butter ice cream. Garnish with Reddi Whip and chocolate jimmies. Finish with a Reese’s.
  7. MAKE OREO MILKSHAKE
  8. In a blender, blend together ice cream, milk, marshmallow fluff and crushed Oreos until just incorporated.
  9. Pour into a glass and garnish with Reddi Whip and mini chocolate chips. Finish with an Oreo.
