Bang Bang Cauliflower

Ingredients
  • 3 tbsp. extra-virgin olive oil
  • 2 tbsp. sweet chili sauce
  • 1 tbsp. sriracha
  • Juice of 1 lime
  • 3 cloves garlic, minced
  • 1 medium cauliflower, cut into florets
  • kosher salt
  • Freshly ground black pepper
  • 1 tsp. Chopped cilantro, for garnish
Instructions
  1. Preheat oven to 425º. In a small bowl, whisk together olive oil, sweet chili sauce, Sriracha, lime juice, and garlic.
  2. On a large baking sheet, toss cauliflower in sauce until fully coated. Season generously with salt and pepper. Spread into an even layer and roast until slightly charred and tender, 30 to 35 minutes. Garnish with cilantro and serve.

Brussels Sprouts Mac

Brussels Sprouts Mac
It has brussels sprouts so it's healthy right?

Ingredients
  • 3 c. Brussels sprouts, cleaned and halved
  • 1 tbsp. olive oil
  • kosher salt
  • Freshly ground black pepper
  • ⅔ lb. Fusilli pasta, boiled to al dente
  • ¼ c. butter
  • ¼ c. flour
  • 2½ c. whole milk
  • 1½ c. white Cheddar
  • 1 c. fontina, shredded
  • ¾ c. freshly grated Parmesan, divided
  • ½ c. panko breadcrumbs
Instructions
  1. Preheat oven to 375°. Place brussels sprouts on baking sheet and toss with olive oil. Season with salt and pepper then bake until tender, about 30 minutes.
  2. In a large saucepan over medium heat, melt butter. Sprinkle over flour and cook until slightly golden, 2-3 minutes. Pour in milk and whisk until combined. Season with salt and pepper. Let simmer until starting to thicken, about 5 minutes.
  3. Remove pan from heat and stir in cheddar, fontina, and ½ c parmesan and whisk until smooth. Fold in cooked pasta and cooked brussels sprouts. Transfer into baking dish.
  4. In a medium bowl, combine Panko and the remaining parmesan. Season with salt and pepper and sprinkle over pasta.
  5. Bake until bubbly and golden, 25-30 minutes. Serve.

Fried Lasagna

Fried Lasagna
It ain't pasta if it ain't fried, y'all.

Ingredients
  • 10 lasagna noodles, cooked al dente
  • 1 15- oz. container ricotta
  • 4 eggs, lightly beaten (divided)
  • 2 cloves garlic, minced
  • kosher salt
  • Freshly ground pepper
  • 1 c. shredded mozzarella
  • ¼ c. finely chopped parsley
  • vegetable oil
  • ½ c. flour
  • 2 c. italian breadcrumbs
  • Marinara sauce
Instructions
  1. Lay cooked lasagna noodles flat, in an even layer, on a greased baking sheet.
  2. In medium bowl, combine ricotta, 1 egg and garlic. Season with salt and pepper. Mix until evenly combined. Spread the ricotta mixture onto each lasagna noodle, then sprinkle with mozzarella. Fold each lasagna noodle 3-4 times, to create a square. Freeze the lasagna servings on the baking sheet for 30 minutes, or until hardened.
  3. When the lasagna squares are frozen, set up a dredging station. Divide the flour, eggs and breadcrumbs in three separate shallow bowls. Season breadcrumbs with salt and pepper. Working in batches, dredge lasagna in the flour mixture then dip in eggs. Toss in breadcrumbs for the final dredge.
  4. Meanwhile, heat oil. Pour about 1½” vegetable oil into a large, deep skillet (or a shallow pot). Heat over medium heat until the oil reaches about 350 degrees F, or until the oil is shimmering. (If a splash of water sizzles when you flick it into the pan, it’s ready.) Working in batches, add 3-4 lasagna squares to the hot oil using tongs. Do not crowd the pan, or the oil will cool! Cook until golden brown on one side, about 2-3 minutes, then flip and cook until the second side is golden, 2-3 more minutes. Place the fried lasagna squares on a cooling rack lined with paper towels. Repeat until all the lasagna is fried.
  5. Sprinkle with parsley and serve with warm marinara for serving.

Slow-Cooker Rotisserie Chicken

Ingredients
  • nonstick cooking spray
  • 2 tbsp. brown sugar
  • 1 tbsp. chili powder
  • 1 tbsp. smoked paprika
  • 1 tsp. chopped thyme leaves
  • kosher salt
  • Freshly ground black pepper
  • 1 whole chicken, neck and giblets removed
Instructions
  1. Grease a large slow-cooker with cooking spray. Roll a few small balls of aluminum foil and place on the bottom of the bowl, creating a rack for the chicken.
  2. In a small bowl, whisk together brown sugar, chili powder, paprika, and thyme. Pat chicken dry with paper towels then season generously with salt and pepper. Rub the brown sugar mixture all over chicken, then place in the slow cooker, breast side up.
  3. Cook on high for 2 ½ to 3 ½ hours, until the juices between the leg and the thigh run clear or a thermometer inserted into the thigh reads 165°F. Remove chicken from slow cooker.
  4. To crisp up the skin, transfer chicken to a large baking sheet and broil until golden and crispy, 3 to 4 minutes.
  5. Let rest for 10 minutes before slicing and serving.

Ingredients
  • Cooking spray, for pan
  • Flour, for pan
  • 1 box yellow cake mix, plus ingredients called for on box
  • 2 boxes vanilla pudding mix
  • 3 c. milk
  • 2 c. heavy cream
  • 2 tbsp. sugar
  • 1 tsp. vanilla extract
  • 3 bananas, thinly sliced
  • 20 Nilla Wafers, 4 crushed
Instructions
  1. Preheat oven to 350º and grease and flour a 9-x-13" cake pan. Prepare yellow cake mix according to box instructions. Pour batter into prepared pan and bake until a toothpick inserted in the center comes out clean, about 25 minutes. Let cool 10 minutes.
  2. Meanwhile, prepare pudding: In a small bowl, whisk together pudding packets and milk until thick. Set aside.
  3. In another large bowl, beat cream, sugar, and vanilla until stiff peaks form. Set aside.
  4. Using the bottom of a wooden spoon, poke holes all over the cake. Spread pudding mixture on top and top with a layer of banana slices. Spread whipped cream on top and sprinkle all over with crushed and whole Nilla Wafers and bananas.
  5. Slice and serve.

Ingredients
  • 1 tbsp. extra-virgin olive oil
  • 1 onion, chopped
  • 3 bell peppers (red and green), chopped
  • kosher salt
  • Freshly ground black pepper
  • 1 lb. boneless skinless chicken breasts, thinly sliced
  • 1 tbsp. Italian seasoning
  • 6-7 slices provolone cheese
  • Hoagie rolls, for serving
Instructions
  1. In a large skillet over medium heat, heat oil. Add onions and peppers and season with salt and pepper. Cook until very soft, stirring occasionally, 10 to 12 minutes.
  2. Add chicken and Italian seasoning and stir to combine
  3. Cook until chicken is golden, stirring occasionally, 10 minutes.
  4. Top all over with provolone and cover with a lid. Let melt 1 minute.
  5. Serve chicken-peppers mixture on hoagies.

Ingredients
  • 1 c. large semi-sweet chocolate chips
  • 1 tbsp. coconut oil
  • 2 large apples
  • Caramel, for drizzling
  • Melted white chocolate, for drizzling
  • Crushed Oreos, for topping
  • Crushed pretzels, for topping
  • rainbow sprinkles, for topping
  • M&M's, for topping
Instructions
  1. Set up a double boiler: Bring a saucepan of water to a simmer. Set a glass bowl over the saucepan (the bottom of the bowl should not touch the water), then add chocolate chips to bowl. Stir until melted, then stir in coconut oil.
  2. Place apples upright on a cutting board and cut into ½” to ¾” slices. Using a paring knife, make a small cut onto the bottom of each apple slice. Insert popsicle stick.
  3. Line a large baking sheet with wax paper and grease with cooking spray.
  4. Dip apple slices into melted chocolate and place on the baking sheet. Refrigerate until chocolate sets, 8 to 10 minutes.
  5. Drizzle with caramel and melted white chocolate and top as desired. Return to refrigerator until the white chocolate and caramel set, about 5 minutes. Serve immediately or store in refrigerator.

Ingredients
  • 1 tube biscuit dough
  • 16 1" cubes cheddar cheese
  • 2 tbsp. butter, melted
  • 1 tsp. chopped parsley
  • kosher salt
Instructions
  1. Place cheese cubes on a small sheet tray and freeze for 1 to 2 hours.
  2. Preheat oven to 400° and line a medium baking sheet with parchment paper. Remove biscuits from can and using a serrated paring knife, cut the biscuit in half horizontally, creating two rounds.
  3. Place one square cheese in the center of sliced biscuit and wrap dough to cover cheese. Pinch to seal and place on the prepared baking sheet, seam side down. Repeat until all cheese and biscuit is used.
  4. In a small bowl, combine butter with parsley. Brush on bombs and season with salt. Bake until golden, 10 to 15 minutes. Serve.

  • 1 lb. linguine or spaghetti
  • 1 tbsp. extra-virgin olive oil
  • 1 lb. boneless skinless chicken breasts
  • Freshly ground black pepper
  • 2 tsp. Italian seasoning
  • 2 tbsp. butter
  • 1 small red onion, chopped
  • 1 lb. asparagus, stalks trimmed and cut into thirds or quartered if large
  • ¾ c. heavy cream
  • ½ c. low-sodium chicken broth
  • Juice of 1 lemon
  • 3 cloves garlic, minced
  • ¾ c. shredded mozzarella
  • ½ c. freshly grated Parmesan, plus more for garnish
  • 1 lemon, sliced into half moons
  • Freshly chopped parsley, for garnish
Instructions
  1. In a large pot of salted boiling water, cook pasta according to package directions until al dente. Drain and return to pot.
  2. In a skillet over medium heat, heat olive oil. Add chicken and season with salt, pepper, and Italian seasoning. Cook until golden and no longer pink, 8 minutes per side. Transfer to a plate to let rest, then thinly slice.
  3. To skillet, melt butter over medium heat. Add red onion and asparagus and season with salt and pepper. Cook until tender, 5 minutes, then add heavy cream, chicken broth, lemon juice, and garlic and simmer 5 minutes.
  4. Stir in cheeses and let cook until melty, then add lemon slices and cooked linguine.
  5. Top with sliced chicken and garnish with more Parmesan and parsley.

Crustless Pepperoni Pizza

Ingredients
  • 1¾ c. shredded mozzarella
  • ¼ c. freshly grated Parmesan
  • 10 slices pepperoni
  • ½ tsp. oregano
  • pinch red pepper flakes
  • 1 tsp. chopped parsley
  • ½ c. marinara, heated, for dipping (optional)
Instructions
  1. In an 8” non-stick skillet over medium heat, add mozzarella in an even layer. Top with parmesan and pepperoni. Cover with a glass lid and cook until cheese is completely melted and edges are golden. Top with oregano and red pepper flakes and remove from heat.
  2. Let cool 3 minutes before sliding onto plate.
  3. Garnish with parsley and slice. Serve with marinara for dipping if using.
