Bacon Burger Wellington

Bacon Burger Wellington
From the "more is more files," we bring you the positively overstuffed Bacon Burger Wellington.

Ingredients
  • 4 burger patties
  • 4 slices cheddar cheese, cut into quarters
  • 2 sheets puff pastry, halved
  • 3 tablespoons Dijon mustard
  • 8 strips thick-cut bacon, uncooked
  • 1 large egg, lightly beaten
  • 1 teaspoon sesame seeds
  • Lettuce and tomato, for serving
Instructions
  1. Preheat the oven to 425, and line a baking sheet with parchment paper.
  2. Make a bacon weave with 4 slices of bacon. Divide burger patties in half and place on bacon weave. Place 4 cheese squares in between each half patty. Seal sides and cook in a cast-iron pan on medium-high heat until medium rare. Remove from heat and set aside while you prepare the Wellington wraps.
  3. Lay out a puff pastry rectangle and spread mustard in the center. Place wrapped burger in the center. Remove excess puff pastry and fold dough around the wrapped burger, forming a tightly sealed package. Seal sides with egg wash and top with sesame seeds. Repeat with remaining burgers. Place on a baking sheet and bake for 20 to 25 minutes until puff pastry is golden. Let rest for 5 minutes, and serve with lettuce, tomatoes and your favorite condiments.

Bacon-Weave S'mores
Brown sugar and bacon take s'more to the NEXT LEVEL.

Ingredients
  • 1 lb. bacon slices, halved
  • 2 tbsp. brown sugar
  • 6 large marshmallows
  • 2 bars chocolate
Instructions
  1. Preheat oven to 400º and place a baking rack inside of a baking sheet (to help catch grease).
  2. Make a bacon weave: On the baking rack, line 3 bacon halves side-by-side. Lift one end of the middle bacon slice and place a fourth bacon half on top of the side pieces and underneath the middle slice. Lay the middle slice back down.
  3. Next, lift the two side strips of bacon and place a 5th bacon half on top of the middle piece and underneath the sides. Lay the side slices back down.
  4. Finally, lift the other end of the middle slice and place a 6th slice on top of the side pieces and underneath the middle slice. Repeat to make a second weave.
  5. Sprinkle bacon weaves with brown sugar and bake until bacon is crispy, 25 minutes. Transfer to a paper towel-lined plate to blot grease.
  6. Pierce 3 marshmallows onto each skewer and roast until marshmallows are golden, 2 to 3 minutes.
  7. Sandwich chocolate and marshmallows in between two bacon weaves.

Smoked Turkey Legs
Feast like a barbarian king with these meaty and massive smoked turkey legs!

Ingredients
  • 4 quarts water
  • 1 cup salt
  • ½ cup brown sugar
  • 3 tablespoons paprika
  • 2 tablespoons black peppercorns
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 1 tablespoon coriander
  • 1 tablespoon chili powder
  • 1 bay leaf
  • 8 turkey legs
Instructions
  1. In a large stock pot, combine water, salt, sugar, paprika, black peppercorns, garlic powder, onion powder, coriander, chili powder and bay leaf. Bring to a boil and then cool completely. If in a hurry, cut the water in half and once the mixture is boiled, add 2 quarts of ice to chill faster. Place turkey legs in brine and place in the fridge for at least 6 hours or overnight.
  2. Fill a chimney with coals and light to prepare the grill. Soak 10 to 12 wood chips in water while the coals are warming up. Once the coals are white hot, pour into the grill and scatter wood chips around the coals. Cover with the grates and place marinated turkey legs over the coals. The wood chips will create a smokey flavor while the legs cook. Grill for 20 to 25 minutes until legs are dark golden in color and the internal temperature reaches 180 degrees.

  • 1 cup (285 g) greek yogurt
  • 1 tablespoon paprika
  • 1 tablespoon dried oregano
  • 1 tablespoon ground coriander
  • 1 tablespoon cumin
  • 4 cloves garlic, minced
  • ½ teaspoon cayenne
  • 1 teaspoon cinnamon
  • pepper, to taste
  • 2 tablespoons tahini paste
  • 2 tablespoons olive oil
  • salt, to taste
  • 2 lb (905 g) boneless, skinless chicken thighs, chopped into 1-inch (2-cm) cubes
TZATZIKI
  • 2 cups (570 g) greek yogurt
  • 1 cup (135 g) english cucumber, grated, salted, and drained
  • 1 lemon, zested
  • 2 cloves garlic, minced
  • ¼ cup (10 g) fresh dill, chopped
  • pepper, to taste
  • salt, to taste
  • 1 tablespoon olive oil
  • 1 lemon, juiced
ASSEMBLY
  • slider bun, or dinner roll
  • ½ cup (100 g) tomato, diced
  • ½ cup (75 g) red onion, chopped
  • ¼ cup (60 mL) olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • salt, to taste
SPECIAL EQUIPMENT
  • wooden skewer
Instructions
  1. Preheat the oven to 400˚F (200˚C).
  2. Soak the wooden skewers in water for 30 minutes.
  3. In a large bowl, combine the Greek yogurt, paprika, oregano, coriander, cumin, garlic, cayenne, cinnamon, pepper, tahini, olive oil, and salt.
  4. Add the chicken and stir to coat completely in the sauce. Cover with plastic wrap and marinate in the fridge for at least 30 minutes or up to 4 hours.
  5. Make the tzatziki: in a medium bowl, combine the Greek yogurt, cucumber, lemon zest, garlic, dill, pepper, salt, olive oil, and lemon juice. Stir to combine. Cover and refrigerate until ready to use.
  6. Thread 3-5 pieces of chicken onto each wooden skewer until loosely filled, leaving at least an inch (2 cm) of space on either end of the skewers. Place the skewers on a baking sheet and bake for 20 minutes.
  7. Slice the dinner rolls in half. Place the bottom half on a greased baking sheet. Sprinkle with diced tomatoes and chopped red onion.
  8. Stick the par-cooked chicken skewers into the bottom buns, spacing evenly. Place the top buns over the skewers and press down.
  9. Combine the olive oil, garlic, parsley, and salt in a small bowl and brush on the top buns.
  10. Bake the buns and the chicken for 10 more minutes, or until the chicken is fully cooked and the bread is toasted.
  11. Place the gyro sliders on a large platter and serve with tzatziki.

Ingredients
  • 2 lb. ribeye steak
  • 4 tbsp. extra-virgin olive oil
  • 4 tbsp. butter
  • 2 large garlic clove, minced
  • 1 tsp. fresh parsley leaves, minced
Instructions
  1. Cut steak into ¾-inch cubes and season with salt and pepper.
  2. Heat half of the oil in a large heavy bottomed skillet over medium-high. Add half the steak in a single layer and cook, turning a few times until golden and medium rare, about 5 minutes. Add half of the butter and half of the garlic and toss to coat. Remove steak to a serving bowl. Repeat with remaining steak.
  3. Garnish steak with parsley. Serve with toothpicks.

Mini Chicken Fajita Empanadas
Is there anything we can't do with a tortilla? We've fashioned it into vast, almost grotesque wraps. We've made it into boats. We've made little triangles out of it, sacrilegiously stuffing them with cheese steak mix and simultaneously irking the populations of Mexico, Indian and Philadelphia. As for these little beauties, they do admittedly bear a mild resemblance to dumplings, but to us they are something new entirely. Enjoy, responsibly.

Ingredients
  • 3 chicken breasts
  • 1 onion, finely sliced
  • 3 mixed peppers, finely diced
  • 3 tbsp fajita seasoning
  • 1 tsp salt
  • 2 tbsp groundnut oil
  • 8 large tortilla wraps
  • ¼ cup plain flour
  • ¼ cup water
  • Grated cheddar
Dip
  • 300ml sour cream
  • 100g salsa
  • 1 tbsp chopped chives
  • 1 tbsp finely chopped coriander
  • 2 cloves garlic, finely crushed
  • 1 tsp black pepper
  • 1 tsp salt
Instructions
  1. Set the grill to high.
  2. Pop the chicken, onion and peppers on a large baking tray. Sprinkle with the seasoning and salt then add the oil and toss everything together to combine.
  3. Grill until the chicken and peppers are cooked through and slightly charred. Shred the chicken into small pieces using a pair of forks.
  4. Use a large cookie cutter to cut circles from the tortilla - the large tortillas should yield about three circles.
  5. Whisk together the flour and water and paint this around the rim of half of each of the circles.
  6. Sprinkle cheddar onto the circles and top with a spoonful of the chopped fajita mix. Fold over the circle of tortilla to enclose the filling and make a semi circular dumpling shape. Press the sides together to seal.
  7. Heat the oil to 170°C/340°F. Fry the tortilla dumplings in batches until crisp and golden. Remove to a kitchen towel lined sheet to soak up any excess oil.
  8. Whisk together the ingredients for the dip and serve them all together. Yum!

  • FOR THE TACOS
  • Juice of 3 limes
  • 2 tbsp. freshly chopped cilantro, plus more for garnish
  • 2 garlic cloves, minced
  • ½ tsp. cumin
  • 1 tbsp. olive oil
  • Zest of 1 lime
  • Kosher salt
  • 1 lb. shrimp, peeled and deveined
  • 8 Tortillas, warmed, for serving
  • FOR THE CABBAGE SLAW
  • ¼ c. shredded green cabbage
  • ¼ c. cilantro
  • ¼ red onion, thinly sliced
  • ½ avocado, thinly sliced
  • Juice of 1 lime
  • 1 tbsp. olive oil
  • Kosher salt
  • FOR THE GARLIC-LIME MAYO
  • ⅓ c. Duke's Mayonnaise
  • 2 tbsp. hot sauce
  • Zest of 1 lime
  • ½ tsp. garlic powder
  • Kosher salt
Instructions
  1. In a large bowl, whisk together lime juice, cilantro, garlic, cumin, olive oil, lime zest and season with salt. Add shrimp and cover with plastic wrap. Let marinate 20 minutes in refrigerator.
  2. Make slaw: in a large bowl combine all slaw ingredients. Toss gently to combine and season with salt.
  3. Make garlic-lime mayo: in a medium bowl, combine all ingredients. Whisk and season with salt.
  4. Preheat grill or grill pan to medium heat. Grill shrimp until pink and opaque, about 3 minutes per side.
  5. Build tacos: add a scoop of slaw, a few shrimp, and a drizzle of the garlic-lime mayo to each taco. Garnish with cilantro and serve.

  • 1 pound skirt steak
  • ¼ cup olive oil plus 1 tablespoon
  • ⅛ cup lime juice
  • 2 teaspoons garlic powder
  • 2 teaspoons cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 bunch of asparagus, trimmed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 1 portobello mushroom, sliced
To garnish:
  • Cilantro
  • Chipotle sauce
Instructions
  1. Preheat oven to 375 degrees.
  2. Cut steak into 5 to 6 inch pieces. Add to a bowl and season with olive oil, lime juice, garlic powder, cumin, chili powder, paprika, salt and pepper. Add a few pieces of asparagus, peppers and onions to the center of each piece of steak. Roll tightly and use toothpicks to hold them closed.
  3. Heat a saute pan on medium-high heat. Add 1 tablespoon olive oil, and brown steak rolls on all sides. Transfer to a baking sheet and bake 5 to 8 minutes until cooked through. Garnish with cilantro and chipotle sauce to serve.

Balsamic Steak Roll-Ups

Balsamic Steak Roll-Ups
Securing the roll-ups with toothpicks makes them MUCH easier to cook. Just don't forget to remove them when it's time for serving!

  • 1 lb. skirt steak, cut into thin strips
  • ½ c. balsamic vinegar
  • 2 tbsp. honey
  • 1½ tbsp. whole-grain mustard
  • 3 cloves garlic, minced
  • 1 tsp. Worcestershire sauce
  • 1 tsp. minced fresh rosemary
  • ½ tsp. dried oregano
  • Kosher salt
  • Freshly ground black pepper
  • 2 tbsp. extra-virgin olive oil, divided
  • 2 bell peppers, cut into thin strips
  • ½ lb. asparagus, woody ends removed
  • 2 small zucchini, cut into thin strips
  • Toothpicks
Instructions
  1. Make marinade: In a small sauce pan over medium heat, combine vinegar, honey, mustard, garlic, Worcestershire sauce, rosemary, and oregano. Season with salt and pepper. Bring mixture to a boil then reduce to a simmer and cook, stirring occasionally, until it has reduced by about a third and is syrupy in consistency, 10 to 12 minutes.
  2. Meanwhile, prepare vegetables: In a medium skillet over medium heat, heat 1 tablespoon olive oil. Add peppers and cook 2 minutes, then add asparagus and zucchini and season with salt, pepper, and Italian seasoning. Cook until vegetables are tender but still hold their shape, 4 to 6 minutes more.
  3. Assemble roll-ups: Lay steak strips flat on cutting board, and brush both sides with marinade. Place a small handful of vegetables in the center of each piece of steak. Wrap steak around vegetables and secure with a toothpick.
  4. In a large skillet over medium heat, heat remaining 1 tablespoon oil. Place steak roll-ups in skillet seam side-down and cook 2 minutes until nice and seared. Use tongs to turn roll-ups to cook on all sides, about 2 minutes per side. Brush with remaining marinade as steak cooks.
  5. Remove from heat and serve immediately.

Ingredients
  • ½ c. low-sodium soy sauce
  • ⅓ c. extra-virgin olive oil
  • ¼ c. lightly packed brown sugar
  • ¼ c. bourbon
  • 2 tbsp. whole-grain mustard
  • 2 tsp. cajun seasoning
  • 2 cloves garlic, minced
  • 1 tsp. fresh thyme leaves
  • 2 lb. tri-tip steak (or a very thick cut of sirloin)
  • 2 tbsp. butter, cut into tabs
  • Freshly chopped parsley, for garnish (optional)
Instructions
  1. In a large bowl, whisk together soy sauce, olive oil, brown sugar, bourbon, mustard, Cajun seasoning, garlic, thyme, and red pepper flakes. Pour out about ⅓ of mixture to use for glaze later. Toss steak in mixture and let marinate for 20 minutes, or up to 4 hours. (If marinating for more than 20 minutes, cover bowl with plastic wrap and refrigerate.)
  2. Heat grill or grill pan to high. Remove steak from marinade and season both sides with salt and pepper. Grill until charred on bottom, about 10 minutes. Flip steak, then lower grill to medium-high and cook for another 8 to 10 minutes. (A meat thermometer inserted into the thickest part of the meat should register around 130°.) Remove from grill and let rest on cutting board before slicing against the grain.
  3. Meanwhile, make glaze: Pour reserved marinade into a small saucepan and bring mixture to boil over medium-high heat. Reduce heat to medium, and cook until mixture has thickened slightly. Whisk in butter until melted. Remove from heat
  4. Brush glaze over steak and garnish with parsley, if using.
