Ingredients
CREPES
  • 6 tablespoons butter
  • 3 cups milk
  • 6 eggs
  • 1 ½ cups flour
  • ⅔ cup cocoa powder
  • 7 tablespoons sugar
  • 4 cups whipped cream
GANACHE
  • 1 cup heavy cream
  • 4 tablespoons sugar
  • 6 oz chocolate
  • 1 tablespoon butter
  • ¼ cup powdered sugar, optional for topping
Instructions
  1. Make the crepes by melting the butter and allowing it to brown slightly. Set aside.
  2. In the same pot, warm the milk. Remove from heat.
  3. In a bowl, whisk flour, cocoa powder, and sugar. Mix in eggs.
  4. Gradually mix in butter and warm milk. Chill.
  5. On a nonstick skillet over medium heat, pour ¼ cup (60 ml) of crepe batter, and tip the pan to cover the entire bottom surface. Cook until bottom surface of crepe begins to brown, then flip.
  6. Cool crepe. Repeat until all of the crepe batter is used.
  7. Stack crepes on top of each other, with whipped cream between each layer. Once assembled, trim edges for a cleaner look, if desired.
  8. For the ganache, bring the heavy cream and sugar to a boil, and pour over chocolate and butter. Let cool.
  9. Spread over the crepe cake.
  10. Top with sifted powdered sugar (optional).

Bavarian Cream Dragon Fruit Cake

Bavarian Cream Dragon Fruit Cake
A creamy, jiggly and surprisingly light Bavarian cream cake made with dragon fruit.

Ingredients
  • 1½ tablespoons powdered gelatin
  • 4 tablespoons water
  • Chocolate sponge cake
  • 1 cup heavy cream
  • 1 dragonfruit, quartered
  • ½ cup raspberries
  • 6½ tablespoons granulated sugar, divided
  • 1 tablespoon lemon juice
  • ¾ cup milk
  • 1 egg yolk
  • 2½ tablespoons granulated sugar
  • ¾ tablespoon gelatin powder (soaked in 2 tablespoons water)
  • Decorations:
  • Whipped cream
  • ¼ dragonfruit
  • Edible flowers
  • Raspberries
  • Mint leaves
Instructions
  1. In a small bowl, combine the powdered gelatin and water. Set aside to let bloom.
  2. Cut the sponge cake into a circle and place in the bottom of a springform pan.
  3. Whip the heavy cream for 7 minutes until it reaches stiff peaks.
  4. In a blender, add three quarters of the dragonfruit, the raspberries, 4 tablespoons of the sugar and lemon juice. Blend until combined, then transfer to a small saucepan over medium heat. Cook until just before boiling, then remove from heat and stir in half the gelatin.
  5. Pour about a cup of the mixture into a separate bowl, leaving the rest in the saucepan. To the bowl add the remaining gelatin and stir to combine. Allow mixture to cool, then add milk, egg yolk and remaining sugar and whisk until thickened. Fold in the whipped cream, then pour mixture into the cake mold. Place in the fridge to cool for up to 3 hours.
  6. Remove from fridge and pipe additional whipped cream around the edges to decorate. Pour remaining mixture from the saucepan over the top of the cake. Return to refrigerator to firm up. Once firm, remove from springform pan and garnish with fruit and mint leaves.

Blueberry Mousse Cake

Blueberry Mousse Cake
Blueberry fans will love this creamy, layered mousse cake made with a blueberry and oatmeal cookie crust.

Ingredients
Blueberry lemon oatmeal crust:
  • 2 cups sweet oatmeal cookies
  • 1½ tablespoons butter, melted
  • 1 tablespoon blueberry powder
  • 1 teaspoon lemon zest
Mousse:
  • 10 gelatin sheets or 2 tablespoons gelatin powder
  • 1 cup milk, warm
  • 1 cup mascarpone cheese, softened
  • ½ cup sugar
  • 1½ cups heavy cream, soft whipped
  • ¼ cup freeze-dried blueberries
Instructions
For the crust:
  1. In a large mixing bowl, stir all ingredients until they reach a moist sand texture. Press into the bottom of a 6-inch springform pan, pressing down with the back of a cup.
  2. For the mousse: If using gelatin sheets, soak them in cold water until softened, about 5 minutes. Then squeeze out excess water, and stir into warm milk until dissolved. If using gelatin powder, sprinkle the powder over warm milk. Cook the milk/gelatin mixture on a double boiler until dissolved.
  3. Pour warm milk/gelatin mixture over mascarpone cheese. Stir in sugar, then fold in the whipped cream.
  4. Using a heavy duty blender, grind freeze-dried blueberries into blueberry powder. Stir in water to make a thick paste.
  5. Divide the mousse mixture among 4 bowls. Stir blueberry paste into 3 of the bowls, making 3 different shades of purple mousse.
  6. Starting with the white mouse, pour into the center of the pan. Follow with the light purple, medium purple and dark purple mousse.
  7. Tap the pan to smooth out the top. Chill in the fridge for at least 4 hours.

No-Bake Chocolate Chunk Cookies & Cream Brownie Cheesecake
This velvety no-bake chocolate cheesecake is full of chocolate bar bites and topped with cookies and cream frosting.

Ingredients
For the cheesecake:
  • 1½ cups finely ground chocolate cookie crumbs
  • 3 tablespoons unsalted butter, melted
  • 3 (8-ounce) packages cream cheese, softened
  • ½ cup sugar
  • 1 teaspoon vanilla extract
  • ¾ cup heavy cream
  • 1 package brownie mix (reserve 1 tablespoon for glaze)
  • 2 (1-ounce) chocolate bars, cut into chunks, plus more for garnish
For the cookies and cream whipped cream frosting:
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ¼ cup finely ground chocolate cookie crumbs
For the brownie glaze:
  • 1 tablespoon brownie mix
  • 2 teaspoons grapeseed oil
  • 1 tablespoon heavy cream
  • 1 tablespoon chocolate syrup
Instructions
  1. Grease the sides of a 9-inch springform cake pan and prepare the bottom with parchment paper.
  2. In a large bowl, combine cookie crumbs and melted butter. Press into the base of the cake pan and chill for 15 minutes.
  3. With a hand mixer, beat the cream cheese, sugar, vanilla extract, heavy cream and brownie mix. Fold in chocolate bar chunks and pour into the cake pan. Refrigerate for 4 hours.
  4. In a large bowl, combine heavy cream, powdered sugar and vanilla. Beat until stiff peaks form. Fold in cookies.
  5. In a separate smaller bowl, combine remaining brownie mix, grapeseed oil, heavy cream and chocolate syrup.
  6. Once the cheesecake has set, cover in whipped cream, drizzle with brownie glaze and sprinkle with shavings of remaining chocolate.

  • FOR THE FILLING
  • 1 c. brown sugar
  • 1 tbsp. cocoa powder
  • 1 tsp. instant espresso powder
  • FOR THE CAKE
  • ¾ c. (1½ sticks) butter, softened to room temperature
  • 1½ c. sugar
  • ⅓ c. brown sugar
  • 2 tsp. baking powder
  • 3 large eggs
  • ⅔ c. sour cream
  • 1 c. whole milk
  • ¼ c. Baileys
  • 3 c. all-purpose flour
  • FOR THE TOPPING
  • 1 c. sugar
  • 1 c. all-purpose flour
  • 1 tbsp. cocoa powder
  • 1 tsp. instant espresso powder
  • pinch of kosher salt
  • 6 tbsp. butter, melted
  • ½ c. chocolate chips, melted
Instructions
  1. Preheat oven to 350° and grease a 9”x13” pan with cooking spray. Make filling: In a medium bowl, combine brown sugar, cocoa powder and instant espresso powder. Whisk to combine.
  2. Make cake batter: In a large bowl, combine butter, sugars and baking powder. Using a hand mixer, beat until smooth. Next, beat in eggs one at a time.
  3. Add sour cream, whole milk, and Baileys and mix again, until just combined. Gradually beat in flour.
  4. Pour half the batter into prepared baking dish, sprinkle with filling in an even layer, and top with the rest of the batter.
  5. Make topping: In a medium bowl, combine sugar, flour, cocoa powder, espresso powder and a pinch of salt. Whisk to combine. Add melted butter and stir until well combined.
  6. Scatter topping over the top of the coffee cake batter in an even layer. Bake for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.
  7. Drizzle with melted chocolate and let cool for 10 to 15 minutes. Slice and serve.

Ingredients
  • 1 box brownie mix, plus ingredients called for on box
  • 2 (8 oz.) blocks cream cheese, softened
  • ½ c. sugar
  • 2 large eggs
  • 2 tbsp. sour cream
  • 1 tsp. pure vanilla extract
  • 1 c. semisweet chocolate chips
  • 1 tbsp. all-purpose flour
  • Melted chocolate, for drizzling
  • Chocolate shavings, for garnish (optional)
Instructions
  1. Preheat oven to 350º and grease an 8" or 9" springform pan with cooking spray. Prepare brownie batter according to package instructions and pour into prepared pan.
  2. Bake until brownie is set and a toothpick comes out clean, about 45 minutes. Let cool. Reduce oven to 325°.
  3. In a large bowl using a hand mixer, beat cream cheese and sugar until light and fluffy. Add eggs one at a time, mixing well between each addition. Add sour cream and vanilla and beat until evenly combined.
  4. In a small bowl, toss chocolate chips and flour and fold into cheesecake mixture.
  5. Pour cheesecake mixture over brownie crust. Wrap bottom of pan in aluminum foil and place on a deep roasting pan.
  6. Transfer to oven, then pour in enough boiling water to come up halfway in pan. Bake until center of cheesecake only slightly jiggles, about 45 minutes. Turn off heat, prop open oven door, and let cheesecake cool in oven, 1 hour, then remove aluminum foil and refrigerate cheesecake in pan until firm, at least 5 hours and up to overnight.
  7. Drizzle with melted chocolate and garnish with chocolate shavings, if using, before serving.

Melty mozzarella and fresh tomatoes give basic garlic bread a MAJOR upgrade.

Ingredients
  • 1 loaf ciabatta bread, sliced in half
  • ½ c. unsalted butter, softened to room temperature
  • 2 cloves garlic, minced
  • kosher salt
  • 1½ c. shredded mozzarella
  • 2 large tomatoes, sliced
  • ¼ c. balsamic vinegar
  • 1 tbsp. honey
  • 2 tbsp. finely sliced basil
  • 1 tbsp. extra-virgin olive oil
Instructions
  1. Preheat oven to 350 degrees F. Place bread halves on a large baking sheet.
  2. In a medium bowl, mash together garlic and butter then season with salt and pepper. Spread butter mixture onto both baguette halves. Bake until the bread is toasted, about 15-20 minutes.
  3. Top the toasted bread with mozzarella and tomato slices and bake until the cheese has melted, about 5-10 minutes more.
  4. Meanwhile, make balsamic glaze: In a small saucepan, combine balsamic vinegar and honey. Simmer until reduced by half, stirring occasionally, for 8-10 minutes (the mixture should coat the back of a spoon). Let cool.
  5. Drizzle garlic bread with olive oil and balsamic glaze. Garnish with basil, then cut into slices and serve warm.

Ingredients
  • 1 box vanilla cake mix, plus ingredients called for on box
  • 1 (3.4 oz) box vanilla pudding
  • 2 c. cold milk
  • ½ c. cool whip
  • 2 Bananas, sliced
  • 1½ c. butter, softened
  • 5 c. powdered sugar
  • 2 tsp. pure vanilla extract
  • ¼ c. plus 2 tbsp. heavy cream
  • 1 c. crushed Nilla wafers
  • Whole Nilla Wafers, for garnish
Instructions
  1. Preheat oven to 350°. Line two round 9" cake pans with parchment paper and grease with cooking spray. Prepare cake mix according to package instructions. Divide batter between cake pans and bake until a toothpick inserted into the center comes out clean, 25 to 30 minutes. Let cakes cool for 10 minutes in pans then invert onto wire racks to cool completely.
  2. Make pudding: In a large bowl, combine milk and pudding mix and stir until thickened, about 5 minutes. Fold in Cool Whip.
  3. Make butterceam: In a large bowl using a hand mixer, combine butter, 3 cups powdered sugar, and vanilla. Beat until light and fluffy. Add remaining sugar and heavy cream and beat until smooth.
  4. Assemble cake: Using a serrated knife, cut off the rounded top of each cake to level. Top one cake with a thick layer of pudding then top with most banana slices. (Reserve some to garnish.) Place second cake on top and frost entire cake with buttercream, reserving about 1 cup to pipe on top. Press crushed Nilla wafers around the sides of the cake.
  5. Transfer remaining buttercream to a piping bag fitted with a large star tip and pipe large swirls around the top of the cake. Decorate with Nilla wafers and more banana slices.

Nothing is better than cheesecake sandwiched between buttery crescent sheets.

Ingredients
  • nonstick cooking spray
  • 2 (8 oz.) bars cream cheese, softened to room temperature
  • ⅔ c. sugar
  • 2 large eggs
  • ¼ c. sour cream
  • ½ tsp. pure vanilla extract
  • pinch of kosher salt
  • 2 tubes crescent dough
  • 1 tbsp. butter, melted
  • 2 tbsp. cinnamon sugar
Instructions
  1. Preheat oven to 375° and spray a 9x13 baking dish with nonstick cooking spray. In a large bowl, combine cream cheese, sugar, eggs, sour cream, vanilla, and kosher salt. Using a hand mixer, mix all ingredients together until smooth.
  2. Press one sheet crescent dough into prepared baking dish, making sure to stretch to reach all edges of baking dish. If dough is perforated, pinch all perforations closed.
  3. Spread cheesecake mixture in an even layer and top with another layer of crescent dough. Brush top with melted butter and sprinkle with cinnamon sugar. Bake until crescent is golden and cooked through, 25 to 30 minutes.
  4. Let cool and slice into squares. Serve.

Ingredients
  • 1 c. cream cheese, softened
  • ½ c. heavy cream
  • ¼ c. powdered sugar
  • 1 pt. strawberries, bottoms and tops sliced off and hollowed out
  • Crushed graham crackers, for garnish
Instructions
  1. In a stand mixer fitted with the paddle attachment, beat cream cheese, 2 to 3 minutes. Add heavy cream and powdered sugar and beat until fluffy.
  2. Transfer mixture to a piping bag and pipe into strawberries.
  3. Garnish with crushed graham crackers and serve.
