Franks Buffalo Chicken Tots
There are few things more wonderful than a tater tot - crisp little morsels of potato joy, the ultimate game day snack. However, imagine if you will how much better they would taste if they were stuffed full of chicken, mozzarella and bacon drenched in the world's most delicious hot sauce, Frank's RedHot.

Ingredients
  • ¾ cup melted butter
  • ½ cup Franks Hot Sauce
  • 3 cups shredded chicken
  • 1 cup cream cheese
  • 2 cups mozzarella
  • 6 rashers bacon, cooked crisp and chopped
  • 2 lb potatoes, parboiled
  • ¼ cup flour
  • 1 tbsp salt
  • 1 tbsp pepper
  • Oil for frying
Instructions
  1. Whisk the Frank's RedHot Sauce into the melted butter and set aside.
  2. Combine chicken, cream cheese, mozzarella, chopped bacon and half the buffalo sauce.
  3. Make thin ballotines by rolling spoonfuls of the mix in clingfilm then freeze for a few hours.
  4. Grate the potatoes into a bowl and stir in the flour and seasoning. Set aside while you cut up the frozen sausages into roughly ¾ inch sections.
  5. Take a small handful of the mixture and fashion it around a piece of the frozen sausage then set aside to make the rest.
  6. Heat the oil to 300°F and fry for around 4 - 5 minutes until golden and crispy.
  7. Pile high in a bowl and pour over the remaining buffalo sauce and enjoy!

Buffalo Chicken Bombs

Ingredients
  • Cooking spray, for pan
  • ¾ c. shredded cooked chicken
  • 2 tbsp. buffalo hot sauce
  • 1 tbsp. sour cream or mayonnaise
  • 1 tube refrigerated biscuit dough
  • 8 1-inch cubes white cheddar cheese, well chilled
  • 3 tbsp. melted butter
  • 1 tbsp. chopped parsley
  • 1 tbsp. Chopped chives
  • Ranch dressing, for garnish
Instructions
  1. Preheat oven to 375°. Spray an 8" round baking pan or pie dish with cooking spray. In a medium bowl, combine the chicken, buffalo sauce, and sour cream (or mayonnaise).
  2. Flatten each biscuit round to about ¼” thickness. Top each round of dough with a scoop of the chicken mixture and a cube of cheese. Bring the edges of the dough together and pinch to seal. Place in pan seam side-down.
  3. In a small bowl, mix the butter, parsley, and chives. Brush the tops of the dough balls with the butter mixture.
  4. Bake until the biscuits are golden and cooked through, about 20 to 25 minutes.
  5. Drizzle with ranch dressing and serve warm.

Salsa Verde Queso

Ingredients
  • 1 tbsp. olive oil
  • 2 cloves garlic, minced
  • 1 c. salsa verde
  • 1 (8-oz.) block cream cheese, softened
  • 1 c. Shredded Monterey Jack
  • 1 c. shredded mozzarella
  • ⅓ c. sour cream
  • 2 tbsp. lime juice
  • 1 tbsp. chopped cilantro, plus more for garnish
  • kosher salt
  • Freshly ground black pepper
  • ¼ tsp. red pepper flakes (optional)
  • Pickled jalapeños, for garish
  • Tortilla chips, for serving
Instructions
  1. In a small skillet (or small saucepan) over medium heat, heat olive oil. Add garlic and cook until fragrant, about 1 minute. Pour in salsa verde and bring mixture to a simmer.
  2. Add cream cheese, breaking up block with a wooden spoon, and cook until melted. Add Monterey jack, mozzarella, sour cream, lime juice, and cilantro. Season with salt and pepper and cook until cheeses have melted, about 5 minutes.
  3. Remove from heat and sprinkle with red pepper flakes, if using. Garnish with more chopped cilantro and pickled jalapeños. Serve warm with tortilla chips, for dipping.

Garlicky Shrimp Alfredo Bake
Shrimp tossed in an easy from-scratch Alfredo sauce and penne and baked until you have cheesy goodness.

Ingredients
  • 10 oz. penne
  • 3 tbsp. butter, divided
  • 3 cloves garlic, minced
  • 1 lb. medium or large shrimp, peeled and deveined
  • 3 tbsp. chopped fresh parsley, divided
  • 2 tbsp. all-purpose flour
  • ¾ c. milk
  • ¼ c. low-sodium chicken broth
  • 1 c. shredded mozzarella, divided
  • ¼ c. plus 2 tbsp. freshly grated Parmesan, divided
  • Freshly ground black pepper
  • 2 large tomatoes, chopped (about 1 c.)
Instructions
  1. Preheat oven to 350°. In a large pot of salted boiling water, cook penne according to package directions until al dente. Drain and return to pot.
  2. Meanwhile, in a large ovenproof skillet over medium heat, melt 1 tablespoon butter. Add garlic, shrimp, and 2 tablespoons parsley, then season with salt. Cook until shrimp is pink and no longer opaque, 2 minutes per side. Transfer shrimp to a plate. (Keep juices in skillet.)
  3. Add remaining 2 tablespoons butter to skillet to let melt, then add flour and whisk until golden, 1 to 2 minutes. Add milk and chicken broth and bring to a simmer. Stir in ¾ cup mozzarella and ¼ cup Parmesan until creamy. Season with salt and pepper.
  4. Return shrimp to skillet. Add tomatoes and cooked penne and toss until combined. (Add more milk if mixture is too thick.)
  5. Sprinkle with remaining ¼ cup mozzarella and 2 tablespoons Parm and bake until melty, 5 to 7 minutes. Broil 2 to 3 more minutes until top is golden (watch it carefully so it doesn't burn!).
  6. Garnish with remaining tablespoon parsley and serve.

Ingredients
  • Vegetable oil, for frying
  • ½ cup yellow cornmeal
  • ½ cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 tablespoon sugar
  • 1 large egg
  • ½ cup light beer
  • 1 tablespoon whiskey
  • 8 medium dill pickles
  • 8 hot dogs, patted dry
Instructions
  1. In a large heavy-bottomed saucepan, preheat 4 inches of oil to 350 degrees.
  2. In a medium mixing bowl, combine cornmeal, flour, baking powder, sugar, egg, beer and whiskey until combined and still slightly lumpy. Do not over mix. Set aside.
  3. Using an apple corer, hollow out the inside of each pickle. Skewer the hot dog and place inside the pickle. Dip each pickle/hot dog into the batter, allowing excess to drip off.
  4. Fry in preheated oil for 3 to 5 minutes or until golden brown. Let drain on paper towel-lined plate. Dip into ketchup or mustard. Enjoy!

Ingredients
  • 4 boneless, skinless chicken breasts
  • 1 salt, to taste
  • 1 pepper, to taste
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 16 slices swiss cheese
  • ½ lb (225 g) ham, sliced
  • 2 sheets puff pastry
  • ¼ cup (60 g) english mustard
  • 1 egg, beaten
Instructions
  1. Preheat oven to 400°F (200°C).
  2. Sprinkle the chicken breasts with salt, pepper, garlic powder, and onion powder, tossing to coat evenly.
  3. On a cutting board, place a chicken breast between two sheets of plastic wrap and pound until about ½-inch (1 cm) thick with a meat mallet, rolling pin, or heavy pan.
  4. Remove the plastic wrap and place a layer of Swiss cheese, then ham, then one more layer of Swiss cheese.
  5. Evenly roll the chicken, and place onto a new sheet of plastic wrap.
  6. Wrap the chicken in the plastic wrap, twist the excess plastic, and roll the chicken while twisting the sides in to tighten and firm up the roll of chicken cordon bleu. Tie the excess and chill in the fridge to set for 30 minutes.
  7. Cut the puff pastry sheets in half and gently roll out width-wise.
  8. Brush the pastry with mustard and place the chicken on to the bottom edge of the pastry.
  9. Tightly roll the chicken in the puff pastry, pinching the seams together to close and folding the sides under the bottom.
  10. Place the chickens rolls on a greased baking sheet and brush all sides with egg wash.
  11. With a fork, score a decorative design onto the surface of the puff pastry.
  12. Sprinkle with salt.
  13. Bake for 35-40 minutes or until the puff pastry is a dark golden brown and the internal temperature of the chicken is 165°F (75°C).

  • ½ c. heavy whipping cream, warmed
  • 2 c. semi-sweet chocolate chips
  • 5 packages of Peeps, mix and match colors to your liking
  • Graham crackers, for serving
Instructions
  1. Preheat oven to 450 degrees F.
  2. Heat heavy whipping cream in a microwave safe bowl for 30 seconds, or in a pot over medium heat until warm.
  3. In a medium skillet, evenly spread out chocolate chips. Pour warmed whipping cream over the chips. Arrange Peeps in a colorful pattern atop.
  4. Bake until golden brown, 8 to 10 minutes.

Ingredients
  • 1 lb. elbow pasta
  • ¼ c. butter
  • 1 shallot, finely diced
  • 3 cloves garlic, minced
  • ¼ c. all-purpose flour
  • 2 c. milk
  • kosher salt
  • Freshly ground black pepper
  • 1 c. shredded white Cheddar
  • 1 c. shredded mozzarella
  • 1 lb. lump crab meat
  • Chopped fresh parsley, for garnish
Instructions
  1. Preheat oven to 375º. In a large pot of boiling water, cook elbows according to package directions until al dente. Drain and return to pot.
  2. Meanwhile, in a large skillet over medium heat, melt butter. Add shallot and garlic and cook until fragrant and softened, 3 minutes. Add flour and whisk until combined and golden, 1 minute. Add milk and season with salt and pepper. Simmer 2 minutes, until sauce is thickened and smooth.
  3. Stir in ½ white cheddar and mozzarella until melty, then remove from heat.
  4. Add sauce and crab meat to pot with cooked elbows and stir until completely combined.
  5. Sprinkle with remaining ½ cup cheddar and parsley and bake until bubbly, 20 minutes.
  6. Serve.

Ingredients
  • 2 (8-oz.) blocks of cream cheese, softened
  • 3 c. shredded cheddar, divided
  • 1 bunch curly parsley, plus 2 tbsp chopped
  • 1 tbsp. hot sauce
  • 1 tsp. Italian seasoning
  • 1 tsp. Worcestershire sauce
  • Crackers, for serving
Instructions
  1. In a medium bowl, combine cream cheese, 2 cups cheddar, Worcestershire, hot sauce, chopped parsley, and Italian seasoning. Beat with a hand mixer until evenly mixed and fluffy.
  2. Transfer cream cheese mixture to a serving platter and form cream cheese mixture into a carrot shape. Press the remaining cup of cheddar on the top and sides of cheese ball. If the mixture is too loose, refrigerate for 30 minutes to 1 hour, or until it keeps it shape. Stick bunch of parsley on the top of the carrot so it looks like its stems.
  3. Serve with crackers.

Ingredients
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 lb (455 g) ground beef
  • 2 teaspoons salt, divided
  • 1 teaspoon pepper, divided
  • 2 cups (80 g) fresh spinach
  • 5 large russet potatoes
  • 1 large egg
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ cup (50 g) shredded parmesan cheese
  • ½ cup (50 g) shredded cheddar cheese
  • marinara sauce, warmed, for serving
  • fresh parsley, chopped, for serving
Instructions
  1. Preheat oven to 375°F (190°C).
  2. In a large pan over medium heat, heat the olive oil until shimmering, then add the onion.
  3. Sauté the onion until golden and translucent, about 5 minutes.
  4. Add the garlic, ground beef, 1 teaspoon of salt, and ½ teaspoon of pepper. Break down with a spatula and cook until brown and cooked through.
  5. Add the spinach and stir until wilted. Remove the pan from the heat and set aside.
  6. Peel the potatoes and grate.
  7. Place the shredded potatoes in a kitchen towel over a bowl and wring out the water.
  8. In another large bowl, add the shredded potato, egg, remaining teaspoon of salt, remaining ½ teaspoon of pepper, onion powder, garlic powder, and Parmesan cheese. Mix until combined.
  9. Line a small bowl with plastic wrap.
  10. Place 1 cup (250 g) of the potato mixture in the bowl and use a spoon to spread the potatoes around the sides of the bowl.
  11. Sprinkle cheddar cheese on top of the potatoes and add a large spoonful of the beef mixture, being careful not to overfill.
  12. Pick up the sides of the plastic wrap and close the potatoes, twisting to create a sealed ball.
  13. Chill for 30 minutes.
  14. Place the potato balls on a greased baking sheet and bake for 35-40 minutes, or until the potatoes are crispy and brown.
  15. Serve topped with marinara sauce and parsley.
  16. Enjoy!
