Ingredients
  • 20 large ladyfingers
  • 1 cup coffee (240 mL)
  • 16 oz cream cheese (455 g)
  • 16 oz mascarpone cheese (455 g)
  • 1 tablespoon vanilla extract
  • 1 cup milk, hot (240 mL)
  • ½ cup sugar (100 g)
  • 4 teaspoons gelatin
  • 2 tablespoons cocoa powder
Instructions
  1. Dip the ladyfingers in coffee.
  2. In two spring form pans lined with parchment paper, layer the coffee-dipped lady fingers in a single layer.
  3. Freeze until the ladyfingers are frozen.
  4. In a bowl, add the cream cheese, mascarpone cheese, and vanilla extract. Stir to combine.
  5. Add the milk, sugar, and gelatin to a bowl and whisk until the gelatin has dissolved.
  6. Pour the milk mixture through a sieve into the bowl of cream cheese.
  7. Pour 1 cup (290 g) of cheesecake batter into a springform pan. Refrigerate until firm, about 2 hours
  8. Add one layer of frozen ladyfingers on top of the refrigerated cheesecake layer.
  9. Add another cup (290 g) of cheesecake batter on top. Refrigerate for two hours, and repeat with remaining batter and ladyfinger layer.
  10. Refrigerate for 2 hours or until firm.
  11. Dust the top with cocoa powder.

Ingredients
  • 1 cup unsalted butter, 2 sticks (230 g)
  • 1 ½ cups semi-sweet chocolate chips, or dark chocolate chips, divided (260 g)
  • 1 ½ cups granulated sugar (300 g)
  • ¾ cup brown sugar (165 g)
  • 1 tablespoon vanilla extract
  • 1 teaspoon salt
  • 3 large eggs
  • 1 ¼ cups all-purpose flour (155 g)
  • ⅓ cup dark cocoa powder (40 g)
  • nonstick cooking spray, for greasing
Instructions
  1. Preheat the oven to 350˚F (180˚C).
  2. Add the butter and 1 cup (175 g) of chocolate chips to a large microwave-safe bowl. Microwave for 1½ minutes, then let sit for 3 minutes before whisking together.
  3. Add the granulated and brown sugars, vanilla, and salt. Whisk to combine.
  4. Whisk in the eggs until fully combined.
  5. Sift the flour and cocoa powder into the bowl and fold in with a spatula. Add the remaining chocolate chips and fold to incorporate.
  6. Line a 9-inch (23-cm) square baking pan with parchment paper and grease with nonstick spray. Spread the batter evenly in the pan.
  7. Bake for 35-40 minutes, until a toothpick inserted in the center comes out with a few moist crumbs attached.
  8. Let cool completely before cutting.

Ingredients
  • 2 tablespoons oil
  • 1 lb medium shrimp, peeled and deveined (455 g)
  • 1 large head romaine lettuce, chopped
  • 4 tomatoes, diced
  • ½ jalapeño, deseeded and finely diced, optional
  • ¼ red onion, finely diced
  • 2 tablespoons fresh cilantro, minced
  • 1 large avocado, diced
  • ½ teaspoon salt
  • 2 tablespoons lime juice, or 1 lime
TACO SEASONING
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ¼ teaspoon garlic powder
  • ½ teaspoon chili powder
Instructions
  1. Heat the oil in a skillet over medium-high heat.
  2. Toss in the shrimp and immediately season with the taco seasoning. Sauté the shrimp just until each piece has started to turn pink, about 2 minutes. Remove from heat.
  3. In a large bowl, combine the lettuce, shrimp, tomatoes, jalpeño, red onion, cilantro, avocado, salt, and lime juice, and mix until the salad is well-combined.
  4. Serve with tortilla strips, if desired.

Ingredients
  • 2 tablespoons unsalted butter
  • ½ medium white onion, diced
  • 2 jalapeñoes, diced
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 12 fl oz evaporated milk (355 mL)
  • 3 cups shredded sharp cheddar cheese (300 g)
  • 1 cup all-purpose flour (125 g)
  • 2 large eggs, beaten
  • 3 cups tortilla chips, crushed (80 g)
  • 4 cups canola oil (960 mL)
FOR SERVING
  • fresh cilantro, chopped, for serving
  • pico de gallo, for serving
  • guacamole, for serving
  • sour cream, for serving
Instructions
  1. Melt butter in a medium saucepan over medium-high heat. Add the onion and cook for 4-6 minutes, until translucent.
  2. Add the jalapeño and stir for 4 minutes, until soft. Add the garlic and cook for about 1 minute.
  3. Sprinkle in the cornstarch and stir for two minutes. Add the evaporated milk and stir for 3 minutes, or until the mixture thickens.
  4. Slowly add the cheese ½ cup (50 g) at a time. Stir constantly until the cheese is completely melted.
  5. Remove the queso from the heat. Line a baking sheet with parchment paper, then pour the queso over it. Use a spatula to spread the queso in an even layer about an ⅛ inch (3 mm) thick.
  6. Freeze for three hours.
  7. Remove the queso from the freezer and transfer to a cutting board. Carefully cut the queso horizontally into 7 rows, about 2½-inches (6-cm) apart.
  8. At the end of the bottom row, cut a triangle. Continue cutting triangles down the length of the row. Repeat with the remaining rows.
  9. Place the flour, eggs, and tortilla chip crumbs in 3 separate medium bowls.
  10. Heat the oil in a large pot until it reaches 350°F (180°C).
  11. Toss a triangle of queso in the flour. Tap off any excess flour, then dip the piece in the egg, then toss it in the tortilla chip crumbs. Repeat with the remaining queso chips.
  12. Fry the breaded queso chips 3-4 at a time, until golden brown, 15–30 seconds.
  13. Drain the chips on a wire rack or paper towels.
  14. Garnish with cilantro. Serve with guacamole, pico de gallo, and sour cream.

Ingredients
  • 1 pound skirt steak
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 onion, sliced
  • 4 garlic cloves, sliced
  • 3 bell peppers, sliced
  • 1 jalapeño pepper, sliced
  • 1 tablespoon butter
  • 4 large tortillas
  • 2 cups Mexican cheese blend
  • Guacamole
  • Sour cream
  • Salsa
Instructions
  1. Season skirt steak with salt, pepper, chili powder, and cumin.
  2. Cook on high heat for roughly 3 minutes on each side, for medium-rare.
  3. Let the steak rest for 10 minutes, then slice into strips.
  4. While the steak is resting, sauté onion and garlic until slightly translucent. Add bell peppers and jalapeño, cook slightly, then mix in the steak. Remove from heat and set aside.
  5. In a clean pan, melt butter. Lay the tortilla on the buttered pan, add cheese, fajita mixture, and more cheese, then top with another tortilla and pat it down.
  6. Flip the quesadilla over and cook the other side until it’s golden. Remove from pan and cut into quarters or eighths. Repeat these steps with the remaining tortillas.
  7. Serve immediately with sour cream, salsa, and guacamole.

Ingredients
PIE DOUGH
  • 1 ¼ cups all purpose flour, plus more for dusting (155 g)
  • 1 tablespoon sugar
  • ¼ teaspoon kosher salt
  • 8 tablespoons unsalted butter, cubed and chilled
  • 1 tablespoon apple cider vinegar
  • ¼ cup ice water (60 mL)
  • 1 egg, beaten, for brushing
  • coarse sugar, for sprinkling
  • APPLE FILLING
  • 1 ½ lb granny smith apple, or Fuji apple, peeled, cored and sliced (680 g)
  • 1 tablespoon lemon juice
  • ¼ teaspoon ground cinnamon
  • ⅓ cup sugar (65 g)
  • 1 tablespoon unsalted butter
CARAMEL SAUCE
  • ½ cup sugar (100 g)
  • ¼ teaspoon salt
  • 1 tablespoon unsalted butter
  • ½ cup heavy cream (120 mL)
Instructions
  1. Make the pie dough: In a medium bowl, combine the flour, sugar, and salt. Mix with fork.
  2. Add the butter and work into the flour with a fork until only pea-size lumps remain.
  3. Add the apple cider vinegar and mix into the dough with your fingers. Gradually add the ice water and mix with your hands until the dough starts to come together. Add more water as needed if the dough is dry. The dough should not be very tacky or sticky. Shape the dough into a rough ball and cover with plastic wrap. Chill in the refrigerator for 30 minutes.
  4. Meanwhile, make the apple filling: In a large skillet over medium heat, combine the sliced apples, lemon juice, cinnamon, and sugar. Cook, stirring continuously, until the apples are soft, about 10 minutes. Add the butter and stir to incorporate. Remove the pan from the heat and let the filling cool.
  5. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  6. On a lightly floured surface, roll out the dough into a round that is about ⅛-inch (3 mm) thick. Roll the dough around the rolling pin and transfer to the prepared baking sheet.
  7. Spoon the apple filling into the center of the dough, leaving a 2-inch (5 cm) border around the edges. Fold the edges over the apples. Brush the egg wash over the crust and sprinkle coarse sugar all over the galette.
  8. Bake the galette for 25 minutes, until the crust is golden brown.
  9. Meanwhile, make the caramel sauce: In a small pot, combine the sugar, salt, and butter. Cook over medium heat until the sugar dissolves and turns amber in color, 2-3 minutes, swirling the pan occasionally.
  10. Pour in the heavy cream and stir with wooden spoon. Remove from the heat and let cool slightly.
  11. Drizzle the caramel sauce over the galette, then slice and serve.

  • 2 strips bacon, cut into 1-inch (2 cm) pieces
  • 1 cup onion, diced (150 g)
  • 1 cup carrot, diced (120 g)
  • 1 cup celery, diced (225 g)
  • 3 tablespoons flour
  • 2 cups ham, cooked and cubed (300 g)
  • 2 potatoes, cubed
  • 1 teaspoon fresh thyme
  • 1 teaspoon black pepper
  • 6 cups chicken broth (1.4 L)
  • 2 bay leaves
  • 2 cups heavy cream (480 mL)
Instructions
  1. In a 6-quart (5.7 liters) dutch oven, cook bacon over medium-high heat until fat is rendered out and the pieces begin to get crispy.
  2. Add onion, carrot, and celery, and cook until just tender, about 3 minutes.
  3. Reduce heat to medium and add flour, stirring constantly for 1-2 minutes to avoid lumps.
  4. Add ham, potatoes, thyme, and black pepper. Stir to coat the meat and potatoes in the roux/vegetable mix.
  5. Add the chicken broth and bay leaves.
  6. Cover and bring to a boil. Then reduce heat to medium-low and cook covered for 25-30 minutes.
  7. Remove bay leaves and stir in cream. Return to a simmer and serve.

  • 9 slices whole wheat bread
  • 1 tablespoon olive oil
  • 1 large white onion, diced
  • 2 red bell peppers, seeded and diced
  • 3 cloves garlic, chopped
  • 2 teaspoons salt, plus more taste
  • 1 teaspoon pepper, plus more to taste
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon cayenne
  • ½ teaspoon chili powder
  • 28 oz chopped tomato, 1 can (795 g)
  • 9 large eggs
  • ½ cup fresh parsley, chopped, for garnish (20 g)
Instructions
  1. Preheat oven to 350°F (180°C). Set a wire rack over a baking sheet.
  2. Arrange the bread slices on the wire rack, then bake for 8 minutes, until slightly toasted.
  3. Heat the olive oil in a large cast-iron skillet over high heat. Add the onion and cook for 5 minutes, until softened.
  4. Add the red pepper and cook for 5 minutes, or until softened.
  5. Add the garlic, salt, pepper, cumin, paprika, cayenne, chili powder, and tomatoes. Stir occasionally for 15 minutes, or until thickened.
  6. Spoon the shakshuka sauce onto the bread. Spread evenly.
  7. Make a small well in the center of the sauce on each slice of bread. Carefully add an egg to each well.
  8. Season the eggs with salt and pepper.
  9. Bake for 20 minutes, or until the egg whites are set and the yolks are cooked to your liking.
  10. Sprinkle with chopped parsley and serve warm.

  • 5 flour tortillas
  • ½ red bell pepper, sliced
  • ½ green bell pepper, sliced
  • ½ orange bell pepper, sliced
  • ½ red onion, sliced
  • 1 teaspoon salt

  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 lime, juiced

Instructions
  1. Preheat oven to 400°F/200°C.
  2. Wrap the tortillas in foil and place on the corner of a baking sheet.

  4. Toss to coat.

  • 8 oz cream cheese (225 g)
  • 1 ½ cups shredded mozzarella cheese (150 g)
  • 5 oz spinach, cooked and chopped (25 g)
  • 16 oz artichoke heart (455 g)
  • ½ cup grated parmesan cheese (55 g)
  • ¾ cup sour cream (170 g)
  • 1 cup milk (240 mL)
  • 20 oz frozen ravioli (570 g)
Instructions
  1. Preheat the oven to 375ºF (190ºC).
  2. In a large bowl, mix together the cream cheese, mozzarella, spinach, artichoke hearts, Parmesan cheese, sour cream, and milk.
  3. Pour a third of the spinach artichoke mixture in a large glass baking dish and spread it evenly over the bottom.
  4. Line the tray with half of the frozen ravioli, spread more sauce over the top, then add the rest of the ravioli and cover with the remaining sauce.
  5. Bake for 30–35 minutes, or until browned.
