Oreo Jell-O Shots

Ingredients
  • 1 c. vodka
  • 2 envelopes gelatin
  • 1 c. boiling water
  • 1 (14-oz.) can sweetened condensed milk
  • 1 package Oreos
Instructions
  1. In a large bowl or measuring cup, combine vodka and gelatin and let sit 2 minutes. Add water and stir until gelatin dissolves completely. Pour in sweetened condensed milk and whisk to combine.
  2. Spray a small sheet pan with nonstick cooking spray and pour mixture into pan. Refrigerate until firm up, 4 to 5 hours.
  3. Meanwhile, remove cream from Oreos using a butter knife. When gelatin mixture is firm, using a small biscuit cutter or shot glass, cut gelatin mixture into rounds. Place 1 round between two Oreo cookies and repeat until all gelatin rounds are used.

Meatball Parm Skewers

Meatball Parm Skewers
All the flavor of meatball parm in one perfect bite.

Ingredients
  • 1 lb. ground beef
  • ½ c. bread crumbs
  • 1 Egg, lightly beaten
  • 2 tbsp. chopped parsley
  • 2 c. marinara sauce
  • 4 garlic cloves (divided)
  • ½ c. finely grated Parmesan, divided
  • kosher salt
  • Freshly ground black pepper
  • 6 mozzarella slices, cut into small squares
  • Fresh basil leaves, for serving
Instructions
  1. Mince two cloves of garlic and thinly slice the remaining to cloves.
  2. In a large bowl, ground beef, bread crumbs, egg, parsley, minced garlic and ¼ cup Parmesan. Season with salt and pepper. Mix until just combined. Roll into golf-size balls.
  3. Heat olive oil in a large skillet over medium-high heat. Add the meatballs and cook to brown on all sides. When the meatballs have developed a nice crust, remove them from the skillet and wipe the skillet clean. Return skillet to stovetop over medium heat. Pour marinara into the skillet. Stir in thinly sliced garlic and remaining Parmesan, bring sauce to simmer then add the meatballs back to the pan. Spoon sauce over the meatballs. Cover the pan with a lid and simmer meatballs for another 10-12 minutes, or until cooked through.
  4. Top each meatball with mozzarella. Cover pan with lid and cook until the cheese is melted. Turn off heat. Top each meatball with a whole basil leave, folded, and pierce with a toothpick to serve.

Pineapple Upside Down Bundt Cake

Ingredients
  • Cooking spray, for pan
  • ½ c. packed light brown sugar
  • ¼ c. butter, melted
  • 1 box yellow cake mix
  • ⅓ c. vegetable oil
  • ½ c. pineapple juice pineapple juice
  • ½ c. water
  • 3 large eggs
  • 4 slices pineapple, halved
  • 8 maraschino cherries, stems removed
Instructions
  1. Preheat oven to 350° and grease a bundt pan (generously) with cooking spray. In a medium bowl, whisk together melted butter and brown sugar, then pour mixture into bottom of bundt pan.
  2. Place halved pineapple rings and cherries around the bottom of the pan, alternating between each.
  3. In a large bowl, beat together cake mix, vegetable oil, pineapple juice, water, and eggs. Pour batter over pineapples and cherries. Bake until a toothpick comes out clean, about 35 minutes.
  4. Let cake cool for 10 minutes in pan, then slide a knife (or a small offset spatula) around edges and center to release cake from pan. Invert cake onto serving tray.
  5. Serve warm or at room temperature, slicing cake between pineapples.

Ingredients
  • ½ lb. Brussels sprouts, thinly sliced
  • 1 tbsp. olive oil
  • 2 tbsp. freshly grated Parmesan
  • 1 tsp. garlic powder
  • Kosher salt
  • Freshly ground black pepper
  • Caesar dressing, for dipping
Instructions
  1. Preheat oven to 400°. In a large bowl, toss Brussels sprouts with olive oil, Parmesan, and garlic powder and season with salt and pepper. Spread in an even layer on a medium baking sheet.
  2. Bake 10 minutes, toss, and bake 8 to 10 minutes more, until crisp and golden. Serve with caesar dressing for dipping.

BLT Sushi

BLT Sushi

Ingredients
  • 10 slices bacon
  • 2 tbsp. mayo
  • 1 c. chopped tomatoes
  • 1 c. shredded romaine
  • kosher salt
  • Freshly ground black pepper
Instructions
  1. Preheat oven to 400º. On a large baking sheet with a wire rack placed on top, line 5 slices bacon side by side. Lift one end of every other bacon slice and place another bacon slice on top of the lifted pieces. Lay the slices back down. Next, lift opposite bacon slices back and place a bacon slice on top. Lay the slices back down. Repeat the weaving process until you have a bacon weave of 5 strips by 5 strips.
  2. Bake until cooked but still pliable, 20 minutes.
  3. Pat bacon weave with paper towels to drain fat and transfer to a piece of saran wrap (helps for rolling!).
  4. Spread a thin layer of mayo on top of bacon weave, then top with tomatoes (keep them on the bottom ⅓ for easier rolling) and romaine. Season with salt and pepper.
  5. Starting from the bottom, tightly roll, then slice.

Fruity Pebbles Cheesecake

Ingredients
FOR THE CRUST
  • 1 (10-oz.) bag marshmallows
  • ½ c. (1 stick) butter
  • 5 c. Fruity Pebbles
FOR THE CHEESECAKE
  • 2 (8-oz.) blocks cream cheese, softened
  • ½ c. sugar
  • 1 tsp. vanilla extract
  • Pinch of kosher salt
  • 2 c. Cool Whip
  • ½ c. Fruity Pebbles, plus more for garnish
Instructions
  1. In a large saucepan over medium heat, melt marshmallows and butter, stirring to combine. Remove from heat and stir in Fruity Pebbles.
  2. Coat a springform pan with cooking spray, then press mixture into pan and up the sides. Let cool.
  3. Meanwhile, make filling: In a large bowl using a hand mixer, beat together cream cheese and sugar until light and fluffy, then add vanilla and salt. Stir in whipped heavy cream until no lumps remain, then fold in Fruity Pebbles.
  4. Spoon filling into cooled crust and refrigerate until set, at least 4 hours and up to overnight.
  5. Remove cheesecake from pan and garnish with more Fruity Pebbles before slicing and serving.

Why isn't everything in a bacon cup?! ?

Ingredients
  • 12 slices bacon
  • ½ c. Greek yogurt
  • 2 tsp. lemon juice
  • 2 tbsp. chopped chives, plus more for garnish
  • kosher salt
  • Freshly ground black pepper
  • 2 c. halved cherry tomatoes
  • 1 head of romaine lettuce, chopped
  • 1 avocado, chopped
Instructions
  1. Preheat oven to 400°. Invert a muffin tin upside down onto a large rimmed baking sheet.
  2. Cut 8 slices of bacon in half crosswise. Lay two of the halved strips onto an inverted muffin tin cup in the shape of a cross. Weave two more half pieces on both sides to create a mini weave. Wrap the entire cup with a whole slice of bacon. Repeat to make three more cups. Bake until crispy, about 20 minutes. Let cool for at least 15 minutes.
  3. Make dressing: In a medium bowl, whisk together Greek yogurt, lemon juice and chives and season with salt and pepper. Add tomatoes and lettuce and toss to coat.
  4. Remove bacon cups from muffin tin and fill with dressed lettuce and tomatoes. Garnish with more chives and serve.

Mozzarella Stick Waffles
Imagine mozzarella sticks but with crispy waffled nooks and crannies.

Ingredients
  • 1 c. all-purpose flour
  • 2 large eggs, lightly beaten
  • 2 tbsp. milk (or water)
  • 1 c. Italian bread crumbs
  • kosher salt
  • 16 mozzarella sticks (preferably low-moisture)
  • Chopped fresh parsley, for garnish
  • Marinara, warmed, for serving
Instructions
  1. Preheat waffle maker to medium heat. Set up a dredging station: Add flour to a shallow bowl. In a separate shallow bowl, whisk together eggs and milk. In a third shallow bowl, season bread crumbs with salt. Toss mozzarella sticks in flour, toss in egg mixture until fully coated, then toss in bread crumbs.
  2. Spray waffle iron with nonstick cooking spray. Place coated mozzarella sticks sided by side in the hot waffle iron. Cover and cook until golden, about 4 minutes.
  3. Carefully remove from waffle using tongs or a fork, then cut waffles into strips. Garnish with parsley, and serve with marinara sauce for dipping.

  • 1 package graham crackers, crushed, plus more for garnish
  • 12 oz. cream cheese, softened to room temperature
  • 1 c. powdered sugar
  • Juice of 1 lemon
  • Pinch kosher salt
  • 1 c. whipped topping, plus more for garnish
  • Lemon wedges, for garnish
Instructions
  1. Divide crushed graham crackers between 4 dessert cups. In a large bowl using a hand mixer, whip cream cheese until light and fluffy. Add powdered sugar, lemon juice, and salt and beat until combined. Fold in 1 cup whipped topping.
  2. Pipe cream cheese mixture into cups and place in refrigerator until thickened, 1 hour up to overnight. When ready to serve, top with remaining whipped topping and garnish with crushed graham crackers and lemon wedges.

Jalapeño Popper Chicken

Ingredients
  • 6 oz. cream cheese, softened
  • 1 c. shredded Cheddar
  • ⅓ c. Sliced green onions
  • 2 cloves garlic, minced
  • 1 jalapeño, minced
  • kosher salt
  • Freshly ground black pepper
  • 4 boneless skinless chicken breasts
  • 12 slices bacon
Instructions
  1. In a large bowl, stir together cream cheese, cheddar, green onions, garlic, and jalapeño and season with salt and pepper.
  2. Make a pocket on the side of each chicken breast, making sure not to slice entirely through the breast. Stuff chicken with cream cheese mixture. Place 3 slices of bacon on a cutting board. Place chicken breast on top and wrap chicken breast in bacon.
  3. Preheat a large cast-iron skillet over medium heat. Add bacon-wrapped chicken and season with more pepper. Cook until bacon is crispy and chicken no longer pink, 10 minutes per side, turning with tongs to make sure to get all sides of the bacon cooked.
