Pepperoni Bread
Everyone loves this! It's so easy and always comes out wonderful. Who could resist the delicious taste of pizza?

Ingredients
  • 1 (1 pound) loaf frozen bread dough, thawed
  • 1 egg, beaten
  • 4 ounces sliced pepperoni sausage
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1½ teaspoons Italian seasoning
Instructions
  1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease a baking sheet.
  2. Roll frozen bread dough out into a rectangle. Brush dough with beaten egg. Arrange pepperoni, mozzarella cheese and parmesan cheese over the dough. Sprinkle on the Italian seasoning. Roll up dough like a jelly roll and pinch seam to seal; place, seam side down, on prepared baking sheet.
  3. Bake in preheated oven for 40 minutes, or until golden.

Loaded Chicken Potato Soup

Ingredients
  • 2½ pounds russet potatoes
  • 1 pound skinless, boneless chicken breast halves, cut into chunks
  • 2 tablespoons olive oil, or as needed
  • 1 teaspoon salt, plus more to taste
  • ½ teaspoon ground black pepper, plus more to taste
  • 1 onion, diced
  • 1 cup diced carrots
  • 2 stalks celery, diced
  • 6 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 3 cups milk
  • 1 cup chicken stock
  • 1 cup bite-size broccoli florets
  • ½ cup bacon bits, divided
  • 2 green onions, chopped
  • 5 ounces shredded sharp Cheddar cheese, divided
  • 1 cup sour cream
Instructions
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Prick potatoes with a fork and wrap each potato in aluminum foil.
  3. Bake in the preheated oven until potatoes are tender, 1½ to 2 hours. Cool potatoes until easily handled; scoop insides from skins and discard skins.
  4. Place chicken in a bowl and add enough olive oil to coat; add 1 teaspoon salt and ½ teaspoon pepper and toss to coat.
  5. Heat a skillet over medium-high heat; cook and stir chicken until no longer pink in the center and juices run clear, 5 to 10 minutes.
  6. Toss onion, carrots, and celery with enough olive oil to coat in a bowl.
  7. Heat a skillet over medium-low heat; cook and stir onion mixture until tender, 5 to 10 minutes.
  8. Melt butter in a large saucepan over medium-heat. Stir flour into melted butter and cook until lightly browned, 1 to 2 minutes. Pour milk, about ¼ cup at a time, into butter-flour mixture; cook, stirring constantly, until sauce is thickened, about 10 minutes.
  9. Stir cooked potato, chicken, onion mixture, chicken stock, broccoli, ½ of the bacon bits, ½ of the green onions, and 4 ounces of the Cheddar cheese into the sauce. Cook soup until heated through and broccoli is tender, about 10 minutes; season with salt and pepper. Stir sour cream into soup and cook until heated through, about 5 minutes.
  10. Ladle soup into serving bowls and top with remaining bacon, green onions, and Cheddar cheese.

A quick and easy dinner with chicken breast, zucchini, and mushrooms that is one of my go-to recipes midweek because it is ready in under 30 minutes.

Ingredients
  • 1 tablespoon butter
  • 2 (5 ounce) boneless, skinless chicken breasts, cubed
  • salt and freshly ground pepper to taste
  • 1 tablespoon olive oil
  • 4 green onions, chopped
  • 2 green zucchini, cut in half lengthwise and into ¼-inch slices
  • 8 large fresh mushrooms, sliced
  • 1 tablespoon all-purpose flour
  • ¾ cup heavy whipping cream
  • 1 tablespoon chopped fresh parsley
Instructions
  1. Melt butter in a skillet over medium heat and cook chicken until slightly browned, stirring frequently, 5 to 7 minutes. Season with salt and pepper and transfer to a plate. Cover with foil or a bowl to keep warm.
  2. Heat olive oil in the same skillet over medium heat and cook green onions until soft, about 2 minutes. Add zucchini slices and cook until softened, about 5 minutes. Add mushrooms and stir to combine. Return chicken to the skillet and sprinkle with flour. Stir in cream and cook until sauce has thickened, 3 to 5 minutes. Sprinkle with chopped parsley.

Pork Chops in Sherry-Mushroom Gravy
Comfort food at its best! Quick, easy, and delicious pork chops that are perfect for a weeknight supper.

  • 2 tablespoons vegetable oil
  • 4 (1-inch thick) boneless pork chops
  • salt and ground black pepper to taste
  • ¼ cup all-purpose flour
  • 2 tablespoons butter
  • 1 (8 ounce) package sliced fresh mushrooms
  • 1 (10.75 ounce) can cream of mushroom soup
  • ½ cup dry cooking sherry
  • 4 ounces shredded mozzarella cheese (optional)
Instructions
  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Heat oil in a frying pan over medium-high heat. Season pork chops with salt and pepper and coat in flour. Brown pork chops on both sides, 3 to 5 minutes, and transfer to a baking dish.
  3. Melt butter in the same frying pan and cook mushrooms until tender, scraping the bottom of the pan, 5 to 7 minutes. Season with salt and pepper. Add mushroom soup and sherry; stir gravy until well incorporated.
  4. Pour gravy over pork chops in the baking dish. Cover with aluminum foil.
  5. Bake in the preheated oven until chops are no longer pink in the center and an instant-read thermometer inserted into the center reads 145 degrees F (63 degrees C), about 35 minutes. Remove aluminum foil, stir gravy, and top pork chops with mozzarella cheese.
  6. Return to the hot oven and bake until cheese is melted, 3 to 5 minutes more.

  • 1 pound sliced fresh mushrooms
  • 1 (4 pound) standing beef rib roast
  • 1 (1.25 ounce) envelope onion soup mix
  • 1 (12 fluid ounce) bottle beer
  • ground black pepper
Instructions
  1. Place the mushrooms in the bottom of a slow cooker; set the roast atop the mushrooms; sprinkle the onion soup mix over the beef and pour the beer over everything; season with black pepper. Set slow cooker to LOW; cook 9 to 10 hours until the meat is easily pulled apart with a fork.

Make homemade wings in minutes with some help from your Instant Pot. Everyone's favorite pressure cooker get your chicken wings cooked through quickly, while the broiler crisps them up. Serve with crunchy veggie sticks and the sauce of your choosing.

  • 1 cup water
  • 1½ pounds whole chicken wings,
  • cut into drumettes and ats, with
  • tips discarded
  • ¼ teaspoon kosher salt
  • 2 tablespoons buffalo-style hot
  • sauce (such as Frank’s RedHot)
  • 1 tablespoon unsalted butter
  • Blue cheese dressing, for dipping
  • Celery sticks
Instructions
  1. Preheat broiler with oven rack 6 inches from heat. Line a rimmed baking sheet with aluminum foil, and lightly spray with cooking spray.
  2. Insert rack in Instant Pot; pour water in bottom of Instant Pot. Arrange chicken wings in a single layer on rack, and sprinkle with salt. Place lid on Instant Pot; set to cook on high pressure for 3 minutes. Follow manufacturer’s instructions to quick release on Instant Pot. Remove lid, and transfer chicken wings to prepared baking sheet. Broil wings on high until crisp, about 6 minutes, turning pan once halfway through.
  3. Place hot sauce and butter in a microwavable bowl. Microwave on high 30 seconds or until butter is melted; stir to combine. Place chicken wings in sauce; toss to coat. Serve with blue cheese dressing and celery.

This dumpling recipe was a winner in the Better Homes and Gardens October 1950 Cooks Round Table. The homemade pastry is worth the effort for this favorite dessert, and the fruit filling is super easy.

Ingredients
  • 2 cups water
  • 1¼ cups sugar
  • ½ teaspoon ground cinnamon
  • ¼ cup butter or margarine
  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • ⅔ cup shortening
  • ⅓ - ½cup half-and-half, light cream, or whole milk
  • 2 tablespoons chopped raisins or golden raisins
  • 2 tablespoons chopped walnuts
  • 1 tablespoon honey
  • 2 tablespoons sugar
  • ½ teaspoon ground cinnamon
  • 6 small cooking apples (about 1-1/2 pounds)
  • 1 tablespoon butter or margarine
Instructions
  1. For sauce, in a medium saucepan combine the water, the 1-1/4 cups sugar, and ½ teaspoon cinnamon. Bring to boiling; reduce heat. Simmer, uncovered, for 5 minutes. Add the ¼ cup butter or margarine. Set aside.
  2. Meanwhile, for pastry, combine the flour and salt. Using a pastry blender, cut in shortening until pieces are the size of small peas. Sprinkle 1 tablespoon of the half-and-half, light cream, or milk over part of the mixture; gently toss with a fork. Push moistened dough to the side of the bowl. Repeat moistening dough, using 1 tablespoon of the cream or milk at a time, until all of the dough is moistened. Form dough into a ball. On a lightly floured surface, roll dough to an 18x12-inch rectangle.* Using a pastry wheel or sharp knife, cut into six 6-inch squares.
  3. In a small mixing bowl combine the raisins, walnuts, and honey. In another small bowl stir together the 2 tablespoons sugar and the ½ teaspoon cinnamon. Set aside.
  4. Peel and core the apples. Place an apple on each pastry square. Fill centers of apples with raisin mixture. Sprinkle with sugar-cinnamon mixture; dot with the 1 tablespoon butter or margarine. Moisten edges of each pastry square with water; fold corners to center over apple. Pinch to seal. Place dumplings in a 2-quart rectangular baking dish. Pour sauce over dumplings. Bake in a 375 degree F oven for 35 minutes or until apples are tender and pastry is golden brown. To serve, spoon sauce over dumplings. Makes 6 servings.

  • 2 (20 ounce) bags frozen cauliflower
  • ¼ cup sour cream
  • ¼ cup plain yogurt
  • 1 tablespoon salted butter, softened
  • 1 cup shredded Cheddar cheese, divided
  • 2 tablespoons bacon bits
  • 1 tablespoon chopped fresh chives
  • 1 teaspoon minced garlic
  • ½ teaspoon black pepper
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C). Grease a large, square baking dish with cooking spray.
  2. Put cauliflower in a microwave-safe bowl and cook in microwave oven until tender, about 6 minutes.
  3. Blend cauliflower in a food processor until smooth; add sour cream, yogurt, and butter and process again until smooth.
  4. Mix blended cauliflower mixture in a bowl with ¾ cup Cheddar cheese, bacon bits, chives, garlic, and black pepper; spread into the prepared baking dish and top with remaining Cheddar cheese.
  5. Bake in preheated oven on the middle rack until cheese is melted, about 15 minutes. Switch oven to 'broil' and continue baking until the top is golden brown, 3 to 5 minutes more.

Instant Pot® Salsa Chicken
An Instant Pot® makes an easy weeknight meal even easier! Frozen chicken breasts are combined with taco seasoning and salsa for a tasty Mexican-themed meal. You can use the meat for tacos, burrito bowls, or as a topping for baked potatoes. So many possibilities! I used this the first night for chicken quesadillas. The second night I used it as a topping for baked potatoes with shredded cheese, pickled jalapenos, and sour cream.

Ingredients
  • 1 pound frozen skinless, boneless chicken breast halves
  • 1 (1 ounce) packet taco seasoning mix
  • ½ cup salsa
  • ½ cup low-sodium chicken broth
Instructions
  1. Place chicken breasts in an electric pressure cooker (such as Instant Pot(R)). Sprinkle all sides with taco seasoning. Pour salsa and chicken broth on top.
  2. Place lid on the pot and lock in place. Select the Poultry setting and set the timer for 15 minutes. Allow pressure to release naturally after the cooking time has ended, about 20 minutes. An instant-read thermometer inserted into the center of the chicken should read at least 165 degrees F (74 degrees C). Shred the cooked chicken.

Ingredients
  • 1 cup warm milk (110 degrees F/45 degrees C)
  • 2 eggs, room temperature
  • ⅓ cup margarine, melted
  • 4½ cups bread flour
  • 1 teaspoon salt
  • ½ cup white sugar
  • 2½ teaspoons bread machine yeast
  • 1 cup brown sugar, packed
  • 2½ tablespoons ground cinnamon
  • ⅓ cup butter, softened
  • 1 (3 ounce) package cream cheese, softened
  • ¼ cup butter, softened
  • 1½ cups confectioners' sugar
  • ½ teaspoon vanilla extract
  • ⅛ teaspoon salt
Instructions
  1. Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
  2. After the dough has doubled in size turn it out onto a lightly floured surface, cover and let rest for 10 minutes. In a small bowl, combine brown sugar and cinnamon.
  3. Roll dough into a 16x21-inch rectangle. Spread dough with ⅓ cup butter and sprinkle evenly with sugar/cinnamon mixture. Roll up dough and cut into 12 rolls. Place rolls in a lightly greased 9x13 inch baking pan. Cover and let rise until nearly doubled, about 30 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
  4. Bake rolls in preheated oven until golden brown, about 15 minutes. While rolls are baking, beat together cream cheese, ¼ cup butter, confectioners' sugar, vanilla extract and salt. Spread frosting on warm rolls before serving.
