Galaxy Cake Pops

Ingredients
Cake
  • 1 box cake mix, prepared according to package instructions
  • ⅓ cup vanilla frosting
  • ¼ cup white chocolate, melted
Glaze
  • ½ cup water, divided
  • 1 7-gram packet of gelatin
  • ½ cup sugar
  • 2 ounces condensed milk
  • ¾ cup white chocolate
  • Blue food coloring
  • Purple food coloring
  • Green food coloring
Instructions
  1. Preheat oven to 350˚F (180˚C).
  2. Prepare the yellow cake batter according to package instructions and pour into greased pan.
  3. Bake until a toothpick comes out clean, about 30 minutes. Cool to room temperature.
  4. In a medium bowl, crumble the cake. Add vanilla frosting to give some moisture to the cake. If it is too dry, add more frosting.
  5. Using a small ice cream scoop, portion the cake and shape into a ball. Repeat with remaining cake.
  6. Dip a popsicle stick tip into the melted white chocolate and insert into the cake balls. Freeze for at least 30 minutes.
  7. In a small bowl, add the ¼ cup water and gelatin and let bloom for 5 minutes.
  8. In a medium saucepan, combine ¼ cup water, sugar, and condensed milk, and bring to a boil over high heat. Remove the pan from the heat and add the bloomed gelatin. Whisk until well combined.
  9. Add the white chocolate to a bowl. Pour the condensed milk mixture through a sieve into the bowl of chocolate and let it sit for 2 minutes to soften the chocolate.
  10. Using a immersion blender, blend the chocolate until smooth. Transfer the mixture into a deep container such as a mug.
  11. Squeeze dark blue, purple, and green food coloring into the mug or bowl without stirring.
  12. Dip the frozen cake pop into the chocolate and twist as you pull up creating a marbled pattern.
  13. Stick in a piece of styrofoam and dry the pop completely. Repeat with remaining cake pops.
  14. Enjoy!

  • 6 large baking apples, halved vertically and cored
  • 12 tbsp. butter, melted
  • ⅓ c. sugar, plus more for sprinkling
  • 2 tbsp. ground cinnamon
  • ⅔ c. old-fashioned rolled oats
  • Vanilla ice cream, for serving
  • Warm caramel, for drizzling
Instructions
  1. Preheat oven to 350° and line a baking sheet with parchment paper. Place each apple half flat side down and use a paring knife to create thin slices all the way across, making sure to stop slicing right before the bottom of the apple (so it stays together as one piece). Transfer apple halves to prepared baking sheet.
  2. Lightly brush apple tops with melted butter and sprinkle with sugar.
  3. Bake until apples are soft and caramelized, 23 to 25 minutes.
  4. Remove from oven. In a small bowl, combine remaining melted butter, sugar, cinnamon, and oats. Once cool enough to handle, spoon mixture inside apple slits.
  5. Return to oven and bake 10 minutes more.
  6. Top each with a scoop of ice cream, then drizzle with caramel and serve.

  • ½ cup chocolate hazelnut spread
  • 2 egg
Instructions
  1. Preheat the oven to 375˚F (190˚C).
  2. Separate the egg yolks from the egg whites and place into two bowls.
  3. Mix the chocolate hazelnut spread into the bowl with the egg yolks.
  4. In the second bowl, whisk 2 egg whites until stiff peaks form.
  5. Fold ⅓ of the whipped egg whites into the chocolate/egg yolk mixture until fully incorporated. Add the remaining egg whites to the mixture and fold gently, but thoroughly, until the mixture is smooth.
  6. Pour the mixture into a greased ramekin. Clean the rims so the soufflé rises evenly, and bake for 15-17 minutes.
  7. Serve immediately.

  • 1 cup white sugar
  • 1 cup light brown sugar

  • 2 teaspoons baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 2 cups (12-ounce bag) milk chocolate chips, not semisweet
  • Nonstick cooking spray or parchment paper
Instructions
  1. Heat the oven to 350 degrees F. Spray cookie sheets with nonstick spray or line them with parchment paper.
  2. Using a mixer, beat the butter until smooth. Beat in the white and brown sugars, a little at a time, until the mixture is light and fluffy. Beat in the eggs 1 at a time, then mix in the vanilla and pumpkin puree. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Slowly beat the flour mixture into the batter in thirds. Stir in the chips. Scoop the cookie dough by heaping tablespoons onto the prepared cookie sheets and bake for 15 to 20 minutes, or until the cookies are browned around the edges. Remove the cookie sheets from the oven and let them rest for 2 minutes. Take the cookies off with a spatula and cool them on wire racks.

Chocolate malt addicts rejoice with this chocolate cake made with malted filling and covered in malt balls.

Ingredients
  • 1¾ cups wheat flour
  • ½ cup cocoa powder
  • Pinch of salt
  • 3 tablespoons baking powder
  • 7 egg yolks
  • 1¾ cups sugar
  • ½ cup cooking oil
  • ¾ cup boiling water
  • 7 egg whites, beaten
  • 9 ounces dark chocolate, chopped
  • 4½ ounces melted milk chocolate
  • 1 cup heavy whipping cream, heated
  • 1¾ cups powdered sugar
  • 1 cup butter
  • 1½ tablespoons milk
  • 17 ounces malted milk balls
Instructions
  1. Preheat oven to 350 degrees. Prepare 2 round cake pans with nonstick cooking spray and cocoa powder.
  2. Sift the wheat flour and cocoa powder into a bowl. Add salt and baking powder and mix together. Set aside.
  3. In a separate bowl, beat the egg yolks, sugar and cooking oil until combined. Add half of the boiling water and continue to mix until combined. Add the dry ingredients to the wet and stir to combine. Add the remainder of the boiling water and mix until well incorporated. Fold in the beaten egg whites.
  4. Divide batter between the prepared pans. Bake for 20 minutes, then allow to cool completely.
  5. In a medium bowl, add the powdered sugar and butter and beat with a mixer to combine. Beat in the milk, followed by the melted milk chocolate. Set aside.
  6. In a separate bowl, add the chopped dark chocolate and pour the warm heavy cream on top. Mix until a ganache is formed. Set aside to cool.
  7. Place one cake layer on a cake stand or serving tray. Add a layer of milk chocolate frosting and top with second cake layer. Cover the cake with the chocolate ganache
  8. Stuff the layers of the cake with the chocolate buttercream, cover the cake with chocolate ganache and malted milk balls.

Leftover Pizza Corn Dogs
  • Leftover slices margherita pizza
  • Hot dogs (same number as slices you’ve got left)
  • 2.5 cups/350g fine cornmeal
  • 1 cup/150g plain flour
  • 2 tbsp caster sugar
  • 1 tsp mustard powder (or mustard – if using the wet stuff, mix in when you add the wet ingredients)
  • 1½ tsp baking powder
  • 1 tsp salt
  • 1 tsp cayenne
  • 2 large eggs
  • 1¼ cups/300ml whole milk
  • ½ cup/100ml water
  • 2 litres oil, for frying
Leftover Pizza French Toast Bake
  • As many slices of leftover pizza as you can spare (preferably 5 or 6)
  • 6 eggs
  • 1¼ cups/250ml milk
  • 1 tsp Italian seasoning
  • 1 tsp chilli flakes
  • 1 tsp salt
  • 1 cup grated mozzarella
  • Bunch of basil leaves
Leftover Pizza Grilled Cheese
  • 2 slices Pepperoni Pizza
  • 4 slices swiss cheese
  • knob of butter, for frying
  • ketchup, to serve
Leftover Pizza Lasagna
  • 8 slices Pepperoni pizza
  • 2 cups pizza sauce
  • 1 cup mozzarella, sliced
  • 1 cup ricotta
  • 1 egg
  • 1 cup parmesan
  • ½ tsp salt
Instructions
Leftover Pizza Corn Dogs
  1. Microwave each slice of pizza on high for 30 seconds, until the cheese is bubbling.
  2. Leave to cool slightly (just enough that you don’t burn yourself) then wrap around each hot dog.
  3. Leave these to cool and set. When they’ve set stick some sturdy skewers through the hot dogs.
  4. Make the batter by whisking together the cornmeal, flour and other dry ingredients. When thoroughly combined add the eggs, milk and water. Pour the batter into a relatively narrow, high vessel – a pint glass or small vase would work really well. It needs to be deep enough to dip the whole pizza wrapped hot dog in.
  5. Preheat the oil to 170°C/380°F.
  6. Dip each pizza hot dog in the batter, then hold it carefully by the stick and submerge it in the oil.
  7. Keep it held underneath the surface until the batter has puffed up, then remove and leave to dry on some kitchen paper.
  8. Serve with ketchup and mustard.
Leftover Pizza French Toast Bake
  1. Chop up the leftover pizza into manageable chunks and place in a dish. You need them to be about two layers high.
  2. Whisk together the egg, milk and dry ingredients and pour over the pizza slices.
  3. Top with the grated mozzarella and basil and cover with tin foil.
  4. Bake for 40 minutes covered then 10 minutes uncovered to allow it to crisp up.
Leftover Pizza Grilled Cheese
  1. Lay a slice of pizza on a board and top with swiss cheese. Top with the other slice of pizza, cheese side facing down.
  2. Heat a knob of butter in a pan and add your sandwich. Fry gently with a lid on until the cheese has begun to melt.
  3. Flip your sandwich and fry, again with the lid on, until the cheese has fully melted.
  4. Serve with ketchup!!!
Leftover Pizzagna
  1. Put ½ cup of pizza sauce in a lasagna dish. Lay in 4 of your pizza slices. Mix ricotta with egg, parmesan and salt. Smooth this over your pizza slices. Top with more pizza sauce and mozzarella. Go on with your final layer of pizza, then top with remaining pizza sauce and mozzarella. Cover and bake for 30 minutes.

  • ½ cup butter, room temperature
  • 2 cloves garlic, minced
  • 2 tablespoons parsley, finely chopped
  • 4 boneless, skinless chicken breasts
  • 1 cup flour
  • 3 eggs, beaten
  • 2 cups panko bread crumbs
  • Oil, for frying
  • Salt, to taste
  • Pepper, to taste
Instructions
  1. Preheat oven to 375°F (190°C).
  2. In a bowl, add the butter, garlic, and parsley and mix until fully combined.
  3. Shape butter into a log and wrap in plastic wrap. Freeze for 15 minutes.
  4. On a cutting board, slice the chicken breasts in half horizontally.
  5. Wrap in plastic wrap and pound until the chicken is ⅛-inch thick.
  6. Divide the butter into fourths.
  7. Place a portion of butter on the flattened chicken breast and roll it up, creating a log.
  8. Coat the rolled chicken in flour followed, by eggs and bread crumbs. Repeat once more.
  9. Cover the chicken in plastic wrap and chill while oil is heating.
  10. Fry in oIl for 3-4 minutes, until edges are golden brown.
  11. Bake for 20-25 minutes.
  12. Let rest for 5 minutes before serving. Enjoy!

Eggs, bacon and a hash brown, all slathered in maple butter and warmly hugged in a thin pancake wrap.

Ingredients
  • For the pancake wraps:
  • 2 large eggs
  • ¼ teaspoon vanilla
  • ¼ teaspoon salt
  • 1 cup milk, divided
  • 1 cup all-purpose flour
  • ½ teaspoon butter
  • For the wrap filling:
  • 4 hash brown patties
  • 8 strips bacon
  • 4 tablespoons butter, divided
  • 1½ teaspoons salt, divided
  • 8 large eggs
  • 1 cup shredded cheese
  • 4 tablespoons maple butter
  • 2 tablespoons maple syrup
Instructions
  1. Make the pancakes:
  2. In a medium-sized bowl, whisk eggs until lightly beaten. Add vanilla, salt and ⅓ cup of the milk, and stir until combined. Add flour and whisk until smooth. While whisking, add the remaining milk. Batter should be thick and smooth.
  3. Heat a 10-inch pan on medium-high and coat with butter. Drop approximately ⅔ cup of batter onto pan and cook until golden. You will start to see bubbles form on the top of the dough when it is close to flip time. Flip over and repeat until golden. Keep pancakes warm on a plate until ready to assemble.
  4. Prep the wrap ingredients:
  5. Preheat the oven to 425 degrees. Line 2 baking sheets with parchment paper.
  6. Place 4 hash brown patties on parchment and bake until golden, approximately 20 to 25 minutes. Place strips of bacon on another sheet and bake until crispy, approximately 20 minutes.
  7. While bacon and hash browns are baking, prepare the remaining ingredients for the wraps.
  8. In a large nonstick pan, melt the remaining tablespoons of butter over medium heat. Crack eggs into a medium-sized bowl with the remaining salt, and whisk until yolks are broken and eggs are just combined. Pour into the warm pan and turn heat down to medium-low. Cook eggs very slowly, swirling them in the pan using a wooden spoon or spatula. Eggs are done when they look silky, have come together and are still a little wet. Turn off the heat and add cheese. Mix just to combine. Set aside.
  9. To assemble wraps:
  10. Spread maple butter in the middle of each pancake and place a hash brown on top. Place a quarter of the scrambled eggs on each hash brown. Layer bacon over the eggs and drizzle with maple syrup.
  11. Secure wraps in parchment until serving. They will keep up to a day in the fridge. Reheat in the oven or microwave before serving.

Ingredients
  • 2 11 oz. tubes refrigerated french bread dough
  • ½ lb. bacon
  • 4 c. shredded Cheddar cheese
  • 2 tbsp. melted butter
  • 2 cloves garlic, minced
  • ¼ c. freshly grated Parmesan
  • 1 tbsp. chopped parsley
  • Tomato soup, for serving
Instructions
  1. Preheat oven to 350°. Grease a bundt pan with cooking spray.
  2. Place bread dough into the bottom of the pan and pinch all ends together to form a single ring. Bake until golden brown and cooked through, about 25-30 minutes. Let cool for 5 minutes, then invert onto cooling rack to cool completely.
  3. Meanwhile, cook bacon in a large skillet over medium heat until crispy. Drain slices on paper towels.
  4. Slice baked bread in half. On a large baking sheet, place one half cut side-down and the other cut side-up. Top the cut side-up bottom half with cheese and bacon. Brush the other half with melted butter and sprinkle with garlic, Parmesan and parsley.
  5. Bake until the cheese is melted, 3-5 minutes.
  6. Place the garlicky half of the bread on top of the melted cheese and bacon. Slice into wedges and serve warm with a bowl of warm tomato soup in the middle for dunking.

  • For the chips:
  • 2 pounds fingerling potatoes, washed and chilled
  • 1 tablespoon white vinegar
  • 4 cups canola oil or vegetable oil for deep-frying
  • 1 teaspoon seasoning salt
  • For the sauce:
  • ¼ cup mayonnaise
  • 1 teaspoon dill pickle juice
  • 1 teaspoon diced mini dill pickles
  • 2 teaspoons ketchup
  • 1 teaspoon yellow mustard
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ½ teaspoon minced parsley leaves
  • For the burger:
  • 2 slices mild cheddar cheese, quartered
  • 2 slices American cheese, quartered
  • 1½ pounds ground chuck, chilled
  • 1 teaspoon seasoning salt
  • ½ teaspoon onion powder
  • ½ teaspoon Worcestershire sauce
  • ¼ teaspoon black pepper
  • Brioche buns, green leaf lettuce and tomato for serving
Instructions
  1. For the chips:
  2. Using a mandoline, cut each potato into paper-thin slices; transfer the slices to a bowl of ice water. Add vinegar to the sliced potatoes.
  3. Drain the slices on paper towels and allow to dry for at least 30 minutes.
  4. In a 3-quart shallow saucepan, heat oil until a deep-fat thermometer registers 380 degrees. Working in batches of 10 or 12 slices, fry potatoes until golden, about 2 minutes. Transfer chips to a baking sheet lined with paper towels or a cooling rack and sprinkle with seasoning salt.
  5. For the sauce:
  6. In a small bowl, whisk together the mayo, pickle juice, minced pickles, ketchup, mustard, paprika, onion powder, garlic powder and chopped parsley. Set aside.
  7. For the burger:
  8. Stack 2 quarters of American cheese on top on 2 quarters of cheddar cheese and set aside. Repeat with remaining cheese slices.
  9. Place the ground chuck in a large bowl and add the seasoning salt, onion powder, Worcestershire and black pepper. Mix with your hands until just combined. Do not overwork the meat mixture.
  10. Divide the meat into 8 equal portions. Using your fingers, press 2 portions of the meat into 2¼-inch-thick patties that are each about 1 inch wider than the hamburger buns.
  11. Place a stack of cheese into the center of one patty and place the second patty on top, making sure to pinch and round off the edges carefully. Repeat with remaining portions.
  12. Preheat a grill pan or outdoor grill to medium-high heat. Cook each stuffed patty for about 4 minutes on each side and allow to rest before serving.
  13. To assemble the burger, place the bottom of a brioche bun on a clean plate. Spread about 1 tablespoon of sauce on both sides of the bun. On the bottom bun, layer the lettuce, then the burger, followed by a tomato slice and a small handful of chips. Top with the coated top bun. Serve with extra chips and a side of sauce.
